Capsicum Onion StirFry

Capsicum Onion Stir Fry is a spicy side dish for Indian breads. A blend of masalas with tangy tomatoes is delicious. You will like the taste of this colorful sabzi.

Capsicum or Bell Pepper / Simla Mirch is a vegetable where we can keep experimenting various combinations. 


Ingredients
  • Capsicum (Bell Pepper)-2 big thinly chopped 
    Bell Pepper Stir Fry
    Capsicum Onion Stirfry

  • Onion -2 big chopped 
  • Tomato-2 chopped
  • Oil 3 Tbsp
  • salt to taste
Seasoning
  • Mustard seeds 1 Tsp
  • Cumin seeds /Jeera 1 Tsp
  • Hing-Pinch
  • Urad Dal 1/2 tsp
  • Chana Dal 1/2 tsp
  • Turmeric-pinch
  • Curry leaves-few
  • green chiles -1-2 finely chopped
  • Dhaniya-jeera pwd-1/2 tsp
  • Rasam pwd-1/2 tsp
  • Bhathpwd- 2 tbsp 

Method- 

Heat oil for in a frying pan over moderate heat. Add items mentioned in seasoning Once done add capsicum, onion, tomato and sauté well. Once done add the masala pwds to capsicum and stir-fry over low heat for 5 - 7 minutes till capsicums are tender. Add salt and mix well.

Serve Capsicum Onion Stir Fry  hot with chapati or rice.

Adjust the spices/salt as per your taste and preferences.

Stuffed Capsicum

Stuffed Capsicum is very tasty and delicious side dish for Indian Breads. Check out the recipe below...

Ingredients
6 small Capsicum
1 tsp jeera
1 cup potato boiled and mashed
Stuffed Capsicum 


1/2 tsp ginger garlic paste
1/2 tsp turmeric pwd
1/2 tsp Dhani jeera pwd
1/2 tsp red chilli pwd
1/2 tsp garam masala
Salt to taste
Grated cheese
Roasted cashews
Oil for roasting the capsicum

Gravy
1 onion chopped
1 tomato  chopped
1 green chilies
few cashews
1 tsp Dhani jeera pwd
1/2 tsp red chilli pwd
1/2 tsp garam masala
1/2 tsp Shahi paneer masala
1 tsp tomato ketchup
Salt to taste
1-2 tsp butter
1 tsp cream


Method-

To begin with cut the top of the capsicum scoop out the insides carefully. Keep it aside. In a pan, heat oil , next add jeera  and green chilies, next add ginger garlic paste and fry well. Next add the masala pwds and fry well. Add the mashed potatoes and mix well. Add the salt. Mix well. Let the stuffing cool down . Next add the grated cheese and cashews and mix.

Take the capsicum slowly stuff with the mixture prepared. In a pan, add oil ,carefully slide the stuffed capsicum and fry it for 1-2 mins till it looks slightly roasted. Remove on a tissue.

Gravy-.  In a kadai, heat butter, add jeera, next add chopped onions, tomato fry well, add cashews and green chilies. Once done, grind without water. In  a kadai, add the ground mix, add masala pwds and mix well. Cook for 1-2 mins. Add salt, cream and mix. Add the roasted and stuffed capsicum into the gravy and simmer for 1-2 mins. 

Serve the stuffed capsicum with the hot gravy with Indian Breads.

Adjust the salt/spices as per your taste and preferences.

Capsicum Aloo Stir fry 2

Capsicum Aloo Stir Fry is a spicy side dish for Indian breads. A blend of green chilies, shredded raw mango, coconut is added to capsicum. 

Capsicum or Bell Pepper / Simla Mirch is a vegetable where we can keep experimenting various combinations. 


Ingredients
Seasoning
  • Mustard seeds 1 Tsp
  • Cumin seeds /Jeera 1 Tsp
  • Hing-Pinch
  • Urad Dal 1/2 tsp
  • Chana Dal 1/2 tsp
  • Turmeric-pinch
  • Curry leaves-few
  • green chiles -4-5 finely chopped
  • Shredded raw mango -1/2 cup
  • Coconut-1/4 cup

Method- 

Heat oil for in a frying pan over moderate heat. Add items mentioned in seasoning Once done add capsicum, potato slices and saute for 1 - 2 min. Once done add shredded raw mango, green chilies, coconut to capsicum and stir-fry over low heat for 5 - 7 minutes till capsicums are tender. Add salt mix well.

Serve Capsicum Aloo Stir fry 2 hot with chapati or rice.

Ingredients  


Capsicum(finely chopped) - 1/2 cup
Sweet Corn - 1/2 cup
 Onions(finely chopped) - 1/2 cup
Pepper pwd-1/2 tsp
 Green chillies(finely chopped) - 2 
 Salt - to taste.
Italian seasoning-to taste
Chaat masala-to taste
Butter
Bread
Mozarella Cheese
Green chutney

Method: 

In a bowl, add chopped capsicum, sweet corn, onions, green chilies, salt, pepper powder, seasoning in a bowl and mix it well. Next add Mozzarella cheese and mix it again. Take bread slice and apply green chutney and butter. Place this mix on the bread slice, cover this with one more bread slice. Toast it in the toaster. Serve this sandwich hot with tomato ketchup.

Capsicum Tomato Avalakki

Capsicum Tomato Avalakki is very simple and easy to prepare.It has the nice tangy and spicy flavor. Poha (oggarane avalakki ) or seasoned rice flakes are healthy and easy to digest too, just right for all ages.

Adding vegetables to Poha makes it more healthier.

Ingredients


  • 1 cup poha (flaked rice /avalakki) 
  • Tomatoes-2 finely chopped
  • Capsicum-1 finely chopped
  • 1 tbsp. oil
  • 1/2 tsp. mustard seeds
  • 1/2 tsp. Chana dal
  • 1/2 tsp. Urad Dal
  • 1/2 tbsp Peanut
  • 1-2 green chilies, finely chopped (opt)
  • 1 Tsp Bhath pwd
  • Few chopped coriander leaves
  • Few curry leaves
  • Hing-pinch
  • Tumeric-pinch
  • Salt to taste
  • 1 tbsp. grated fresh coconut (opt)
  • 1/s tsp Lemon juice



Method

Soak the poha in water for 5 minutes. Wash thoroughly and drain the water completely. Heat oil in a pan, fry peanuts and keep it aside then add mustard seeds, after it splutters, add chana dal/urad dal, hing,turmeric and stir fry. Add green chillies or bhath pwd,curry leaves. Add chopped tomatoes,capsicum and fry it for a while. Add soaked avalakki, salt and mix well. Add coconut, lemon juice, coriander leaves mix carefully. Serve Capsicum Tomato Avalakki hot.

Capsicum Rice Sevai

Capsicum Rice Sevai  is an enjoyable healthy filling breakfast recipe. A perfect start for your busy day.

Ingredients:
· 2 cups rice vermicelli 
· 1 cup simla mirch thinly sliced

Seasoning

· 4-5 green chillies chopped
· few curry leaves
· 1 tbsp oil
· 1/2 tsp mustard seeds
.1/2 tsp jeera
· 1 tsp urad dal
· 1 tsp channa dal
 .Turmeric-pinch
. Hing-pinch
· Salt for taste
· Water

Garnishing
· 1-2 tbsp grated coconut
· Few coriander leaves


Method:
  • Boil water in a vessel.In a bowl add the rice sevai ,add the hot water allow to rest for 5-10 mins.Next in a kadai , add oil,fry the cashews and keep it aside. Next add mustard seeds, followed by urad dal, channa dal ,and jeera, hing, curry leaves, chopped chilies, turmeric and sauté well. Now, add sliced capsicum and stir fry well .Strain the vermicelli and add to the kadai,add salt.
  • Mix well. Add the fried cashews and mix well.
  • Garnish with coconut.Serve hot.

        Capsicum Bhath with Hurikadle  / Capsicum Rice is easy and perfect one pot meal. Stir fried capsicum blended with bhath powder and hurikadle in rice tastes delicious.

        • 2 tbsp. Bhath Powder
        • Dry grated coconut-1 tbsp
        • Hurikadle-few
        • Coriander leaves-few chopped

        Method: In a pan add little oil and stir fry capsicum and keep it aside.Cook rice and Spread it on a plate.Heat oil , add mustard seeds, after it splutters ,add chana dal,urad dal,hing,curry leaves, chiles , turmeric and fry until golden brown. Also fry Fried gram (hurikadle) Add the capsicum, bhath powder, salt and mix well.Add rice, and mix well.Garnish with coconut. and coriander leaves Serve hot with raita or papad or enjoy just like that.

        Simla Mirch Bhajia / Capsicum Fritters

        Simla Mirch Bhajia (Capsicum Fritters) is a  spicy starter/snack that can enjoyed by all of us. 

        If you are bored with the normal onion /Aloo bhajjis, try this delicious, perfectly flavoured Capsicum fritters.

        Simla Mirch Bhajia

        Simla Mirch Bhajia / Capsicum Fritters


        Ingredients

        • 1  Large Capsicum cut finely
        • 1-2  tsp red chilli pwd /Bhath pwd
        • 1/2 tsp tumeric pwd
        • 1 tsp Dhania Jeera Pwd
        • 1 tsp of dry mango powder 
        • (Everest Amchur)(opt)
        • 1/4 tsp  garam masala 
        • 1/4 tsp ajwain
        • 3 tbsp gram flour (besan)
        • 1 tbsp rice flour
        • salt for taste
        • Oil for frying


        Method-

        Take a bowl combine all the ingredients and mix well. 
        Add little water, add cut capsicum and mix well ,the flour and capsicum should blend and be well coated and be dry. 
        Heat a little oil and add it to this batter and mix it well.
        Keep it for sometime.
        In a kadai heat sufficient oil for frying. 
        Slowly add the capsicum besan mix in batches in the hot oil. 
        Fry till golden brown on both sides. 
        Drain on absorbent paper. 

        Serve hot spicy, crispy fried Simla Mirch Bhajias with ketchup or chutney of your choice.

        You can enjoy these with simple Rasam Rice too!.. Anyway you like it, you will surely enjoy the taste.

            Capsicum Chutney

            Capsicum Chutney is yet another vegetable based chutney that can be enjoyed with Dosa/Idli or Chapati.This is easy and spicy -a non coconut based chutney.



            Capsicum Chutney
            Ingredients:
            • 1 cup Green Capsicums chopped
            • 1 Onion, chopped
            • Few Peanuts roasted
            • 1 tbsp. Oil
            • 4-5 Green chillies
            • 1 tsp tamarind paste
            • Salt to taste
            Seasoning
            • 1/2 tsp Mustard
            • 1 tsp Chana dal
            • 1 tsp Urad dal
            • Few Curry leaves
            • Hing-pinch
            • 1 tbsp Oil

            Method: Roast the peanuts and keep it aside. Next add oil in kadai, fry capscium, chilies, onions. Grind these with tamarind paste into chutney with very less water. Season with mustard seeds, hing, chana dal, urad dal and curry leaves. Enjoy with dosa, idlis or Indian Breads.

            Capsicum Gojju

            Capsicum Gojju (Kannada-word for Tamarind based curry) is delicious ,spicy gravy of Shimla Mirch (Bell Pepper) cooked with tangy tamarind. Enjoy with chapati. It's traditional dish in South Indian homes.

            Ingredients
            1. Capsicum-1 cup (finely chopped)
            2. Oil-2 tspn
            3. Mustard – 1/2 tspn
            4. Jeera-1/2 tspn
            5. Chana dal-1 tsp
            6. Urad Dal-1 tsp
            7. Hing-pinch
            8. Turmeric pwd-1/2 tsp
            9. Tamarind juice-1-2 tsp
            10. Curry leaves few
            11. Rasam pwd-1-2 tbsp
            12. Jaggery-1 tsp
            13. Dry coconut-1-2 tsp
            14. Salt to taste
            Method-In a kadai, Add oil and fry capsicum well. Keep it aside. Next heat oil in a pan and add mustard, chana dal ,urad dal ,hing, turmeric pwd, curry leaves once done add Rasam (Saaru) powder, tamarind juice, jaggery, salt, water and mix well .Add capsicum and mix well. Cook for 2 – 3 minutes till the gravy thickens. Add dry coconut and mix . Serve Capiscum Gojju hot with chapati.

            Ingredients:
            Corn Capsicum Masala Gravy

            1 cup Sweet corn(steamed)

            1 Simla Mirch (capsicum)
            1 onion, finely chopped
            1/4 tsp ginger garlic paste
            1 tomato finely chopped
            1-2 green chillies chopped

            1/2 tsp jeera
            1/2 tsp red chilli pwd
            Turmeric pwd-pinch
            1/2 tsp dhania jeera pwd
            1 tsp Garam masala 
            1/2 tsp kasuri methi(Everest)
            salt to taste
            1 tbsp oil/butter
            Curry leaves-few
            Coriander leaves-few

            Roasted Cashew-few


            Method-In a kadai, add little oil, fry capsicum and keep it aside. 
            Next in a pan, heat oil, add jeera, chopped onions, green chillies and curry leaves and fry, next add ginger-garlic paste and saute for 2-3 mins. 
            Add the chopped tomatoes and masala pwds and fry well. 
            Add little water and cook for 1-2 mins. Next add the fried capsicum, sweet corn, salt, kasuri methi ,cashews and mix. 
            Simmer for 2-3 mins till the gravy blends well stirring occasionally. 
            Garnish with coriander leaves.
            Serve hot with rice or rotis.

            Capsicum Peas Gravy

            Capsicum Peas Masala is delicious gravy that can be enjoyed with Indian breads. Another Sabzi variety of capsicum and peas blended in various spices.


            Ingredients

            Capsicum Peas Masala

            • Onions - 1 chopped
            • Capsicum, chopped 2-3
            • Peas - 1 cup 
            • Oil - 2 tbsp
            • Cashew nut -5-6
            • Green chilies - 2-3
            • Tomato-1 chopped
            • Ginger Garlic paste - 1/2 tsp
            • Butter - 1 tbsp
            • Red Chili pwd-1 tsp
            • Garam Masala-1 tsp
            • Dhania Jeera Pwd-1/2 tsp
            • Salt to taste
            • Amchoor pwd-1/4 tsp
            • Cumin seeds - 1/2 tsp
            • Mustard-1/2 tsp


            Method: Roast cashew ,onion(little) and chilies. Grind it into smooth paste.Grind the tomatoes into puree. Heat oil or butter in kadai, sauté capsicum. Remove and keep it aside. Next, add oil, add mustard, cumin seeds, add onions and fry well. Add the ginger garlic paste, masala pwd, cashew paste and fry well. Add tomato and let it cook for 2-3 mins, add the peas and capsicum, add salt and cook till the gravy is done. Garnish with coriander leaves. Serve hot with Indian breads.
