Vegetable Saagu

Vegetable Saagu or Mix veg sagu is an interesting melange of vegetables in coconut and spice mix that can be enjoyed with Idlis, Dosas or Chapatis.

Ingredients for Saagu

Mixed vegetables -washed and chopped 
Carrot, Beans, Potato, Onion, tomato, semebadnekai (ChowChow)
Peas : 1 cup

For Grinding

1.Hurigadale/Dhalia dal - 2 tbsp
2.Chakke/Cinnamon stick -1"piece
3.Star Anise-1 petal (1/4 tsp powder)(opt)
4.Lavanga/Clove - 2
5.Khus Khus
6.Green Chillies-5-6
7.Coriander leaves - 1tbsp (chopped)
8.Salt
9.Fresh grated coconut-2-3 tbsp


For Seasoning

Mustard, Chana Dal, Urad Dal, Curry leaves ,Hing and turmeric powder 

Method : Vegetable Saagu Recipe

Pressure cook all vegetables with 1/2 tsp salt. 

Roast the ingredients from 2-5 with little oil. Next grind all ingredients along with spices. In a pan heat a tsp of oil and add mustard, chana dal, urad dal once done, add curry leaves, hing and turmeric. 
Next add the vegetables. Mix. Add the grounded paste and mix well. Bring it to boil. Add salt. 
Simmer on low heat for 3-4mins. Cover and let the vegetable saagu blend well. 
Enjoy with hot pooris with your handmade Vegetable saagu.

Pumpkin Stir fry

Sihi Kumbalkayi (Sweet Pumpkin ) palya or Pumpkin Stir fry is a delicious combination prepared in-South Indian style with coconut and masala powder. Simple and tasty. Enjoy with Chapati or rasam rice.

Slightly sweet, mildy spiced. Palya is kannada word for sabzi.



Ingredients
  • 1 cup Sihi Kumbalkayi (cut in big cubes)
    Pumpkin Stir fry 
  • 1 tsp Mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • Hing-pinch
  • ½ tsp Turmeric
  • Few Curry leaves
  • Grated coconut-2 tbsp
  • Bhath Powder-2 tbsp
  • 2 tbsp Oil
  • Salt to taste

Method: 

Heat Oil in pan,add mustard, chanadal, uraddal, hing, tumeric, curry leaves and fry for some time.
Add washed sweet pumpkin and fry well. Cover for 5-10 mins.
Check if the veggies have turned soft , next add salt and mix well , fry for some time.
Add bhath powder and mix well. 
Garnish with coconut.
Serve this no onion no garlic South Indian pumpkin stir fry hot with rasam rice or enjoy with chapatis too.

Avarekayi Aloo Palya / Vaal Potato Gravy


Avarekayi Aloo Palya or Vaal Potato Gravy is an interesting accompaniment for your chapatis or puris. This delicious gravy is a blend of Indian spices with coconut. Try it out during the avarekayi season.  Avarekalu is Hyacinth Beans or Vaal.

Ingredients
  1. 1 cup avarekalu (cooked)
  2. 1 potato boiled and chopped
  3. 1/4 tsp turmeric powder
  4. 2 tsp oil
  5. 1/4 tsp mustard seeds
  6. 1/2 tsp urad dal
  7. 1/2 tsp chana dal
  8. Hing a pinch
  9. 4 - 5 curry leaves
  10. Salt as per your taste

To grind

  1. 1/2 cup grated coconut
  2. 1/2 tsp cumin seeds 
  3. 2 tbsp putani /roasted dal
  4. 3-4 green chilies
  5. 2 tbsp coriander leaves (optional)
Method - Roast the ingredients from 2-5 mins with little oil. Next grind all ingredients along with spices.In a pan heat a tsp of oil and add mustard, chana dal, urad dal once done, add curry leaves,hing and turmeric. Next add the boiled avarekalu and potatoes. Mix. Add the grounded paste and mix well. 
Bring it to boil. Add salt. Simmer on low heat for 3-4mins. Cover and let the gravy blend well. 
Serve Avarekayi Aloo Palya / Vaal Potato Gravy hot with puris or chapatis or rasam rice.

  2. 1 big onion chopped
  3. 1 tomato chopped
  4. 1/4 tsp turmeric powder
  5. 3 tsp cooking oil
  6. 1/4 tsp mustard seeds
  7. 1/2 tsp urad dal
  8. 1/2 tsp chana dal
  9. Hing a pinch
  10. 4 - 5 curry leaves
  11. Salt as per your taste

To grind

  1. 1/2 cup grated coconut
  2. small piece ginger
  3. 1 tsp coriander seeds
  4. 1/2 tsp cumin seeds 
  5. 2 tbsp putani /roasted dal
  6. 1 tsp poppy seeds
  7. 1 - 2 green chili
  8. 1/2" cinnamon
  9. few cloves
  10. green Elachi or cardamom
  11. 2 tbsp coriander leaves (optional)

Green Grapes Gojju

Green Grapes Gojju (gojju -Tangy gravy) is a yummy, tangy and tasty side dish / gravy for hot chapatis or rice.In case your grapes are sour you can try this recipe.

                Green Grapes Gojju

Ingredients

  1. 1 cup green grapes
  2. 1/2 tsp mustard
  3. 1/2 tsp jeera
  4. 1/2 tsp chana dal
  5. 1/2 tsp urad dal
  6. Hing-pinch
  7. Turmeric-pinch
  8. Curry leaves-few
  9. 1-2 tbsp Rasam pwd (or Gojju pwd)
  10. 1-2 tsp jaggery
  11. 1-2 tsp Dry coconut
  12. Salt to taste

Method- In a kadai, heat oil in a pan and add mustard,chana dal, urad dal, hing, turmeric pwd, curry leaves once done add grapes and let it cook for 2-3 mins. Next add Rasam (Saaru) powder or Gojju pwd ,jaggery, salt, water and mix well. Cook for 2 – 3 minutes till the gravy thickens. Add dry coconut and mix
Serve Green Grapes Gojju hot with chapati/ rotis or parathas.

Kabul Kadale Alu gravy

Kabul Kadale Alu gravy (Chana/Chikpeas and potatoes gravy) is a spicy gravy blended with tomato onion mix.

Kabul Chana is Chickpea , a legume variety, healthy and rich in proteins. Healthy food for kids as well.

Ingredients
Kabuli Chana-1 cup cooked
Potatoes-1 boiled and mashed
Onion-2 finely chopped
Tomatoes -2 finely chopped
Ginger & garlic paste-1/2 tsp
Red chili pwd-1 tsp
Green chillies-1-2
Dhania Jeera pwd-1 tsp
Turmeric-pinch
Garam masala -1/2 tsp
Mustard-1/2 tsp
Curry leaves-few
Hing- pinch
Salt-for taste
Oil-2 tbsp



Method- In a kadai,heat oil, add onions and sauté well, 
next add ginger- garlic paste, chillies and sauté , add the tomatoes and cook till soft. 
Next add all masala pwds and mix well.
Add the cooked chanas, potatoes and mix well.
Add salt and cook on low heat till the gravy blends well.
Prepare seasoning with mustard, curry leaves, and hing add to the gravy.
Serve Kabul Kadale Alu gravy  hot with chapati or rice.

Masala Peas

Green Peas Masala or Masala Peas is a delicious side dish for Indian breads.A blend of spices with coconut added to Green Peas gives a delectable taste.


Ingredients
Masala peas, Green peas Sundal
Masala Peas
Peas : 1 Cup Steamed
Green chillies : 4-5 
Ginger : Small piece
Few fresh Coriander Leaves
Cloves : 1-2
Grated Coconut -2 tbsp
Puttani-1 tbsp (hurikadle)
Salt : To taste.
Oil : 1 Tsp
Jeera : 1 Tsp


Seasoning
Chana dal-1 tsp
Urad dal-1 tsp
Mustard-1 tsp
Hing-Pinch
Tumeric pwd-pinch
Curry leaves
Roasted Cashews

Method : Grind coriander leaves, coconut, green chillies, ginger, cloves, puttani seeds and 1/2 spoon of jeera with little water.Heat oil in a pan,add the items in seasoning,once done,add the the ground mix,add the steamed peas,salt and mix well.Let it cook on simmer for 3-4 mins.Keep stirring.Add water if required.Serve hot with chapatis or poori.

Aloo Sabzi

Aloo Sabzi (Aloo Palya/ Aloo Gadde Palya) is most simplest and easiest of recipes but definitely enjoyed by all. You can made various version with potatoes, this is the quick one. Palya is Kannada word for Sabzi or Bhaji.

Ingredients

  • 3 big Potatoes, boiled
  • 1 tsp Mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • Hing-pinch
  • ½ tsp Turmeric
  • 5-6 Green Chillies, chopped
  • Few Corianderleaves
  • Few Curry leaves
  • Lemon juice
  • 2 tbsp Oil
  • Salt to taste

Method:  Mash the boiled potatoes. Heat Oil in pan add mustard, chanadal, uraddal,hing, tumeric, curry leaves, chilies and fry for some time. Add potatoes and mix. Add salt and mix well, fry for some time. Garnish with corainder leaves and lemon juice. Add coconut if req. Serve hot with chapati/puris .
