Tomato Gravy

Tomato Gravy with Idli,tomato kurma,chutney
Tomato Gravy with Idli

Tomato Gravy with Idli is easy to prepare. Just a another side dish for IDLI if you are bored with chutnies. A nice blend of spice and tanginess.


  •  Ingredients
  • 3 Tomatoes (finely chopped) 
  •  1 tbsp Oil 
  •  1/2 tsp Mustard
  •  1/2 tsp jeera
  •  1/2 tsp chana dal
  •   1/2 urad dal
  • Hing-pinch
  •  Turmeric-pinch
  • 1/4 tsp Sugar 
  • Salt (to taste)
  • Curry leaves-few
  • For grinding
  • 1-2 tsp coconut
  • 1-2 tsp sambhar pwd
  •  1 clove
  • 1-2 kalamiri



Method- Grind the items with little mentioned under for Grinding. Next heat Oil in pan,add mustard,chanadal,uraddal,hing,tumeric,curry leaves,chilies and fry for some time. Add chopped tomatoes and  fry well. Once done add salt ,add ground mix and mix well , fry for some time till it thickens. Enjoy with hot idlis.

A perfect weekend breakfast,brunch idea.

Carrot Sevai Upma

Carrot Sevai Upma is  simple and easy breakfast recipe.Colorful and healthy, a lunch box idea for your kids too. Grated Carrots added to vermicelli, a quick fix for your busy day.

Ingredients:
· 2 cups vermicelli
· 1 1/2 cup grated carrots
.  .

Seasoning

· 6-7 green chillies chopped
· few curry leaves
· 1 tbsp oil
· 1/2 tsp mustard seeds
.1/2 tsp jeera
· 1 tsp urad dal
· 1 tsp channa dal
 .Turmeric-pinch
. Hing-pinch
· Salt for taste
. few cashews fried (opt)
· Water
Garnishing
· 1-2 tbsp grated coconut
· Few coriander leaves


Method:
  • Add little oil in a pan,roast the vermicelli well and keep it aside.
  • Next add oil,fry the cashews and keep it aside.
  • Next add mustard seeds, followed by urad dal, channa dal and jeera, hing, curry leaves, chopped chilies, turmeric, and sauté well. Now, add the grated carrots and stir fry well Next add the vermicelli,salt  and add boiled water. Cook till the water evaporates . Add the fried cashews and mix well. Garnish with coconut.
  • Serve Carrot Sevai Upma hot.

    Ambode

    Ambode or Dal Vada (ಅಮ್ಬೋದೆ ) is yet another fritter variety made during festivals in South India. Easy to prepare. A lentil base with few greens making it healthy and tasty.

    Ambode

    Ingredients
    • 1 cup Channa Dal
    • Hing-pinch
    • 9-10 Green Chillies 
    • Salt to taste
    • 1/2 cup coconut
    • Coriander leaves
    • Oil for deep frying
    • Jeera-1tsp


    Method: Soak Channa Dal for half an hour. Next grind soaked channa dal with jeera, salt, green chillies, hing very coarsely with very little water Next add grated coconut, chopped coriander leaves, and salt to the mixture and mix well. Make small balls and flatten it. 
    Set it on a plate.In a kadai,heat oil, slowly slide in the ambodes, deep fry till golden brown on both sides. Drain on absorbent paper. 
    Serve Ambode hot with chutney or sauce or enjoy just like that with hot cup of tea or coffee.

    This is also prepared as part of festival platter. 
    For normal tea time snacks you can add freshly cut onions.

    Navil Kosu Kosambri /Naval kol Salad

    Navil Kosu Kosambri (Naval kol Saladis simple and easy to prepare.A nice blend of raw Naval Kol with spices, coconut and seasonings. Salad is known as Kosambri in Kannada. Navil Kosu / Knol Knol or Naval kol is known as Kohlrabi in English.

    Ingredients

    • Navil Kosu 1 cup (De skinned & shredded)
    • Coconut 3-4 tbsp
    • oil 1 tsp
    • Mustard seeds 1/2 tsp
    • Jeera 1/2tsp
    • Hing pinch
    • Chana dal-1/2 tsp
    • Urad dal-1/2 tsp
    • Curry leaves a few
    • Green chillies 3-4 finely chopped
    • Fresh coriander chopped
    • Salt to taste


    Method: 

    In a bowl add the shredded Navil Kosu, add coconut and mix.
    Meanwhile prepare the seasoning.
    Heat oil in kadai ,add mustard, jeera,chana dal, urad dal,chillies, hing ,curry leaves.
    Once done add to the kosambri mix.
    Add salt and coriander leaves and mix.
    Enjoy this healthy salad with chapati or Rasam rice.

    Chaprada Avare Palya/ ValPadi Bhaji

    Chaprada Avare Palya or Flat Beans Stir fry/ ValPadi Bhaji is awesome combination to be enjoyed with Rasam (Tili Saaru ) rice or Indian Breads. 

    Blended with spices and coconut it tastes delicious. Flat beans are known as Valpapdi in Maharashtra and Chapparada Avare in Bangalore.

    Flat Beans Stir fry/ ValPadi Bhaji / Chapprada Avare Palya 


    • Ingredients
    • Indian Flat beans chopped 1 cup
    • Bhath pwd-2-3 tsp
    • Grated Coconut-3-4 tsp

    • Seasoning
    • 1 tbsp. oil
    • 1/2 tsp. mustard 
    • 1 tsp. chana dal
    • 1 tsp. urad dal
    • 1/2 tsp  jeera
    • Hing-pinch
    • Turmeric-pinch
    • curry leaves-few
    • Salt to taste

    Method:

    Heat oil in a pan. Add mustard, allow to splutter, add chana dal, urad dal, 
    hing.Fry till light brown, then add curry leaves, add the cut vegetables, 
    cover with a lid and cook till ಚಪ್ಪರದ ಅವರೆಕಾಯಿ/ 
    Chapparada Avarekayi are soft.
    Add bhath pwd,salt and mix well. 
    Add grated coconut and mix.
    Serve 
    ಚಪ್ಪರದ ಅವರೆಕಾಯಿ hot with Chapatis/Rasam Rice.

    Puffed rice upma / Kadle Puri Snack

    Puffed Rice upma / Kadle Puri Snack or Bhadang is a quick and easy recipe. Spicy tangy and delicious too. Enjoy this murmura upma with your evening  cup of tea or coffee you will love it.


    Ingredients: 
    Puffed rice upma / Kadle Puri Snack

    • 4 cups puffed rice/kadlepuri (kurmura)
    • 1 onion chopped
    • 1 tomato chopped
    • 1-2 tsp Rasam pwd
    • 1/2 tsp Lemon juice
    • salt 
    • Seasoning
    • Oil-1 tsp
    • Few curry leaves
    • Asafetida/hing- pinch
    • Turmeric-pinch
    • few-peanuts
    • 1/2 tsp mustard
    • 1/2 tsp Jeera
    • 1 tsp urad dal
    • 1 tsp chana dal




    Method: 
    Fry the peanuts and keep it aside. Clean and wash the Kadle puri in water and rinse it out. Keep it aside. Next in a big kadai,heat oil add the items mentioned in the seasoning.Once done add chopped onions,tomatoes, fry well. Next add the puffed rice, salt, rasam pwd, fried peanuts and mix well. Add coriander leaves,lemon juice and serve immediately.

    Avarekai Soppu Palya

    Avarekai Soppu Palya  is a healthy combination of Lima beans/Surti Papdi with Greens. (Dantina soppu is  Amaranth leaves or red leaves commonly used in most houses ) Tempered with hing and chilies it is nutritious and tasty. Enjoy with rice or chapati.

    Ingredients
    • 1 cup boiled Avarekai(lima beans)
    • 1 cup finely chopped greens
    • 1/2 tsp turmeric
    • Salt-taste
    • Water
    • Sambhar pwd-2 tbsp
    • Coconut-1-2 tsp
    • Tamrind paste-1/2 tsp
    Seasoning:
    • 1 tsp oil/ghee
    • 1 tsp mustard seeds 
    • 1/2 tsp jeera
    • 1/2 tsp channa dal
    • 1/2 tsp urad dal
    • hing -pinch
    • curry leaves-few
    • Red chilly-1-2
    • Method :  Cook the greens in water till done. Grind coconut with sambar pwd . Next Add greens, avarekai add the ground paste and mix. Add salt, tamrind paste and mix well. Cook on low heat for 5-10 mins. Heat oil in a pan, add the seasoning items, once done add to the sabzi. Serve hot with white rice or chapati.
    (you can add little boiled avarekalu while grinding and then add to the gravy)

    Onion Chutney Ver II

    Onion Chutney is spicy and makes a good combination with DOSA,IDLI OR CHAPATI.This one is the South Indian taste with ground red chillies and dry coconut.It is delicious.

    Ingredients:
    2-3  onions, chopped
    6-7 dry red chillies 
    Tamarind paste -2 tsp
    Dry coconut grated-1/2 cup
    Salt as per taste

    Seasoning
    Mustard seeds 1 tsp
    Chana dal-1tsp
    Urad Dal-1 tsp
    Curry leaves few
    Menthya seeds-few
    Hing-pinch
    Oil-2 tsp


    Method: Heat the oil,fry onions well .Keep it aside.Next fry red chillies,dry coconut .Grind these with tamarind paste into chutney with very less water Season with the items given.Serve it with hot dosa or idli.

    Avarekai Avalakki

    Avarekai Avalakki (Avarekai Poha) is very simple and easy to prepare.Made from Lima Beans /Surti Papdi , it is yummy and flavorful.Poha (oggarane avalakki ) or seasoned rice flakes are healthy and easy to digest too, just right for all ages.

    Ingredients
    1 cup poha (flaked rice /avalakki) 
    1/2 cup Avarekai(boiled)
    1 tbsp. oil
    1/2 tsp. mustard seeds
    1/2 tsp jeera
    1/2 tsp. Chana dal
    1/2 tsp. Urad Dal
    1/2 tbsp Peanut
    5-6 green chilies, finely chopped 
    Few chopped coriander leaves
    Few curry leaves
    Hing-pinch
    Tumeric-pinch
    Salt to taste
    1-2 tbsp. grated fresh coconut
    1 tsp Lemon Juice


    Method
    Soak the poha in water for 5 minutes. Wash thoroughly and drain the water completely.Heat oil in a pan, fry peanuts and keep it aside then add mustard seeds, after it splutters, add chana dal/urad dal ,jeera, hing, turmeric and stir fry.Add green chillies, curry leaves.Add boiled avarekai, fry it for a while. Add soaked avalakki, salt and mix well.Add coconut ,coriander leaves , lemon juice , mix carefully.Serve hot.

    Balehannu Seekarne Ver II

    Balehannu Seekarne or Banana Shikran in Marathi is delicious quick, fruit dessert that can be enjoyed chilled or as side dish with chapati for kids.This is with jaggery and coconut.


    Ingredients :
    • 1 cup of chopped banana
    • Jaggery as per taste
    • Badam pwd
    • Grated coconut-1-2 tbsp
    • Cardamom pwd-pinch


    Method : Cut the banana into small pieces. In a wide bowl, combine the chopped banana, and cardamom powder ,jaggery and mix well.Top it up with grated coconut . You can enjoy it chilled or eat with chapati.

    • 2 Potatoes boiled and mashed
    • 1 tsp pepper pwd
    • Bread pieces (binding)
    • 1-2 greenchilies finely chopped
    • 1/4 tsp garam masala
    • 1 tsp Red chili pwd
    • 1 tsp dhania jeera pwd
    • Coriander leaves
    • Lemon juice
    • Oil for shallow-frying
    • Salt for taste
    For Serving

    • 1 chopped onion
    • Sev
    • Tomato Ketchup



    Method: Mash the peas and boiled vegetables ,add the masala pwd and salt and mix it well add mashed potatoes,pepper pwd,bread pieces ,coriander leaves,lemon juice and mix well.Take small portion of mix ,flatten it ,pat it well.On a tava,add oil and place the pattice shallow fry till golden brown on low heat.Flip on the other side slowly.Drain on absorbent paper.Next apply some ketchup on the pattice.Add the chopped onions and sev.Enjoy hot.

    Mustard+Menthya pwd-1/2 tsp
    Red chillies - 6-8
    Tamarind paste  - 1/2 tsp

    Curry leaves few
    Oil-2 tsp



    Method:
    Fry menthya,mustard well ,next add red chillies and fry well.Once done , grind it into fine powder.Next heat oil in kadai, add the chopped tomatoes and fry well ,once done add tamarind paste ,add the ground pwd ,salt and mix well.Fry well.Season with mustard seeds,hing,curry leaves.Enjoy with dosa , idlis or Indian Breads.

    Green Moong Paratha

    Moong Paratha is very healthy and nutritious stuffing of Green Moong with spices , a delicious breakfast recipe.A perfect lunch box recipe for kids too.

    Green Moong can be used to make Salads, Curry, Parathas.Try all these options.

    Green Moong Paratha
    Ingredients  
    • Wheat flour  2 cups 
    • cooked and mashed moong 1/2 cup 
    • Red chilly pwd 1/2 Tsp
    • Garam masala pwd 1/2 Tsp 
    • Dhania jeera pwd-1/2 tsp
    • Green chutney-1 tsp
    • Salt to taste   
    • oil  
    • Jeera-few 
    • Ajwain-few
        
    Method

    1.Knead the flour with water, a little salt,oil into a soft dough.Cover it for 4-5 hours.
    2.In a Kadai heat oil, add  jeera.Then add the cooked moong,salt, masala powders, and fry for a while and mix well.Fry till dry set aside to cool. Divide the mixture into balls. 
    3.Make parathas.Heat a skillet (tava) , gently put in the paratha, add oil ,turn on both sides till done. Serve very hot with ketchup , pickle or curds.
