Potato Peas Stir Fry / Aloo Matar Dry Sabzi

Potato Peas Stir Fry /Aloo Matar Dry Sabzi is a delicious combination prepared with blend of spices. Simple and tasty. Enjoy with Chapati or Pooris.

 
Ingredients
2 Potatoes, boiled
1 onion finely chopped
1/2 cup green peas steamed
Aloo Matar Dry Sabzi
1 tsp Mustard
1/2 tsp chana dal
1/2 tsp urad dal
Hing-pinch
½ tsp Turmeric
2 tbsp Bhath pwd
Few Corianderleaves
Few Curry leaves
Lemon juice
2 tbsp Oil
Salt to taste

Method: 

Chop the boiled potatoes. 
Heat Oil in pan, add mustard, chanadal, uraddal, hing, tumeric, curry leaves, and fry for some time. 
Add onions and peas and fry well. 
Next add potatoes, Bhath powder, salt and mix well, fry for some time. 
Garnish with coriander leaves and lemon juice.

Serve Potato Peas Stir Fry hot with chapati/puris.

Peas Potato Green Gravy


Peas Potato Green Gravy is an interesting accompaniment - a South Indian version. You can enjoy it with rice or Indian Breads. 

This delicious creamy peas gravy/curry is a blend of Indian spices with onion, and coconut.  

 
Ingredients

  1. 1 cup peas steamed
  2. 2 boiled potatoes (cut into cubes)
    Peas Potato Green Gravy
  3. 1 tomato chopped
  4. 1/4 tsp turmeric powder
  5. 3 tsp cooking oil
  6. 1/4 tsp mustard seeds
  7. 1/2 tsp urad dal
  8. 1/2 tsp chana dal
  9. Hing a pinch
  10. 4 - 5 curry leaves
  11. Salt as per your taste

To grind

  1. 1/2 cup grated coconut
  2. 1 onion chopped
  3. small piece ginger
  4. 1 tsp coriander seeds
  5. 1/2 tsp cumin seeds 
  6. 2 tbsp putani /roasted dal
  7. 1 tsp poppy seeds
  8. 2-3 green chili
  9. 1/2" cinnamon
  10. few cloves
  11. few cashews
  12. 2 tbsp coriander leaves  
Method - 

Roast the ingredients from 2-5 mins with little oil. 
Next grind all ingredients along with spices. 
In a pan heat a tsp of oil and add mustard, chana dal, urad dal once done, add curry leaves, hing and turmeric. 
Add  tomatoes and fry well. 
Next add the steamed peas and boiled potatoes. 
Mix. Add the grounded paste and mix well. 
Bring it to boil. Add salt. Simmer on low heat for 3-4mins. 

Cover and let the gravy blend well. 

Serve Peas Potato Green Gravy hot with puris or chapatis or rice.

Aloo Fry Masala Rice

 Aloo Fry Masala Rice or Roasted Aloo Rice  is made from simple potatoes roasted in oil and blended in Bhath powder into a nice spicy delicious rice.  Ready to eat meal in less time. Perfect for lunch box too. Kids will love it.



  • 3 big Potatoes
  • 1/2 tsp Mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/2 tsp jeera
  • Hing-pinch
  • Turmeric-pinch
  • 2-3 tsp Bhath pwd
  • 1 tbsp besan
  • 2 tbsp Oil
  • Salt to taste
  • 1 cup rice.

Method: 

Cook rice well and spread it on a plate.
Cut the potatoes in small pieces. 
Heat Oil in pan, add mustard, chanadal, 
uraddal, jeera, hing tumeric, curry leaves, 
and fry for some time next add the potatoes and fry. 
Keep frying in between till done.

Add the masala pwd in the oil. Next add salt and mix well, fry for some time till the masala coats well on t
he potatoes.  Add the rice and mix.

Besan Aloo Toast

Besan Aloo Toast  is a interesting recipe made from spicy besan batter (gram flour) with potato sabzi topped on bread.  A yummy and crunchy snack is ready in no time.

Ingredients:
Besan/gram flour-1 cup
Besan Bread Toast, Bread Besan toast, Aloo toast
Besan Aloo Toast 

Bread slices-4-5
Green chillies-1-2 (opt)
turmeric pwd-pinch
Hing-pinch
Red chilli pwd-1/4 tsp
Garam masala-1/4 tsp
Jeera-1/2 tsp
Carom seeds-1/2 tsp
salt as required
water (mixing the batter)

oil- for frying 


    Method- 
    In a bowl, mix all ingredients except bread and potato sabzi. Add little water and mix well, ensure no lumps are present. Cut the bread into halves. Take the bread slices, apply the potato sabzi on top of it, spread the besan batter on the bread slices, using a knife and spread all over. (or dip the bread in the besan batter ) Next heat oil in a kadai, carefully drop the bread with the batterside. Once it is slightly brown, fry the other side. 
    Serve Besan Aloo Toast hot with chutney or ketchup.

    Corn Aloo Paratha

    Corn Aloo Paratha is very healthy and nutritious , mashed corn with spices with boiled potato  makes it tasty and delicious.

    Ingredients  

    • Wheat flour 3 cups
    • Potato 2  (boiled and mashed)
    • Corn 1 (cup steamed)
    • Red chilly pwd1/2 Tsp
    • Garam masala pwd1/2 Tsp 
    • Dhania jeera pwd-1/2 tsp
    • Salt to taste   
    • Ghee or oil for frying   
    • Jeera-few 
    To grind
    • Pudina leaves-few
    • Coriander leaves-few
    • Green chilies- 1-2
    • Ginger- 1/2 tsp shredded 
        
    Method

    1.Knead the flour with water, a little salt, oil into a soft dough. Cover it for 4-5 hours.
    Blend corn with green chilies, ginger, coriander, pudina leaves into a paste. Do not add water
    2.In a Kadai heat oil, add  jeera, fry .Then add the blended paste  and fry well next add garam masala powders, and fry for a while. Add the mashed potatoes, salt and mix well. Fry till dry set aside to cool. Divide the mixture into balls. 
    3.Make a small chapati with the dough, keep this ball in the middle and bring all the sides together, flatten them with your fingers, or use the rolling pin to make the paratha.
    4.Heat a tava, put in the paratha, turn on both sides till done.
    Add oil or ghee all around the edges, fry both sides, 
    carefully turning over until evenly brown. 
    Serve very hot with pickle, chutney  or curds.

    Moong Aloo Tikki

    Moong Aloo Tikki is an interesting and healthy protein rich snack recipe. Made with full green moong and potatoes makes it nutritious and tasty. Enjoy!

    Cook time: 15 mins

    Total time: 30 mins

    Servings: 12 tikkis

    Ingredients

    • Moong (boiled)-1 cup
    • Potatoes boiled/shredded-1 cup
    • Carrot-Shredded-1/2 cup
    • Onion-chopped-1/2 cup
    • Salt to taste 
    • Turmeric -1/4 tsp
    • Hing-pinch
    • Green chillies 1-2 (finely chopped)
    • Lemon juice 1 tsp
    • Jeera-1/2 tsp
    • Fresh coriander leaves 
    • Chaat Masala-1/2 tsp
    • Red chilli powder 1/4 teaspoon 
    • Garam Masala-1 tsp
    • Oil to shallow fry 
    • Bread crumbs-for covering/binding

    Method-

     In a bowl, add the boiled moong and smash well, add all the above ingredients except oil and mix well. 
    Divide the mixture into equal portions and shape them as patties. 
    Take small portion of mix, flatten it, pat it well.Roll it over bread crumbs. 
    On a tava, add oil and place the patties shallow fry till golden brown on low heat. Flip on the other side slowly. 

    Once done iserve Green Moong Aloo Tikki hot with ketchup or chutney.

    Aloo Sevai / Potato Vermicelli

    Potato Sevai or Alugadde Shavige / Aloo Vermicelli is the simple sevai blended with the boiled potatoes. It is tasty, spicy and filling breakfast. A nice, quick hot breakfast with goodness of potatoes for chilly winter mornings.

    Ingredients:
    Aloo Sevai / Potato Vermicelli
    1. Vermicilli / sevai- 1 cup
    2. Water - 2 cups
    3. Potatoes-1 cup (boiled and chopped)
    4. Green chillies-6-7
    5. Curry leaves-few
    6. Oil-1-2 tbsp
    7. Mustard-1/2tsp
    8. Jeera-1/2tsp
    9. Channa dal-1tsp
    10. Urad dal-1tsp
    11. Hing- a pinch
    12. Turmeric-a pinch
    13. Fresh coriander-few
    14. Lemon juice-1tbsp
    15. Salt to taste
    16. Freshly grated coconut-1/2 cup (opt)

    Method:  Boil water. Heat oil in a pan add mustard, jeera when they begin to splutter add channa and urad dal fry about 2 minutes until light brown. Next add chopped  green chillies, potatoes, hing, curry leaves, and fry well. Once done add sevai ,salt and mix well next add the boiling water slowly. Stir until all the water is gone.  Add the lemon juice. Close the lid and simmer for 8 to 10 minutes. Garnish with coriander leaves and coconut and serve potato sevai hot.

    Aloo Tamatar Masala


    Aloo Tamatar Masala is a delicious and flavorful side dish that goes perfectly well with Indian Breads or rice. A combination of potatoes in spicy onion and tomato gravy its delicious and flavorful and easy to prepare. 

    Aloo Tamatar Masala
    • Ingredients
    • 1 tsp jeera
    • 1/2 cup tomato puree
    • 1 cup chopped tomatoes
    • 1⁄2 teaspoons ginger garlic paste 
    • 1 tsp dhania-jeera pwd
    • 1 tsp red chilli powder 
    • 1 tsp garam masala
    • 1 cup potato cubes
    • coriander leaves, to garnish 
    • Oil-3 tbsp
    • 1 tbsp cream



      To Grind 
    • Few cashews (soaked in water)
    • 1-2 Green Chilies
    • 1/2 cup chopped Onion

    Method- Boil potatoes and cut it into cubes. Roast them in oil. Next grind all the items mentioned above under grind into fine paste. Add oil in a pan, add the cumin seeds. Next add the chilly powder, garam masala, ground paste and the tomato puree and keep stirring. Next add chopped tomatoes, fried potato cubes. Add salt, sugar and mix well. Top it up with cream  Cook till the gravy thickens.  Serve hot with Indian Bread of your choice.

    Potato Masala

    Potato Masala is the sabzi made for Masala dosa. You can also enjoy with pooris and chapatis too. You also make Aloo Bonda out of it. Yummy and delicious to taste.

    Potato Onion Palya/Sabzi 


    Ingredients

    • 2 large potatoes
    • 1/2 cup onion finely chopped
    • 5-6 green chillies chopped
    • 1 tsp mustard
    • 1/2 tsp chana dal
    • 1/2 tsp urad dal
    • Hing-pinch
    • 3-4 curry leaves
    • A pinch turmeric
    • Oil- 1 tsp
    • Salt-for taste
    • Lemon juice-1/2 tsp










    Method:

    Cook the potatoes in pressure cooker, peel and mash them.
    Heat oil and add mustard seeds,chana dal,urad dal, When they start popping, add curry leaves, hing, green chillies, onion. Fry for few minutes. Add turmeric, salt and potatoes. Mix well.  Garnish with coriander leaves and lemon juice.

    Aloo Samosa

    Aloo Samosa is an interesting spicy, fried snack. Samosas are very popular and tasty and enjoyed by all. There are variety of fillings that is added to make Samosa. This is a simple version with potatoes.

        Aloo Samosa

    Ingredients

      samosa filling
    • Potatoes -3 (boiled,grated)
    • Garam masala - 1 tsp
    • Dhania jeera pwd-1 tsp
    • Broken Dhania seeds-1tsp
    • Saunf-1 tsp
    • Jeera  - 1/2 tsp
    • Salt 
    • Lemon juice
    • Corainder leaves
    • Dough
    • Maida flour - 2 cup
    • Ghee/Oil - 4 tbsp
    • Ajwain
    • Salt 
    • Water
    • Oil for frying
    • Method- In a pan, heat oil,add jeera,saunf, broken dhania seeds and fry. Next add the boiled and mashed potatoes and stir. Next add the masala pwd and mix well. Add salt, lemon juice and coriander leaves.
    • Mix the flour with ingredients mentioned under the Dough. Knead it well into semi-soft dough (Just like chapati). Make small balls and keep aside. Make small rolls of dough and roll it into a small circle. Form a cone, add the filing and cover the cone, use little water to close it.
    • Heat oil in kadai, slowly slide the samosas , fry till  golden brown on low heat.
    • Serve Aloo Samosa hot with chutney or ketchup.

    French Fries


    French Fries is every one's favourite. A perfect recipe for rainy days where you want to eat something chatpata but cannot go out or are just bored to order. So why not make it with your kids at home. 


    Healthy, Hygenic, tasty. Enjoy it hot while watching a nice movie.

    French Fries

    Ingredients

    • Potato -2 large
    • Spices and Salt-as per taste
    • Oil -for frying



    Method- Take a fresh potato, clean well and peel the skin. Next cut the corners and cut finger sized fries shaped pieces. It should be like cubes. Soak the cut pieces in cold water for 2-4 hours to remove starch and make the fries crisp. Drain the water out very well. Arrange in tray to dry it off. Heat oil in a pan and deep fry the pieces on low heat. Remove once it starts softening. Once the batch is completed, increase the flame and fry the potatoes again till it turns brown and crispy or once done. Take it out on plate on a tissue, so excess oil gets absorbed.


    Add salt and pepper and give it a mix and serve hot with ketchup.

    Potato Upma

    Ingredients:

    1. Rava or sooji- 1cup
    2. Water - 2 cups
    3. Potatoes-1 cup (boiled and chopped)
    4. Green chillies-6-7
    5. Curry leaves-few
    6. Oil-1-2 tbsp
    7. Mustard-1/2tsp
    8. Jeera-1/2tsp
    9. Channa dal-1tsp
    10. Urad dal-1tsp
    11. Hing- a pinch
    12. Turmeric-a pinch
    13. Fresh coriander-few
    14. Lemon juice-1tbsp
    15. Salt to taste
    16. Freshly grated coconut-1/2 cup (opt)

    Garnish with coriander leaves and coconut and serve potato rava upma hot.

    You can also add Dhania-Jeera Powder/Kalamiri Powder for additional spicy flavor.

    Potato Peas Cutlet

    • Potato Peas Cutlet is  an interesting all time favourite snack. Made from  potatoes and other veggies it is crispy from outside and soft and delicious from inside. Healthy and tasty , an easy way to get your kids eat vegetables.

    Potato Peas Cutlet
    Ingredients

    • 2 potato - boiled
    • 1/2 cup peas-boiled
    • 1 capiscum-finely chopped
    • 2 Green Chillies - finely chopped
    • 1 tsp garam masala pwd
    • 1/2 tsp Dhania Jeera Pwd
    • 1/2 tsp bhath Pwd
    • 1/2 tsp chaat masala
    • 3-5 tbsp chiroti rava/bread crumbs for coating
    • 1-2 slices of bread 
    • salt
    • Few Coriander leaves
    • Method -  Cook Potatoes and peas in pressure cooker. Peel and mash the potatoes well. Mash the peas too.In a bowl, add finely chopped capsicum, mashed vegetables, salt, masala pwds, coriander leaves, salt and mix well. Divide the dough into small balls and shape it into any shape -round or heart shaped. Roll it over the chiroti rava/bread crumbs so it is coated well. Keep cutlets to set it well for 5-10 mins. Next heat a pan or tawa add 1 tbsp oil, place 4-5 pieces of cutlet and cook in slow to medium heat until it becomes crusty and brown, turn to other side and cook again until done if needed drizzle some oil, repeat same for rest of pieces.
