Nippat Masala

Nippattu Masala, a spicy chaat item is a famous signature street food in Bangalore. It is easy to prepare and enjoyed by all.  Crunchy and full of flavour.

Ingredients

  • 5-8 Nippattu
  • 1 cup sev
  • 1 tomato finely chopped
  • 1 onion finely chopped
  • 1 cucumber finely chopped
    Nippat Masala
  •  few chopped coriander leaves
  • 1 carrot shredded.
  • few peanuts
  • Green chutney
  • Sweet  chutney
  • 1-2 tsp red chili pwd
  • 1-2 tsp cumin pwd
  • 1-2 tsp chaat masala
  • Lime juice

  • Method: 

  • Align the Nippattu on a plate. In a bowl mix chopped onion, tomatoes, carrot. Add chutney, salt masala powders and mix well. Stack the nippat with this mix. Add chutney a wee bit. Sprinkle sev and peanuts, pomogrante on the top. 
  • Squeeze lemon juice, a bit of masalas if req and garnish with coriander leaves.
  • ( I havent put since I did not have it that day )
  • Enjoy Nippat Masala immediately.

Aloo Samosa

Aloo Samosa is an interesting spicy, fried snack. Samosas are very popular and tasty and enjoyed by all. There are variety of fillings that is added to make Samosa. This is a simple version with potatoes.

    Aloo Samosa

Ingredients

  samosa filling
  • Potatoes -3 (boiled,grated)
  • Garam masala - 1 tsp
  • Dhania jeera pwd-1 tsp
  • Broken Dhania seeds-1tsp
  • Saunf-1 tsp
  • Jeera  - 1/2 tsp
  • Salt 
  • Lemon juice
  • Corainder leaves
  • Dough
  • Maida flour - 2 cup
  • Ghee/Oil - 4 tbsp
  • Ajwain
  • Salt 
  • Water
  • Oil for frying
  • Method- In a pan, heat oil,add jeera,saunf, broken dhania seeds and fry. Next add the boiled and mashed potatoes and stir. Next add the masala pwd and mix well. Add salt, lemon juice and coriander leaves.
  • Mix the flour with ingredients mentioned under the Dough. Knead it well into semi-soft dough (Just like chapati). Make small balls and keep aside. Make small rolls of dough and roll it into a small circle. Form a cone, add the filing and cover the cone, use little water to close it.
  • Heat oil in kadai, slowly slide the samosas , fry till  golden brown on low heat.
  • Serve Aloo Samosa hot with chutney or ketchup.

Dahi Bhel

Dhai Bhel  is a interesting chaat recipe a tangy tasty mix of bhel puri with curds and chutnies..Quick and easy to make.

Ingredients:
  • 1-1/2 cups puffed rice
  • 1 cup Sev papdi mix
  • 2 tbsp roasted peanuts
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • finely chopped raw mango(season)
  • few Coriander leaves, chopped
  • 1-2 Green chilies finely chopped
  • Chaat masala-pinch
  • Red chili pwd -pinch
  • Salt to taste
  • Lemon juice-taste
  • Thick curds-2 tbsp
  • Chutney-Green and tamarind.(as per taste)

  Method:  Add the above mentioned ingredients in a large mixing bowl.Mix well. Sprinkle some sev and coriander to garnish.Serve immediately.
(You also get ready made Bhel mix,with the chutney ,you can just add the onions and other vegetables.)

Cucumber Chaat /Southekayi Masala


Cucumber Chaat (Southekayi Slice ) is an easy Masala Chaat.Nice tangy tasty mix of healthy cucumber with spices. Kids will love it too .

Ingredients:
  • 1  cucumber/Southekayi sliced
  • 1 cup puffed rice (Puri)
  • 1/2 sev
  • 1 onion chopped
  • 1/2 cup grated carrot
  • Few coriander leaves, chopped
  • few  salted peanuts
  • 1 tbsp. green chutney
  • OR red chili powder
  • 1 tsp chaat masala
  • 1 tbsp. lemon juice
  • Salt to taste
Method: Slice the cucumber.(thick slices) Apply salt and green chili paste,Spruce up with finely chopped onions, grated carrots, chaat masala,red chili pwd,coriander leaves and peanuts.Sprinkle a dash of lemon juice over that. Top up with puffed rice and sev .Serve immediately.

Stuffed Vegetable Rolls

Stuffed Vegetable Rolls is crispy and spicy snack recipe. Enjoy with hot cup of tea. 

A nutritious healthy blend of vegetables stuffed in rolls making it a delicious snack.

Ingredients

  • Rolls
  • Maida 1 cup
  • Chiroti Rava-4 tsp
  • Salt 1/2 tsp
  • Butter 1 tsp
  • water
  • Stuffing
  • Potato-1 (boiled and grated)
  • Carrot 1 grated
  • Green peas-1/2 cup (steamed)
  • Onion-1 finely chopped
  • Ginger-Garlic Paste-1/4 tsp
  • Red Chili Powder -1/2 tsp
  • Garam Masala - 1/2 tsp
  • Dhania Jeera pwd-1/2 tsp
  • Green chilies-2-3 finely chopped
  • Salt to taste
  • jeera-1/2 tsp
  • Oil
Method-  Mix the flour, salt, melted butter , add water as required and make a soft dough. Keep it aside. 
Heat a oil in kadai,add jeera,ginger garlic paste,c hilies and saute. Next add the onions and saute.Next add the remaining vegetables, add salt, masala pwd and mix well. Keep it aside. 

For the rolls-take dough, make small thin chapatis. Place the veggie mix  in the centre.  Fold it in rectangular shape. Seal the edge with flour mix(maida+water). Heat oil in kadai. Slowly slide in the rolls, fry till golden brown.

Serve hot with chutney or sauce.

Dahi Pakodi

Dahi Pakodi is a yummy combination of spicy Moong Dal Pakodi in chilled curds(Dahi-yogurt) blended with chutnies.

Simply Delicious. Enjoy!


Ingredients:

  • 1 cup split moong dal
  • 1/2 cup chopped onion
  • 5-6 green chillies finely chopped
  • few Coriander leaves chopped
  • Few curry leaves chopped
  • 1tsp cumin/jeera
  • 1 tsp coriander seeds
  • 1 tsp chilli pwd
  •  1-2 tbsp grated coconut
  • salt to taste
  • 2 cups yogurt/curds
  • 1-2 tsp Chaat masala 
  • 1-2 tsp red chilli pwd
  • Green chutney
  • Tamarind chutney
  • Few chopped onions
  • Grated carrots (Garnish)
  • Coriander leaves (garnish)
  • Bowl of water
  • Method: Soak moong dal for 3-4 hours or overnight. Grind with little water. Add the other ingredients and mix well. Heat little oil and add to the batter and mix. In a kadai, heat oil, make pakoras and  fry until it becomes golden brown on both sides. Drain on absorbent paper. Once cool soak them in water. These should be completely dipped in water. Keep for 1-2 hours in water till pakori become soft. Take out pakori from water and squeeze out excess of water from them.
  • Blend the curds, add salt, chaat masala, add the pakodi in it. 
  • Add some green chutney, tamarind chutney, garnish with grated carrots and onions. Enjoy.

Dahi Puri

Dahi Puri is another variety of Indian Chaat ,tangy ,spicy and tasty.A favorite among kids as well.

Dahi Puri

  • Ingredients
  • Puris (used for Pani Puri)
  • 1 cup sev,boondi
  • 1 potato, boiled and grated
  • 1 onion finely chopped
  •  chopped coriander leaves
  • 1 green chili chopped (optional)
  • Green chutney
  • Sweet  chutney
  • 1-2 tsp red chili pwd
  • 1-2 tsp cumin pwd
  • 1-2 tsp chaat masala
  • 1/2 cup curd/yogurt

  • Method: Grate the potatoes ,add masala pwd,salt and mix well.Align the puris on a plate.Make small opening in each puri,stuff it with potato filling carefully,Add onions add 1-2 tsp curds .Add the masala powders,next add the chutneys,sprinkle sev on top and garnish with coriander leaves.Enjoy immediately

Sev Puri


Sev Puri is loved by all of us.Especially any Mumbaikar would always relate to the Chowpatty and the Bhels.Always tempting !

Ingredients
Sev Puri
  • Flat crisp puris.
  • 1 cup sev
  • 1 potato, boiled and grated
  • 1 onion finely chopped
  •  chopped coriander leaves
  • 1 green chili chopped (optional)
  • Green chutney
  • Sweet  chutney
  • 1-2 tsp red chili pwd
  • 1-2 tsp cumin pwd
  • 1-2 tsp chaat masala
  • Lime juice

  • Method: Align the puris on a plate.Stack it up with grated potatoes,onions .Add the masala powders,next add the chutneys .Sprinkle sev on top.Squeeze lemon juice,a bit of masalas if req and garnish with coriander leaves,raw mango shreds.Enjoy immediately.

Tomato Masala chaat /Tomato Slice

Tomato Chaat (tomato Slice ) is a favorite Masala Chaat you can enjoy in Bangalore.Nice tangy ,spicy and tasty.Of course, very easy to prepare too.

1 cup puffed rice (Puri)

OR red chili powder
1 tsp chaat masala
1 tbsp. lemon juice
Salt to taste

Method: Slice the tomatoes.(thick slices)Apply salt and green chili paste,Spruce up with finely chopped onions, grated carrots, chaat masala,red chili pwd,coriander leaves and peanuts.Sprinkle a dash of lemon juice over that. Top up with puffed rice and sev .Serve immediately.

Ingredients

  • Garam masala - 1 tsp
  • Dhania jeera pwd-1 tsp
  • Jeera  - 1/2 tsp

  • Cashews/rasins(opt)
  • Dough
  • Maida flour - 1 cup
  • Rice flour - 1/4 cup
  • Ghee/Oil - 2 tsp
  • Ajwain
  • Salt 
  • Water
  • Method- In a pan, heat oil, add jeera, chilies, add the veggies, masala pwd and mix well. Add lemon juice and coriander leaves. Mix the flour and knead it into soft dough (Just like chapati). Pav Bhaji

Pav Bhaji is extremely popular all time favorite Mumbai fast food now equally enjoyed in other places as well. Enjoy it as a snack or for dinner.


Ingredients

  • Potato-1big 
  • Boiled peas, carrots, cauliflower- 
  • 1 cup each
  • (mashed well)
  • Onion-1,finely chopped
  • Ripe Tomatoes-4-5 finely chopped
  • Capsicum-1,finely chopped
  • Gingergarlic paste-2tsp
  • Butter/oil-2 tbsp
  • Red chilli powder to taste
  • Tomato puree-1tbsp (opt)
  • Pavbhajimasala-3 tsp
  • Finely chopped greenchilies-1-2(opt)



To serve:

  • Chopped onions
  • Lemon wedges
  • Chopped fresh coriander
  • Pav or bread (toasted in butter)



Method:

Heat a butter/oil in a pan,add chopped onions/chilies fry well.
Next add capsicum and ginger garlic paste saute well. Next add mashed boiled vegetables,  tomato puree, pav bhaji masala,red chili powder and salt, cook for some time.
Add little water if required and mix the vegetables well to form a nice blended gravy.
Serve with chopped onions,coriander on top of bhaji,along toasted pav/ bread and lemon wedges.
