Sweet Corn Aloo Masala

Sweet corn Aloo Masala is a simple yet flavorful corn, potato, and mixed veggie dish a comforting staples for your warm home made Rotis and Parathas. Sweet corn adds a burst of freshness, potatoes bring that soft bite, and seasonal veggies round it give the color and crunch. Lightly spiced with classic Indian masalas, this dish is wholesome, and ready in under 30 minutes.

Ingredients
  • Capsicum (Bell Pepper)-1 large chopped 
    Sweet Corn Aloo Masala

  • Potato -1 large chopped 
  • Sweet corn-1 cup
  • Tomato-1 chopped
  • Onion-1 chopped
  • Oil 3 Tbsp
  • salt to taste
  • Sabzi Masala-1.5 tsp
  • Garam Masala-1 tsp
  • Shredded Amla -2 
Seasoning
  • Cumin seeds /Jeera 1 Tsp
  • Hing-Pinch
  • Turmeric-pinch
  • Curry leaves-few
  • green chiles -1-2 finely chopped

Method- 

Heat oil for in a frying pan over moderate heat. Add items mentioned in seasoning Once done add potatoes and fry well. Next add capsicum, tomato, onion and sweet corn. Sauté well till done. Next add shredded amla, green chilies, and stir-fry over low heat for 5 - 7 minutes till veggies are tender. Add salt and the masala pwds and mix till the veggies are coated well and done.

Serve Sweet Corn Aloo Masala hot with chapati or rice.

Aloo Naan

Aloo Naan brings together the best of both worlds – the soft fluffiness of naan and the comforting, savory goodness of mashed potatoes. Whether you’re dipping it in your favorite curry/gravy or simply enjoying it with a cup of yogurt, this Aloo Naan is a dish that never disappoints.

Let's learn how to make this !
Ingredients

All purpose Flour- 3 cups
Salt-1 tsp
Curds-1/2 cup
Milk- 2tbsp
Ghee- 2 tbsp
Potato- 4 (boiled & mashed)
Chili Flakes
Oil-2 tbsp
Butter-2 tbsp
Baking Powder-1 tsp
Chopped Corianders leaves





Method

In a bowl, take the flour, salt, baking powder and mix.
Next add the other ingredients slowly and keep mixing with your fingers, 
add mashed potatoes and knead it well to form a soft dough.
Add more milk only if required.. Cover and keep it aside for 1/2 hour. 

Next make small balls of the dough. Take a ball, add coating flour, using a rolling pin, make the naan. It should not be too thin.

Carefully place it on the tava, cook/ roast it well on both sides. 
Apply butter well. Enjoy Aloo Naan hot with gravy of your choice.

Aloo Puri
 
  • Ingredients
  • Puris (used for Pani Puri)
  • 1 cup sev
  • 1-2 potato, boiled and grated
  • 1 onion finely chopped
  •  chopped coriander leaves
  • 1 green chili chopped (optional)
  • Green chutney
  • Sweet  chutney
  • 1-2 tsp red chili pwd
  • 1-2 tsp cumin pwd
  • 1-2 tsp chaat masala
  • Masala Gravy

  • Method: 
  • Grate the potatoes ,add masala pwd, salt and mix well. 
  • Align the puris on a plate. Make small opening in each puri, stuff it with potato filling carefully.
  •  Add onions, add the masala powders, next add the chutneys, next add the masala gravy, sprinkle sev on top and garnish with coriander leaves. Enjoy immediately.
  • Adjust the spices and salt as per your taste preferences.

Method
- In a kadai, heat oil and saute cumin seeds.

Add turmeric, and fry, add chopped potatoes and roast really well.
Add masala pwd, Pudina chutney, lemon juice, salt and coriander. Mix well.
Serve Chutney Wale Aloo hot with chapatis or rice.

Aloo Mutter Paneer


Aloo Mutter Paneer is a delicious and flavorful side dish that goes perfectly well with Indian Breads or rice. A combination of soft potatoes and rich paneer and fresh green peas in spicy onion and tomato blend make this one tasty gravy.

  • Ingredients
  • 1 tsp jeera
  • 1 bay leaf
  • 1⁄2 teaspoons ginger garlic paste 
  • 1 tsp dhania-jeera pwd
  • 1 tsp red chilli powder 
  • 1 tsp garam masala
  • 1 tsp sabzi masala
  • 1 cup potato cubes
  • 1/2 cup paneer cubes
  • 1 cup Fresh green peas-steamed
  • coriander leaves, to garnish 
  • Oil-3 tbsp
  • 1 tbsp cream

    To Grind 
  • Few cashews (soaked in water)
  • 1-2 Green Chilies
  • 1 small elachi
  • 1/2 inch cinnamon
  • 1/2 cup chopped Onion
  • 1/2 cup tomato 

Method- In a kadai, add oil and roast the cubed potatoes well, keep it aside. Next add the paneer, add pinch of masalas and roast well. Next in kadai, add the items mentioned under to Grind.. Roast well. Let it cool. Next grind all the items into fine paste. Add oil in a pan, add the cumin seeds. Next add the chilly powder, garam masala, ground paste and keep stirring. Next add fried potato cubes and paneer cubes. Add steamed peas. Add salt, and mix well. Top it up with cream  Cook till the gravy thickens. Serve Aloo Mutter Paneer hot with Indian Bread of your choice.

Ingredients

 
  • 1 cup Chana Dal
  • Hing-pinch
  • 5-7 Green Chillies 
  • Salt to taste
  • Turmeric-pinch
  • Coriander leaves
  • Ginger shreds few
  • 1 onion finely chopped
  • 2 potatoes washed and shredded
  • Oil for deep frying
  • Jeera-1tsp
  • Crushed Peanuts-few

Method:


Soak Channa Dal for half an hour.  
Next grind soaked channa dal with jeera, salt, green chillies, ginger
 hing very coarsely with very little water. 
Next add grated potatoes, crushed peanuts, chopped coriander leaves,
onions, and salt to the mixture and mix well. 
Make small balls and flatten it. Set it on a plate. 
In a kadai, heat oil, slowly slide in the vadas deep fry till golden brown on both sides. 
Drain on absorbent paper. 

Serve flavourful and crispy Aloo Dal Vada  hot with chutney or sauce 
or enjoy just like that with hot cup of tea or coffee.

Potato Rava Vada

Potato Rava Vada/  ರವೆ ವಡೆ  is crispy, yummy fried snack of South India. Enjoy with hot cup of tea or coffee. Rava vada is a fave delicacy of Karnataka!

Whether you're preparing it for a family gathering, a quick evening snack, or a special celebration, these vadas are sure to win hearts with their irresistible taste and texture. This is potato version sans onion. Do try it out.

Ingredients:

Potato Rava Vada
  • Rice flour-1 tbsp
  • Maida-4 tbsp
  • Chiroti rava-1/2 cup
  • Finely chopped coriander leaves
  • Curry leaves few
  • Finely chopped green chilies-5-7
  • Finely shredded potato 1 cup
  • Jeera -1 tsp
  • Oil for frying
  • Curds-2 tbsp
  • Salt to taste


Method:


Wash and peel and grated the potatoes. Soak in water for 10 mins. 
Next in a bowl, add rice flour, maida  and rava, curds, salt, shredded potato, chilies, coriander and jeera add very little water, if req and mix to form the dough. 
Apply oil to aluminum foil and take a small amount of dough and pat it into small vadas. 
Heat oil in kadai, slowly pick it up and slide into the oil. 
Fry well till golden brown on both sides. 
Drain them on absorbent paper. 

Enjoy  potato rave vade hot with chutney or just like that with a cup of tea/Coffee. 


(you can pat into thin vadas or keep it thick, it will taste well)

Potato Dosa

Potato Dosa is an unique twist to your traditional dosa. Enjoy this spiced up aloo dosa when you are bored with the ordinary one! It is tasty and delicious.


Ingredients:
  • Dosa batter 2 cup
    Potato Dosa, Aloo Dosa
    Potato Dosa

  • Coriander leaves
  • Jeera-1tsp
  • Oil
For Potato mix
  • Potato boiled and mashed 1 cup
  • Green Chilies-4-5
  • Red chili pwd-1 tsp
  • Salt for taste
  • Oil-1 tsp
  • Mustard seeds-1/2 tsp
  • Curry leaves-few
  • Jeera-1/2 tsp



Method: Heat a little oil in a pan.  Add the mustard seeds, jeera, once done add green chillies, and fry well. Next add the boiled and mashed potatoes, salt, curry leaves, red chili pwd and mix. Mix thoroughly and cook for a few minutes. Add this to the ready dosa batter.  Mix really well. Heat a tava. Add oil. Pour a ladleful of the batter onto the hot pan. Spread it out in a circular motion to form a thin, even layer. Spread well. Add oil around the sides and cook until it is brown. Slowly flip over and let it cook well on the other side. Carefully remove it on a plate.


Serve crispy Potato Dosa  hot with chutney.

Aloo Vada

Ingredients
 
1cup gram flour (besan)
Vada Pav

2 tbsp Rice flour
Salt to taste
1/4 tsp Garam Masala 
1/4 tsp dhania jeera pwd
1 tsp hot oil
Water


2 Potatoes (boiled and mashed)
4-5 Green Chilies (chopped)
Coriander leaves -few
Curry leaves-few
Mustard-1/2 tsp
Jeera -1/2 tsp
Chana dal-1/2 tsp
Urad dal-1/2 tsp
Hing-pinch
Turmeric pwd-pinch
lemon juice-1 tsp
Oil for frying

  • Method -In a kadai, make the seasoning with mustard, jeera ,chana dal, urad dal, curry leaves, hing, green chillies. Once done add the mashed potatoes, salt and mix well .Make small balls of this mixture. Next in a bowl, add gram flour, rice flour, turmeric powder, little salt, masala pwds, hot oil. Add little water and  make a batter for the vadas. Dip each ball in the batter and deep fry till golden brown. Keep it ready in a plate.

Ingredients: 

Pav - 8
Butter- for toasting
Green Chutney
Sweet Chutney
Dry Garlic Chutney (opt)


Serving Method:

Slice each pav horizontally .Spread green chutney on one side of the pav and tamarind chutney on the other side. Place a Aloo Vada between the pav halves. Add dry garlic chutney on top if req. Close the pav and press to seal. On a tava, add butter , roast the assembled Vada pav on the tava lightly. Your home made Vada pav is ready for serving. You can enjoy Vada Pav just like that or with chutney and sauce.

Potato Peas Stir Fry / Aloo Matar Dry Sabzi

Potato Peas Stir Fry /Aloo Matar Dry Sabzi is a delicious combination prepared with blend of spices. Simple and tasty. Enjoy with Chapati or Pooris.

 
Ingredients
2 Potatoes, boiled
1 onion finely chopped
1/2 cup green peas steamed
Aloo Matar Dry Sabzi
1 tsp Mustard
1/2 tsp chana dal
1/2 tsp urad dal
Hing-pinch
½ tsp Turmeric
2 tbsp Bhath pwd
Few Corianderleaves
Few Curry leaves
Lemon juice
2 tbsp Oil
Salt to taste

Method: 

Chop the boiled potatoes. 
Heat Oil in pan, add mustard, chanadal, uraddal, hing, tumeric, curry leaves, and fry for some time. 
Add onions and peas and fry well. 
Next add potatoes, Bhath powder, salt and mix well, fry for some time. 
Garnish with coriander leaves and lemon juice.

Serve Potato Peas Stir Fry hot with chapati/puris.

Peas Potato Green Gravy


Peas Potato Green Gravy is an interesting accompaniment - a South Indian version. You can enjoy it with rice or Indian Breads. 

This delicious creamy peas gravy/curry is a blend of Indian spices with onion, and coconut.  

 
Ingredients

  1. 1 cup peas steamed
  2. 2 boiled potatoes (cut into cubes)
    Peas Potato Green Gravy
  3. 1 tomato chopped
  4. 1/4 tsp turmeric powder
  5. 3 tsp cooking oil
  6. 1/4 tsp mustard seeds
  7. 1/2 tsp urad dal
  8. 1/2 tsp chana dal
  9. Hing a pinch
  10. 4 - 5 curry leaves
  11. Salt as per your taste

To grind

  1. 1/2 cup grated coconut
  2. 1 onion chopped
  3. small piece ginger
  4. 1 tsp coriander seeds
  5. 1/2 tsp cumin seeds 
  6. 2 tbsp putani /roasted dal
  7. 1 tsp poppy seeds
  8. 2-3 green chili
  9. 1/2" cinnamon
  10. few cloves
  11. few cashews
  12. 2 tbsp coriander leaves  
Method - 

Roast the ingredients from 2-5 mins with little oil. 
Next grind all ingredients along with spices. 
In a pan heat a tsp of oil and add mustard, chana dal, urad dal once done, add curry leaves, hing and turmeric. 
Add  tomatoes and fry well. 
Next add the steamed peas and boiled potatoes. 
Mix. Add the grounded paste and mix well. 
Bring it to boil. Add salt. Simmer on low heat for 3-4mins. 

Cover and let the gravy blend well. 

Serve Peas Potato Green Gravy hot with puris or chapatis or rice.

Aloo Fry Masala Rice

 Aloo Fry Masala Rice or Roasted Aloo Rice  is made from simple potatoes roasted in oil and blended in Bhath powder into a nice spicy delicious rice.  Ready to eat meal in less time. Perfect for lunch box too. Kids will love it.



  • 3 big Potatoes
  • 1/2 tsp Mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/2 tsp jeera
  • Hing-pinch
  • Turmeric-pinch
  • 2-3 tsp Bhath pwd
  • 1 tbsp besan
  • 2 tbsp Oil
  • Salt to taste
  • 1 cup rice.

Method: 

Cook rice well and spread it on a plate.
Cut the potatoes in small pieces. 
Heat Oil in pan, add mustard, chanadal, 
uraddal, jeera, hing tumeric, curry leaves, 
and fry for some time next add the potatoes and fry. 
Keep frying in between till done.

Add the masala pwd in the oil. Next add salt and mix well, fry for some time till the masala coats well on t
he potatoes.  Add the rice and mix.

Besan Aloo Toast

Besan Aloo Toast  is a interesting recipe made from spicy besan batter (gram flour) with potato sabzi topped on bread.  A yummy and crunchy snack is ready in no time.

Ingredients:
Besan/gram flour-1 cup
Besan Bread Toast, Bread Besan toast, Aloo toast
Besan Aloo Toast 

Bread slices-4-5
Green chillies-1-2 (opt)
turmeric pwd-pinch
Hing-pinch
Red chilli pwd-1/4 tsp
Garam masala-1/4 tsp
Jeera-1/2 tsp
Carom seeds-1/2 tsp
salt as required
water (mixing the batter)

oil- for frying 


    Method- 
    In a bowl, mix all ingredients except bread and potato sabzi. Add little water and mix well, ensure no lumps are present. Cut the bread into halves. Take the bread slices, apply the potato sabzi on top of it, spread the besan batter on the bread slices, using a knife and spread all over. (or dip the bread in the besan batter ) Next heat oil in a kadai, carefully drop the bread with the batterside. Once it is slightly brown, fry the other side. 
    Serve Besan Aloo Toast hot with chutney or ketchup.

    Corn Aloo Paratha

    Corn Aloo Paratha is very healthy and nutritious , mashed corn with spices with boiled potato  makes it tasty and delicious.

    Ingredients  

    • Wheat flour 3 cups
    • Potato 2  (boiled and mashed)
    • Corn 1 (cup steamed)
    • Red chilly pwd1/2 Tsp
    • Garam masala pwd1/2 Tsp 
    • Dhania jeera pwd-1/2 tsp
    • Salt to taste   
    • Ghee or oil for frying   
    • Jeera-few 
    To grind
    • Pudina leaves-few
    • Coriander leaves-few
    • Green chilies- 1-2
    • Ginger- 1/2 tsp shredded 
        
    Method

    1.Knead the flour with water, a little salt, oil into a soft dough. Cover it for 4-5 hours.
    Blend corn with green chilies, ginger, coriander, pudina leaves into a paste. Do not add water
    2.In a Kadai heat oil, add  jeera, fry .Then add the blended paste  and fry well next add garam masala powders, and fry for a while. Add the mashed potatoes, salt and mix well. Fry till dry set aside to cool. Divide the mixture into balls. 
    3.Make a small chapati with the dough, keep this ball in the middle and bring all the sides together, flatten them with your fingers, or use the rolling pin to make the paratha.
    4.Heat a tava, put in the paratha, turn on both sides till done.
    Add oil or ghee all around the edges, fry both sides, 
    carefully turning over until evenly brown. 
    Serve very hot with pickle, chutney  or curds.

    Ingredients

    • Moong (boiled)-1 cup
    • Potatoes boiled/shredded-1 cup
    • Carrot-Shredded-1/2 cup
    • Onion-chopped-1/2 cup
    • Salt to taste 
    • Turmeric -1/4 tsp
    • Hing-pinch
    • Green chillies 1-2 (finely chopped)
    • Lemon juice 1 tsp
    • Jeera-1/2 tsp
    • Fresh coriander leaves 
    • Chaat Masala-1/2 tsp
    • Red chilli powder 1/4 teaspoon 
    • Garam Masala-1 tsp
    • Oil to shallow fry 
    • Bread crumbs-for covering/binding

    Method-

     In a bowl, add the boiled moong and smash well, add all the above ingredients except oil and mix well. 
    Divide the mixture into equal portions and shape them as patties. 
    Take small portion of mix, flatten it, pat it well.Roll it over bread crumbs. 
    On a tava, add oil and place the patties shallow fry till golden brown on low heat. Flip on the other side slowly. 

    Once done iserve Green Moong Aloo Tikki hot with ketchup or chutney.
