Aloo Pudina Sandwich

Aloo Pudina Sandwich is a delicious twist on the classic aloo sabzi, as a quick and comforting toast sandwich. Soft, spiced mashed potatoes are blended with fresh mint leaves, adding a burst of freshness to the familiar flavors. Sandwiched between slices of bread and lightly toasted, this easy recipe makes for a perfect snack or breakfast—simple, flavorful, and irresistibly satisfying. 


Ingredients
    • 2 cups boiled grated potatoes
      Aloo Pudina Sandwich

    • 1/2 cup-pudina washed & finely chopped
    • 1.5 tsp- garam masala
    • 1 tsp-kitchen king masala
    • 8 Bread slices 
    • Butter
    • Salt
    • Green Coriander Chutney
    • Ketchup
      Method:  

      Aloo Pudina sabzi- In a pan, add oil, add jeera,  add the mashed potatoes fry well , add the chopped pudina leaves, add the masala powders, salt and mix well. 

      Take bread, apply butter and  green chutney, smear the aloo Pudina stuffing, add some chaat masala, cover with another chutney-butter spread bread. 

      Grill in toaster. 

      Serve Aloo Pudina Sandwich hot with chutney or ketchup.

      Mint Vegetable Dosa

      Bursting with the aromatic flavors of fresh mint and coriander, and packed with colorful, fresh vegetables, this Mint Vegetable dosa is incredibly nutritious. Whether you're looking for a wholesome breakfast, a light lunch, or a satisfying dinner, this fusion dosa strikes the perfect balance between health and taste. Easy to prepare, it’s a creative way to sneak in greens and veggies !

      Ingredients:
      • 1/2 cup Rava Chiroti
      • 1/2 cup Rice flour
      • Salt as per taste
      • Oil
      • 1 finely chopped onion
      • 1 finely chopped capsicum
      • 1 finely chopped tomato
      • Few Coriander Leaves
      • Green chillies-2-3
      • Few Pudina/mint leaves
      • Coconut shreds
      • Jeera-1 tsp

      Method:

      Mix rava and rice flour and salt and water. 
      The consistency of batter should be like normal dosa batter.
      Keep aside for 1/2 hour. Grind mint, coriander, coconut, 
      chilies into a paste. Add it to the dosa batter. Next mix in vegetables, jeera and salt.  Heat a dosa tawa over medium heat.
      Once the tawa is hot, pour a ladleful of batter onto the center of the tawa.
      Spread the batter evenly in a circular motion to form a thin dosa.

      Drizzle some oil or ghee around the edges of the dosa

      and
      cook until the bottom side turns golden brown and crisp.
      Flip the dosa and cook till done.

      Serve Mint Vegetable Dosa hot with butter and  chutney / chutney pudi/ sauce of your choice  and you’ve got a complete meal that’s both satisfying and nourishing.  Herb-Infused Goodness in Every Bite!

      Pudina Corn Rice

      Pudina Corn Rice is an easy sweet corn and mint flavored rice. Mint leaves with coconut, spices and corn makes it a tasty one pot meal. 

      Pudina is a herb commonly used in Indian cooking. It is used in a variety of dishes such as chutneys, raitas, and salads. It has a refreshing taste and aroma along with many health benefits.


      Pudina Corn Rice
      Ingredients:
      1. 1 cup rice
      2. 1/2 cup corn steamed
      3. 1 cup mint leaves/pudina
      4. few green chillies, chopped
      5. 1/2 cup coconut shredded
      6. 1 tbsp. chopped coriander leaves
      7. 1/2 tsp. mustard seeds
      8. 1 tsp. cumin seeds
      9. 1/2 tsp chana dal
      10. 1/2tsp urad dal
      11. Few Cashews nuts
      12. 1 tbsp. lemon juice 
      13. Salt to taste
      14. 2-3 tbsp. oil

      Method: 

      Cook rice and spread it on a plate to cool. 
      Meanwhile, blend mint leaves, coconut, chillies in without adding water.  
      Heat oil in a pan, add mustard seeds, jeera, chana dal, urad dal, 
      cashews once done, add mint mix and fry for 10 minutes. 
      Next add corn, salt and mix well. 
      Add rice, lemon juice and mix well. 
      Serve Pudina Corn Rice hot with raita and papad.

      Ingredients:

      6-8 green chillies, chopped
      1/2 cup coconut shredded
      1 tbsp. chopped coriander leaves

      Pudina Thokku


      Pudina Thokku is a simple tangy spicy side dish for your chapati or bread. Easy to prepare and can be stored for a week.

      Pudina is a herb commonly used in Indian cooking. It is used in a variety of dishes such as chutneys, raitas, and salads. It has a refreshing taste and aroma along with many health benefits.


      Pudina Thokku 
      Ingredients
      • Fresh Pudina/Mint Leaves- 1cup 
      • (washed and cleaned)
      • Red chili-10-12 (bydagi/guntur)
      • Tamarind paste-2 tbsp
      • Jaggery-2 tsp
      • Salt-for taste
      • Oil- 2tbps
      • Menthya seeds-few
      • Coriander seeds-few
      • Mustard-1 tsp
      • Hing-pinch


      Method- Dry roast the above mentioned items-chana dal,coriander seeds,menthya,red chillies in little oil. Fry the leaves separately. Once cool add the items with jaggery and salt and grind it in paste with very little water.
      Once done, add seasoning -heat oil, add hing and mustard once done add to the thokku. 
      Enjoy Pudina Thokku with chapati or bread.

      Mint Paratha /Pudina Paratha

      Mint Paratha /Pudina Paratha is simple and easy lunch box recipe for kids or adults. A dash of fresh greens  to your daily diet. Enjoy this flavoured and delicious chapati with Raita or Sabzi of your choice.

      Ingredients

             Mint Paratha /Pudina Paratha



    1. 1.5 cups of wheat flour 






    2. Fresh Pudina/Mint leaves  -1/2 cup






    3. Garam masala pwd-1 tsp






    4. Dhania Jeera pwd-1 tsp


    5. Curds-1-2 tsp

    6. Turmeric-1/2 tsp

    7. Jeera-1/2 tsp


    8. Ajwain-1/2 tsp

    9. Salt to taste

    10. 1 tsp. of ghee

    11. Oil as needed

    12. Method

      Fry the Pudina leaves in little oil. Next grind it coarsely.In a bowl combine all the ingredients with the flour ,add yogurt  and knead into smooth dough, add water as req. Add oil and knead it again and keep it covered for sometime. Make chapatis. Heat a skillet (tava) , gently put in the chapati add oil ,turn on both sides till done. Serve very hot with raita.

      Pudina Vada / Mint Masala Vada

      Pudina Vada or Mint Masala Vada is yet another fritter variety made from lentils with mint leaves. Easy vegan snack  to prepare. A quick flavorful bite for your evening tea.

      Pudina is a herb commonly used in Indian cooking. It is used in a variety of dishes such as chutneys, raitas, and salads. It has a refreshing taste and aroma along with many health benefits.


      Ingredients
      Mint Masala Vada, Pudina vada
      Mint Masala Vada
      • 1 cup Channa Dal
      • Hing-pinch
      • 5-6 Green Chillies 
      • Ginger-shredded
      • Salt to taste
      • 2 tbsp grated coconut
      • Few Coriander leaves
      • Onions(Optional)
      • Fresh Pudina/mint leaves
      • Jeera-1tsp
      • Oil for deep frying


      Method:  Soak Channa Dal for half an hour. 
      Next grind soaked channa dal with jeera,salt, green chillies, hing very coarsely with very little water. 
      Next add grated coconut , chopped coriander leaves, chopped pudina leaves , onions  and salt to the mixture and mix well.

      Make small balls and flatten it.  Set it on a plate.In a kadai, heat  oil ,  slowly slide in the ambodes , deep fry till golden brown on both sides.
      Drain on absorbent paper.

      Serve Pudina Vada hot with chutney or sauce or enjoy just like that with hot cup of tea or coffee.

      Ingredients:
      • Bread
      • Butter 
      Green Chutney:
      • 4-5 green chillies, chopped 
      • Coriander leaves,Mint
      • Fresh grated coconut -1/2 cup
      • Roasted gram dal-hurikadle
      • 1 tsp. tamarind paste
      • Salt to taste

      Method: Grind all the chutney ingredients to a smooth paste with little water.Keep aside.
      Remove the edges of the bread slices,apply butter,green chutney .Apply butter,chutney and on another bread slice ,place this on top layer.Toast it .Cut it in triangle shape and serve.

      Vegetable Pulao

      Vegetable Pulao can be made in many different ways. This one is the South Indian variety. Try it out.

      Ingredients
      Vegetable Pulao,Pilaf,Masala rice
      Vegetable Pulao
      • For Rice 
      • 1 Cup Basmati Rice
      • Jeera – 1 tsp
      • Pepper – 1-2
      • Dalchini/Cinnamon – 1 inch 
      • 1 Bay leaf
      • 1 cardamom 
      • Salt to taste
      • Vegetable Mix
      • Oil – 3 tbsp
      • 1 1/2 cup mixed vegetables, chopped
      • ( Cauliflower, Carrot, Green Beans, 
      • Capsicum,Potato)
      • 1/2 cup steamed peas
      • 1/2 tsp Dhania Jeera pwd
      • 1/2 tsp Pulao Masala (opt)
      • 1 onion, finely chopped
      • For Grinding
      • few pudina leaves
      • few coriander leaves
      • Green chillies-4-5 chopped
      •  Coconut-1/2 cup
      • 1/2 tsp Ginger shreds
      • 1/2 tsp jeera/saunf
      • 1 clove
      • 1 kalamiri
      • 1 Elachi
      Method: Cook the rice with required amout of water (with spices mentioned under rice) and cover. Let it cool.
      Grind the items in mentioned under the heading grinding. Keep it aside.
      Next heat oil in a pan,add onion and fry well. Next add the vegetables and saute for 1-2 mins or till the vegetables are crispy.
      Next add the ground paste and mix well. Let it cook for 5-10 mins on low heat.
      Add the cooked rice ,salt and mix well.
      Cover and cook for 10 mins and let the rice blend with the masala mix .

      Serve Vegetable Pulao hot with raita.

      1 tbsp. chopped coriander leaves
      1/2 tsp. mustard seeds
      1 tsp. cumin seeds
      1/2 tsp chana dal
      1/2tsp urad dal
      Few Cashews nuts
      1 tbsp. lemon juice(opt)
      Salt to taste
      2-3 tbsp. oil

      Method: Cook rice and spread it on a plate to cool.Meanwhile, blend mint leaves, ginger, chillies in smooth paste. Heat oil in a pan, add mustard seeds, jeera, chana dal, urad dal, cashews once done, add mint paste and fry for 10 minutes. 

      Next add potatoes, peas, salt and mix well. Add rice, lemon juice and mix well. 
      Serve Pudina Rice hot with raita and papad.

      (You can add only mustard and jeera for seasoning)

      Chaat Chutnies

      • Chaat Chutnies 


      • Green Chutney
      • 1 cup chopped mint leaves
      • 1/2 cup chopped coriander leaves
      • 4-5 green chili, chopped
      • 1-2 tsp lemon juice
      •  salt

      Method: Blend the above in mixer with little water.
      •  Sweet Chutney
      • 1/2 cup tamarind
      • 1/2 cup  dates
      •  jaggery
      • 1-2 tsp Dhania Jeera Pwd
      • 1/2 tsp red chili powder (optional)
      • 2 cups water
      • salt
      Method: Boil the tamarind and dates in water till soft,Once cool strain the juice .Next add the jaggery and the spice powders and salt.Cook till the jaggery melt.Add masala powder,salt.Cook till it reaches desired consistency.
