Butter/Ghee - homemade method

Butter / Ghee Making process

Learn how to make butter /ghee at home with the below steps, most of you will definitely know, have complied for the newbies !

Steps-


  1. Collecting Cream-
  2. Boil the milk as usual, collect the cream formed on the milk in a container and store it in refrigerator. Keep doing this activity everyday till sufficient cream is collected.
  3. After you have collected 2or 3 cups of cream, you can use it to make butter.
  4. Collecting Butter/Butter milk-
  5. In a mixer jar, or in a food processor add the cream, next add  1 cup of water. Turn on the mixer or food processor. Initially, the cream will begun to smoothen and you will get smooth whipped cream forming over the top in the jar. Continue the mixer, till the butter and the buttermilk gets separated. Collect the butter using the strainer in a vessel. Keep the buttermilk in the refrigerator.
  6. Preparing Ghee 
  7. Making the Ghee -  Next place the vessel with the butter on moderate heat, keep stirring let it simmer for 15-20 mins till you get the aroma of Ghee coming .Strain and store in a dry container.

Enjoy healthy ghee on your dosas, idlis or the butter on parathas.

The buttermilk is equally good for your healthy.

Paneer Butter Masala

Paneer Butter Masala is a yummy and delicious North Indian Gravy that can be enjoyed with Indian Breads and rice. It is rich and creamy and tasty. One of the favourite restaurant vegetarian gravy, it is easy to prepare at home. Do try out!


Paneer Butter Masala
Prep Time -10 min
Cook Time-20 mins
Total Time-30 mins
Servings-4 

Ingredients

  • Paneer cubes-1 cup
  • Onions chopped-1/2 cup
  • Cashew-5-8 
  • Tomatoes pureed- 2-3
  • Ginger garlic paste-1/2 tsp
  • Chilli powder- 1 tsp
  • Dhania jeera pwd-1tsp
  • Garam Masala-1 tsp
  • Kasuri methi- 1 tsp
  • Cinnamon-small piece
  • Cardamom-1 piece
  • cloves-1 or 2
  • Fresh cream- 2-3 tbsp
  • Salt to taste
  • Butter/Ghee- 2 tablespoons
Method
Heat butter in a pan. Add the dry spices and onion and cashew and fry well. Blend it in a blender. Next add butter, add the ginger-garlic paste and saute well. Next add chilli powder and fry for a minute. Add the pureed tomatoes and cook till oil separates. Next add the blended onion mix and stir well. Add water to make the gravy. Next add salt and paneer and cook for a minute. Finally add the fresh cream and simmer for 5-10 mins.Garnish with crushed kasuri methi. Serve hot with Indian Breads. Here I have made Wheat flour Lachha Paratha with Paneer Butter Masala Gravy.

Butter Dosa

Butter Dosa

Dosa is the most favorite South Indian Breakfast recipe which is enjoyed by all of us.There are various versions.This one is the simple version.

Ingredients

  • 1 cup urad dal
  • 2 cups rice
  • 1 /4 cup poha(avalakki)
  • 1/2 tea spn methi(fenugreek) seeds
  • Butter
  • Salt

Method

Soak urad dal, methi seeds and rice overnight. 

Grind all together to a soft batter along with poha.

Keep it aside overnight. Add salt to batter.Heat tava and spread a thin dosa. Serve with a dollop of butter and chutney of your choice or Potato Sabzi.    

Potato Palya,Masala dosa,chutney

Potato Onion Palya/Sabzi (Masala Dosa)



Ingredients



2 potatoes

1/2 cup onion

5-6 green chillies chopped

1 tsp mustard
1/2 tsp chana dal
1/2 tsp urad dal
Hing-pinch

3-4 curry leaves

A pinch turmeric

Oil
Salt

Method:

Cook the potatoes in pressure cooker, peel and mash them.
Heat oil and add mustard seeds,chana dal,urad dal, When they start popping, add curry leaves, hing,green chillies, onion. Fry for few minutes.Add turmeric, salt and potatoes. Mix well.

Capsicum Sandwich 3

Capsicum Sandwich 3 is simple and easy to make. Enjoy as a quick snack or mini dinner.  

Ingredients
    • Dahi Capsicum Sabzi
    • a few chopped coriander leaves
    • Sandwich masala 
    • 8 Bread slices 
    • Butter
    • Salt
    • Green Chutney
    • Ketchup
      Method:


      Take bread, apply butter and  green chutney, add the capsicum mix ,add some sandwich masala, cover with another chutney-butter spread bread. Place it on the tava. Add butter and toast it well till it becomes golden  brown.
      Serve Capsicum Sandwich hot with chutney or ketchup. 
      You can also add cheese to make it more tastier.

      Spicy Corn blended with butter and chaat masala and midly spiced is very simple and easy to prepare, kids will enjoy it. Perfect and easy evening snack recipe.


      Ingredients


      • Sweet Corn - 1 cup
      • Butter - 1 tsp
      • Chat Masala Powder - 1 tsp
      • Salt - to taste
      • Garam masala-1/2 tsp
      • Chili pwd-1/2 tsp
      • 1/2 cup tomato& onion finely chopped
      • Coriander leaves-few chopped
      • Lemon juice-1/2 tsp


      Method-


      Boil water, add sweet corn, salt and let it cook for 10 mins.

      Add butter, spices, toss and mix well. Garnish with lemon juice and coriander leaves and  serve hot.

      Benne Biscuit / Nankhatai biscuit


      Benne Biscuit or Nankhatai or Butter cookies is an easy recipe which doesn't require too many ingredients. Benne is butter in Kannada. These cookies are normally available in Iyengar Bakeries. 

      This is a perfect homemade biscuits for your kids as evening snack or as "just bites". Enjoy baking this delicious cookies aka ಬೆಣ್ಣೆ ಬಿಸ್ಕತ್ತು with your little ones. Do try it out. 


      You can use homemade ghee or butter. 



      Benne Biscuit / Nankhatai biscuit / butter cookies
      Benne Biscuit / Nankhatai biscuit
      Ingredients
      1. 1 cup maida or wheat flour
      2. 3/4 cup powdered sugar
      3. Home made Ghee - 4 tbsp
      4. Elachi/Cardamom pwd-1/2 tsp
      5. Dry fruit powder-1 tsp
      6. Salt-pinch
      7. Baking powder-pinch (opt)










      Method- In a bowl, take the flour, powdered sugar, dryfruit powder, elachi powder, salt and mix. Next add 4 tbsp of gheerepare small sized ball, press it and make it little flat. Preheat oven in convection mode for 10 minutes in 180cLine the tray with baking sheet. 

      on a oven tray leaving gaps in between. 
      Bake the cookies for 12-15 mins. Switch off , once cool remove from the tray.

      • Pepper pwd for sprinkling
      • salt
      • italian seasoning






      Green Chutney:
      • 4-5 green chillies, chopped 
      • Coriander leaves,Mint
      • Fresh grated coconut -1/2 cup
      • Roasted gram dal-hurikadle
      • 1 tsp. tamarind paste
      • Salt to taste

      Method: Grind all the chutney ingredients to a smooth paste with little water. Keep aside.

      Remove the edges of the bread slices, apply butter, apply green chutney, mix capsicum with salt, italian seasoning and add onto the bread. Add some pepper powder. Apply butter, chutney and on 
      another bread slice,  place this on top layer. 

      Toast it and Cut it in any shape and serve.

          Potato Toast

          Potato Toast is a simple and easy snack recipe made from humble bread and potatoes. The butter and spices makes this very delicious and tasty. Kids will love it.


          Ingredients 


          •     Potato - 1 cup (boiled and mashed)
          •     Green chillies - 1 finely chopped (opt)
          •    Salt to taste
          •    Chilli Powder - 1/2 tsp
          •    Turmeric Powder - a pinch
          •    Dhania-Jeera Powder - 1/2 tsp
          •    Garam Masala Powder - 1/2 tsp
          •    Butter 




          Method-In a bowl add the boil potato and mash it well, next add the masala powders, salt ,chopped chillies and mix well. Next heat a tava, meanwhile apply butter one side of the bread and on the other side apply the mashed potato spread. Put on the tava, toast the buttered side first until golden brown. Flip over and add butter and roast the potato side till golden brown. Serve potato toast hot with ketchup and hot cup of tea/coffee.

              • Tomatoes roasted and pureed- 2-3

              • Garam Masala-1 tsp
              • Kasuri methi- 1 tsp
              • Cinnamon-small piece
              • Cardamom-1 piece
              • cloves-1 or 2
              • Fresh cream- 2-3 tbsp
              • Salt to taste
              • Butter - 2 tablespoons

              Paneer Tikka Masala Gravy

              Let’s get into it!

              • Paneer Tikka Masala Gravy
                Ingredients
              • 1 tsp jeera
              • 1⁄2 teaspoons ginger garlic paste 
              • coriander leaves/kasuri methi, to garnish 
              • 1 tbsp cream
              • 2 tsp butter
              • 1/2 tsp dhania-jeera pwd
              • 1/2 tsp red chili powder 
              • 1/2 tsp paneer tikka masala
              • 1/2 tsp garam masala
              To Grind
              • 1/2 cup chopped onion
              • 1/2 cup chopped tomatoes
              • few cashews
              • 1 green chili

              • To Marinate
              • 1/2 cup thick curd
              • 1/2 tsp dhania-jeera pwd
              • 1/2 tsp red chili powder 
              • 1/2 tsp paneer tikka masala
              • 1/2 tsp garam masala
              • 1 cup vegetables in cubes
              • (onion, capsicum)
              • 1/2 cup cut paneer

              Method- In a bowl, add curds,  masala powders, salt and mix. Next add the cube-cut veggies and mix so that they are coated well. Set it aside. 

              Heat butter in a pan. Add the green chili and tomatoes, onions and cashew and fry well. Blend it in a blender. Next add butter, add the ginger-garlic paste and sauté well. Next add paneer tikka masala pwd, garam masala and other masala pwds and fry for a minute. Add the pureed mix and cook till oil separates.  Add water to make the gravy. Next add salt and the marinated vegetables and mix. Cover and let it cook for 5-10 mins. Next  add the fresh cream and simmer for 5-10 mins. Garnish with crushed kasuri methi. Serve the gravy hot with Indian Breads.

              🫓 Avarekayi Thalipeeth Recipe

              A flavorful, wholesome twist on the traditional Maharashtrian flatbread using seasonal hyacinth beans.

              ⭐ What is Thalipeeth?

              Thalipeeth is a savory multi-grain flatbread from Maharashtra, made using a blend of flours, spices, and vegetables. It’s hearty, nutritious, and perfect for breakfast or a light meal. This version includes Avarekayi (hyacinth beans) for a seasonal, crunchy twist!

              🧾 Ingredients

              • Cucumber – 1 medium (grated)
              • Avarekayi (Hyacinth Beans) – ½ cup (boiled)
                Avarekayi Thalipeeth
                Avarekayi Thalipeeth 

              • Rice flour – ¼ cup
              • Wheat flour – ¼ cup
              • Gram flour (besan) – ¼ cup
              • Jowar flour – ¼ cup
              • Cumin seeds (jeera) – 1 tsp
              • Ajwain (carom seeds) – 1 tsp
              • Green chilies – 4–5, finely chopped
              • Turmeric powder – ¼ tsp
              • Garam masala – ½ tsp
              • Dhania-jeera powder – 1 tsp
              • Fresh coriander leaves – a few, chopped
              • Salt – to taste
              • Oil – for roasting

              👩‍🍳 Method

              1. Grate the cucumber into a mixing bowl. Do not squeeze out the water.
              2. Add all the flours, cumin, ajwain, green chilies, boiled avarekayi, turmeric, garam masala, dhania-jeera powder, coriander, and salt.
              3. Mix well using the water released from the cucumber to make a soft dough. Add a little water if needed.
              4. Cover the dough and let it rest for 10 minutes.
              5. Grease butter paper or banana leaf with a few drops of oil.
              6. Take a portion of dough and flatten it into a circle using your fingers (about ¼ inch thick).
              7. Heat a tava (griddle) on medium heat.
              8. Flip the butter paper onto the tava, peel it off gently, and cover the thalipeeth to cook.
              9. Add a little oil around the edges, flip, and cook the other side until golden brown and crisp.
              10. For crispier texture, cook slightly longer on each side.

              🍽️ Serving Suggestion

              Serve Avarekayi Thalipeeth hot with:

              • A dollop of homemade butter
              • Side of curd, pickle, or your favorite chutney
