Palak Poha Cutlet

Palak Poha Cutlet is easy snack for kids or elders, smart way of including greens in your  diet.  You can make from leftover Poha or use fresh soaked ones.

Prep time:  15 mins

Cook time: 15 mins

Total time: 30 mins

Ingredients:

  • 2-Potatoes boiled and mashed
    Palak Poha Cutlet

  • Salt as per taste
  • 1 tsp pepper pwd
  • 1 cup Poha (leftover) 
  • 1 cup washed and blanched palak 
  • 1-2 finely chopped greenchilies
  • 1/4 tsp garam masala
  • 1/2 tsp Red chili powder
  • 1/2 tsp dhania jeera pwd
  • Lemon juice
  • Oil for shallow-frying.
  • Bread Crumbs for coating.

Method: Chop the palak leaves and add the masala pwd and salt and mix it well add mashed potatoes, soaked poha, pepper pwd,green chilies, lemon juice and mix well. Take small portion of mix, flatten it, pat it well. Roll it on the bread crumbs. In a kadai, add oil and place the cutlet shallow fry till golden brown on low heat. Flip on the other side slowly. 

Once done serve Palak Poha Cutlet hot with ketchup or chutney.

Aloo Methi Sandwich

Aloo Methi Sandwich is simple and easy to make.  You can use your left over aloo methi sabzi and make this sandwich.. Else make it fresh.. Methi is loaded with nutrients and is healthy.

Ingredients
    • 2 cups boiled grated potatoes
    • 1 cup- methi finely chopped
    • 1.5 tsp- garam masala
    • 1 tsp-kitchen king masala
    • 8 Bread slices 
    • Butter
    • Salt
    • Green Chutney
    • Ketchup
      Method:  

      Aloo methi sabzi- In a pan, add oil, add jeera,  add the methi leaves and fry well, next add mashed potatoes, add the masala powders, salt and mix well. 

      Take bread, apply butter and  green chutney, smear the aloo methi stuffing, add some chaat masala, cover with another chutney-butter spread bread. 

      Grill in toaster. 

      Serve hot with chutney or ketchup.

      Punugulu / Crispy Vadas

      Punugulu / Crispy Vadas is an interesting and easy recipe made from leftover idli batter. A perfect evening snack to enjoy with hot coffee on a rainy day. Do try it out.

      • Ingredients

      • 2 cups idli batter



    1. ½ cup onion finely chopped
    2. 1-2  green chilli, finely chopped
    3. Coriander leaves few
    4. Curry leaves few
    5. Coconut chopped-few
    6. 1 tsp jeera
    7. ½ tsp kalamiri
    8. Salt for taste
    9. 1 tbsp chiroti rava
    10. 1 tbsp rice flour
    11. oil for deep frying
    12. Method- Heat oil in a kadai. In a bowl, add the idli batter, add rava and rice flour and fluff the batter well with a beater. Next add chopped onion, green chillies, coriander leaves, jeera,miri,coconut pieces and salt. Mix well. 

      Now slowly make small vadas and drop them in the oil. Let the heat remain on medium. Fry till the vadas become golden brown on both sides. Serve Punugulu or Idli Batter Bonda hot with chutney of your choice.


      Adjust the salt and spices as per your taste and preferences.

      Poha Cutlet

      Poha Cutlet is an interesting all time favourite snack. 

      Made from leftover Avalakki or Poha and mixed with potatoes makes it crispy from outside and soft and delicious from inside. 

      Healthy and tasty, an easy way to get your kids eat vegetables.

      Preparation Time: 15m 
      Cooking Time: 30m 
      Yield: Serves 8
      Recipe Type: Appetiser

      Ingredients

      • 2 potato - boiled
      • 1/2 cup Left over Poha
      • 1 capiscum-finely chopped
      • 2 Green Chillies - finely chopped
      • 1 tsp garam masala pwd
      • 1/2 tsp Dhania Jeera Pwd
      • 1/2 tsp bhath Pwd
      • 1/2 tsp chaat masala
      • 3-5 tbsp chiroti rava/bread crumbs for coating
      • 1-2 slices of bread 
      • salt for taste
      • Few Coriander leaves
      • Oil for making the cutlet
      • Method -  Cook Potatoes in pressure cooker. Peel and mash the potatoes well.In a bowl, add finely chopped capsicum, mashed vegetables, salt, leftover Poha, masala pwds, coriander leaves, salt and mix well. Divide the dough into small balls and shape it into any shape -round or heart shaped. Roll it over the chiroti rava/bread crumbs so it is coated well. Keep cutlets to set it well for 5-10 mins. Next heat a pan or tawa add 1 tbsp oil, place 4-5 pieces of cutlet and cook in slow to medium heat until it becomes crusty and brown, turn to other side and cook again until done if needed drizzle some oil, repeat same for rest of pieces.
      • Serve Poha cutlet hot with sauce or chutney of your choice.

      Sevai Cutlet

      Sevai Cutlet

      Sevai Cutlet is an add-on snack made from the leftover sevai upma. Enjoy it hot A perfect blend of vegetables, sevai to form a yummy crispy fritters for your evenings. Kids will love it too.


      Ingredients


      • 1 cup Veg Sevai Upma
      • 1 tbsp chilli powder
      • 1/2 tsp garam masala
      • 1/2 tsp red chilli sauce (opt)
      • salt to taste
      • oil for frying
      • 2-3 tbsp corn flour 
      • or Rice flour




      Method: In a bowl,add the vegetable sevai,add the masala  pwds,salt , corn flour or rice flour and mix well and shape them into small cutlets. Heat oil in a pan and fry the cutlet keep flipping it over until it turns brown and crisp. Serve hot with chutney or sauce/ketchup.

      Upma Cutlet

      Upma Cutlet is an add-on snack made from the simple upma. Enjoy it hot. Kids will love it too.

      Rava Cutlet / Sooji Cutlet can be made easily with leftover upma. 

      Ingredients


      • 1 cup Veg Upma
      • 1 tbsp chilli powder
      • 1/2 tsp garam masala
      • 1/2 tsp pepper pwd
      • 1/2 tsp red chilli sauce
      • salt to taste
      • oil for frying
      • 1 cup bread crumbs
      • 1 cup corn flour or maida
      • Water



      Method: In a bowl, add the upma, add the masala  pwds, salt, mix well and shape them into small cutlets. Roll it over bread crumbs. Heat oil in a pan and fry the cutlet keep flipping it over until it turns brown and crisp. Serve hot with chutney or sauce/ketchup.


      (you can add few cut bread pieces (soak the bread in water,squeeze the water out and add to the upma mix in case you are unable to  bind the mixture )
