Ambe Dal

Ambe Dal recipe is perfect for brightening up your lunch with its refreshing raw mango flavor goodness of legumes. A must try recipe during the mango season. A blend of raw mango into the soaked and healthy legume is rich in nutrients.

Ingredients:

  • 1 cup soaked Chana Dal
  • 1 medium-sized raw mango, shredded
    Ambe Dal

  • Seasoning
  • 2-3 red chilies, slit lengthwise
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • 1/2 teaspoon turmeric powder
  • Curry leaves few
  • Salt to taste
  • 1 tablespoon oil
  • A handful of fresh coriander leaves,
  • chopped, for garnishing
  • Fresh Coconut-1/4 cup

Method: Wash the Chana Dal and soak it for 1-2 hours. Next grind it coarsely with very little water Next add grated coconut, grated raw mango, chopped coriander leaves, and salt to the mixture and mix well.  Prepare the seasoning. Heat oil in a kadai, add the mustard, jeera, hing, curry leaves, red chilies. Once done, add it to the mixture. Mix well and serve. Enjoy Ambe Dal- the tangy and flavorful, traditional Maharashtrian dish!

Capsicum Aloo Stir fry 2

Capsicum Aloo Stir Fry is a spicy side dish for Indian breads. A blend of green chilies, shredded raw mango, coconut is added to capsicum. 

Capsicum or Bell Pepper / Simla Mirch is a vegetable where we can keep experimenting various combinations. 


Ingredients
Seasoning
  • Mustard seeds 1 Tsp
  • Cumin seeds /Jeera 1 Tsp
  • Hing-Pinch
  • Urad Dal 1/2 tsp
  • Chana Dal 1/2 tsp
  • Turmeric-pinch
  • Curry leaves-few
  • green chiles -4-5 finely chopped
  • Shredded raw mango -1/2 cup
  • Coconut-1/4 cup

Method- 

Heat oil for in a frying pan over moderate heat. Add items mentioned in seasoning Once done add capsicum, potato slices and saute for 1 - 2 min. Once done add shredded raw mango, green chilies, coconut to capsicum and stir-fry over low heat for 5 - 7 minutes till capsicums are tender. Add salt mix well.

Serve Capsicum Aloo Stir fry 2 hot with chapati or rice.

Mango Kulfi

Mango Kulfi  is a rich, delicious and creamy dessert and a must have recipe during the mango season. It is flavourful and tasty way to enjoy the sweet ripe mango. Kulfi is made from cooking the milk and reducing the quantity to thick consistency. A perfect way to enjoy the Summers with the goodness of mango.
Ingredients

  • 1 Cup Mango Puree
  • 1/2 cup cut mangoes
  • Few Saffron Strands Soaked in milk
  • 1.5  Cup Milk
  • 1/2 cup sugar
  • 1/2 Tsp Cardamom Powder
  • Dryfruits for garnish







Method-

Wash and peel mangoes and cut them into cubes. 
Blend it into a  smooth puree. In a vessel boil milk. Keep stirring continuously, reduce the flame and cook for 30-40 minutes stirring from time to time till the mixture becomes thick and creamy. Add sugar and mix. Add soaked saffron, dry fruits and cardamom powder. Remove from fire and let it cool. In a bowl or kulfi moulds, add the puree, pour this creamy milk mixture and top it up with few cut mango pieces. Freeze it for 3-4 hours or till it sets well. Remove from the mould and Enjoy chilled.

Mango Loaf Cake

Mango Loaf Cake - Do try it out, easy and delicious, especially when it is the Mango season It's fresh and has a nice taste. Kids will love it too. So for a perfect tea time or for your kids lunch box, check this moist healthy and flavorful Mango Loaf Cake.

 I am trying my hand at baking, so there are more to come! Watch out !


Ingredients
  • All purpose flour - 1.5 cup 
  • Baking Powder - 1 tsp
  • Baking Soda - 1/2 tsp
  • Sugar - 3/4cup
  • Thick Yogurt - 2 tbsp
  • Milk-1/2 cup
  • Vegetable Oil - 1/4 cup 
  • Mango Pulp blended-1/2 cup
  • Vanilla essence-1/2 tsp

Method -  Preheat the oven to 180ºc. Prepare the baking tray by lining with parchment paper. Next sieve the flour, baking powder, and baking soda well. In a bowl, mix sugar, milk, blended mango pulp and curds and blend well.  Once it is mixed well, add the flour mix slowly and fold in carefully. Do not over mix. Add the batter to the baking tray. Bake it for 30 mins. You can insert a toothpick, to check if the cake is done well.

Once done, let it cool, slice and serve. Enjoy yummy and delicious Mango Cake.

Mango Dal

Mango Dal is an interesting combination made using raw mango and Tur dal. This healthy recipe can be enjoyed  with chapati or hot rice. It is an interesting variation during the mango season. Enjoy.


Ingredients:
  • 1 cup tur dal
  • 1/2 cup grated raw mango 
  •  pinch turmeric pwd
  • 1-2 green chillis, 
  • salt to taste
  • 1 1/2 -2 cups water
Seasoning
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • few fresh curry leaves
  • 2-3 tsps oil

  • Pinch Hing
Method-Cook dal in pressure cooker along with turmeric pwd. Prepare seasoning, add this to the cooked dal.Add grated raw mango and salt. Mix well and let it simmer on low heat. Enjoy hot with chapati or rice.

Raw Mango Bisi Uppinakayi

Raw Mango Bisi Uppinakayi is an instant pickle easy to prepare.Enjoy this tangy pickle with chapati or rice.

Ingredients
  1. 2-3  raw mangoes cut in to small pieces
  2. 2 tbsp red chilli powder
  3. 1/2 Tbsp Sasive /Mustard seed powder
  4. 1/4 Tbsp Menthya / fenugreek seed powder
  5. 1/4 tbsp hing
  6. A pinch of turmeric powder
  7. Salt as per taste
  8. Jaggery as required
  9. 1-2 Tbsp oil
  10. 1/2 tsp Mustard seeds 
Method: You can grind mustard and Fenugreek seeds in a mixer and use it fresh.Roast the mustard and menthya , dont burn it.Once cool , grind it.Next in a pan, add oil , mustard seeds and allow it to crackle. Add turmeric powder and hing. Next add cut pieces of raw mangoes and fry it Add the ground masala pwd ,salt , red chilli powder, jaggery and cook it till the mangoes are soft and the masalas are blended well.Enjoy !

Poori with Aamras / Mango Seekarne

Poori with Aamras / Mango Seekarane- is a combination of Hot Poori with cold Aamras, one delectable recipe that can be enjoyed during weekends in Mango season.

Poori with Aamras / Mango Seekarne

Ingredients:

  • 1 big cup Mangoes (medium sized)
  • 1/2 cup Milk
  • 1/2 tsp Powdered Cardamom/Elaichi
  • Sugar, as per taste
  • Saffron strands-few

Method : 

Peel the skin off the mangoes and cut into very tiny pieces else add them in mixer and grind one round or just squeeze the pulp with your hands, any way you like it. 

It will taste yummy.

Next add sugar, elaichi powder mix well and keep aside.

Just before serving, add the cold milk and mix well.

Add into small bowls and serve with hot pooris/chapatis or enjoy just like that.

Maavinakayi Chitranna /Raw Mango rice

Maavinakayi Chitranna /Raw Mango rice is tangy and spicy mix of raw mango with ground red chilies and coconut.Exclusive South Indian rice variety  during the mango season ಮಾವಿನಕಾಯಿ ಚಿತ್ರಾನ್ನ - enjoy it hot.

Ingredients
Rice -1 .5 cup (cooked )
Raw Mango grated-1 cup
(keep few aside for garnishing)
Red chillies-7-8 (both varieties)
Mustard-1 tsp
Coconut-2 tbsp
Oil
Peanuts-few

Seasoning
Mustard-1/2 tsp
Chana dal-1/2 tsp
Urad Dal-1/2 tsp
Hing-pinch
Curry leaves-few
Turmeric-pinch
Oil-1 tsp


Method
Cook the rice and spread the rice on a plate.
Grind  raw mango pieces  along with  grated  coconut,red chillies and mustard with little water.Heat oil in a pan,fry peanut till brown in color,keep it aside.Add all items under seasoning,Next add the  ground mixture and fry well.Next add rice and salt,peanuts and raw mango shreds for more tangier taste and mix well..Serve hot.

Fruit salad is a healthy and favorite of kids and elders alike. Make your own mix today. Enjoy nutritious and delicious salad with ice-creams and dry-fruits.

Ingredients :
  • Fruits - A bowl of mixed fruit 
  • ( Apple, Banana, Mangoes, Orange)
  • Vanilla Ice cream - 1 scoop
  • Honey - 1 tsp
  • Dryfruits-few
  • Lemon juice-1/2 tsp
Method-  Mix the fresh chopped fruits (sans skin) and honey in a bowl, top it up with ice cream and dry fruits. Sprinkle fresh lemon juice over the top. Serve chilled.

You can put fruits of your choice.

Ugadi / Gudipadwa

  Ugadi is the New Year as per the Hindu Calender. It means starting of a new Yuga or period. This festival normally comes during the month of March or April.People from all over Karnataka and Maharashtra celebrate this festival with much enthusiasm and splendor In Maharashtra , the festival is known as Gudipadawa.
      People decorate their homes ,front door and puja rooms with flowers, rangoli and Mango leaves.(Toran) . Food, as always occupies an important place in this festival too. Special dishes are prepared and enjoyed by everyone in the family .People go to temples , take blessings from elders. An important part of Ugadi festival in Karnataka is "Bevu Bella" . People eat  jaggery  and neem leaves together in this festival to mark the presence of sweet and sour events in their lives.On the next day of Ugadi people go to temples,wear new clothes.

Summer Specials

Summer in India is hot and humid.The heat drains us out and hence eating healthy and staying cool is mandatory.

Few pointers:  (all of us are aware but just to refresh our minds)
  • Drink plenty of water and stay hydrated.  
  •  Eat light food that helps in easy digestion - so less oil ,less spice and less junk.
  • Reduce tea / coffee 
  • Eat at regular intervals.
  • Avoid spicy, fried and extremely salty food.

Mavinakayi Avalakki / Raw Mango Poha

Mavinakayi Avalakki or Raw Mango Poha is spicy and quick breakfast recipe.Poha (Oggarane Avalakki ) is easy to cook, adding vegetables to it makes it more nutritious and tasty.This one is with raw mango and gives it a nice tangy spicy taste. Enjoy !!

Mavinakayi Avalakki,Raw Mango Poha
Mavinakayi Avalakki
Ingredients:

1 cup poha ((flaked rice /avalakki)
1 capsicum (finely chopped) (opt)
5-6 green chillies, finely chopped
3-4  tbsp. grated raw mango shreds
Salt to taste

For Seasoning:
1 tbsp. oil
1/2 tsp. mustard
1/2 tsp.Jeera/cumin seeds
1 tsp chana dal
1 tsp. Urad dal
2 tsp. peanuts
Hing- a pinch
Curry leaves-few
Turmeric pwd-pinch

For Garnishing

1 tbsp grated fresh coconut
Few coriander leaves


Method: Soak the poha in water for 5-10min. 
Wash  and drain the water completely.
Heat the oil in the pan, fry the peanuts and keep it aside .
Next add seasonings and fry till done.
Add green chillies and capsicum and stir fry.
Once done add the poha and mix well.
Add salt, coconut ,raw mango shreds peanuts and coriander leaves to the poha.
Mix well  and serve hot.

Mango Banana Milk Shake

Mango Banana Milk Shake is healthy and tasty drink. Enjoy this healthy mix of fruits as after school snack for kids.

Ingredients
  • Ripe Mango - 1
  • Banana-1
  • Milk - 1 cup 
  • Sugar - 2-3 tsp 
  • Elachi pwd-pinch

Method- Peel the mango and banana. Chop into small pieces. Add along with other  items in blender. Blend till smooth. Serve chilled.

    Mango Sheera

    Mango Sheera or Mango Kesari is yummy flavored sweet that can be made in very less time. Enjoy this delicious dessert during mango season along with your kids. Sweet and warm Sheera blended with fresh mangoes puree, garnished with dryfruits makes it a perfect dessert recipe.

    cup Chiroti rava (semolina or sooji)
     cup Milk
    cup Ghee
    2
    tbsp Raisins


    cup  Sugar 
    Few Cashew nuts/Badam 
    1 tsp  Cardamom Powder/ kesar
    1/2 cup thick mango pulp


    Method
    • Roast rava in the ghee till aromatic
    • Add sugar and warm milk and lower the flame. Add the mango pulp. Simmer and cover with lid till it blends in. 
    • Add raisins and cardamom powder to garnish.
    • Add fried cashew nuts/Badam and  kesar (opt)
    • Enjoy with little ghee on the top.

    Raw Mango Chutney

    Mavinkayi/Raw Mango chutney is appealing and tangy flavored. This south Indian flavoured mavinakayi chutney makes a great combination for any fried snack, Chapati or Dosa.

    Ingredients

    • 1 cup Grated Raw Mango 
    • 6-7 green chilies
    • Coconut-1-2 tbsp
    • Salt as per taste
    • Chopped Coriander leaves-1/2 cup

    Seasoning


    • 1/2 tsp Mustard
    • 1/2 tsp chana dal
    • 1/2 tsp urad dal
    • 1/4 tsp menthya
    • Hing pinch
    • Curry leaves few


    Method - 
    Blend together the grated mango,chilies,salt ,coconut,coriander leaves into fine paste. Heat oil in a pan add mustard, chana dal,urad dal add hing and curry leaves once done add to the chutney. Fry the chutney for 2-3 mins. Enjoy it with hot chapati or dosa.
