Cucumber Paddu

Cucumber Paddu or Appe or Paniyaram is a yummy recipe made from left over Dosa-Idli Batter using the Paddu tava. An easy and delicious, gluten-free breakfast or snack recipe.

I have used fresh green Cucumber with tomatoes. 

Lets see how to make Cucumber Paddu.

  • Ingredients


  • Dosa Batter-2.5 cup

  • Salt as per taste

  • Few Coriander leaves


  • Green chillies-2-4 chopped

  • Cucumber-1 finely chopped
  • Tomato -1/2 cup
  • Cumin seeds-1/2 tsp
  • Oil as required for making paddu


  • Method:  Add all the above ingredients in the dosa batter and mix well. 
    Next apply oil to the paddu tava and pour the batter in the holes of tava and keep it on low flame. 
    Cover. Once done turn it over and cook the other side. 

    Serve Cucumber Paddu or Southekai Paddu hot with chutney or sauce or enjoy just like that.

    Corn Sabudana Vada

    Corn Sabudana Vada  is a fried snack made from sago/ sabakki with sweet corn.  This is a favourite Maharashtrian snack made from Tapioca pearl. Enjoy this version made from sweet corn with a hot cup of tea..

    Ingredients:   
    • 1 cup Sago (sabudana)
    • 2 cup Potatoes, boiled and grated
    • 1/2 cup sweet corn steamed
    • 3 tbsp Roasted peanuts,
    • 5-6 Green chillies, finely chopped
    •  Fresh coriander leaves, finely chopped
    • 1 tsp Jeera/Cumin seeds
    • Salt  to taste
    • Oil  to deep fry 


    Method: Corn Sabudana Vada Recipe

    Soak the Sabudana in enough water for about 3-4 hours.
    Once soft, drain the water.
    Add steamed corn, grated boiled potatoes, chilies, coriander leaves, 
    crushed, roasted peanuts, salt, jeera, and mix well to form the dough.
    Make small balls and flatten it. Set it on a plate.
    In a kadai, heat  oil, slowly slide in the vadas, deep fry till golden brown on both sides.
    Drain on absorbent paper.
    Serve this gluten free  Corn Sabudana Vada hot with chutney or sauce.

    Avarekayi Paddu

    Avarekayi Paddu / Avarekayi Gundponglu or Appe or Paniyaram is a yummy recipe made from left over Dosa-Idli Batter using the Paddu tava. An easy and delicious breakfast idea. You can send it for Kids tiffen box too. Try it out.

  • Ingredients


  • Dosa Batter-2.5 cup

  • Salt as per taste

  • Few Coriander leaves


  • Green chillies-2-4 chopped

  • Onion-1 finely chopped
  • Steamed Avarekayi -1/2 cup
  • Cumin seeds-1/2 tsp

  • Fresh coconut-1-2 tbsp

  • Oil as required for making paddu


  • Method:  Add all the above ingredients in the dosa batter and mix well. 
    Next apply oil to the paddu tava and pour the batter till 3/4 in the holes of the paddu tava and keep it on low flame. 
    Cover. 
    Once its golden brown flip / turn it over and cook the other side. Remove from the tava, and repeat for more.

    Serve nutritious and savoury Avarekayi Paddu  hot with chutney or sauce or enjoy just like that.

    Navil Kosu Ragi Rotti

    Navil Kosu Ragi Rotti (finger millet flour) ರಾಗಿ ರೊಟ್ಟಿ is highly nutritious breakfast for your busy day, one of the famous South Indian dishes, easy to make and is healthy and tasty too. Soft and delicious, It has to be enjoyed hot with butter and chutney. 

    Navil Kosu or Navalkol is known as Kohlrabi in English.

    Ingredients

    • Ragi Flour 1 Cup (finger millet)
      Navil Kosu Ragi Rotti

    • Finely cut onions 2 
    • Grated Navil Kosu-1 small cup 
    • Green Chillies 5-7
    • Oil 
    • Salt as per taste 
    • Coriander leaves chopped
    • Coconut-little
    • Jeera-1tsp
        
    Method   

    Mix all the above items add water and knead it well. Make a soft dough. Keep covered for 10 mins. Add little oil and knead again before making the rottis.

    Take 1tsp of oil, smear around on the tava , take the dough and spread around with your fingers. 

    Keep this on medium heat, cover and after minute or so it will be ready to be taken out.

     If you want more crispy leave it of little longer.  Once done rotti comes out easily from tava.

    Serve the Navil Kosu Ragi Rotti hot with chutney of your choice and a dollop of butter.

    • 1/2 cup Rava Chiroti

    Ragi Masala Idli

    Ragi Masala Idli is interesting twist to the normal idlis. Soft with a blend of spices and seasonings gives it a great taste. Enjoy hot with chutney.

    This recipe is a healthy combination of ragi flour with the normal idli batter. It is quick to make, easy to serve, just dunk a hot fluffy piece of Idli in freshly prepared chutney and you are off for a great start of your day! A small change in the typical Idli recipe but loaded with nutrients and fiber just by adding the humble Ragi.

    Ragi Masala Idli

    Ingredients : 

    • Idli Batter 
    • Ragi flour 
    • Onion : 1finely chopped
    • Green chillies : 1 or 2, chopped
    • Coriander leaves : few chopped
    • Mustard seeds : 1 tsp.
    • Curry Leaves : 5-6 nos.
    • chana dal:1/4 tsp
    • urad dal:1/4 tsp
    • Salt to taste
    • oil:1/2 tsp
    • Chutney pwd:2 tsp (opt)


    Method -  Mix the idli batter with ragi flour and keep it aside for 1/2 hour. In a pan, heat oil. Prepare seasoning with curry leaves, mustard seeds, chana dal urad dal, green chillies once done pour it in the ragi-idli batter. Next add chopped coriander leaves,onions ,salt to the batter and mix well. Add chutney pwd and mix. Set for 10 mins.

    Apply oil onto the idli plates and pour the batter in a spoon. Steam it in pressure cooker for 15-20 mins on medium flame. 

    Serve Ragi Masala Idli hot with ghee, chutney or saagu.

    Palak Stir Fry

    Palak Stir Fry is a healthy combination of green palak /spinach leaves with lentils ( tur dal cooked) with mild spices. Easy to make. Enjoy hot with chapati or rasam rice. Spinach or Palak provides healthy nutrients and is rich in iron, vitamins and minerals. It is very important for overall health including skin, hair etc. It is one of the immunity booster foods.

    Ingredients
    • 1 bunch Palak/ spinach
    •  (cleaned and chopped finely)
    • 1- 2 dry red chillies
    • 3-4 tbsp grated coconut
    • 1-2 tbsp Cooked Dal
    • salt according to taste
    • 1/2 tsp lemon juice
    • Coriander leaves-few


    Seasoning
    • 1/2 tbsp oil
    • 1/2 tsp mustard seeds
    • 1 tsp urad dal
    • 1 tsp chana dal
    • 1 tsp jeera
    • Few curry leaves
    • Pinch-Hing
    • Pinch-Turmeric Pwd


    Method: In a pan, heat oil and add the chopped spinach and fry well. Take is aside. Next h
    eat the oil in a broad pan. Prepare Seasoning  add mustard seeds, add urad dal, chana dal,Turmeric,hing curry leaves. Add red chillies, saute well. Once done add the chopped Spinach and sauté well. Add salt and mix. Finally garnish it with grated coconut and coriander leaves. Serve hot with rasam rice or chapati. Simple and tasty Palak Stir Fry.

    Palak Poori / Spinach Poori

    Palak Poori is an easy recipe to include healthy greens in your diet. Palak or spinach is a green leafy vegetable that is loaded with iron and vitamins and proteins. Perfect for adults and kids alike. Serve hot with ketchup, chatni or sabzi of your choice. Ideal lunch box recipe! Spinach is an important immunity booster vegetable.


    Palak Poori / Spinach Poori 
    Ingredients:

    • 1 cup Palak [Boiled]
    • 1/4 cup chickpea flour[Besan]
    • 1 cup Wheat flour
    • 1 teaspoon ajwain
    • 1 tablespoon garam masala
    • 1/2 teaspoon dry mango powder
    • salt to taste
    •  oil
    • Water

    Method: Clean the palak well. Chop only the leaves finely. Next in a pan add water and a bit of salt. Add the washed palak leaves and let it boil for 10-15 mins. Once done, let it cool, discard the water and blend it in the mixer. In a bowl,add wheat flour, besan, masala powder, salt and the blanched palak leaves and mix well to make a soft dough. Add water if req. Make puris and deep fry them in hot oil. The puris will be in green color! Serve hot with sabzi of your choice.

    Ragi Methi Dosa

    Ragi Methi Dosa (Finger Millet Methi dosa)  is another dosa variety that can be made with Finger Millet flour -  easy , quick dosa variety. Made from fenugreek leaves (methi) is healthy , nutritious and tasty too.

    Ragi Methi Dosa

    Ingredients

    • Chiroti rava 1 cup
    • Ragi flour - 1 cup
    • Curds-3 tbsp
    • Methi leaves, washed and finally chopped - 1 cup
    • Coriander leaves-few
    • green chillies, finely chopped - 5-6
    • coconut, grated - 2 table spoon
    • jeera - 1 tsp
    • salt - as per taste
    • Coconut-3 tsp(opt)
    • Water

    Method-

    In a bowl, add rava, ragi flour, and curds, next add chopped methi leaves, coriander leaves,green chillies, jeera, salt and grated coconut, add water and mix well to form dosa batter.

    Keep it aside for 1-2 hrs. Make dosa.

    Serve Finger Millet Methi Dosa hot with chutney of your choice.

    Masala Sabudana

    Masala Sabudana  or Spicy Sabudana Khichdi can be made as filling breakfast for a good start of your day. Absolutely delicious and tasty,try it out!!. An easy gluten free vegan delight! 

    A blend of your favorite veggies with bhath powder into a delicious sabudana, making it perfect !


    1 cup sabudana(sago) 
    1-2 Green Chillies finely chopped
    Few peanuts fried
    1 boiled and peeled potato
    1/4 cup capsicum 
    1 chopped onion (exclude if fasting)
    2 tsp Oil
    1 tsp Jeera /Cumin seeds
    1 Pinch Hing (asafoetida) 
    1/2 tsp mustard seeds
    1/2 tsp chana dal
    1/2 tsp urad dal
    2 tbsp Bhath pwd 
    1 tsp Lemon juice 
    Salt to taste 
    Coriander leaves-few
    Curry Leaves-few


    Method
    • Wash the sabudana in water 2 -3 times. and soak it in water for about 3-4 hours in water and use it when they become soft and double in volume.
    • Heat the oil/ghee in a pan fry peanuts and keep it aside,next add cumin seeds,mustard seeds,chana dal urad dal and hing. Once done add the green chillies and curry leaves.
    • Add the chopped potatoes and onion,capsicum and stir well. Let them cook till they are light brown on the outside. Add sabudana mixture and mix gently. Let it cook for 10 - 15 mins .
    • Then add fried peanuts,salt and Bhath pwd .Mix well.
    • Add the grated coconut  (opt) and garnish with coriander leaves.
    • Sprinkle some lemon juice over it and serve hot.

    Ragi Carrot Dosa

    Ragi Carrot Dosa ( Finger MIllet Carrot Dosa) is healthy, nutritious and filling breakfast.

    Easy to make and enjoyed hot.

    The carrot with chilies makes it more healthier and colorful.

    Ingredients:

    1 cup Dosa batter

    1 cup finger millet(ragi flour)

    To make the dosa batter add ragi flour, water and salt  and mix well.

    KadleKaalu Masala Gravy

    KadleKaalu Masala Gravy is a easy gravy for your chapati or rice.A blend of coconut with masala the gravy is tasty and spicy . Chana is Brown Chickpea , a legume variety , healthy and rich in proteins,gluten free and vegan delight.

    Ingredients
    KadleKaalu Masala Gravy

                            KadleKaalu Masala Gravy

    • 1 cup boiled Kala Chana(kadle)
    • Salt-taste
    • Water
    • Sambhar pwd-2 tbsp
    • Coconut-1/4 cup grated
    • Onion-1/2 cup chopped
    • Tomato-1/4 cup chopped 
    Seasoning:
    • 1 tsp oil
    • 1 tsp mustard seeds 
    • 1/2 tsp jeera
    • 1/2 tsp channa dal
    • 1/2 tsp urad dal
    • hing -pinch
    • curry leaves-few
    • Method :  Cook the chana well. Grind grated coconut ,onion with sambar pwd . Next in a vessel , add the cooked channa  add the ground paste and mix. Add salt, chopped tomato  and mix well. Cook on low heat for 5-10 mins. Heat oil in a pan,add the seasoning items , once done add to the sabzi. Garnish with coriander leaves.
      Serve hot with white rice or chapati.

    Pudina Vada / Mint Masala Vada

    Pudina Vada or Mint Masala Vada is yet another fritter variety made from lentils with mint leaves. Easy vegan snack  to prepare. A quick flavorful bite for your evening tea.

    Pudina is a herb commonly used in Indian cooking. It is used in a variety of dishes such as chutneys, raitas, and salads. It has a refreshing taste and aroma along with many health benefits.


    Ingredients
    Mint Masala Vada, Pudina vada
    Mint Masala Vada
    • 1 cup Channa Dal
    • Hing-pinch
    • 5-6 Green Chillies 
    • Ginger-shredded
    • Salt to taste
    • 2 tbsp grated coconut
    • Few Coriander leaves
    • Onions(Optional)
    • Fresh Pudina/mint leaves
    • Jeera-1tsp
    • Oil for deep frying


    Method:  Soak Channa Dal for half an hour. 
    Next grind soaked channa dal with jeera,salt, green chillies, hing very coarsely with very little water. 
    Next add grated coconut , chopped coriander leaves, chopped pudina leaves , onions  and salt to the mixture and mix well.

    Make small balls and flatten it.  Set it on a plate.In a kadai, heat  oil ,  slowly slide in the ambodes , deep fry till golden brown on both sides.
    Drain on absorbent paper.

    Serve Pudina Vada hot with chutney or sauce or enjoy just like that with hot cup of tea or coffee.

    Palak Peas Pulao
    • Palak soppu/ Spinach Leaves- 2cups
    •  Green Peas/Moong - 1/4 cup steamed
    • Green chillies - 3-4
    • Coconut, grated- 1/4 cup
    •  Cinnamon - 2 small pieces
    • Clove - 1-2
    • Jeera/Cumin seeds - 1/2 tsp
    •  Pepper - 2-3
    • Coriander leaves -1/4 cup
    • Rice - 1.5 cups
    • Cashews - few
    • Salt to taste
    • Tej patta/bay leaf-1-2
    •  oil - 2 tbsn
    Method-Cook the rice and spread on a plate.Clean,Chop and cook the palak . In the mixer add coconut, spinach, jeera, cinnamon, pepper ,green chillies, coriander leaves, clove , add water and grind into smooth paste. Next in a large pan heat oil add jeera , cashews, tej patta and fry well . Next add masala paste and fry ,add  the cooked rice ,peas and mix well.Add salt and mix . Serve hot with dal or raita of your choice.

    Ragi Khara Dosa

    Ragi Khara Dosa (Ragi : finger millet ) is healthy , nutritious and filling breakfast.This is a spicy version.Easy to make and enjoyed hot.A mix of fingermillet flour and semolina with spice and coconut to give the perfect crispy crepes.


    Ragi Khara Dosa,finger millet semolina crepes
    Ragi Khara Dosa
    Ingredients:

    1/2 cup Rava Chiroti
    1 cup finger millet(ragi flour)
    Salt as per taste
    Oil
    Jeera-1 tsp

    To Grind
    Coconut-1/4 cup
    Red chillies-8-9
    Tamarind juice - 1 tbsp
    Hing: Pinch
    Menthya seeds-few



    Method:

    Mix rava and ragi flour and salt .The consistency of batter should be like normal dosa batter. Keep overnight or atleast for 5-6 hours . Next day grind in mixer the items mentioned in grinding. Add to the dosa batter.Add salt,jeera .Mix well. Make dosas. Serve hot with butter and chutney of your choice.
