Badam Puri

  Badam Puri

Badam Puri is a yummy dessert that can be enjoyed on special occasions or festivals. 

Rich and tasty layered delight-crispy from outside and soft within.


Ingredients:

  • 2 cups-maida
  • 2 cups sugar
  • 1 cup ghee
  • 1 tsp. Elachi pwd
  • Oil/Ghee for - frying
  • 1 tbsp grated dry coconut
  • Milk
  • Rice flour

Method: 

  • Mix sugar, water and make a syrup. 
  • Add cardamom powder and keep aside.
  • In a bowl,add the flour, ghee and milk knead well and make a soft dough .
  • Rest it for 4-5 hrs.
  • Take a small sized ball of dough and roll into a round shape, 
  • then fold it into half and half like cone.
  • Fix a clove in the centre of the triangle.
  • Fry these triangle folded pieces in the heated oil/ghee . 
  • Fry till golden color and remove it.
  • Dip these puris into the sugar syrup and then remove it on to a plate.
  • Decorate with grated nuts and coconut.

Kadabu / Karanji

Kadabu in kannada or Karanji in Marathi is a favorite sweet made during Ganesha Festival. Try this delicious jaggery stuffing kadabu as part of your Diwali Dessert platter. Enjoy !! You can make this deep fried Coconut Sweet Dumpling with sugar instead of jaggery.

Ingredients:

Kadabu / Karanji 

For the dough:

  • 1/2 cup Chiroti Rava 
  • 1/2  cup Maida
  • 1-2 tbsp Ghee
  • Salt-pinch
  • Oil for Deep Frying
  • Water 
For the Filling:
  • 1 cup freshly grated coconut
  • 1 cup  jaggery powdered
  • 1-2 tsp Elachi pwd
  • 1-2 tsp khus khus
  • Ghee
Method: Mix all the ingredients for the dough ,add required water and  knead well and keep it aside .Next prepare the filling.Heat ghee and add coconut and jaggery. Cook on medium heat with stirring, until the jaggery has melted and mixed well with the coconut. Add poppy seeds, cardamom powder  and mix well. Let it cool. Next make small pooris with the dough. Fill in with the jaggery mix and seal the ends properly. Heat oil in a big kadai, carefully place these in the oil and deep fry till golden brown on both sides. Strain on absorbent paper. Enjoy.

Ingredients
  • 1 cup Poha
  • Few Peanuts (kadlekayi)
  • Few White Dal(Hurikadle)
  • Few cashews/Almonds
  • 3-4 tbsp oil
  • Salt to taste
  • Red chili pwd -1/2 tsp
  • Roasted Dry coconut pieces-2 tsp
  • Salt for taste
  • Sugar -1/4 tsp (opt)
Seasoning
  • 1/2 tsp mustard
  • 1/2 tsp Jeera
  • Few curry leaves
  • Chopped Green Chilies 1-2
  • Hing -pinch
  • Turmeric-pinch
Oil-Frying Poha

Method: In a deep pan, heat the oil fry peanuts and cashew nuts,almonds,white dal and remove on a plate. Fry poha in oil to make crispy, remove from the pan. In a kadai, prepare the seasoning. Heat oil, add mustard seeds and when it starts to pop up, add hing, turmeric, red chillies/green chillies, red chili pwd, curry leaves. Once done, add to the poha and mix well,add salt and sugar, again mix well and then add the dry coconut, cashew nuts, almonds peanut and mix well. Store it in a air tight container.

Ingredients
  • 1 cup Poha
  • Few Peanuts (kadlekayi)

Akki Kadle bele Payasa

Akki Kadlebele Payasa (Rice Chana Dal Kheer) is a very famous and traditional dessert  among the Madhwa families during festival times. Made from rice and chana dal (lentils) with milk, the pudding is very tasty and delicious.

  • Ingredients
  • 1 cup Rice
  • 1/2 cup Chana Dal( kadalebele)
  • 1 cup jaggery grated
  • 1/2 cup milk
  • Few raisins
  • Few cashew nuts
  • Few almonds
  • Elachi pwd-1 tsp
  • saffron
  • ghee-2 tbsp
  • Dry coconut shredded




Method- 



Roast the dryfruits in little ghee and keep it aside. 
Cook the rice and dal in cooker with req qty of water. 
Next melt jaggery on low heat, once the jaggery starts boiling, add the rice dal mix and keep stirring. 
Next add milk, cardamom powder, the cashews and raisins, shredded dry coconut. 
Mix well. Simmer on low heat for 5-10 mins.Add little ghee.
Mix well and serve warm. Enjoy Akki Kadle bele Payasa with your family.

Sabudana Poha Chivda

Ingredients
Sago,Poha,Sabudana,chivda
Sabudana Poha Chivda
  • 1 cup Thin Poha
  • 1/2 cup Sabudana/Sago
  • Few Peanuts (kadlekayi)
  • Few White Dal(Hurikadle)
  • Few cashews/Almonds
  • 3-4 tbsp oil
  • Salt to taste
  • Red chili pwd -1/2 tsp
  • Roasted Dry coconut pieces-2 tsp
  • Salt for taste
  • Sugar -1/4 tsp (opt)
Seasoning
  • 1/2 tsp mustard
  • 1/2 tsp Jeera
  • Few curry leaves
  • Chopped Green Chilies 8-10
  • (or red chilies)
  • Hing -pinch
  • Turmeric-pinch
Oil-Frying Sabudana

Method: In a deep pan, heat the oil fry peanuts and cashew nuts,almonds,white dal and remove on a plate. Fry poha slightly to make crispy, remove from the pan. In a separate pan,add enough oil and fry the sabudana carefully, till they pop, remove on a absorbment paper. In a kadai, prepare the seasoning. Heat oil, add mustard seeds and when it starts to pop up, add hing,turmeric, red chillies/green chillies, curry leaves. Once done, add to the sago-poha  and mix well,add salt and sugar, again mix well and then add the dry coconut, cashew nuts, peanut and mix well. Store it in a air tight container.

Appi Payasa

Appi Payasa is a traditional dessert made in Madhwa homes during festivals. It is very rich and creamy dessert. A milk based pudding very tasty and delicious.

  • Ingredients
  • For Puri
  • Chiroti Rava – 1/2 cup
  • Maida-1-2tbsp
  • Water – for kneading the dough
  • Ghee – 1 tbsp
  • For Kheer
  • Milk – 2 cups
  • Sugar – 1/4 cup
  • Ghee for frying
  • Cardomon powder – 1/2 tsp
  • Nutmeg pwd – a pinch
  • Roasted Cashews/Badam – few
  • Roasted Raisins – few
Method- Roast the cashews and raisins and keep it aside. Boil the milk in a pan on low heat till gets reduced to half.(this will take some time) Keep stirring Add sugar and boil for some more time till it gets thickened.Meanwhile mix chiroti rava and maida, little ghee add water to form the Puri dough. Blend it well. Keep it aside for 1-2 hrs. Next make small puris and fry it in ghee till golden brown and crispyOnce the milk is thickened, crush the puris into small pieces and add it to the milk. Add the roasted dry fruits, elachi pwd and jaiphal pwd.The puris will aborb the sweet milk and it will taste yummy. Serve hot or chilled.

Coconut Barfi / Kobri Mithai

Coconut Barfi / Kobri Mithai or Kopra Pak is a traditional dessert made from coconut and sugar. A delicious and tasty sweet popular in Bangalore.

Ingredients:

       Coconut Barfi / Kobri Mithai 

  • 2 cups Fresh grated coconut
  • 1 cup fine sugar
  • 1/2 tsp Elaichi, pwd
  • 3-4 tbsp Badam pwd 
  • 1-2 tsp Ghee/Butter
  • 2-3 tsp Milk 

Method: In a bowl, add grated coconut and sugar and mix well with hands and keep aside for about 30 mins. Next in kadai, add little ghee and pour this mix into it and saute on low flame. Keep sautéing  till the mixture leaves sides of the kadai. Add elachi pwd, badam pwd and little milk. Mix well and sauté again. Grease a plate with ghee and add the mixture and spread it evenly. Cut into desired shape and Kobri Mithai is ready for serving.

Moong Dal Kheer / Hesarubele Payasa

    Ingredients
    • 1/2 cup Moong Dal
    • 1/2 cup Gur/Jaggery
    • 1 cup-thick Milk
    • 1 tsp - Ghee
    • Roasted cashews-few
    • Raisins-few
    • 1/2 tsp Elachi Pwd
    • Saffron-pinch


    Method-
    Boil the milk in a vessel on low heat.In a pan,heat ghee,add moong dal and saute for 5-10mins.Also saute the cashews,raisins in ghee and keep it aside. Cook the dal .(you can cook it in rice cooker) .In a vessel,add the cooked dal,a
    dd jaggery and mix well ,cook till jaggery melts .Next add boiled milk, saffron mix and simmer for 2-3 mins till the kheer blends well. Add the cashews,raisins, cardamom powder and mix well.Enjoy hot or cold.

  • Method: Mix the flour with sugar, milk, cardamom pwd, little ghee and cover for few hours. Make a chapati shape with the dough. Cut into diamonds or squares using the cutter or knife. Heat oil in a heavy bottom pan.
  • Fry till golden brown and crisp. Enjoy.

Rava Ladoo/ Rave Unde


Rava Ladoo or rave Unde is yummy delicious sweet that can be made very easily.Kids will love it too.

Ingredients:

  • 1cup Chiroti rava 
  • 1/2 cup ghee
  • 2 tbsp. boiled milk
  • 2 cups pwd sugar
  • 1 tsp elachi pwd
  • Few cashew nuts,
  • Few almonds 
  • Few raisins





Method:In a pan fry rava with the ghee until light golden color.
Remove from the heat.Also ,heat little ghee in a pan, fry the cashews, almonds and raisins till light brown add to the rava mix. Add milk,sugar and mix well slowly shape into small balls or ladoos.

Kodubale

Kodubale is traditional snack recipe we all know and have enjoyed  preparing it during festivals.Try it out during kids vacation time.-Crispy and spicy enjoy with hot cup of tea.

Ingredients:

  • 1 cup rice flour
  • 2 tbsp chiroti rava
  • 2 tbsp. dry coconut 
  • 2 tsp. Dhalia (hurgadle / puttani) 
  • 1-2 tbsp. red chilli powder or 7-8 red chilies
  • 2 tbsp. oil/Butter
  • 1 tsp. sesame seeds
  • Hing pinch
  • Salt to taste
  • Oil for frying

Method: Roast puttani,red chillies,coconut,hing and grind it.
Mix rice flour, with ground mix,sesame seeds and salt and mix well. 
Heat oil and add to the mixture. Add water and Knead the dough well.
Take small portion and make kodubale out of it.
Heat oil in Kadai ,deep fry kodubale till golden brown or until fully done.
Drain on paper towel. Store in an airtight container when cool 
or enjoy with tea.

You can also add curry leaves and jeera .

KhusKhus Kheer/Gasagase Payasa

Khus Khus Kheer or Gasagase payasa (ಗಸಗಸೆ ಪಾಯಸ -Kannada) is sweet that can be prepared during festival or just for any normal day. This is made from poppy seeds and is simply delectable.

Ingredients
  • Khus Khus / Poppy seeds-1/2 cup
  • Badam / Almonds - 10
  • Kaju / Cashew - 10
  • Copra / Dessicated coconut - 1/4 cup
  • Elachi /Cardamom powder - 1/2 tsp
  • Sugar / Jaggery - 1 Cup
  • Milk - 1 1/2 cup
  • Saffron - a pinch(opt)

Method

* Fry khuskhus and badam and then grind it into powder. Add coconut and milk and grind (Grinding takes some time) to a fine paste. Boil milk, add the paste, keep stirring well on low flame for some time. Add sugar/Jaggery , cardamom powder.Mix well till the jaggery/sugar dissolves. Garnish with roasted nuts and raisins. Serve this poppy seed kheer hot or cold.

Hayagreeva Payasam

Hayagreeva Payasam is traditional South Indian dish (esp made in Madhwa homes) prepared during festivals. Rich and aromatic sweet made from Chana dal (lentils).


Ingredients-
1. Channa Daal- 1 Cup
Hayagreeva Payasam

2. Jaggery/Gud- 1 to 1 1/4 cup
(as per taste)
4. Khus Khus- 1 Tbspn(opt)
5. Raisins- few
6. Roasted Cashewnuts/Badam- few
7. Cardamom Powder- 5-6 crushed
8. Dry coconut- 2 Tbspns
9. Ghee- 1 tbsp


Method-

Pressure Cook the Channa dal with little ghee till it becomes soft. 
Roast khus khus and dry coconut in a kadai and grind it.(You can also use fresh coconut with khuskhus and grind with milk.) 
Next melt jaggery on low heat, once the jaggery starts boiling, add the channa dal,keep stirring. 
Add the Khus khus and coconut mix, cardamom powder, the cashews and raisins, and then the remaining ghee. Add little milk .
Mix well and serve Hayagreeva warm with ghee.

Basundi is a very easy dessert made from milk. Enjoy this thickened rich, delicious milk dessert chilled.

Ingredients:

• 1 litre Milk (thick)
• 1/2 cup Sugar 
• 1/2 tsp Cardamom Powder 
• 1/2 cup Chopped Dry Fruits (charoli seeds, pistachio, saffron (dissolved)



Method - Boil the milk in a pan on low heat till gets reduced to half.(this will take some time)
Keep stirring.
Add sugar and boil for some more time till it gets thickened. Add cardamom.
Allow it to cool. Garnish with chopped dry fruits. 
Basundi is ready. Enjoy chilled.

Gajar Halwa/Carrot Halwa

Carrot Halwa or Gajar Halwa, all time favored Indian dessert recipe made from fresh carrots slowly cooked in rich milk with sugar and garnished with dry fruits. It is a perfect and easy dessert which is nutritious and healthy as well.

You can enjoy this Carrot Halwa warm and delicious way or  you can add chilled ice cream and double the joy!


Ingredients

  • 4-5 Carrots 
  • 2 cups Milk 
  • 1 teaspoon Cardamom pwd/ Elachi
  • 3 tbsp Ghee 
  •  Dry fruits-Raisins, almonds, pista
  • 2-3 cups Sugar


Method
  • Wash and grate the carrots.
  • Fry the carrots in little ghee for 2-3 mins. Add the milk. Cook on a low flame some time stirring occasionally. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed. Add slightly crushed cardamoms and the raisins. Mix well.
  • Remove the gajar halwa from heat and arrange in a serving dish. Garnish with grated almonds and pistachios. Serve cold or hot.

Spicy Shankarpali / Crunchy Crisps

Enjoy spicy Shankarpali/crunchy crisps with a nice cup of hot tea during kids vacations or festivals.

Ingredients
Spicy Shankarpali
  • 1 cup maida
  • 1 tbsp Rice flour
  • 1 tbsp chiroti rava
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp jeera dhania pwd
  • 1/2 tsp Ajwain
  • 1/2 tsp sesame seeds
  • 1 tsp Jeera/cumin
  • 1 tbsp hot oil
  • Water
  • salt to taste
  • oil for deep frying

  • Method: 
  • Mix the flour with turmeric, chili powder, salt, Jeera, ajwain with 1 Tbsp hot oil, mix well and keep it aside covered for few hours.
  • Make a chapati shape with the dough as thin as possible.
  • Cut into diamonds or squares using the cutter or knife.
  • Heat oil in a heavy bottom pan, Fry till golden brown and crisp. Store in an air-tight container.

Chivda / Poha

Chivda is  a quick and spicy delicious snack enjoyed  just like that. It is a favourite Indian Savory crunchy and flavourful snack mix enjoyed by all. It comes in different regional variants. Enjoy this version. It is a integral part of yearly Diwali Farhaal.

Ingredients:

  • Thin Poha /Avalakki 3 cups
  • Dry coconut 1/2 cup
  • Red chillies  8-10 or
  • Green Chillies 8-10 chopped (it gives diff taste)
  • Peanuts , Cashews
  • Hurikadle/Puttani/White dal
  • Salt to taste
  • Sugar 1/4 tsp
  • Oil   1.5 Tbsp
  • Mustard seeds
  • Turmeric 1/2 Tsp
  • Hing
  • Few Curry leaves


Method:

  In a deep pan heat the oil fry peanuts and cashew nuts, white dal and remove on a plate. Fry poha slightly to make crispy ,remove from the pan. Heat oil add mustard seeds and when it starts to pop up, add hing, turmeric, red chillies/green chillies curry leaves. Once done, add the poha  and mix well, add salt and sugar, again mix well and then add the dry coconut, cashew nuts, peanut and mix well. Store Chivda in a air tight container.

You can add fried crisps as well.

Sevai Kheer / Shavige Payasam

Sevai / Vermicelli Kheer or (Shavige Payasa in kannada) is a popular sweet mostly made across Indian homes.


Ingredients

  • 1 Cup Milk
  • 1/2 Cup Vermicelli
  • 6 tbsp Sugar
  • 1/2 tsp Cardamom Powder
  • few Cashews
  • few Raisins
  • 2 tbsp Badam Power (MTR Optional)
  • 2 tbsp Ghee

Method

Heat a kadai/wok and add ghee and fry the vermicelli till done, next add milk and bring to a boil add sugar,badam powder ,cardamom powder ,keep stirring slowly. Check if vermicelli has cooked throughly . Fry raisin,cashews in a pan with ghee and add to Kheer.Serve hot or cold.
