Aloo Samosa

Aloo Samosa is an interesting spicy, fried snack. Samosas are very popular and tasty and enjoyed by all. There are variety of fillings that is added to make Samosa. This is a simple version with potatoes.

    Aloo Samosa

Ingredients

  samosa filling
  • Potatoes -3 (boiled,grated)
  • Garam masala - 1 tsp
  • Dhania jeera pwd-1 tsp
  • Broken Dhania seeds-1tsp
  • Saunf-1 tsp
  • Jeera  - 1/2 tsp
  • Salt 
  • Lemon juice
  • Corainder leaves
  • Dough
  • Maida flour - 2 cup
  • Ghee/Oil - 4 tbsp
  • Ajwain
  • Salt 
  • Water
  • Oil for frying
  • Method- In a pan, heat oil,add jeera,saunf, broken dhania seeds and fry. Next add the boiled and mashed potatoes and stir. Next add the masala pwd and mix well. Add salt, lemon juice and coriander leaves.
  • Mix the flour with ingredients mentioned under the Dough. Knead it well into semi-soft dough (Just like chapati). Make small balls and keep aside. Make small rolls of dough and roll it into a small circle. Form a cone, add the filing and cover the cone, use little water to close it.
  • Heat oil in kadai, slowly slide the samosas , fry till  golden brown on low heat.
  • Serve Aloo Samosa hot with chutney or ketchup.

French Fries


French Fries is every one's favourite. A perfect recipe for rainy days where you want to eat something chatpata but cannot go out or are just bored to order. So why not make it with your kids at home. 


Healthy, Hygenic, tasty. Enjoy it hot while watching a nice movie.

French Fries

Ingredients

  • Potato -2 large
  • Spices and Salt-as per taste
  • Oil -for frying



Method- Take a fresh potato, clean well and peel the skin. Next cut the corners and cut finger sized fries shaped pieces. It should be like cubes. Soak the cut pieces in cold water for 2-4 hours to remove starch and make the fries crisp. Drain the water out very well. Arrange in tray to dry it off. Heat oil in a pan and deep fry the pieces on low heat. Remove once it starts softening. Once the batch is completed, increase the flame and fry the potatoes again till it turns brown and crispy or once done. Take it out on plate on a tissue, so excess oil gets absorbed.


Add salt and pepper and give it a mix and serve hot with ketchup.

Sabsige Sappu Ambode / Dill Leaves Fritters

Sabsige Sappu Ambode / Dill Leaves Fritters  ( ಸಬ್ಬಸಿಗೆ ಅಮ್ಬೋದೆ )  is yet another fritter variety made from Dill leaves in South India. Easy to prepare. A lentil base with few greens making it healthy and tasty. 

Dill leaves, low in calories, has  anti-oxidant,  disease preventing, and health promoting properties.


Ingredients
  • 1 cup Channa Dal
  • Hing-pinch
  • 9-10 Green Chillies 
  • Salt to taste
  • 1/2 cup coconut
  • Coriander leaves
  • Onions(Optional)
  • few Dill leaves(sabsige soppu) finely chopped
  • Oil for deep frying
  • Jeera-1tsp


Method:


Soak Channa Dal for half an hour.  
Next grind soaked channa dal with jeera, salt, green chillies,
 hing very coarsely with very little water. 
Next add grated coconut, chopped coriander leaves,
chopped dill leaves, onions  and salt to the mixture and mix well. 
Make small balls and flatten it. Set it on a plate. 
In a kadai,heat oil, slowly slide in the ambodes, deep fry till golden brown on both sides. 
Drain on absorbent paper. 

Serve Sabsige Sappu Ambode hot with chutney or sauce 
or enjoy just like that with hot cup of tea or coffee.

Bread Besan Fritters is a interesting recipe made from spicy besan batter with onion.  A yummy and crunchy snack is ready in no time.

Ingredients:
Besan/gram flour-1 cup
Bread slices-4-5
1/2 cup onions (chopped finely)
Green chillies-1-2 
Coriander leaves- few finely chopped
turmeric pwd-pinch
Hing-pinch
Red chilli pwd-1/4 tsp
Garam masala-1/4 tsp
Jeera-1/2 tsp
Carom seeds-1/2 tsp
salt as required
water (mixing the batter)

oil- for frying 


    Method- In a bowl, add mix all ingredients except bread.Add little water and mix well, ensure no lumps are present. It shud be thick not very watery. Cut the bread into halves. Take the bread slices, spread the besan batter on the bread slices, using a knife and spread all over. (or dip the bread in the besan batter ) Next heat oil in a kadai, carefully drop the bread with the batterside. Once it is slightly brown, fry the other side. Serve hot with chutney or ketchup.

    Rice Fritters /Rice Pakoda

    Rice  Fritters / Rice Pakodas  is spicy crisps made from cooked rice. It is tasty crispy and delicious.


    Ingredients-
    Rice Fritters  /Rice Pakoda
    Rice Fritters
    • 1 cup cooked rice
    • 1 tbsp gram flour
    • Green chillies-4-5 finely chopped
    • 1/2 cup onion, finely chopped
    • 1 tsp dhania jeera pwd
    • ½ tsp Bhath pwd
    • ½ tsp Jeera
    • ½ tsp ajwain/oma 
    • few chopped  coriander leaves
    • Salt to taste
    • Hing-pinch
    • Oil for frying
    • Method In a bowl, add all the ingredients except oil and mix together to form the batter  add  water as required.Heat oil in a deep pan. Make small balls and flatten it. Set it on a plate.In a kadai,heat  oil , slowly slide in the pakodas deep fry till golden brown on both sides.Drain on absorbent paper.Serve hot with chutney or sauce.

    Simla Mirch Bhajia / Capsicum Fritters

    Simla Mirch Bhajia (Capsicum Fritters) is a  spicy starter/snack that can enjoyed by all of us. 

    If you are bored with the normal onion /Aloo bhajjis, try this delicious, perfectly flavoured Capsicum fritters.

    Simla Mirch Bhajia / Capsicum Fritters


    Ingredients

    • 1  Large Capsicum cut finely
    • 1-2  tsp red chilli pwd /Bhath pwd
    • 1/2 tsp tumeric pwd
    • 1 tsp Dhania Jeera Pwd
    • 1 tsp of dry mango powder 
    • (Everest Amchur)(opt)
    • 1/4 tsp  garam masala 
    • 1/4 tsp ajwain
    • 3 tbsp gram flour (besan)
    • 1 tbsp rice flour
    • salt for taste
    • Oil for frying


    Method-

    Take a bowl combine all the ingredients and mix well. 
    Add little water, add cut capsicum and mix well ,the flour and capsicum should blend and be well coated and be dry. 
    Heat a little oil and add it to this batter and mix it well.
    Keep it for sometime.
    In a kadai heat sufficient oil for frying. 
    Slowly add the capsicum besan mix in batches in the hot oil. 
    Fry till golden brown on both sides. 
    Drain on absorbent paper. 

    Serve hot spicy, crispy fried Simla Mirch Bhajias with ketchup or chutney of your choice.

    You can enjoy these with simple Rasam Rice too!.. Anyway you like it, you will surely enjoy the taste.

    Baby Corn Bhajia / Baby Corn Fritters

    Baby Corn Bhajia / Baby Corn Fritters is yummy and tasty .Enjoy hot with tea as evening snack.


    Ingredients
    1 cup tender Baby corns
    Oil,to deep fry
    1 cup Besan/Chickpea flour
    1/4 cup Rice flour
    1 tsp Red chilli powder
    1/4 tsp Garam masala
    1/4 tsp Dhania jeera pwd
    Pinch-Turmeric
     1/2 tsp Ajwain / Carom seeds
    2 tsp hot Oil
    Salt to taste

    Method: Steam the baby corn for 10-15 mins.
    Take a bowl combine all the ingredients and mix well. Add little water,add cut baby corn and mix well ,the flour and baby corns should blend and be well coated.Heat a little oil and add it to this batter and mix it well.
    Keep it for sometime.In a kadai heat sufficient oil for frying. Slowly add the besan mix in batches in the hot oil. Fry till golden brown on both sides. Drain on absorbent paper. Sprinkle chaat masala on top .Serve hot crisp bhajias with ketchup or chutney of your choice.

    Potato Bhajia

    Potato Bhajia is yummy and tasty crisps made from potatoes in besan ( seasoned lentil flour batter ) Enjoy sizzling hot with tea just anytime...

    Ingredients
    2 potatoes
    (peeled and thinly sliced)

    For Batter
    1 cup Besan (chick pea flour)
    1 tsp Rice flour
    ½ tsp red chili pwd
    1 tsp bhath pwd
    1 tsp ajwain
    turmeric-pinch
    Salt for taste
    hot oil-/2 tsp

    For Frying
    Oil

    Method: -Take a bowl combine all the ingredients and mix well. Add little water,and make the mix. Heat 1/2 tsp oil and add it to the batter.Add the sliced potatoes to the batterand mix well ,the flour and potatoes should blend and be well coated .
    In a kadai heat sufficient oil for frying. Slowly add the sliced potato besan mix in the hot oil. Fry till golden brown on both sides. Drain on absorbent paper. Serve hot crisp bhajias with ketchup or chutney of your choice.

    Heerekayi Bhaji

    Heerekayi Bajji (Ridgegourd fritters or Turai Pakoda ) is a Bhaji variety normally made in South Indian homes.  Ridge Gourd Pakoda is crispy, yummy and tasty and an easy alternative for the standard mirchi or onion pakodas.

    • 1  Heerekayi sliced 
    • 1 tsp red chilli pwd
    • 1/2 tsp bhath pwd
    • 1/2 tsp tumeric pwd
    • 1 tsp Dhania Jeera Pwd
    • 3 tbsp gram flour (besan/ kadle hittu)
    • Oil for frying
    • Hing-pinch
    • Ajwain-1/2 tsp
    • Jeera-1/2 tsp


    Method-

    Take a bowl combine all the ingredients and mix well. 
    Add little water, add cut ridgegourd and mix well, the flour and ridgegourd should blend and be well coated. 
    Heat a little oil and add it to this batter and mix it well.

    Keep it for sometime. In a kadai heat sufficient oil for frying. Slowly add the besan mix in batches in the hot oil. Fry till golden brown on both sides. Drain on absorbent paper. 

    Serve hot crisp bhajias with ketchup or chutney of your choice.

    • 1 tbsp chiroti rava
    • 4-5 tsp sugar
    • Milk
    • 1 tsp Cardamom pwd
    • Ghee/oil for deep frying

    • Method: Mix the flour with sugar, milk, cardamom pwd, little ghee and cover for few hours. Make a chapati shape with the dough. Cut into diamonds or squares using the cutter or knife. Heat oil in a heavy bottom pan.

    Rava Cutlet / Sooji Cutlet can be made easily with leftover upma. 

    Ingredients


    • 1 cup Veg Upma
    • 1 tbsp chilli powder
    • 1/2 tsp garam masala
    • 1/2 tsp pepper pwd
    • 1/2 tsp red chilli sauce
    • salt to taste
    • oil for frying
    • 1 cup bread crumbs
    • 1 cup corn flour or maida
    • Water



    Method: In a bowl, add the upma, add the masala  pwds, salt, mix well and shape them into small cutlets. Roll it over bread crumbs. Heat oil in a pan and fry the cutlet keep flipping it over until it turns brown and crisp. Serve hot with chutney or sauce/ketchup.


    (you can add few cut bread pieces (soak the bread in water,squeeze the water out and add to the upma mix in case you are unable to  bind the mixture )

    Aloo Bonda / Batata Vada


    Aloo Bonda / Batata Vada (potato fritters) is one favorite snack recipe loved by all. A best bet on a rainy day or a nice evening snack with a hot cup of tea.


    Ingredients
    Batata Vada
    Aloo Bonda / Batata Vada

    1cup gram flour (besan)
    2 tbsp Rice flour
    Salt to taste
    1/4 tsp Garam Masala 
    1/4 tsp dhania jeera pwd
    1 tsp hot oil
    Water


    2 Potatoes (boiled and mashed)
    4-5 Green Chilies (chopped)
    Coriander leaves -few
    Curry leaves-few
    Mustard-1/2 tsp
    Jeera -1/2 tsp
    Chana dal-1/2 tsp
    Urad dal-1/2 tsp
    Hing-pinch
    Turmeric pwd-pinch
    lemon juice-1 tsp
    Oil for frying




    • Method -In a kadai, make the seasoning with mustard, jeera ,chana dal, urad dal, curry leaves, hing, green chillies. Once done add the mashed potatoes, salt and mix well .Make small balls of this mixture. Next in a bowl, add gram flour, rice flour, turmeric powder, little salt, masala pwds, hot oil. Add little water and  make a batter for the vadas. Dip each ball in the batter and deep fry till golden brown. Serve Aloo Bonda / Batata Vada hot with chutney or ketchup.

    Moong Dal Pakoda

    Moong Dal Pakoda (Vada or Fritters) is a spicy snack made from lentils (moong dal) with Indian spices.Enjoy as evening snack.

    • 1 cup split moong dal
    • 1/2 cup chopped onion
    • 5-6 green chillies finely chopped
    • few Coriander leaves chopped
    • Few curry leaves chopped
    • 1tsp cumin/jeera
    • 1 tsp coriander seeds
    • 1 tsp chilli pad
    •  1-2 tbsp grated coconut
    • salt to taste


    Method: Soak moong dal for 3-4 hours or overnight.Grind with little water.Add the other ingredients and mix well.Heat little oil and add to the batter and mix.In a kadai,heat oil,make pakoras and  fry until it becomes golden brown on both sides.Drain on absorbent paper.Serve hot with chutney or sauce.

    Cabbage Pakoda/Cabbage Fritters

    Cabbage Pakoda or fritters is simple and easy. It's crispy, spicy and tasty. 

    One more variety that can be made from the leafy green Cabbage. Try it out.



    Ingredients
    • 1 cup Finely chopped/shredded cabbage
      Cabbage Pakoda,pakora,snacks,fritters

    • 1 cup besan/Gram flour
    • 2 tbsp rice flour
    • 1 tsp red chili pwd
    • 1/2 tsp dhania jeera pwd
    • 1/2 tsp garam masala
    • 2-3 green chili, finely chopped
    • 1 tsp ajwain
    • 1/2 tsp cumin seeds
    • Hing-pinch
    • Tumeric-pinch
    • Few coriander leaves
    • Few curry leaves
    • Water
    • salt for taste
    • oil for frying

    Method-


    Take a bowl combine all the ingredients and mix well. 
    Add little water,add cut cabbage and mix well ,the flour and cabbage should blend and be well coated and be dry.
    Heat a little oil and add it to this batter and mix it well.
    Keep it for sometime.In a kadai heat sufficient oil for frying. 
    Slowly add the cabbage mix in batches in the hot oil. 
    Fry till golden brown on both sides. Drain on absorbent paper. 

    Serve hot crisp bhajias with ketchup or chutney of your choice.

    Onion Bhajia/Fritters

    Onion Bhajia (Fritters) is a favorite spicy starter/snack and is just enjoyed by all of us. The humble "Kanda bhaji"  or pakoda anyway you call it, it is definitely tempting!!!!

    • 1  Large Onion cut finely

    • 1/2 tsp tumeric pwd
    • 1 tsp Dhania Jeera Pwd
    • 1 tsp of dry mango powder

    • 2 tbsp rice flour (opt)
