Vegetable Saagu

Vegetable Saagu or Mix veg sagu is an interesting melange of vegetables in coconut and spice mix that can be enjoyed with Idlis, Dosas or Chapatis.

Ingredients for Saagu

Mixed vegetables -washed and chopped 
Carrot, Beans, Potato, Onion, tomato, semebadnekai (ChowChow)
Peas : 1 cup

For Grinding

1.Hurigadale/Dhalia dal - 2 tbsp
2.Chakke/Cinnamon stick -1"piece
3.Star Anise-1 petal (1/4 tsp powder)(opt)
4.Lavanga/Clove - 2
5.Khus Khus
6.Green Chillies-5-6
7.Coriander leaves - 1tbsp (chopped)
8.Salt
9.Fresh grated coconut-2-3 tbsp


For Seasoning

Mustard, Chana Dal, Urad Dal, Curry leaves ,Hing and turmeric powder 

Method : Vegetable Saagu Recipe

Pressure cook all vegetables with 1/2 tsp salt. 

Roast the ingredients from 2-5 with little oil. Next grind all ingredients along with spices. In a pan heat a tsp of oil and add mustard, chana dal, urad dal once done, add curry leaves, hing and turmeric. 
Next add the vegetables. Mix. Add the grounded paste and mix well. Bring it to boil. Add salt. 
Simmer on low heat for 3-4mins. Cover and let the vegetable saagu blend well. 
Enjoy with hot pooris with your handmade Vegetable saagu.

Pumpkin Stir fry

Sihi Kumbalkayi (Sweet Pumpkin ) palya or Pumpkin Stir fry is a delicious combination prepared in-South Indian style with coconut and masala powder. Simple and tasty. Enjoy with Chapati or rasam rice.

Slightly sweet, mildy spiced. Palya is kannada word for sabzi.



Ingredients
  • 1 cup Sihi Kumbalkayi (cut in big cubes)
    Pumpkin Stir fry 
  • 1 tsp Mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • Hing-pinch
  • ½ tsp Turmeric
  • Few Curry leaves
  • Grated coconut-2 tbsp
  • Bhath Powder-2 tbsp
  • 2 tbsp Oil
  • Salt to taste

Method: 

Heat Oil in pan,add mustard, chanadal, uraddal, hing, tumeric, curry leaves and fry for some time.
Add washed sweet pumpkin and fry well. Cover for 5-10 mins.
Check if the veggies have turned soft , next add salt and mix well , fry for some time.
Add bhath powder and mix well. 
Garnish with coconut.
Serve this no onion no garlic South Indian pumpkin stir fry hot with rasam rice or enjoy with chapatis too.

Seemebadnekai Sihi Kootu -II

Seemebadnekai Sihi Kootu (chowchow/Chayote) is a delicious and spicy gravy that can be enjoyed with rice or chapati. Blended with special spices, it tastes yummy. Mostly made as part of  traditional Madhwa food platter.

 Kootu is a lentil-vegetables based semi-gravy which is  nutritious, protein rich and  perfect with some hot rice and ghee and nice papads. The whole experience is just heavenly!


Sihi Kootu

Ingredients:
Seemebadnekayi - 2 cups (cut into small pieces)
Tamarind paste-1/2 tsp
Jaggery-a small piece
Oil - 2 teaspoons


Seasoning
Curry Leaves -few
Mustard Seeds - 1 teaspoon
Hing-pinch
Turmeric-pinch
Red chilli-1

To grind
Urad dal-1-2 tsp
Rice-1/2 tsp
Pepper-10 
Coconut - 3-4 tbsp (shredded)

Method-In a kadai, heat oil add urad dal, rice, pepper corns and fry well. Next add shredded coconut and fry for a 1-2 mins. Grind the mixture into a fine paste.

Next in a pan, add oil, stir fry  the chopped vegetables till done. Add tamarind paste and the ground mix. Mix well and simmer on low heat. Add salt, jaggery  and mix well. Next prepare the seasoning with all the items mentioned. Add it to the gravy. Add water if required. Enjoy this sihi kootu hot with rice or chapatis.

Seemebadnekayi Gojju / Chayote Gojju (Kannada-word for Tamarind based curry) is delicious, spicy gravy of Chayote cooked with tangy tamarind. Enjoy with chapati or rice.

It's traditional dish in South Indian homes.

Ingredients
  1. Seemebadnekayi-1 cup (finely chopped) 
    Seemebadnekayi Gojju / Chayote Gojju

  2. Oil-2 tspn
  3. Mustard – 1/2 tspn
  4. Jeera-1/2 tspn
  5. Chana dal-1 tsp
  6. Urad Dal-1 tsp

  8. Turmeric pwd-1/2 tsp
  9. Tamrind juice-1-2 tbsp
  10. Curry leaves few
  11. Rasam pwd-1-2 tbsp
  12. Jaggery-1 tsp

  14. Hurikadle pudi-1 tsp
  15. Salt to taste
Method - In a kadai, add oil and add mustard, chana dal, urad dal, hing, turmeric pwd, curry leaves once done add seemebadnekayi and fry well till done.
Next add Rasam (Saaru) powder, tamarind juice jaggery, salt, water, roasted gram powder and mix well. 
Cook for 10-15 minutes till the gravy thickens. Add dry coconut and mix
Serve Seemebadnekayi Gojju hot with chapati or rice.

Seemebadnekai Gravy / Choyate Gravy

Seemebadnekai Gravy / Choyate Gravy( ಸೀಮೆ ಬದನೇಕಾಯಿ ) is yet another side dish you can make for your chapatis/rotis/rice. It is blend of cumin, coconut and spices. Tasty and healthy.


Ingredients:

  • 1 cup Seemebadnekayi/Chowchow
    Seemebadnekayi Gravy 

  • (chopped and boiled)
  • Salt as per taste
  • For Grinding
  • Fresh chopped coriander 
  • 1-2 tbsp -Fresh grated coconut
  • 1 tspn-Jeera/cumin seeds
  • 5-6 green chillies

For Seasoning
  • 1tsp oil
  • 1 tspn mustard seeds
  • 1 tspn chana dal
  • 1 tspn urad dal
  • Hing-pinch
  • Curry leaves

Method:

1. Chop the Chow Chow finely and boil it till soft.
2.Grind jeera, coriander leaves, chillies and coconut into fine paste.
3.Add it to the boiled chowchow.
4. Heat the oil on a low flame, add mustard seeds-let it splutter, add urad dal, chana dal ,hing, curry leaves once done add it to the mix and stir well. Enjoy with Chapati or Rice.

Avarekayi Aloo Palya / Vaal Potato Gravy


Avarekayi Aloo Palya or Vaal Potato Gravy is an interesting accompaniment for your chapatis or puris. This delicious gravy is a blend of Indian spices with coconut. Try it out during the avarekayi season.  Avarekalu is Hyacinth Beans or Vaal.

Ingredients
  1. 1 cup avarekalu (cooked)
  2. 1 potato boiled and chopped
  3. 1/4 tsp turmeric powder
  4. 2 tsp oil
  5. 1/4 tsp mustard seeds
  6. 1/2 tsp urad dal
  7. 1/2 tsp chana dal
  8. Hing a pinch
  9. 4 - 5 curry leaves
  10. Salt as per your taste

To grind

  1. 1/2 cup grated coconut
  2. 1/2 tsp cumin seeds 
  3. 2 tbsp putani /roasted dal
  4. 3-4 green chilies
  5. 2 tbsp coriander leaves (optional)
Method - Roast the ingredients from 2-5 mins with little oil. Next grind all ingredients along with spices.In a pan heat a tsp of oil and add mustard, chana dal, urad dal once done, add curry leaves,hing and turmeric. Next add the boiled avarekalu and potatoes. Mix. Add the grounded paste and mix well. 
Bring it to boil. Add salt. Simmer on low heat for 3-4mins. Cover and let the gravy blend well. 
Serve Avarekayi Aloo Palya / Vaal Potato Gravy hot with puris or chapatis or rasam rice.

Cucumber Gojju

Cucumber Gojju / Southekayi Gojju (Kannada-word for Tamarind based curry) is delicious, spicy gravy of Southekayi or Kakdi  cooked with tangy tamarind. Enjoy with chapati.

Ingredients
Southekayi Gojju, gojju

          Cucumber Gojju

  1. Cucumber-1 cup (finely chopped) 
  2. Oil-2 tspn
  3. Mustard – 1/2 tspn

  5. Chana dal-1 tsp
  6. Urad Dal-1 tsp
  7. Hing-pinch
  8. Turmeric pwd-1/2 tsp
  9. Tamrind juice-1-2 tsp
  10. Curry leaves few
  11. Rasam pwd-1-2 tbsp
  12. Jaggery-1 tsp
  13. Dry coconut-1-2 tsp
  14. Salt to taste
Method-

In a kadai, add oil and add mustard, chana dal,urad dal, hing, turmeric pwd, curry leaves once done add cucumber and fry well. Next add Rasam (Saaru) powder, tamarind juice ,jaggery, salt, water and mix well. Cook for 10-15 minutes till the gravy thickens. Add dry coconut and mix
Serve Cucumber Gojju hot with chapati or rice.

Avarekalu sagu

Avarekalu Sagu
Ingredients

  1. 1 cup avarekalu (cooked)
  2. 1 big onion chopped
  3. 1 tomato chopped
  4. 1/4 tsp turmeric powder
  5. 3 tsp cooking oil
  6. 1/4 tsp mustard seeds
  7. 1/2 tsp urad dal
  8. 1/2 tsp chana dal
  9. Hing a pinch
  10. 4 - 5 curry leaves
  11. Salt as per your taste

To grind

  1. 1/2 cup grated coconut
  2. small piece ginger
  3. 1 tsp coriander seeds
  4. 1/2 tsp cumin seeds 
  5. 2 tbsp putani /roasted dal
  6. 1 tsp poppy seeds
  7. 1 - 2 green chili
  8. 1/2" cinnamon
  9. few cloves
  10. green Elachi or cardamom
  11. 2 tbsp coriander leaves (optional)

Method - Avarekaalu Saagu recipe

Sweet potato palya / ಗೆಣಸುಪಲ್ಯ

Sweet potato palya/ ಗೆಣಸುಪಲ್ಯ or Shakarakand Sabzi (Hindi)  is most simplest and easiest of recipes but definitely enjoyed by all. You can made various version with sweet potatoes, this is the quick one. Palya is Kannada word for Sabzi or Bhaji.

Sweet potato palya /  ಗೆಣಸುಪಲ್ಯ
Ingredients
  • 3 big sweet potato, sliced fine
  • 1 tsp Mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • Hing-pinch
  • ½ tsp Turmeric
  • 5-6 Green Chillies, chopped
  • Few Coriander leaves
  • Few Curry leaves
  • Lemon juice
  • 2 tbsp Oil
  • Salt to taste

Method : 

1. Wash and slice the  sweet potatoes into small pieces. 
2. Heat Oil in pan,add mustard, chanadal, uraddal, hing, tumeric, curry leaves, chilies and fry for some time. 
3. Add sweet potatoes ,and mix. Add salt and mix well, fry for some time. 
4. Garnish with coriander leaves and lemon juice. Add coconut if req. 
5. Serve this Sweet potato palya stir fry hot with rasam rice or enjoy with chapatis too.

Alasande Kalu Soppu Huli

Alasande Kalu Soppu Huli is a healthy nutritious accompaniment for rice.You can enjoy with chapati too. A coconut spice blend with healthy greens and Black Eyed pea a must- try in your kitchen.

Alasande kalu / Chawli is a combined with Amaranth leaves is nutritious gravy blended with vitamins and proteins.Simple yet tasty-southern delight.

Ingredients
Alasande Kalu Soppu Huli   
  • Amaranth leaves / Dantina soppu– 1 cup
  • ( cleaned and chopped)
  • Chawli/Alasande Kalu-1/2 cup (cooked)
  • Toor dal-1/4 cup (cooked)
  • Sambar Pwd-2 tbsp 
  • Coconut-1/2 cup
  • Tamarind paste-1 tsp
  • Salt-for taste
  • Seasonings
  • Oil-1-2 tsp
  • Mustard seeds-1/2 tsp
  • Hing-pinch
  • Cury leaves-few
  • Turmeric pwd-pinch
  • Red chillies-1-2 (opt)

Method-  Pressure cook Toor dal and Alasande kalu well.Cook greens in water for 10-15 mins.

Grind coconut and sambar powder and keep it aside.
Next in a vessel,mix the dal,kalu and soppu ,add tamarind paste, salt and the ground paste ,and mix well.
Let it boil well for 10 mins,simmer , prepare the seasoning. Add it to the sambar, mix.
Serve Alasande Kalu Soppu Huli hot with rice or chapati with spoon of ghee.

  • 2 Potatoes,(cut in big cubes)
  • 1 cup Sihi Kumbalkayi (cut in big cubes)
  • 1 tsp Mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • Hing-pinch
  • ½ tsp Turmeric
  • 5-6 Green Chillies, chopped
  • Few Corianderleaves
  • Few Curry leaves
  • Grated coconut-2 tbsp
  • 2 tbsp Oil
  • Salt to taste

Method: Heat Oil in pan,add mustard,chanadal,uraddal,hing,tumeric,curry leaves,chilies and fry for some time.Add potatoes and sweet pumpkin and fry well.Cover for 5-10 mins.Check if the veggies have turned soft , next add salt and mix well , fry for some time.Garnish with corainder leaves and coconut .Serve this pumpkin stir fry hot with rasam rice or enjoy with chapatis too.

Soppu Mudde Palya

Soppu Mudde Palya  is a healthy combination of Tur dal with Greens. (Dantina soppu is  Amaranth leaves or red leaves commonly used in most houses ) Tempered with hing and chilies it is nutritious and tasty. Enjoy with rice or chapati.

Dal with greens ,mudde palya ,muddi palya

             Soppu Mudde Palya 

Ingredients
  • 1 cup finely chopped green
  • Tur Dal-1/2 cup (cooked)
  • 1/2 tsp turmeric
  • Salt-taste
  • Water
  • Coconut-1-2 tbsp
  • Jeera-1/2 tsp
  • Dhania seeds-1/2 tsp
  • green chilies-2-3
  • Tamarind paste-1/2 tsp
  • Jaggery-small piece
Seasoning:
  • 1 tsp oil/ghee
  • 1 tsp mustard seeds 
  • 1/2 tsp jeera
  • 1/2 tsp channa dal
  • 1/2 tsp urad dal
  • hing -pinch
  • curry leaves-few
  • Red chilly-1-2
  • Method :  Cook the greens in water till done. Fry jeera,coriander seeds ,chilies .Next grind these items with coconut . Next in a kadai add oil,prepare the seasoning ,and add greens,cooked dal, tamarind paste,jaggery piece,ground mix and stir. Add salt  and mix well. Cook on low heat for 10-12 mins,stirring in between. Serve hot mudde palya or Dal with Greens with white rice or chapati.

White Pumpkin Sihi Kootu is a South Indian gravy blended with Indian spices. It can be enjoyed with hot rice or chapati. 
Kootu is a lentil-vegetables based semi-gravy which is nutritious, 
protein rich and  perfect with some hot rice and ghee and nice papads. 
The whole experience is just heavenly!


Ingredients
  • 1 big cup white pumpkin 
  • or (Buda kumbalakayi)
  • salt to taste
  • Water
For Grinding
  • 1/2 cup coconut grated
  • 1 tbsp Jeera 
  • 2-3 green chillies
  • 1 tsp Kalamiri
  • 1/2 tsp rice
  • 1/2 tsp Urad dal
For Seasoning
  • 1 tsp mustard seeds
  • 1 tsp Urad Dal
  • 1 tsp Chana dal
  • Few curry leaves
  • Hing-Pinch 
  • Turmeric-Pinch


Method 


  • Cut the pumkin into small cubes (remove seeds/skin) In a vessel add water, add the pumpkin, salt and cook till done.
  • Meanwhile dry roast the items mentioned under for Grinding
  • Next grind the items into paste. 
  • Add the ground masala to the cooked pumpkin and stir well. 
  • Simmer and stir in between till the gravy blends well. 
  • Add salt if req. Prepare the seasoning. Add to the gravy. 
  • Serve this Buda kumbalakayi / White Pumpkin Kootu hot with rice or chapati.

Hurlikayi Batani Carrot Palya

















Green Beans with Peas and Carrot Sabzi  / Hurlikayi Batani Carrot Palya 

(french beans stir fry) is a favorite in South Indian Homes.

An awesome and healthy combination with Rice or Chapati.

Palya is a Kannada word for Sabzi/Vegetable.



Ingredients:

  • 1 cup chopped Green Beans
  • 1/2 cup steamed peas
  • 1/2 cup chopped carrot
  • 1 tbsp. oil
  • 1/2 tsp. mustard 
  • 1 tsp. chana dal
  • 1 tsp. urad dal
  • 1/2 jeera
  • 4-5 green chillies
  • Hing-pinch
  •  curry leaves-few
  •  grated, coconut-3 tbsp
  • Salt to taste
  • Sugar-1/4 tsp (opt)

Method:

Heat oil in a saucepan. Add mustard, allow to splutter, 
add chana dal,urad dal, 
green  chillies,hing.
Fry till light brown, then add curry leaves, beans, carrot
cover with a lid and cook till beans,carrots are soft.
Next add the steamed peas.
Add  grated coconut, salt, sugar  and mix well. 
Cook for 5 minutes.
Serve hot with Chapatis/Rice.
