Gajar Halwa/Carrot Halwa

Carrot Halwa or Gajar Halwa, all time favored Indian dessert recipe made from fresh carrots slowly cooked in rich milk with sugar and garnished with dry fruits. It is a perfect and easy dessert which is nutritious and healthy as well.

You can enjoy this Carrot Halwa warm and delicious way or  you can add chilled ice cream and double the joy!


Ingredients

Carrot Halwa / Gajar Halwa

  • 4-5 Carrots 
  • 2 cups Milk 
  • 1 teaspoon Cardamom pwd/ Elachi
  • 3 tbsp Ghee 
  •  Dry fruits-Raisins, almonds, pista
  • 2-3 cups Sugar


Method
  • Wash and grate the carrots.
  • Fry the carrots in little ghee for 2-3 mins. Add the milk. Cook on a low flame some time stirring occasionally. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed. Add slightly crushed cardamoms and the raisins. Mix well.
  • Remove the gajar halwa from heat and arrange in a serving dish. Garnish with grated almonds and pistachios. Serve cold or hot.

Steamed Modak

Steamed Modak Recipe 

A healthy, handmade Indian dessert to celebrate tradition and devotion.

Steamed Modak is a traditional Indian sweet dumpling offered to Lord Ganesha during the Ganesh Chaturthi festival. This handmade, healthy dessert is made with rice flour, coconut, and jaggery. 

 Preparing modak at home is a beautiful way of keeping traditions alive and celebrating culture with devotion and love.

Ingredients

  • 1 cup rice flour
  • 1¼ cups water
  • 1 tsp ghee (clarified butter)
  • 1 cup grated fresh coconut
  • ¾ cup grated jaggery
  • 1 tsp cardamom powder
  • 1 tsp khus khus roasted
  • 1 tsp dry raisins
  • A pinch of salt

Method (How to Make Steamed Modak)

  1. Boil water with a pinch of salt and ½ tsp ghee. Add rice flour and stir continuously until a dough forms. Cover and set aside.
  2. In a pan, heat jaggery and coconut together. Stir until the jaggery melts and starts to leave sides. Add cardamom powder poppy seeds, raisins and mix well. Let it cool.
  3. Knead the rice dough with wet hands until smooth. Take a small portion, shape it into a cup using your fingers.
  4. Fill with the coconut-jaggery mixture and seal the top to form a modak shape.
  5. Place the modaks in the steamer and steam for 10–12 minutes.
  6. Serve warm as a divine offering to Lord Ganesha.

Shahi Tukda

Shahi Tukda or Shahi Tukra is an all time favorite at my home. And am sure once you try it you will definitely enjoy it too. It is made by roasting the sweet bread slices in ghee then topped with a thick rabdi and garnished with dry fruits. You can also use Milk bread to make Shahi Tukda. A truly rich bread pudding! Forget the diet for a day and enjoy this delicious dessert!


Ingredients

Shahi Tukda
  • 6 slices White sweet bread slices
  • Ghee for roasting
  • 1/4 cup Sugar
  • Few Cardamom crushed
  • 1 litre Full cream milk
  • 15-20 strands Saffron
  • Few almonds and pistachios to garnish


Method- First in a thick bottom vessel boil milk. Let it boil it starts thickening. Next add sugar and stir. Keep stirring the cream into the milk so it thickens well. Once done switch off the gas. Add saffron and cardamom powder. 
Next cut the corners of sweet bread slices and cut the slices in any desired shape. Next on a tava roast the bread golden brown on both sides. Use ghee while roasting the bread. Now in a serving plate, place the bread. Pour the thickened and sweetened milk over the bread slices. Garnish with almonds and pistachios slivers. 
You can either serve this royal dessert Shahi Tukda immediately or set it in fridge and enjoyed chilled.

Mango Sheera

Mango Sheera or Mango Kesari is yummy flavored sweet that can be made in very less time. Enjoy this delicious dessert during mango season along with your kids. Sweet and warm Sheera blended with fresh mangoes puree, garnished with dryfruits makes it a perfect dessert recipe.

Few Cashew nuts/Badam 
1 tsp  Cardamom Powder/ kesar
1/2 cup thick mango pulp


Method
  • Roast rava in the ghee till aromatic
  • Add sugar and warm milk and lower the flame. Add the mango pulp. Simmer and cover with lid till it blends in. 
  • Add raisins and cardamom powder to garnish.
  • Add fried cashew nuts/Badam and  kesar (opt)
  • Enjoy with little ghee on the top.

Orange Sheera

Orange Sheera or Orange Kesari / sajjige is yummy flavored sweet that can be made in very less time. Enjoy this delicious dessert during orange season along with your kids. Sweet and warm Sheera/Sajjige blended with fresh orange puree, garnished with dryfruits makes it a perfect dessert recipe.


Ingredients

cup Chiroti rava (semolina or sooji)
cup Ghee

tbsp Raisins
1/2 cup thick orange pulp
1/2 cup milk
/2 cup  Sugar 
Few pista /Cashew nuts/Badam 
1 tsp  Cardamom Powder
1 tbsp kesar milk (kesar soaked in milk)


Method
  • Roast rava in the ghee till aromatic
  • Add sugar and mix and lower the flame. Add the fresh orange pulp. Simmer and cover with lid till it blends in. 
  • Add raisins and cardamom powder to garnish.
  • Add fried cashew nuts/Badam and kesar milk and mix.
  • Enjoy with little ghee on the top.

Avalakki Payasa /Poha Kheer is a delicious and comforting Indian dessert made from poha (flattened rice) cooked in milk, sugar, and flavored with cardamom and saffron. It’s a simple yet delightful dish that is often prepared during festivals, special occasions, or as an after-meal sweet treat.

Ingredients

  • Poha/Avalakki-Thick-1 cup
  • Milk, 3 cups

  • Kesar strands-1-2 soaked in milk


Method-

In a kadai, add ghee and fry cashew and raisins. Also fry the avalakki slightly. Meanwhile boil milk on low flame , add the avalakki and let it cook well. Add sugar and let it cook for 5-10 mins, keep mixing in between. Add the dry fruits, elachi pwd, badam pwd and mix well. 


Enjoy Avalakki Payasa/ Poha Kheer  warm or chilled.

Pista Sheera

Pista Sheera is yummy flavored sweet that can be made in very less time Semolina blended with powdered Pistachio and other flavors make it very delicious. Enjoy this healthy dessert .























Ingredients
cup Chiroti rava (semolina or sooji)
 cup Milk
1/2 
cup Ghee
Few Raisins
cup  Sugar 
Few Cashew nuts/Badam 
2-3 tbsp  Pista Pwd (homemade
sliced Pista pieces

Method -

Roast rava in the ghee till aromatic.
Add sugar and warm  milk and lower the flame. 
Simmer and cover with lid till it blends in. 
Add raisins and cardamom powder ,pista powder mix well.
Add fried cashew nut and kesar Enjoy with little ghee on the top.

Appi Payasa

  • Ingredients
  • For Puri
  • Chiroti Rava – 1/2 cup
  • Maida-1-2tbsp
  • Water – for kneading the dough
  • Ghee – 1 tbsp
  • For Kheer
  • Milk – 2 cups
  • Sugar – 1/4 cup
  • Ghee for frying
  • Cardomon powder – 1/2 tsp
  • Nutmeg pwd – a pinch
  • Roasted Cashews/Badam – few
  • Roasted Raisins – few
Method- Roast the cashews and raisins and keep it aside. Boil the milk in a pan on low heat till gets reduced to half.(this will take some time) Keep stirring Add sugar and boil for some more time till it gets thickened. 
Meanwhile mix chiroti rava and maida, little ghee add water to form the Puri dough. Blend it well. Keep it aside for 1-2 hrs. Next make small puris and fry it in ghee till golden brown and crispyOnce the milk is thickened, crush the puris into small pieces and add it to the milk. Add the roasted dry fruits, elachi pwd and jaiphal pwd. The puris will absorb the sweet milk and it will taste yummy. Serve Appi Payasa hot or chilled.

Sweet Pongal

Sweet Pongal is prepared during Sankranti festival. A delicious mix of Moong dal with rice and jaggery blended with dry fruits, it's tasty and rich. Enjoy !!  I hope it brings a touch of warmth and festive cheer to your home.

Ingredients :

  • 1 cup Raw Rice
  • 1/2 cup Moong Dal/Green Gram Dal
  • 1 cup Milk
  • 3 cups Jaggery grated ( as per taste)
  • 4 tbsp Ghee
  • Few cashews/Raisins
  • 2 tbsp Dry Coconut (grated)
  • 1/2 tsp Elachi pwd
  • 1/2 tsp Nutmeg pwd
  • 1-2 cloves (opt)
  • Saffron (pinch)
  • Water


Method : 


In a kadai, add ghee roast dry the green gram dal for a couple of minutes. 
Next cook the rice and moong dal . In a pan, add the jaggery in  water and cook on a low heat till the jaggery melts. 
Once done add the cooked rice and dal. Add milk and stir well. 
Heat ghee and fry the cashew nuts and raisins add to the Pongal. 
Add the powdered cardamoms, cloves,  nutmeg, grated coconut and saffron. 
Mix well and serve this hot Sweet Pongal.

Coconut Barfi / Kobri Mithai

Coconut Barfi / Kobri Mithai or Kopra Pak is a traditional dessert made from coconut and sugar. A delicious and tasty sweet popular in Bangalore.

Ingredients:

       Coconut Barfi / Kobri Mithai 

  • 2 cups Fresh grated coconut
  • 1 cup fine sugar
  • 1/2 tsp Elaichi, pwd
  • 3-4 tbsp Badam pwd 
  • 1-2 tsp Ghee/Butter
  • 2-3 tsp Milk 

Method: In a bowl, add grated coconut and sugar and mix well with hands and keep aside for about 30 mins. Next in kadai, add little ghee and pour this mix into it and saute on low flame. Keep sautéing  till the mixture leaves sides of the kadai. Add elachi pwd, badam pwd and little milk. Mix well and sauté again. Grease a plate with ghee and add the mixture and spread it evenly. Cut into desired shape and Kobri Mithai is ready for serving.

Moong Dal Kheer / Hesarubele Payasa

    Ingredients
    • 1/2 cup Moong Dal
    • 1/2 cup Gur/Jaggery
    • 1 cup-thick Milk
    • 1 tsp - Ghee
    • Roasted cashews-few
    • Raisins-few
    • 1/2 tsp Elachi Pwd
    • Saffron-pinch


    Method-
    Boil the milk in a vessel on low heat.In a pan,heat ghee,add moong dal and saute for 5-10mins.Also saute the cashews,raisins in ghee and keep it aside. Cook the dal .(you can cook it in rice cooker) .In a vessel,add the cooked dal,a
    dd jaggery and mix well ,cook till jaggery melts .Next add boiled milk, saffron mix and simmer for 2-3 mins till the kheer blends well. Add the cashews,raisins, cardamom powder and mix well.Enjoy hot or cold.

Badam Sheera

    Jaggery Rava Sheera

    Jaggery Rava Sheera is yummy flavored sweet that can be made in very less time Semolina blended with powdered jaggery, banana and dryfruits makes it very delicious. Enjoy this healthy dessert.

    cup Chiroti rava (semolina or sooji)
     cup water
    1/2 
    cup Ghee
    Few Raisins
    cup  Sugar 
    Few Cashew nuts/Badam 
    3/4 cup jaggery (reduce as per your taste)
    1 banana chopped

    Method -

    In bowl, add jaggery and water and let it boil till it forms a syrup. Drain and keep it aside. Next Roast rava in the ghee till aromatic.
    Add jaggery syrup and mix.
    Simmer and cover with lid till it blends in. 
    Add raisins and cardamom powder, other dryfruits, banana and  mix well.
    Add extra ghee and mix till it leaves side.
    Enjoy hot.
