Kala Chana Salad

Kala Chana Salad or Chickpea Salad is a healthy, nutritious and protein infused. This Chickpea , legume variety is easily available.  The salad or Chana Chaat is spicy and flavorful.


Ingredients
  • Kala Chana– 1 cup
  • (soaked and cooked soft )
    Kala Chana Salad

  • Tomatoes-1/2 cup (chopped)
  • Onion-1 /2 cup (chopped)
  • Dhania Jeera pwd-1/2 tsp
  • Garam Masala-1/2 tsp
  • Red chili Pwd-1/2  tsp
  • Green chutney-1 tsp
  • Oil-1-2 tsp
  • Salt-for taste
  • Cumin seeds -1/2 tsp
  • Coriander leaves-few
  • Yogurt-1 tsp
  • Lemon juice-1/2 tsp
  • Sev for garnish



Method-

In a pan, heat oil in a pan, add cumin seeds add onions and sauté well.
Next add chilies and fry for 1-2 mins.
Next add chopped tomatoes,and fry till mushy. Next add the masala pwds and fry. 
Add the cooked kala chana and mix.
Add salt and mix well.
Add lemon juice,garnish with coriander leaves and sev on top.

Papdi Chaat

Papdi Chaat or पापड़ी चाट is a popular Indian street food snack that combines various flavors and textures in a delightful way. Enjoy as evening snack.

Ingredients:

For Papdi:

  • 1 cup all-purpose flour (maida)

    Papdi Chaat, पापड़ी चाट
    Papdi Chaat

  • 1/4 cup semolina (sooji)

  • 1/4 teaspoon salt

  • Water (to knead the dough)

  • Oil (for frying)

For Assembling:

  • 1 cup boiled and mashed potatoes

  • 1/2 cup boiled chickpeas

  • 1/2 cup finely chopped onions

  • 1/2 cup chopped tomatoes

  • 1/4 cup finely chopped coriander leaves

  • 2 tbsp mint chutney

  • 2 tbsp  sweet tamarind chutney

  • 1/2 tsp Chaat masala

  • 1/2 tsp cumin powder

  • 1/2 tsp Red chili powder 

  • Salt to taste

  • Sev for garnish

  • Pomegranate seeds for garnish

Method:

For Papdi:

  • In a mixing bowl, combine all-purpose flour, semolina, and salt.

  • Gradually add water and knead the mixture into a stiff dough.

  • Cover the dough and let it rest for about 15-20 minutes.

  • Divide the dough into small portions and roll each portion into a small disc (papdi). Heat oil in a pan and deep fry the papdis until they are golden brown and crispy. Remove the papdis from the oil and let it cool.

Assembling Papdi Chaat:

  • Crush the papdis on a serving bowl. Next add the boiled and mashed potatoes, chickpeas, chopped onions, and tomatoes. Drizzle mint chutney and sweet tamarind chutney over the  papdis.

  • Sprinkle chaat masala, roasted cumin powder, red chili powder, and salt to taste. Garnish with finely chopped coriander leaves, pomegranate seeds  and sev.

  • Serve homemade Papdi Chaat immediately.

Nippat Masala

Nippattu Masala, a spicy chaat item is a famous signature street food in Bangalore. It is easy to prepare and enjoyed by all.  Crunchy and full of flavour.

Ingredients

  • 5-8 Nippattu
  • 1 cup sev
  • 1 tomato finely chopped
  • 1 onion finely chopped
  • 1 cucumber finely chopped
    Nippat Masala
  •  few chopped coriander leaves
  • 1 carrot shredded.
  • few peanuts
  • Green chutney
  • Sweet  chutney
  • 1-2 tsp red chili pwd
  • 1-2 tsp cumin pwd
  • 1-2 tsp chaat masala
  • Lime juice

  • Method: 

  • Align the Nippattu on a plate. In a bowl mix chopped onion, tomatoes, carrot. Add chutney, salt masala powders and mix well. Stack the nippat with this mix. Add chutney a wee bit. Sprinkle sev and peanuts, pomogrante on the top. 
  • Squeeze lemon juice, a bit of masalas if req and garnish with coriander leaves.
  • ( I havent put since I did not have it that day )
  • Enjoy Nippat Masala immediately.

Poha Cutlet

Poha Cutlet is an interesting all time favourite snack. 

Made from leftover Avalakki or Poha and mixed with potatoes makes it crispy from outside and soft and delicious from inside. 

Healthy and tasty, an easy way to get your kids eat vegetables.

Poha Cutlet

Preparation Time: 15m 
Cooking Time: 30m 
Yield: Serves 8
Recipe Type: Appetiser

Ingredients

  • 2 potato - boiled
  • 1/2 cup Left over Poha
  • 1 capiscum-finely chopped
  • 2 Green Chillies - finely chopped
  • 1 tsp garam masala pwd
  • 1/2 tsp Dhania Jeera Pwd
  • 1/2 tsp bhath Pwd
  • 1/2 tsp chaat masala
  • 3-5 tbsp chiroti rava/bread crumbs for coating
  • 1-2 slices of bread 
  • salt for taste
  • Few Coriander leaves
  • Oil for making the cutlet
  • Method -  Cook Potatoes in pressure cooker. Peel and mash the potatoes well.In a bowl, add finely chopped capsicum, mashed vegetables, salt, leftover Poha, masala pwds, coriander leaves, salt and mix well. Divide the dough into small balls and shape it into any shape -round or heart shaped. Roll it over the chiroti rava/bread crumbs so it is coated well. Keep cutlets to set it well for 5-10 mins. Next heat a pan or tawa add 1 tbsp oil, place 4-5 pieces of cutlet and cook in slow to medium heat until it becomes crusty and brown, turn to other side and cook again until done if needed drizzle some oil, repeat same for rest of pieces.
  • Serve Poha cutlet hot with sauce or chutney of your choice.

  • 1 capiscum-finely chopped

  • 1/2 tsp Dhania Jeera Pwd
  • 1/2 tsp bhath Pwd
  • 1/2 tsp chaat masala
  • 3-5 tbsp chiroti rava/bread crumbs for coating

  • salt

Beetroot Cutlet

  • Beetroot Cutlet is  a colorful and healthy snack. Made from beetroot and potatoes and other veggies it is crispy from outside and soft and delicious from inside.  Healthy and tasty, an easy way to get your kids eat vegetables.

Ingredients

  • 2 beetroot -boiled 
  • 2 potato - boiled
  • 1 onion - finely chopped
  • 1 capiscum-finely chopped
  • 2 Green Chillies - finely chopped
  • 1 tsp garam masala pwd
  • 1/2 tsp Dhania Jeera Pwd
  • 1/2 tsp bhath Pwd
  • 1/2 tsp chaat masala
  • 3-5 tbsp chiroti rava for coating
  • 1-2 slices of bread 
  • salt
  • Few Coriander leaves

  1. Method-

    Cook Potato and beetroot in pressure cooker. Peel and mash it well.
    In a bowl, add finely chopped onion, capsicum, mashed vegetables, salt, masala pwds, coriander leaves, salt and mix well. Divide the dough into small balls and shape it into any shape -round or heart shaped. Roll it over the chiroti rava so it is coated well. Keep cutlets to set it well for 5-10 mins. Next heat a pan or tawa add 1 tbsp oil, place 4-5 pieces of cutlet and cook in slow to medium heat until it becomes light brown, turn to other side and cook again until light brown,  if needed drizzle some oil, repeat same for rest of pieces.

    Serve Beetroot Cutlet hot with chutney or sauce.
