Hurlikayi Carrot Masale Bhath

Hurlikayi Carrot Masale Bhath (Green Beans with Carrot) , a wonderful combination of the two veggies with spices, making it a colourful and easy one pot meal. Very easy to prepare.
The dash of coconut makes it more delicious. Enjoy!


1  cup  Green Beans(hurlikayi)  

1 cup Carrots
(chopped)

2-3 Tbsp shredded Coconut
1-2 green chillies chopped
1 tbsp Bhath Pwd
1 Tbsp Lime juice
Salt to taste

Seasoning
1/2 tsp mustard
1/2 tsp jeera
1/2 tsp chana dal
1/2 tsp urad dal
1 Tbsp Oil
Turmeric-pinch
Hing-pinch
Curry leaves

Method:  

Cook rice and spread it on plate.

Heat oil in a pan. Add the items in seasoning ,once done,add the chopped vegetables and fry for few mins.

 Add salt. Cover and cook on low flame.Once done, add cooked rice, Bhath powder, grated coconut , lemon juice.  Mix well.

Carrot Idli

Carrot Idli is interesting twist to the normal idlis. Soft with a blend of grated carrots and seasonings gives it a great taste. Enjoy hot with chutney. Idlis are fun. They are soft, fluffy, colorful and easy to prepare. A perfect breakfast for all days. An ideal recipe for kid's lunch box too!

Ingredients : 
Carrot Idli

  • Idli Batter -3 cups
  • Carrot : 1 cup grated
  • Green chillies : 1 or 2, chopped
  • Coriander leaves : few chopped
  • Mustard seeds : 1 tsp.
  • Curry Leaves : 5-6 nos.
  • chana dal:1/4 tsp
  • urad dal:1/4 tsp
  • Salt to taste
  • oil:1/2 tsp
  • Chutney pwd:2 tsp 


Method-   In a pan, heat oil. Prepare seasoning with curry leaves, mustard seeds, chana dal urad dal, green chillies once done pour it in the idli batter. Next add chopped coriander leaves, grated carrots, salt to the batter and mix well. Add chutney pwd and mix. Set for 5 mins.

Apply oil onto the idli plates and pour the batter in a spoon. Steam it in pressure cooker for 15-20 mins on medium flame. 

Serve Carrot Idli hot with ghee, chutney or saagu.

Carrot Poha / Carrot Avalakki

Carrot Poha / Carrot Avalakki

Carrot Poha  or Carrot Avalakki is spicy and quick breakfast recipe. Poha (Oggarane Avalakki ) is easy to cook, adding vegetables to it makes it more nutritious and tasty. This one is with carrots has a unique taste which makes the avalakki delicious and colorful.



Ingredients:

  • 1 cup poha ((flaked rice /avalakki)
  • 1 cup carrot finely chopped)
  • 1/2 cup onion finely chopped
  • 3-4  green chillies, finely chopped
  • Salt to taste

For Seasoning:
  • 2 tbsp. oil
  • 1/2 tsp. mustard
  • 1/2 tsp.cumin seeds
  • 1 tsp chana dal
  • 1 tsp. Urad dal
  • 2 tsp. peanuts
  • Hing- a pinch
  • Curry leaves-few
  • Turmeric pwd-pinch

For Garnishing
2 tbsp. grated coconut
Few coriander leaves


Method: In a pan , Stir fry carrots well in little oil keep it aside.
Soak the poha in water for 5-10min. Wash  and drain the water completely.
Heat the oil in the pan, fry the peanuts and keep it aside .
Next add seasonings and fry till done.
Add green chillies and onion and stir fry.
Once done add the poha and mix well.
Add salt, coconut ,stir fried carrots.
and coriander leaves to the poha.
Add lemon juice and mix well . Serve hot.

Carrot Raita

Carrot Raita or Gajar ka Raita is a quick and healthy accompaniment for hot parathas or spicy pulao.Delicious and tasty and colourful.Enjoy !!!.This is a South Indian version of raita.

Ingredients
Chilled Curds - 1 cup
Carrot - 3/4 cup Grated 
Chat Masala -1/4 tsp
Salt - to taste

Seasonings
oil-1/2 tsp  (seasoning)
1/2 tsp mustard
1/2 tsp chana dal
1/2 tsp urad dal
1/2 tsp jeera
1-3 green chilies, finely chopped
Few curry leaves
Hing a pinch

Method -Take a bowl, mix the yogurt ,grated carrot chat masala and salt.Heat oil in a small pan. Add the mustard and cumin seeds. Next add the green chillies ,chana dal,urad dal ,curry leaves and hing.Fry for some time.Pour the seasoning over the yogurt.
Enjoy this raita with  pulao or parathas.

Carrot Sevai Upma

Carrot Sevai Upma is  simple and easy breakfast recipe.Colorful and healthy, a lunch box idea for your kids too. Grated Carrots added to vermicelli, a quick fix for your busy day.

Ingredients:
· 2 cups vermicelli
· 1 1/2 cup grated carrots
.  .

Seasoning

· 6-7 green chillies chopped
· few curry leaves
· 1 tbsp oil
· 1/2 tsp mustard seeds
.1/2 tsp jeera
· 1 tsp urad dal
· 1 tsp channa dal
 .Turmeric-pinch
. Hing-pinch
· Salt for taste
. few cashews fried (opt)
· Water
Garnishing
· 1-2 tbsp grated coconut
· Few coriander leaves


Method:
  • Add little oil in a pan,roast the vermicelli well and keep it aside.
  • Next add oil,fry the cashews and keep it aside.
  • Next add mustard seeds, followed by urad dal, channa dal and jeera, hing, curry leaves, chopped chilies, turmeric, and sauté well. Now, add the grated carrots and stir fry well Next add the vermicelli,salt  and add boiled water. Cook till the water evaporates . Add the fried cashews and mix well. Garnish with coconut.
  • Serve Carrot Sevai Upma hot.

    Carrot Juice

    Carrot Juice is healthy and energizing drink.Enjoy chilled with your kids.



    Ingredients:

    • Carrot : 4
    • Ginger shreds-1-2 tsp
    • Sugar: 1 - 2 tbsp (as per taste)
    • Pepper /salt:pinch
    • Water-as req


     Method-Cut the carrots.In a blender, add the carrot pieces along with water and other items in ingredients and blend well. Strain and serve chilled.

    Carrot Akki Rotti

    Carrot Akki Rotti is a colourful and tasty blend of carrots  with spices in rice flour. Akki Rotti ( Kannada) rice  flour-breakfast speciality of Karnataka.It can be made from different kinds of vegetables added to it.

    Ingredients 
    
    Rice flour          2 cups 
    Onions              1 small finely chopped
    Carrot                1cup  grated
    Cilantro leaves   handful chopped
    Coconut            little
    Green chillies        7-8(as per taste)
    Cumin seeds      1 tsp
    Oil                     2tbsp
    Salt                   to taste
    Water                1 cup 
    ( as required)
    Method
    In a bowl mix rice flour with chopped and grated veggies,chilies,Cumin /jeera ,coriander leaves,coconut ,add salt.Add warm water, mix well to a soft  dough. Keep covered for 10 mins.Take 1tsp of oil, smear around a tava, take dough and spread around it.
    Keep this on medium heat, cover and after minute ,add oil around sides or so it will be ready to be taken out. If you want more crispy leave it of little longer.(to make it more soft you can cover it with a plate on the tava/griddle)
    
    To make another rotti, hold the pan upside down and run cold water all around it, pan will be cool to make another rotti by this time(be careful while running water onto hot vessel, water will start sizzling as soon as it hits the pan).Serve hot with chutney of your choice and dash of butter.

    Stir fried Carrots

    Stir fried Carrots is healthy and colorful side dish for chapati or rice.

    Its quick and easy to prepare.

    Kids will also love it.You can prepare in different ways ,this one is 

    the South Indian Variety with coconut.

    Ingredients:
    2 cups chopped Carrots
    1 tbsp. oil
    1/2 tsp. mustard
    1 tsp. chana dal
    1 tsp. urad dal
    2-3 green chillies
    Hing-pinch
    1 spring curry leaves
    2 tbsp. grated, coconut
    Salt to taste
    1 tsp dhania jeera pwd
    1/4 tsp pepper pwd

    Method:Heat oil in a kadai.Add mustard, allow to splutter, 
    add chana dal,urad dal, green chillies,hing.
    Fry till light brown, then add curry leaves, carrot, 
    sauté till carrots are done.
     Add  grated coconut, salt,masala pwd and mix well.

    Serve hot with Chapatis / Rasam Rice.

    Carrot Peas Rice

    Carrot Peas Rice is colorful and lightly spiced one pot meal for kids.

    Rice 1 cup

    Peas-1/2 cup steamed

    Carrot chopped and boiled 1/2 cup

    Cumin seeds 1 tbsp

    mustard 1/2 tsp

    Pepper pwd-1 tsp

    Oil 1-2tbsp

    Salt as per taste

    Method: Cook rice and spread on a plate.Heat oil in a pressure pan add mustard and cumin seeds once done,add the boiled peas,carrot and salt sauté for some time.Add the cooked rice pepper pwd and  mix well.Serve hot.Elders can enjoy too with raita or curry.

    Carrot Paratha

    Carrot Paratha is a easy lunch box recipe for kids.Made from healthy carrots with simple wheat flour and mild spices . It is nutritious and tasty.

    Ingredients:
    Wheat Flour            - 1 cup
    Carrot                    - 2-3 grated
    Cumin Seeds           - 1/2 tsp
    Curd                       - 2-3  tbsp
    Turmeric powder    - 1/4 tsp
    Dhania Jeera pwd  -1/4 tsp
    Garam Masala         - 1 tsp
    Chilli Powder          - 1/2 tsp
    Salt                          for taste
    Oil                           as req


    Method: In a bowl combine all the ingredients with the flour ,add yogurt  and knead into smooth dough,add little water if req.Add oil and knead it again and keep it covered for sometime.Make parathas.Heat a skillet (tava) gently, put in the paratha, add oil ,turn on both sides till done.Serve hot with pickle,sauce or curds.

    Gajar Halwa/Carrot Halwa

    Carrot Halwa or Gajar Halwa, all time favored Indian dessert recipe made from fresh carrots slowly cooked in rich milk with sugar and garnished with dry fruits. It is a perfect and easy dessert which is nutritious and healthy as well.

    You can enjoy this Carrot Halwa warm and delicious way or  you can add chilled ice cream and double the joy!


    Ingredients

    Carrot Halwa / Gajar Halwa

    • 4-5 Carrots 
    • 2 cups Milk 
    • 1 teaspoon Cardamom pwd/ Elachi
    • 3 tbsp Ghee 
    •  Dry fruits-Raisins, almonds, pista
    • 2-3 cups Sugar


    Method
    • Wash and grate the carrots.
    • Fry the carrots in little ghee for 2-3 mins. Add the milk. Cook on a low flame some time stirring occasionally. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed. Add slightly crushed cardamoms and the raisins. Mix well.
    • Remove the gajar halwa from heat and arrange in a serving dish. Garnish with grated almonds and pistachios. Serve cold or hot.
