Mix Vegetable Rice is an easy one pot meal .
Healthy and nutritious blend of variety of vegetables with rice.
Ingredients:
1 cup chopped mixed vegetables,
(beans,Potatoes, carrots, capsicum , peas)
1/2 tsp. mustard
1/2 tsp.chana dal
1/2 tsp. urad dal
Hing-Pinch
Curry leaves-few
Turmeric-pinch
1 tbsp. lemon juice
2 tbsp. oil
Salt to taste
2 tbsp. Bhath Powder
grated dry coconut-2 tbsp
Roasted cashews-few

Method:
Cook rice and Spread it on a plate.
Heat oil , add mustard seeds, after it splutters ,add chana dal,urad dal,hing,curry leaves, turmeric and fry until golden brown. Add the vegetables and stir fry well till it becomes crisp,next add bhath powder, salt and mix well. Fry for 5-10 minutes.Add rice and mix well.Add coconut mix well.Serve hot with raita and papad.
