Ragi Sevai Upma

Ragi Sevai Upma is enjoyable healthy filling breakfast recipe mainly made in South Indian families. A perfect mix  for your busy day.


Ingredients:

                          Ragi Sevai 

· 2 cups ragi vermicelli /ragi semiya
· 1/2  cup simla mirch chopped
· 1 onion chopped 
. 1 carrot chopped
.  1/2 cup beans chopped 

Seasoning

· 6-7 green chillies chopped
· few curry leaves
· 1 tbsp oil
· 1/2 tsp mustard seeds
.1/2 tsp jeera
· 1 tsp urad dal
· 1 tsp channa dal
 .Turmeric-pinch
. Hing-pinch
· Salt for taste
· Water

Garnishing
· 1-2 tbsp grated coconut
· Few coriander leaves


Method:
  • Add little oil in a pan,roast the vermicelli well and keep it aside.Next add oil,fry the cashews and keep it aside.Next add mustard seeds, followed by urad dal, channa dal ,and jeera, hing, curry leaves, chopped chilies, turmeric and sauté well.Now, add vegetables and stir fry well .Next add the vermicelli,salt  and add boiled water.Cook till the water evaporates .Add the fried cashews and mix well.Garnish with coconut.Serve hot.

    Mixed Healthy Salad

    Mixed Healthy Salad is simple and easy to prepare.

    A nice blend of sweet corn,moong and carrots with dash of spices and seasonings. 

    Do try this healthy tasty tangy salad. A perfect lunch box recipe too.

    Salad is known as Kosambri in Kannada.


    Ingredients
    Mixed Healthy Salad 
    • Sweet corn steamed-1 cup
    • Soaked Green Moong-1/4 cup
    • Grated carrot-1/4 cup
    • Coconut 3-4 tbsp
    • oil 1 tsp
    • Mustard seeds 1/2 tsp
    • Jeera 1/2tsp
    • Hing pinch
    • Chana dal-1/2 tsp
    • Urad dal-1/2 tsp
    • Curry leaves a few
    • Green chillies 3-4 finely chopped
    • Fresh coriander chopped
    • Pomegrante seeds-few
    • Dryfruits -few 
    • Salt to taste
    • Lemon juice-1/2 tsp


    Method: In a bowl add the steamed corn, soaked moong , grated carrot, add coconut and mix. Meanwhile prepare the seasoning. Heat oil in kadai , add mustard, jeera, chana dal,urad dal,chillies, hing ,curry leaves. Once done add to the salad mix. Add salt, lemon juice and mix. Next add corainder leave ,dry fruits and pomogrante seeds, mix well and serve.

    Tamarind Upma

    Tamarind Upma or Tamarind Upit is simple and easy to prepare.A perfect, filling,healthy breakfast recipe. This is made with Rice Rava (traditionally known as Akkitari uppittu in Karnataka) blended with tamarind and spices. Enjoy this hot during the monsoons.

    Ingredients:
    Tamarind Poha
    Tamarind Upma

    • Rice rava- 1cup (akki tari)
    • Water - 1- 2 cups (adj)
    • 2-3 tbsp. tamarind juice
    • 1-2 tsp grated jaggery
    • 2 tsp Rasam Pwd
    • 1/2 Dhania jeera pwd
    • Salt for taste
    • Coconut-1-2 tbsp
    • Seasoning
    • Oil-2 tbsp
    • Mustard -1/2 tsp
    • Hing- pinch
    • Jeera-1/2 tsp
    • Channa dal-1tsp
    • Urad dal-1tsp
    • Curry leaves-few
    • Red chilies-1-2

    Method: Fry the rava for 10mins and keep it aside.In a  pan,add tamarind juice, jaggery, rasam powder, masala pwd, salt, turmeric and little water. Boil for 5-10 minutes.Keep it aside.Heat oil in a pan add mustard,jeera when they begin to splutter ,add channa dal and urad dal ,red chilies fry until light brown.Next add ,hing,curry leaves, and fry.Add fried rava ,salt and mix well next add the gojju and hot water. Mix well.Cook till the water is gone.Simmer and close the lid for 2-3 min.
    Garnish with  coconut and serve Tamarind Upma hot.


    (add more water in case the rava is not cooked well )

    Tendli Ki Sabzi / Tondekai Palya

    Tendli Ki Sabzi is a delicious combination for Indian breads.Tendli /Tindora or Ivy Gourd  or Tondekayi in kannada with Aloo tastes yummy.

    Tendli Ki Sabzi 

    Ingredients
    1 potato (finely sliced)
    1 cup sliced Tendli
    1/2 tsp cumin seed 
    1/2 tsp mustard
    1/2 tsp chana dal
    1/2 tsp urad dal
    Hing pinch
    1/2 tsp red chili powder 
    1 tsp turmeric powder 
    1/2 tsp dhania jeera powder 
    1 tsp Bhath powder
    few coriander leaves (finely chopped) 
    1-2 tbsp Oil
    Salt 
    • Method-Heat oil in a pan. Add cumin and mustard,chana dal,urad dal ,hing, and fry till done next add tendli and sauté for some time.Next add potatoes ,and fry well till done .Next add the masala pwds ,salt and mix well.Garnish  with coriander leaves and serve this hot Tendli Sabzi with naan or roti.

    Chapati Masala / Phodni Chi Poli

    Chapati Masala or Phodnichi Poli in Marathi is a easy snack that can be made from leftover chapatis tossed with spices. Enjoy as after school snack for kids.

    Policha Kuskara,Phodni Chi Poli
    Chapati Masala
    Ingredients-
    • Left over chapatis- 2-3
    • Onions-1 cup chopped
    • Tomatoes-1/2 cup chopped
    • Green chillies-2-3 finely chopped
    • Dhania Jeera pwd-1/2 tsp
    • Garam masala-1/2 tsp 
    • Groundnuts- A handful
    • Oil- 2tsp
    • Mustard -1tsp
    • Jeera -1tsp
    • Turmeric-pinch
    • Hing- a pinch
    • Salt to taste
    • Coriander leaves- finely chopped
    • Lemon juice-1/2 tsp


    Method

    Cut the chapatis into small pieces.Heat oil in a pan. 
    Fry the groundnuts and keep it aside next add mustard seeds, cumin seeds, hing,turmeric. 
    Add the green chillies and onions and sauté next add tomatoes fry till it softens add chopped chapati pieces and fry well. 
    Add salt and mix well. Close the lid and allow it to cook for 2 minutes. 
    Garnish with finely chopped coriander and lemon juice. Serve hot.

    Baby Corn Bhajia / Baby Corn Fritters

    Baby Corn Bhajia / Baby Corn Fritters is yummy and tasty .Enjoy hot with tea as evening snack.


    Ingredients
    1 cup tender Baby corns
    Oil,to deep fry
    1 cup Besan/Chickpea flour
    1/4 cup Rice flour
    1 tsp Red chilli powder
    1/4 tsp Garam masala
    1/4 tsp Dhania jeera pwd
    Pinch-Turmeric
     1/2 tsp Ajwain / Carom seeds
    2 tsp hot Oil
    Salt to taste

    Method: Steam the baby corn for 10-15 mins.
    Take a bowl combine all the ingredients and mix well. Add little water,add cut baby corn and mix well ,the flour and baby corns should blend and be well coated.Heat a little oil and add it to this batter and mix it well.
    Keep it for sometime.In a kadai heat sufficient oil for frying. Slowly add the besan mix in batches in the hot oil. Fry till golden brown on both sides. Drain on absorbent paper. Sprinkle chaat masala on top .Serve hot crisp bhajias with ketchup or chutney of your choice.

    Cucumber Chaat /Southekayi Masala


    Cucumber Chaat (Southekayi Slice ) is an easy Masala Chaat.Nice tangy tasty mix of healthy cucumber with spices. Kids will love it too .

    Ingredients:
    • 1  cucumber/Southekayi sliced
    • 1 cup puffed rice (Puri)
    • 1/2 sev
    • 1 onion chopped
    • 1/2 cup grated carrot
    • Few coriander leaves, chopped
    • few  salted peanuts
    • 1 tbsp. green chutney
    • OR red chili powder
    • 1 tsp chaat masala
    • 1 tbsp. lemon juice
    • Salt to taste
    Method: Slice the cucumber.(thick slices) Apply salt and green chili paste,Spruce up with finely chopped onions, grated carrots, chaat masala,red chili pwd,coriander leaves and peanuts.Sprinkle a dash of lemon juice over that. Top up with puffed rice and sev .Serve immediately.

    Paneer Peas Masala

    Paneer Peas Masala is delicious gravy that can be enjoyed with Indian breads. Interesting Sabzi variety of paneer and peas blended in various spices.


    Ingredients:
    Paneer Peas Masala


    • Green Peas steamed-1/2 cup
    • Frozen Paneer or Cottage Cheese –
    • 1/2 cup (finely chopped)
    • Oil – 1tbsp
    • Turmeric Powder – pinch
    • Dhaniya Jeera pwd- 1/2 tsp
    • Red Chilly powder – 1/2 tsp
    • Garam Masala pwd – 1/2 tsp
    • Ginger garlic paste-1/2 tsp
    • Jeera or Cumin Seeds – 1/2 tsp
    • Onion  - 1 cup chopped
    • Tomato –1 cup chopped
    • Salt-for taste
    • Milk Cream – 1-2 tsp
    • Cashews-few



    Method- Roast cashew, onion(little) and chilies. Grind it into smooth paste. Grind the tomatoes into puree. Heat oil fry paneer.Remove and keep it aside. Next,add oil, add cumin seeds, add onions and fry well. Add the ginger garlic paste, masala pwd, cashew paste and fry well. Add tomato and let it cook for 2-3 mins, add the  peas and fried paneer . Add salt and cook till the gravy is done and blended well. Lastly add cream. Simmer on low heat Garnish with coriander leaves. Serve hot with Indian breads.

    Navil Kosu Akki Rotti

    Navil Kosu Akki Rotti is a colourful and tasty blend of Navilkosu and carrots  with spices in rice flour. Navil Kosu or Naval kol is known as Kohlrabi in English. This vegetable is a rich source of Vitamin C and potassium along with providing other health benefits.

    Akki Rotti ( Kannada) made from rice  flour is a breakfast / lunch speciality of Karnataka.

    It can be made from different kinds of vegetables added to it and served with either chutney, kosambris or saagu or gravies. You can just enjoy it with just butter too!

    Navil Kosu Akki Rotti
    Ingredients 
    
    Rice flour          2 cups 
    NavilKosu          1 cup grated
    Carrot                1/2 cup  grated
    Cilantro leaves   handful chopped
    Coconut            little(opt)
    Green chillies        5-6 (as per taste)
    Jeera/ Cumin seeds      1 tsp
    Oil                     2tbsp
    Salt                   to taste
    Water              ( as required)
    Method
    In a bowl mix rice flour with chopped and grated veggies,chilies, Cumin /jeera, coriander leaves, coconut ,add salt. Add warm water, mix well to a soft  dough. Keep covered for 10 mins.

    Take 1tsp of oil, smear around a tava, take dough and spread around it.
    Keep this on medium heat, cover and after minute ,add oil around sides or so it will be ready to be taken out. If you want more crispy leave it of little longer.
    
    To make another rotti, hold the pan upside down and run cold water all around it, pan will be cool to make another rotti by this time (be careful while running water onto hot vessel, water will start sizzling as soon as it hits the pan).
    Serve this soft rotti hot with chutney of your choice and dash of butter.
    You can enjoy this kosambri like the pic above.  This is one healthy soft n crispy rice flour item which takes very less time and  is perfect for your busy day.

    Menthya Soppu Avarekai Rotti

    Menthya Soppu Avarekai Akki Rotti is nutritious , wholesome blend of Methi (Fenugreek Leaves) with Avarekai or Lima beans with rice flour making it a healthy breakfast delight.Enjoy this hot flavoured Rotti with chutney.


    Ingredients 

              Menthya Soppu Avarekai Akki Rotti

    Akki Hittu (Rice Flour)       2 cups 
    Methi Leaves          1 bunch finely chopped
    Avarekai/ Lima Beans-1/2 cup 
    Coriander  leaves          handful chopped
    Green chillies            4-5 finely chopped 
    (in case you need it spicy)
    Cumin seeds             1 tsp
    oil                             2Tbsp
    Salt                          to taste
    Water                       as req
    Curds                       2 tsp

    Method 

     Mix rice flour with chopped and  washed methi leaves, avarekai ,add salt,chilies,cumin seeds.Add water and mix well add little curds.Cover and leave for some time .(Dough should be of medium softness not too hard or too soft.) Next day ,take a tava ,smear  1tsp of oil around,take the dough and spread around it add water to flatten on the tava.

    Keep this on medium heat, add oil around the roti ,cover ,check if done.If you want more crispy leave it a little longer. Once done rotti it comes out easily from pan.

    To make another rotti, hold the pan upside down and run cold water all around it, pan will be cool to make another rotti by this time.Enjoy hot with butter and chutney /pickle of your choice.

    Spinach Sandwich

      • 1 tsp Sandwich masala 
      • 1/2 tsp pepper pwd
      • 1-2 chilies (opt)
      • 1/2 tsp oil
      • 8 Bread slices 
      • Butter
      • Grated cheese
      • Salt
      • Green Chutney
      • Ketchup
        Method: In a kadai,heat oil, add palak leaves and stir fry well, once done add salt pepper pwd  and mix well. Take bread,apply butter and  green chutney, add the palak mix, add some sandwich masala,add cheese ,cover with another chutney-butter spread bread. Grill in toaster. Serve hot with chutney or ketchup.

        Capsicum Raita / Simla Mirch ka Raita

        Capsicum Raita or Simla Mirch ka Raita is a excellent combination of crunchy stir fried capsicum (Bell Pepper)with chilled curds.

        Capsicum Raita 

        Ingredients
        Chilled Curds - 1 cup
        Capsicum - 3/4 cup chopped
        Chat Masala -1/4 tsp
        Dhania Jeera pwd-1/2 tsp
        Salt - to taste

        Seasonings
        oil-1/2 tsp  (seasoning)
        1/2 tsp mustard
        1/2 tsp chana dal
        1/2 tsp urad dal
        1/2 tsp jeera
        1-2 green chilies, finely chopped
        Few curry leaves
        Hing a pinch

        Method -Take a bowl, mix the yogurt,masala pwd chat masala and salt.Heat oil in a small pan.Stir fry the capsicum and keep it aside.
        Next  in the oil , add the mustard and cumin seeds. Next add the green chillies, chana dal, urad dal ,curry leaves and hing.
        Fry for some time.
        Add the capsicum and mix .Pour this into the yogurt.
        Mix well and serve.

        Enjoy Capsicum Raita / Simla Mirch ka Raita with  pulao or parathas.

        Coriander Chapati

        Coriander Chapati is simple and easy lunch box recipe for kids or adults. A dash of fresh greens (hara dhaniya)  to your daily diet. Enjoy this flavoured and delicious chapati with Raita or Sabzi of your choice.



      1. 1.5 cups of wheat flour 

      2. Fresh corainder leaves -1 cup

      8. Jeera-1/2 tsp

      11. 1 tsp. of ghee

      12. Oil as needed




      13. Method

        In a bowl combine all the ingredients with the flour, add yogurt  and knead into smooth dough, add water as req. Add oil and knead it again and keep it covered for sometime. Make chapatis. Heat a skillet (tava) , gently put in the chapati add oil, turn on both sides till done. Serve very hot with raita.

        Cumin Seeds           - 1/2 tsp

        Dhania Jeera pwd  -1/4 tsp
        Garam Masala         - 1 tsp
        Chilli Powder          - 1/2 tsp
        Salt                          for taste
        Oil                           as req


        Method: In a bowl combine all the ingredients with the flour ,add yogurt  and knead into smooth dough,add little water if req.Add oil and knead it again and keep it covered for sometime.Make parathas.Heat a skillet (tava) , gently put in the paratha, add oil ,turn on both sides till done.Serve hot with pickle,sauce or chutney

        • 1/2 cup sliced onions
        • 1/2 cup Kabul chana (boiled)

        • 1/2 tsp urad dal
        • Hing-pinch
        • Curry leaves-few

        • For Grinding
        • Red chillies-5-6 (roasted) 
        •  Coconut-1/4 cup

        Method- Cook the rice and spread it on a plate.Cook the chana well. Grind the items mentioned under the heading "for grinding" into smooth paste. Next in a pan,heat oil,add mustard ,once done,add jeera,chana dal,urad dal,hing ,curry leaves and fry , next add onions and sauté. Next add the cooked chana and saute for 1-2 mins. Add the ground paste and fry well. Add salt and mix . Next add the cooked rice and mix well. Simmer on low heat for 10 mins till all the rice,chana  is blended well with the spices.  Serve hot with raita of your choice.

        • Hing-a pinch
        • Turmeric -1/4 tsp
        • Curry leaves-3-4


        Method: Heat oil in a pan and add all the items in the seasonings,add the gorikayi/cluster beans and mix.Cover it with a lid.Once the vegetable is done add bhath pudi,salt and mix well.Add grated coconut.Mix well.Serve hot with plain white rice or chapati.
