Jaggery Rava Sheera

Jaggery Rava Sheera is yummy flavored sweet that can be made in very less time Semolina blended with powdered jaggery, banana and dryfruits makes it very delicious. Enjoy this healthy dessert.


Jaggery Sheera



















Ingredients
cup Chiroti rava (semolina or sooji)
 cup water
1/2 
cup Ghee
Few Raisins
cup  Sugar 
Few Cashew nuts/Badam 
3/4 cup jaggery (reduce as per your taste)
1 banana chopped

Method -

In bowl, add jaggery and water and let it boil till it forms a syrup. Drain and keep it aside. Next Roast rava in the ghee till aromatic.
Add jaggery syrup and mix.
Simmer and cover with lid till it blends in. 
Add raisins and cardamom powder, other dryfruits, banana and  mix well.
Add extra ghee and mix till it leaves side.
Enjoy hot.

Mango Kulfi

Mango Kulfi  is a rich, delicious and creamy dessert and a must have recipe during the mango season. It is flavourful and tasty way to enjoy the sweet ripe mango. Kulfi is made from cooking the milk and reducing the quantity to thick consistency. A perfect way to enjoy the Summers with the goodness of mango.
Ingredients

  • 1 Cup Mango Puree
  • 1/2 cup cut mangoes
  • Few Saffron Strands Soaked in milk
  • 1.5  Cup Milk
  • 1/2 cup sugar
  • 1/2 Tsp Cardamom Powder
  • Dryfruits for garnish







Method-

Wash and peel mangoes and cut them into cubes. 
Blend it into a  smooth puree. In a vessel boil milk. Keep stirring continuously, reduce the flame and cook for 30-40 minutes stirring from time to time till the mixture becomes thick and creamy. Add sugar and mix. Add soaked saffron, dry fruits and cardamom powder. Remove from fire and let it cool. In a bowl or kulfi moulds, add the puree, pour this creamy milk mixture and top it up with few cut mango pieces. Freeze it for 3-4 hours or till it sets well. Remove from the mould and Enjoy chilled.

Shahi Tukda

Shahi Tukda or Shahi Tukra is an all time favorite at my home. And am sure once you try it you will definitely enjoy it too. It is made by roasting the sweet bread slices in ghee then topped with a thick rabdi and garnished with dry fruits. You can also use Milk bread to make Shahi Tukda. A truly rich bread pudding! Forget the diet for a day and enjoy this delicious dessert!


Ingredients


Shahi Tukda
  • 6 slices White sweet bread slices
  • Ghee for roasting
  • 1/4 cup Sugar
  • Few Cardamom crushed
  • 1 litre Full cream milk
  • 15-20 strands Saffron
  • Few almonds and pistachios to garnish


Method- First in a thick bottom vessel boil milk. Let it boil it starts thickening. Next add sugar and stir. Keep stirring the cream into the milk so it thickens well. Once done switch off the gas. Add saffron and cardamom powder. 
Next cut the corners of sweet bread slices and cut the slices in any desired shape. Next on a tava roast the bread golden brown on both sides. Use ghee while roasting the bread. Now in a serving plate, place the bread. Pour the thickened and sweetened milk over the bread slices. Garnish with almonds and pistachios slivers. You can either serve this royal dessert immediately or set it in fridge and enjoyed chilled.

Orange Sheera

Orange Sheera or Orange Kesari / sajjige is yummy flavored sweet that can be made in very less time. Enjoy this delicious dessert during orange season along with your kids. Sweet and warm Sheera/Sajjige blended with fresh orange puree, garnished with dryfruits makes it a perfect dessert recipe.


Ingredients

cup Chiroti rava (semolina or sooji)
cup Ghee
2
tbsp Raisins
1/2 cup thick orange pulp
1/2 cup milk
/2 cup  Sugar 
Few pista /Cashew nuts/Badam 
1 tsp  Cardamom Powder
1 tbsp kesar milk (kesar soaked in milk)


Method
  • Roast rava in the ghee till aromatic
  • Add sugar and mix and lower the flame. Add the fresh orange pulp. Simmer and cover with lid till it blends in. 
  • Add raisins and cardamom powder to garnish.
  • Add fried cashew nuts/Badam and kesar milk and mix.
  • Enjoy with little ghee on the top.

Hershey's Eggless Chocolate Cake - The baking continues, today's trial is chocolate cake and it did come out well. Made from Hershey's chocolate powder, it is delicious and mouth watering.  Do try it out, it is easy to prepare. Kids will definitely love it. So for a perfect tea time or for your kids lunch box, check this chocolate cake. This doesn't include butter. 


Ingredients

Maida/Plain flour - 1.5 cup 
Baking Powder - 1/2 tsp
Baking Soda - 1/2 tsp
Sugar - 1 cup
Hershey's Cocoa pwd- 5 tbsp 
Vegetable Oil - 1/4 cup 
Salt-1/4 tsp
Water-1 cup
Lemon Juice-1 tbsp
Vanilla essence-1/2 tsp

Method -  Preheat the oven to 180ºc ,prepare the baking tray by lining with parchment paper. Next sieve the flour, baking powder, baking soda,cocoa powder well. In a bowl, mix sugar and oil and blend well. Next add water and mix again. Once it is mixed well, add the flour mix slowly and fold in carefully. Do not over mix. Add the batter to baking tray. Bake it for 30-40 mins. You can insert a toothpick, to check if the cake is done well.

Once done, let it cool , slice and serve, Enjoy yummy and delicious chocolate cake. You can add the syrup too.

Moist Orange Cake

Moist Orange Cake slice - I am trying my hand at baking, this is my first one. Do try it out, easy and delicious, especially when it is the season for juicy colorful oranges.  It's fresh and has a nice tangy taste. Kids will love it too. So for a perfect tea time or for your kids lunch box, check this moist orange cake.

Ingredients

  • Baking Soda - 1/2 tsp
  • Sugar - 3/4cup
  • Thick Yogurt - 3/4 cup 
  • Vegetable Oil - 1/2 cup 
  • Orange juice - 1/2 cup (fresh)
  • Orange Zest - 1 tsp

Pista Sheera

Ingredients
cup Chiroti rava (semolina or sooji)
 cup Milk

cup Ghee
Few Raisins

2-3 tbsp  Pista Pwd (homemade
sliced Pista pieces

Method -

Roast rava in the ghee till aromatic.
Add sugar and warm  milk and lower the flame. 
Simmer and cover with lid till it blends in. 
Add raisins and cardamom powder ,pista powder mix well.
Add fried cashew nut and kesar Enjoy with little ghee on the top.

Sheera Poli / Sajjige Holige

Sajjige Holige or Sheera Poli is an interesting dessert that can be made during festivals or during the vacation time.

Delicious and tasty and equally filling.The kids will definately love it.Do try it out


Ingredients:

    Sheera Poli / Sajjige Holige
For Holige 
    • Maida Flour 1 cup
    • Chiroti Rava 1/4 cup
    • Ghee
    • Water for mixing


Method-In a bowl ,mix the flour with water, a little salt and ghee and make a soft dough.Knead well and cover for few hours.Make small balls with sajjige.

Make small chapati with the dough,keep the sajjige ball in the middle and bring all the sides together, flatten them with your fingers, next  make the holige.Heat the tava and carefully place the holige on the tava and cook the obbattu on a medium heat, add ghee on both sides turning gently. Serve either hot with ghee.

Ragi Huri Hittu Ladoo

Ragi Ladoo is one of the healthiest  and tasty food.Loaded with lots of nutrients ,Finger millet ladoos are a perfect snack or in between bites when your kids are hungry.

Ingredients

  • Ragi Huri Hittu (Finger Millet flour) : 1 cup
  • Ghee : ½ cup
  • Powdered Jaggery : ½ cup

Method -In a pan ,add little ghee fry the finger millet flour on low heat for 5-10 mins, keep on stirring.Do not burnTake off the heat and let it cool.Add powdered jaggery and mix well.Apply ghee onto your palm; take 3-4 tbsp of the mix and make it into ball shape like ladoo .Keep adding ghee so it becomes smooth.(you can add 1-2 tsp milk )

Poori with Aamras / Mango Seekarne

Poori with Aamras / Mango Seekarane- is a combination of Hot Poori with cold Aamras, one delectable recipe that can be enjoyed during weekends in Mango season.

Poori with Aamras / Mango Seekarne

Ingredients:

  • 1 big cup Mangoes (medium sized)
  • 1/2 cup Milk
  • 1/2 tsp Powdered Cardamom/Elaichi
  • Sugar, as per taste
  • Saffron strands-few

Method : 

Peel the skin off the mangoes and cut into very tiny pieces else add them in mixer and grind one round or just squeeze the pulp with your hands, any way you like it. 

It will taste yummy.

Next add sugar, elaichi powder mix well and keep aside.

Just before serving, add the cold milk and mix well.

Add into small bowls and serve with hot pooris/chapatis or enjoy just like that.

Badam Puri

  Badam Puri

Badam Puri is a yummy dessert that can be enjoyed on special occasions or festivals. 

Rich and tasty layered delight-crispy from outside and soft within.


Ingredients:

  • 2 cups-maida
  • 2 cups sugar
  • 1 cup ghee
  • 1 tsp. Elachi pwd
  • Oil/Ghee for - frying
  • 1 tbsp grated dry coconut
  • Milk
  • Rice flour

Method: 

  • Mix sugar, water and make a syrup. 
  • Add cardamom powder and keep aside.
  • In a bowl,add the flour, ghee and milk knead well and make a soft dough .
  • Rest it for 4-5 hrs.
  • Take a small sized ball of dough and roll into a round shape, 
  • then fold it into half and half like cone.
  • Fix a clove in the centre of the triangle.
  • Fry these triangle folded pieces in the heated oil/ghee . 
  • Fry till golden color and remove it.
  • Dip these puris into the sugar syrup and then remove it on to a plate.
  • Decorate with grated nuts and coconut.

Avalakki Payasa Ver II

Avalakki Payasa/ Poha Kheer is simple and easy dessert recipe. Delicious and tasty made during festivals as well. Enjoy this flattened rice pudding warm or cold. This is the jaggery version.

Avalakki Payasa/ Poha Kheer

Ingredients

  • Poha - 1/4 cup
  • Jaggery -1/4 cup 
  • Milk - 2 1/2 cups
  • Ghee - 1 tsp
  • Cashew nuts/Raisins -5-6
  • Pistachio -few pieces
  • Elachi pwd -1/4 tsp
  • Saffron -2-3 strands (soaked in milk)


Method
In a pan, heat ghee fry  the dry fruits and keep it aside. Next fry the poha with little ghee. Once done, add milk to the pan, simmer and cook till the milk thickens. Keep stirring in between. Next add jaggery, cardamom powder, saffron and mix well. Garnish with dry fruits.
Enjoy either hot or chilled.

Hoorna Holige/Puran Poli

Hoorna Holige is a awesome mouthwatering dessert made during Hindu festivals like Ugadi, Vara Maha Lakshmi, Holi, Diwali It is also called as Obbattu in kannada and Puran Poli in Marathi. Enjoy !


Ingredients:

For Hoorna
  • Chana Dhal 1 cup
  • Jaggery 1 to 1 1/2 cup 
  • Cardamom 5-6
  • Dry coconut-2-3 tsp
  • Khus Khus (opt)

For Dough
  • Maida Flour 1 cup
  • Chiroti Rava 1/4 cup
  • Ghee

Method: In a bowl ,mix the flour with water, a little salt and ghee and make a soft dough.Knead well and cover for few hours.

Hoorna - Soak the chana dal overnight .Next day pressure cook the chana dal .  Once done strain the water from the cooked dal and keep it aside.(we can make tasty rasam with the dal water).Next grind the shredded jaggery,cooked dal and cardamom in a mixer .

Once done in a kadai,add little ghee ,add this mix and fry till it done.Next make it into small balls.

Make small chapati with the dough,keep this Hoorna ball in the middle and bring all the sides together, flatten them with your fingers, next  make the holige.Heat the tava and carefully place the holige on the tava and cook the obbattu on a medium heat, add ghee on both sides turning gently. Serve either hot with ghee or enjoy with milk.
