Masala Upma
Masala Upma

Masala Upma is very simple and easy to prepare. This is made using readymade Puliyogare powder. It has a nice tangy and spicy flavor.

Ingredients:


  • Upma Rava/Semolina - 1 Cup
  • Onion- 1 finely chopped
  • Peanuts-few
  • Oil                             - 2 tbsp
  • Mustard                    - 1/2 tspn
  • Chana Dal              -1/2 tsp
  • Urad Dal                -1/2 tsp
  • Jeera                      -1/2 tsp
  • Hing                            pinch
  • Turmeric Powder     pinch
  • Curry Leaves            few
  • Coriander Leaves   few
  • Salt         for taste
  • Dhania Jeera pwd    -1/4 tsp
  • Pepper Pwd            -1/4 tsp
  • Puliyogare Pwd              - 1 tsp


Method: 
Fry the rava until slightly brown and aromatic and set it aside. Boil water. Heat oil in a pan add musturd,cumin seeds when they begin to splutter add channa and urad dal fry  until light brown. Next add hing, curry leaves, Puliyogare pwd, masala pwds and stir fry well. Add fried rava, salt and mix well, add boiling water. Stir until all the water is gone. Reduce the flame and close the lid for 8 to 10 minutes. Garnish with coriander, coconut and serve Masala Upma hot.

Potato Upma

Potato Upma or Alugadde Uppittu, Aloo Upma is the simple upma blended with the boiled potatoes. It is tasty, spicy and filling breakfast. A nice, quick hot breakfast with goodness of potatoes for chilly winter mornings. Upma or Sooji Upma is a semolina based famous and fave South Indian breakfast recipe. #carpediemspicyeats

Ingredients:

  1. Rava or sooji- 1cup
  2. Water - 2 cups
  3. Potatoes-1 cup (boiled and chopped)
  4. Green chillies-6-7
  5. Curry leaves-few

  7. Mustard-1/2tsp
  8. Jeera-1/2tsp
  9. Channa dal-1tsp
  10. Urad dal-1tsp
  11. Hing- a pinch
  12. Turmeric-a pinch
  13. Fresh coriander-few
  14. Lemon juice-1tbsp
  15. Salt to taste
  16. Freshly grated coconut-1/2 cup (opt)

Method:  Fry the rava well until slightly brown and aromatic and keep it aside. Boil water. Heat oil in a pan add mustard, jeera when they begin to splutter add channa and urad dal fry about 2 minutes until light brown. Next add chopped  green chillies, potatoes, hing, curry leaves, and fry well. Once done add fried rava ,salt and mix well next add the boiling water slowly. Stir until all the water is gone.  Add the lemon juice. Close the lid and simmer for 8 to 10 minutes. 
Garnish with coriander leaves and coconut and serve potato rava upma hot.

You can also add Dhania-Jeera Powder/Kalamiri Powder for additional spicy flavor.

Bansi Rave Upittu / Broken Wheat Upma

Bansi Rave Upittu ಬನ್ಸಿ ರವೇ ಉಪ್ಪಿಟ್ಟು or Broken Wheat Upma is simple and easy to prepare. A perfect, filling, nutritious and healthy breakfast recipe. This is made with Wheat Rava is slightly yellowish in color unlike the normal rava/sooji . Enjoy this lapsi Upma hot during the monsoons.

Ingredients:
broken wheat upma / ಬನ್ಸಿ ರವೇ ಉಪ್ಪಿಟ್ಟು
Bansi Rave Upittu / Broken Wheat Upma

  • Bansi rava- 1cup (Broken Wheat )
  • Water - 1- 2 cups (adj)
  • 1/2 tsp Dhania jeera pwd
  • Salt for taste
  • Coconut-2-3 tbsp
  • Ghee-1/2 tsp
  • Seasoning
  • Oil-2 tbsp
  • Mustard -1/2 tsp
  • Hing- pinch
  • Jeera-1/2 tsp
  • Channa dal-1tsp
  • Urad dal-1tsp
  • Cashews-few
  • Curry leaves-few
  • Green chilies-5-6
  • Onions-1/2 cup chopped

Method: Fry the rava for 10-15 mins and keep it aside. Boil water in a separate vessel. Heat oil in a pan add mustard, jeera when they begin to splutter ,add channa dal and urad dal , red chilies fry until light brown. Next add hing, curry leaves, and fry. Add onions and fry well. Next add fried rava, salt and mix well, add hot water. Mix well. Cook till the water is gone. Simmer and close the lid for 2-3 min. Garnish with  coconut and serve Bansi Rave Uppitu hot.

(add more water in case the rava is not cooked well )

Navil Kosu Uppittu / Knol Kol Upma

Navil Kosu Uppittu or Knol Kol Upma or Upit is the simple upma blended with the green Knol Kol. It is tasty spicy and filling breakfast. A nice, hot and healthy breakfast for chilly winter mornings. Navil Kosu or Naval kol is known as Kohlrabi in English.


  • Rava or sooji- 1cup
  • Water - 2 cups
  • Navil Kosu-1 cup (finely shredded)
  • Onion- 1big finely chopped
  • Green chillies-6-7
  • Curry leaves-few
  • Oil-1-2 tbsp
  • Mustard-1/2tsp
  • Jeera-1/2tsp
  • Channa dal-1tsp
  • Urad dal-1tsp
  • Hing- a pinch
  • Turmeric-a pinch
  • Fresh coriander-few
  • Lemon juice-1tbsp
  • Salt to taste
  • Freshly grated coconut-1/2 cup

Method:  Fry the rava well until slightly brown and aromatic and keep it aside. Boil water. Add the lemon juice. Close the lid and simmer for 8 to 10 minutes. Garnish with coriander leaves and coconut and serve Navil Kosu Uppittu /   Knol Kol Upma hot.

Tamarind Upma

Tamarind Upma or Tamarind Upit is simple and easy to prepare.A perfect, filling,healthy breakfast recipe. This is made with Rice Rava (traditionally known as Akkitari uppittu in Karnataka) blended with tamarind and spices. Enjoy this hot during the monsoons.

Ingredients:
Tamarind Poha
Tamarind Upma

  • Rice rava- 1cup (akki tari)
  • Water - 1- 2 cups (adj)
  • 2-3 tbsp. tamarind juice
  • 1-2 tsp grated jaggery
  • 2 tsp Rasam Pwd
  • 1/2 Dhania jeera pwd
  • Salt for taste
  • Coconut-1-2 tbsp
  • Seasoning
  • Oil-2 tbsp
  • Mustard -1/2 tsp
  • Hing- pinch
  • Jeera-1/2 tsp
  • Channa dal-1tsp
  • Urad dal-1tsp
  • Curry leaves-few
  • Red chilies-1-2

Method: Fry the rava for 10mins and keep it aside.In a  pan,add tamarind juice, jaggery, rasam powder, masala pwd, salt, turmeric and little water. Boil for 5-10 minutes.Keep it aside.Heat oil in a pan add mustard,jeera when they begin to splutter ,add channa dal and urad dal ,red chilies fry until light brown.Next add ,hing,curry leaves, and fry.Add fried rava ,salt and mix well next add the gojju and hot water. Mix well.Cook till the water is gone.Simmer and close the lid for 2-3 min.
Garnish with  coconut and serve Tamarind Upma hot.

Rava Bread Toast

Rava Bread Toast is a interesting recipe made from leftover upma , topped on bread . A yummy and crunchy healthy snack is ready for your kids.

Ingredients
  • 4 bread slices
  • 4 tbsp Tomato Upma (Leftover)
  • 1 tbsp chilli powder

  • 1/2 tsp garam masala
  • 1/2 tsp red chilli sauce
  • Butter 

Method : In a bowl, add the upma,add the masala  pwds,salt ,sauce and mix well.
Take the bread slices, apply the tomato upma on the bread slices,using a knife and spread all over.
Next heat a tava, add butter or oil,roast the bread with the upma side.
Once it is slightly brown ,fry the other side.
Serve Rava Bread Toast hot with chutney or ketchup.




 (you can use any upma that is left over, reduce the spice for kids)

You can also add Dhania-Jeera Powder/ Kalamiri Powder for additional spicy flavor.(In case ,the upma seems dry add some more water.)

Lemon Sevai Upma / Vermicelli Upma

Lemon Sevai Upma / Vermicelli Upma is a quick and easy South Indian Breakfast recipe. The lemon flavor makes the Sevai tasty and delicious.


Ingredients
Lemon Sevai / Khara Shavige
Lemon Sevai

  • 2 cups vermicelli
  • 1 cup peas
  • 1 onion chopped 
  •  6-7 green chillies finely chopped
  •  curry leaves-few
  •  1 tbsp oil
  •  ½ tsp mustard
  •  1 tsp urad dal
  •  1 tsp channa dal
  •  1/2 tsp jeera
  •  Salt -for taste
  •  peanuts-few
  •  Water-as per inst
  • 3 tbsp grated coconut
  •  Hing-pinch
  •  Turmeric-pinch
  • Lemon juice-1 tbsp


Method: Add little oil in a pan, roast the vermicelli well and keep it aside. Next add oil , fry the peanuts and keep it aside. Next add mustard seeds, followed by urad dal, channa dal ,and jeera, hing, green chillies, curry leaves, turmeric and sauté well. Now, add onion fry well. Add salt, fried peanuts and reduce the flame. Add the vermicelli and add boiled water. Cook till the water evaporates. Add the lemon juice .Mix well. Garnish with coconut and coriander leaves. Serve hot.

Upma Cutlet is an add-on snack made from the simple upma. Enjoy it hot. Kids will love it too.

Rava Cutlet / Sooji Cutlet can be made easily with leftover upma. 

Ingredients


  • 1 cup Veg Upma
  • 1 tbsp chilli powder
  • 1/2 tsp garam masala
  • 1/2 tsp pepper pwd
  • 1/2 tsp red chilli sauce
  • salt to taste
  • oil for frying
  • 1 cup bread crumbs
  • 1 cup corn flour or maida
  • Water



Method: In a bowl, add the upma, add the masala  pwds, salt, mix well and shape them into small cutlets. Roll it over bread crumbs. Heat oil in a pan and fry the cutlet keep flipping it over until it turns brown and crisp. Serve hot with chutney or sauce/ketchup.


(you can add few cut bread pieces (soak the bread in water,squeeze the water out and add to the upma mix in case you are unable to  bind the mixture )

Khara Bhath or Rava Masala Bhath is an extension of the basic UPMA, with a healthy and nutritious blend of vegetables and spices. A South Indian favourite.. truly filling and delicious breakfast recipe !

Ingredients:
  • Upma Rava/Semolina - 1 Cup
  • Onions                      - 1/2 cup chopped
  • Tomato                     - 1/2 cup finely chopped
  • Green Peas               - 1/2 cup
  • Carrot                       - 1 chopped steamed
  • Bell Pepper               -1 chopped
  • Curry Leaves            few
  • Coriander Leaves   few
  • Green Chilies            1-2 finely chopped chilies
  • Oil                             - 2 tbsp
  • Mustard                    - 1/2 tspn
  • Chana Dal              -1/2 tsp
  • Urad Dal                -1/2 tsp
  • Hing                            pinch
  • Turmeric Powder      - 1/4 tspn
  • Salt         for taste
  • Dhania Jeera pwd    -1/4 tsp
  • Pepper Pwd            -1/4 tsp
  • Bhath Pwd              - 1 tsp
  • Ghee                           -1 tsp
  • Coconut                     -2 tsp

Method: 

Fry the rava until slightly brown and aromatic and keep it aside. Boil water. Steam peas till soft(add little salt) 
Heat oil in a pan add mustard, cumin seeds when they begin to splutter add channa and urad dal fry about 2 minutes until light brown.
Next add hing, curry leaves, green chillies, onion, tomatoes, chopped vegetables , masala pwds and stir fry well.
Add fried rava, salt and mix well, add boiling water. 
Stir until all the water is gone.
Add lemon juice. 
Reduce the flame and close the lid for 8 to 10 minutes.
Garnish with coriander and coconut, spoon of ghee and serve Khara Bhath hot.

BreadUpma / Bread Upit

Bread Upma recipe is quick and easy to prepare-spicy and yummy to taste. If you are bored of sandwiches this is an interesting recipe that can be made with Bread. Healthy and delicious blended with spices and vegetables, it is a quick breakfast delight.


 Ingredients


Bread Upma
  •  Bread 8 slices
  •  (remove sides and cut into small pieces)
  • Onion finely chopped 1
  • Capsicum finely chopped 1
  • Chilli powder 1/2 tsp
  • Coriander powder 1/2 tsp
  • Salt to taste
  • Hing a pinch
  • Turmeric powder a pinch
  • Oil 3 tsp
  • Mustard seeds 1/2 tsp
  • Cumin -1/2 tsp
  • Urad dal 1/2 tsp
  • Chana dal 1/2tsp
  • Curry leaves a sprig
  • Peanut-2 tbsp
  • Coriander leaves few
  • Lemon juice-1 tsp
  • Fresh grated coconut-1 tbsp


Method:


Add oil to pan fry peanut and keep aside next add mustard seeds, cumin, chana dal, urad dal, hing,  curry leaves once done. Add onions and capsicum and fry. Add salt, chilly powder, coriander powder, turmeric powder and fry for a couple of minutes. Add the bread pieces. Garnish with peanuts,chopped cilantro, coconut and lemon juice. Serve hot.


You can use any variety of vegetables (peas,corn ,grated carrot )

  • Urad dal-1tsp
  • Fresh coriander for garnish
  • Lemon juice-1tbsp
  • Salt to taste
  • Freshly grated coconut-1/2 cup

Method: 
Fry the rava until slightly brown and aromatic and keep it aside. Boil water. Steam avarekaalu till soft(add little salt) Heat oil in a pan add musturd, cumin seeds when they begin to splutter add channa and urad dal fry about 2 minutes until light brown. Next add onion, hing,  curry leaves, green chillies and fry. Add fried rava salt and mix well next add boiled avarekaalu, 2 cups of  boiling water. Stir until all the water is gone. Add lemon juice. Reduce the flame and close the lid for 8 to 10 minutes. Garnish with coriander and coconut and serve hot.

You can also add Dhania-Jeera Powder/Kalamiri Powder for additional spicy flavor.

Sevai Upma / Vermicelli Upma

Capsicum Sevai Upma / Vermicelli Upma is enjoyable filling breakfast recipe mainly made in South Indian families. Try it out and enjoy the taste.


Sevai Upma , vermicelli
Capsicum Sevai Upma
Ingredients:
· 2 cups vermicelli
· 1 cup simla mirch chopped
· 1 onion chopped 
· 6-7 green chillies chopped
· few curry leaves
· 1 tbsp oil
· ½ tsp mustard seeds
.1/2 tsp Jeera
· 1 tsp urad dal
· 1 tsp channa dal
· Salt for taste
. few peanuts fried
· Water
· 3 tbsp grated coconut
· Few coriander leaves
. hing-pinch
.Turmeric-pinch


Method:
  • Add 1 tsp oil to a broad pan, when oil is hot, add vermicelli and roast till vermicelli turns golden brown.
  • Keep the vermicelli aside.
  • Next in a pan, add oil. When oil is hot, add mustard seeds, followed by urad dal, channa dal ,and jeera.Meanwhile boil water.
  • Add chopped green chillies, hing ,curry leaves and sauté .
  • Now, add onion,capsicum fry again till onion turns golden brown.
  • Add salt,  and reduce the flame. Add the vermicelli and add boiled water.
  • Cook till the water is absorbed.
  • Garnish it with fried peanuts,coriander leaves and coconut and serve hot.

Sabudana khichdi / upma

Sabudana Khichdi or Upma can be made during fasts, else as filling breakfast for a good start of your day.Absolutely delicious and tasty,try it out!!. An easy gluten free vegan delight!



Ingredients
Sabudana Khichdi / Upma , spicy tapioca , sago
Sabudana Khichdi / upma

1 cup sabudana(sago) 
5-6 Green Chillies finely chopped
Few peanuts fried
1 boiled and peeled potato
1 chopped onion (exclude if fasting)
2 tsp Oil
1 tsp Jeera /Cumin seeds
1 Pinch Hing (asafoetida) 
1/2 tsp mustard seeds
1/2 tsp chana dal
1/2 tsp urad dal
2 tbsp grated fresh Coconut
1 tsp Lemon juice 
Salt to taste 
Coriander leaves-few
Curry Leaves-few


Method
  • Wash the sabudana in water 2 -3 times. and soak it in water for about 3-4 hours in water and use it when they become soft and double in volume.
  • Heat the oil/ghee in a pan fry peanuts and keep it aside,next add cumin seeds,mustard seeds,chana dal urad dal and hing. Once done add the green chillies and curry leaves.
  • Add the chopped potatoes and onion and stir well. Let them cook till they are light brown on the outside. Add sabudana mixture and mix gently. Let it cook for 10 - 15 mins .
  • Then add fried peanuts,and salt.Mix well.
  • Add the grated coconut  (opt) and garnish with coriander leaves.
  • Sprinkle some lemon juice over it and serve hot
