White Pumpkin Raita / Ash Gourd Raita
White Pumpkin Raita / Ash Gourd Raita 
White Pumpkin Raita / Ash Gourd Raita  is made from yogurt/curds or dahi. It is normally served as dip/side dish. It provides cooling effect and has a nice taste. 

This raita is with a touch of ground mix of raw mustard (hasi sasive ) coconut and chilies. (Kannada name: ಬೂದಿ ಕುಂಬಳಕಾಯಿ

Yogurt is one of the immunity booster food that contains vitamins and minerals and more.



Ingredients 



  • Grated white pumpkin - 1 cup
  • Thick curd - 1 cup
  • Green chilli - 2-3
  • Grated coconut - 1/3 cup
  • Fresh coriander leaves - handful
  • Mustard-1/2 tsp

Seasoning

  • Mustard - 3/4 tsp
  • Hing/asafoetida - pinch
  • Curry leaves - few
  • Oil



Method 

Deseed and peel the skin of pumpkin. Grate and keep it aside. Add salt and mix for leave for 10 mins. Meanwhile grind chilli, mustard, coconut and coriander leaves to a fine paste. Prepare seasoning adding the items mentioned above. Remove the excess water from pumpkin. Add the curds, add ground paste and
mix. 
Add the seasoning and stir well. 
Serve Budukumbalkai raita with parathas or rice.

Green Beans Raita

Ingredients
  • Chilled Curds/yogurt - 1 cup
  • Green Beans - 3/4 cup finely chopped
  • Chat Masala -1/4 tsp
  • Salt - to taste
  • Coconut-2 tsp

Seasonings

  • oil-1/2 tsp  (seasoning)
  • 1/2 tsp mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/2 tsp jeera
  • 1-3 green chilies, finely chopped
  • Few curry leaves
  • Hing a pinch


Method -In a pan, fry the green beans with little oil for 5-10 minsTake a bowl, mix the yogurt, beans, chat masala, grated coconut and salt. Heat oil in a small pan. Add the mustard and cumin seeds. Next add the green chillies, chana dal, urad dal, curry leaves and hing. Fry for some time. Pour the seasoning over the yogurt.

Enjoy this chilled Green Beans Raita with  pulao or parathas.

Ingredients

Cabbage Raita

  • Chilled Curds - 1 cup
  • Cabbage - 3/4 cup Grated 
  • Chat Masala -1/4 tsp
  • Salt - to taste
  • Coconut-2 tsp


Seasonings

  • oil-1/2 tsp  (seasoning)
  • 1/2 tsp mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/2 tsp jeera
  • 1-3 green chilies, finely chopped
  • Few curry leaves
  • Hing a pinch

Bhindi Raita / Okra Raita

Bhindi Raita or Bendekayi raita is made with ladyfinger, curds and blended with spices. Enjoy chilled with parathas or pulao.

Below is the recipe on How to make Okra Raita

Ingredients

  • Bhindi/okra - 1 cup (finely chopped)
  • Thick curds/yogurt- 2 cups
  • Red chilli pwd - 1/4 tsp
  • Cumin pwd - 1/4 tsp
  • Salt to taste
  • Oil-for frying bhendi
Seasonings

  • oil-1/2 tsp 
  • 1/2 tsp mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/2 tsp jeera
  • 1-3 green chilies, finely chopped
  • Few curry leaves
  • Hing a pinch


Method -In a pan, add oil and fry Bhendi till brown. Keep it aside. Next Take a bowl, mix the yogurt, add masala pwd and salt and mix well. Heat oil in a small pan. Add the mustard and cumin seeds. Next add the green chillies, chana dal, urad dal, curry leaves and hing. Fry for some time. Add the fried bhendis in the curds. Pour the seasoning over the yogurt. 
Enjoy Bhindi Raita / Okra Raita  with parathas.

Capsicum Raita / Simla Mirch ka Raita

Capsicum Raita or Simla Mirch ka Raita is a excellent combination of crunchy stir fried capsicum (Bell Pepper)with chilled curds. 

Enjoy this quick and delicious raita with your parathas or spicy biryanis.

Capsicum Raita 

Ingredients
Chilled Curds - 1 cup
Capsicum - 3/4 cup chopped
Chat Masala -1/4 tsp
Dhania Jeera pwd-1/2 tsp
Salt - to taste

Seasonings
oil-1/2 tsp  (seasoning)
1/2 tsp mustard
1/2 tsp chana dal
1/2 tsp urad dal
1/2 tsp jeera
1-2 green chilies, finely chopped
Few curry leaves
Hing a pinch

Method -Take a bowl, mix the yogurt,masala pwd chat masala and salt.Heat oil in a small pan.Stir fry the capsicum and keep it aside.
Next  in the oil , add the mustard and cumin seeds. Next add the green chillies, chana dal, urad dal ,curry leaves and hing.
Fry for some time.
Add the capsicum and mix .Pour this into the yogurt.
Mix well and serve.

Spinach Raita / Palak Ka Raita

Spinach Raita or Palak ka Raita is a interesting combination of palak leaves with mild spices blended in chilled curds. Quick, healthy and colourful side dish for hot parathas or spicy pulao. One more way of adding the greens to your diet. Immunity boosters both Spinach and Yoghurt in your diet.

Chilled Curds - 1 cup
Spinach/palak leaves - 3/4 cup finely chopped 
(blanched)
Chat Masala -1/4 tsp
Jeera pwd-1/2 tsp (opt)
Salt - to taste

Seasonings
oil-1/2 tsp  (seasoning)
1/2 tsp mustard
1/2 tsp chana dal
1/2 tsp urad dal
1/2 tsp jeera
1-2 green chilies, finely chopped
Few curry leaves
Hing a pinch

Method - Take a bowl, mix the yogurt chopped spinach, chat masala and salt.Heat oil in a small pan. Add the mustard and cumin seeds. Next add the green chillies ,chana dal,urad dal ,curry leaves and hing.Fry for some time.Pour the seasoning over the yogurt.

Dodda Patre Tambuli /Dodda Patre Soppu Raita

Dodda Patre Tambuli  ( Coleus aromaticus )  is special herb used for medicines for cough etc.The same is used here to make Raita or tambuli in Kannada.It is called as Patharchur in Hindi or Pan Ova in Marathi.


Ingredients

  • Dodda Patre leaves : 8 to 10
  •  (washed and chopped)
  • Jeera : 1 tsp
  • Kala Miri-3-4
  • Green chilly :1 
  • Curds : 1 Small cup
  • Fresh Coconut : 1 tbsp (grated)
  • Salt : to taste
  • Seasoning
  • Oil-1tsp
  • Curry leaves : few
  • Mustard-1/2 tsp
  • Hing-pinch


Method : In a pan heat oil add jeera,pepper once done add the dodda patre leaves and fry them for 2-3 mins .Next grind the above along with coconut and chilly with little water to a fine paste.Add this mix to curds.Add salt and mix well.Next season with items mentioned under seasoning.Serve with hot rice.

Beetroot Raita


Beetroot Raita is simple and easy. A delicious healthy combination for rotis or masala rice. Enjoy Beetroot either as salad, sabzi or raita. Red, juicy Beetroot blended with chilled yogurt and mild spices makes it a refreshing dish.

Beetroot Raita

Ingredients
  • 1 cup plain curds/yogurt
  • 1 beetroot (shredded)
  • 1/4 tsp jeera pwd
  • 1/4 tsp Peanut Pwd
  • Few curry leaves
Seasoning
  • 1/2 tsp mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/2 tsp jeera
  • oil (seasoning)
  • 2-3 green chili (finely chopped) 
  • Hing a pinch
    Method -Take a bowl, add curds,salt, peanut powder and cumin powder. Next add shredded beetroot and stir.Heat oil in a small pan. Add the mustard and cumin seeds. Next add the green chillies, chana dal, urad dal, curry leaves and hing. Fry for some time. Pour the seasoning over the yogurt. Mix well. Serve the raita with Chapati or Pulao.

Note-The colour of raita will turn pink.

Seemebadnekai Raita / Choyate Raita ( ಸೀಮೆ ಬದನೇಕಾಯಿ )is made from yogurt/curds or dahi.It is normally served as dip/side dish .It provides cooling effect and has a nice taste.This raita is with a touch of ground mix of raw mustard (hasi sasive ) , coconut and chilies.



Seemebadnekayi Raita / ChowChow Raita
Ingredients:

  • 1 cup Seemebadnekayi/Chowchow
  • (chopped and boiled)
  • 1 cup yogurt
  • Salt as per taste
  • For Grinding
  • Fresh chopped coriander 
  • 1-2 tbsp -Fresh grated coconut
  • 1 tspn-mustard seeds
  • 5-6 green chillies

For Seasoning
  • 1tsp oil
  • 1 tspn mustard seeds
  • 1 tspn chana dal
  • 1 tspn urad dal
  • Hing-pinch
  • Curry leaves

Method:

1. Chop the Chow Chow finely and boil it till soft.Once cold ,add curds ,salt and mix 
2.Grind mustard seeds,coriander leaves,chillies and coconut into fine paste.
3.Add it to the chowchow curds mix,
4. Heat the oil on a low flame, add mustard seeds-let it splutter, add urad dal, chana dal ,hing once done add it to the mix and stir well.Enjoy with Chapati or Rice.

Potato Raita


Aloo Raita / Potato raita is simple and easy.A delicious combination for masala rice,or simple dal/sambar rice.


Ingredients
oPotato Yogurt Salad
Potato Raita

  • 1 cup plain curds/yogurt
  • 1 potato (boiled, shredded)
  • 1-2 green chili (finely chopped) 
  • 1/4 tsp jeera pwd
  • 1/4 tsp red chili powder
  • 1/4 tsp chaat pwd
  • Few curry leaves
  • Coriander leaves
Seasoning
  • 1/2 tsp mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/2 tsp jeera
  • oil (seasoning)
  • Hing a pinch
    Method -Take a bowl, add curds,salt, red chili powder and cumin powder.Add shredded potatoes and stir.Heat oil in a small pan. Add the mustard and cumin seeds. Next add the green chillies ,chana dal,urad dal ,curry leaves and hing.Fry for some time.Pour the seasoning over the yogurt.Mix well.Serve the raita /potato yogurt salad with Sambar rice or Pulao.

Onion Coconut Raita

Onion coconut raita is simple and easy to prepare.Its a South Indian Raita type a combination of coconut and onion with spices.

Ingredients

  • 1/2 coconut, freshly grated
  • 1 cup plain yogurt (dahi)
  • Salt to taste
  • Finely chopped onion
  • 1-3 green chilies, finely chopped
  • Few curry leaves
  • 1/2 tsp mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/2 tsp jeera
  • oil (seasoning)

Tomato Onion Raita

Tomato Onion Raita is simple and easy, combination of tomato, onions with curds and spices. Enjoy it with spicy Pulao or Biryani.


Ingredients:
Tomato Onion Raita

  • 1 cup plain curd / dahi 
  •  1 cup tomatoes and onions
  •  (finely chopped)  
  • Salt to taste 
  • 2 tsp oil 
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/4 tsp cumin seed, mustard seed 
  • 2-3 chili (finely chopped) 
  • 2-3 curry leaves 
  • Finely chopped coriander leaves


Method: Add salt to curds and mix well. Add chopped tomatoes, onion. Heat oil in frying pan, add mustard, jeera, chana dal, urad dal, chopped green chilies once done, pour the above seasoning over tomato and onion mixture. Serve it with chapati or pulao,mixed rice.

  • 1 grated cucumber, finely chopped
  • 1 cup yogurt
  • Salt as per taste
  • Fresh chopped coriander for garnishing
  • 1 tbsp -Fresh grated coconut
  • 1 tspn-mustard seeds
  • 5-6 green chillies

For Seasoning

  • 1tsp oil
  • 1 tspn mustard seeds
  • 1 tspn chana dal
  • 1 tspn urad dal
  • Hing-pinch
  • Curry leaves

Method:

1. Grate the cucumber, add curds, salt and mix 
2.Grind mustard seeds,coriander leaves,chillies and coconut into fine paste.
3.Add it to the cucumber curds mix.
4. Heat the oil on a low flame, add mustard seeds-let it splutter, add urad dal, chana dal hing once done add it to the mix and stir well. 
Enjoy with Chapati,  Rice or all kinds of Pulao and Biryanis/BesiBele Bhath.

Cucumber Kadi

Cucumber Khadi is a recipe made from humble cucumber with a touch of groundnut and red chili peppers blended in yogurt. This is an exclusive recipe from my Mom in law.


Ingredients:

  • 1 cucumber finely chopped
  • 1/2 cup yogurt
  • Salt as per taste
  • 3  tbsp -groundnut
  • 7-8 red chilies pepper (spicy ones)

For Seasoning

  • 1tsp oil
  • 1 tspn mustard seeds
  • 1 tspn chana dal
  • 1 tspn urad dal
  • Hing-pinch
  • Few-Curry leaves


Method:

1. Mix cucumber, add curds and mix 
2.Roast groundnut and red peppers in little oil,grind it with little water to form a paste.
3.Add it to the cucumber curds mix,add salt and mix well.
4. Heat the oil on a low flame, add mustard seeds-let it splutter, add urad dal, chana dal ,hing ,curry leaves once done add it to the mix and stir well.
Enjoy Cucumber Khadi with Chapati or hot Rice.

Boondi Raita

Boondi Raita is quick and easy recipe that can be made and enjoyed with hot Pulao or Biryani. A perfect combination of Boondi with yogurt and spices. Enjoy this cool combination of ready made spicy/Khara Boondi (MTR/Haldiram) with yogurt along with hot Pulao/Biryani.

Boondi Raita

Ingredients
  • 3 cups yogurt or dahi/Curds
  • 1 tsp. chilli powder
  • Salt to taste
  • Cumin Pwd -1/2 tsp
  • Chaat Masala-1/2 tsp
  • Boondi-1/2 cup (Haldirams)

Method

Soak Boondies in warm water/ buttermilk for 10min. Blend yogurt, salt, chilli powder and cumin powder together. Add boondies and mix slowly. Garnish with coriander leaves,finely chopped  green chillies sprinkle of chaat masala or chilli powder. Enjoy chilled with hot Pulao/Biryani.
