Achari Aloo / Potatoes in Pickle Masala

Achari Aloo or Baby Potatoes cooked in achar (pickle) masala is spicy and has its unique taste, texture and flavor. Enjoy!!


  • 8-10 Baby potatoes(cut into half)
  • 1 onion chopped
  • 1/2  tsp Ginger garlic paste
  • 1-2  green chilies 
  • 1-2 tsp pickle masala pwd
  • 1 tsp Red Chili pwd
  •  Turmeric Pwd-pinch
  • Salt to taste
  • 1 tsp lemon juice
  • 2-3 tbsp oil
  • Coriander leaves-few

Method: Fry the baby potatoes in oil and keep it aside.Next, add oil and onions, saute well, next add ginger garlic paste, chilies, fry well, add the masala pwds and fry, next add the potatoes and mix well till the masalas are coated on the potatoes. Cover and cook for 5-10 mins till done. Garnish with chopped coriander leaves and lemon juice. Serve hot with chapati or Dal Rice.

  • 1  cup  Cabbage(shredded)
  • 1 cup carrot(shredded)
  • 2-3 Tbsp shredded Coconut
  • 4-5 green chillies chopped
  • 1 Tbsp Lime juice
  • Salt to taste



Seasoning 

  • 1/2 tsp mustard
  • 1/2 tsp jeera
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1 Tbsp Oil
  • Turmeric-pinch
  • Hing-pinch
  • Curry leaves-few


Method: Heat oil in a pan. Add the items in seasoning, once done, add the shredded vegetables and fry for few mins. Add salt. Cover and cook on low flame. Once done, add grated coconut, lemon juice Mix well. Serve hot with rasam rice or chapati.

Heerekayi Dosa

Heerekayi Dosa  is  a quick snack recipe. Spicy, crispy and tasty, another delight from the humble Heerekayi (ridgegourd).

Heerekayi is kannada word for Ridgegourd/Turai.

One of my Mom-in-laws special.

Heerekayi Dosa,Ridge Gourd Dosa,
Heerekayi Dosa 
Ingredients
  • 1 Heerekayi(Turai or Ridgegourd)
  • (Finely sliced without skin)
  • 1 cup rice flour
  • 1-2 tsp chiroti rava
  • 1-2 tbsp besan
  • 1 tsp Jeera/cumin seeds
  • 1/2 tsp dhania jeera pwd
  • 1/2 tsp red chili pwd
  • 1 tsp bhath pwd
  • Salt
  • Oil


  • Method- In a bowl, mix the flours, add the masala pwds, salt, water and mix well.
  • Take tava, add oil and smear well next dip the heerekayi in the batter and arrange on the tava so it is shaped like dosa.
  • Add batter to cover the gap if any.
  • Apply oil on the sides and cook it covered.
  • Let it cook on both sides well.
  • Serve hot.

Vegetable Hot Dog is easy and quick. Kids will love it.


Ingredients

  • Hot dog Buns - 3
  • Sweet corn - 3/4 cup (steamed)
  • Capsicum - 1 finely chopped
  • Tomato-1 finely chopped
  • Onion-1 finely chopped
  • Green chillies-3-4 finely chopped
  • Mozerella Cheese  - 2 tbsp
  • Pepper pwd - for taste
  • Salt - as required
  • Tomato sauce



Method-  Mix the sweet corn, onions, tomatoes, capsicum, add chillies, cheese, salt and pepper and mix well. Keep it aside. Spread the tomato sauce on the bun, next fill the hot dog bun with the mix. Microwave for 10-20 sec or till the cheese melts. Alternatively you can toast on tava. Enjoy hot.

  • 1 tbsp chiroti rava
  • 4-5 tsp sugar
  • Milk
  • 1 tsp Cardamom pwd
  • Ghee/oil for deep frying

  • Method: Mix the flour with sugar, milk, cardamom pwd, little ghee and cover for few hours. Make a chapati shape with the dough. Cut into diamonds or squares using the cutter or knife. Heat oil in a heavy bottom pan.
  • Fry till golden brown and crisp. Enjoy.

Veggie Chapati Roll

Veggie Chapati Roll or the well know frankie is simple and healthy breakfast or tiffen box recipe for kids or elders alike. 

Just adjust the spices. Add any healthy combination of vegetables and and voilà is the easy roll.

  •  1/2 cup cabbage shredded
  •  1/2 cup carrot shredded
  •  1/2 cup green peas steamed
  •  1/2 cup potatoes mashed
  •  1/2 capsicum thinly sliced
  •  1 tomato chopped
  •  1 onion chopped
  •  1-2 green chili finely chopped
  •  1/2 tsp red chilli sauce
  •  1/2 tsp green chili sauce
  •  1/2 tsp garam masala
  •  1/2 tsp dhania jeera pwd
  •  oil-2 tbsp
  •  2 tbsp oil
  •  1/2 tsp jeera
  •  1/2 tsp mustard
  •  salt for taste
  •  Cheese
  •  Tomato sauce
Method-

Make chapatis and keep it aside. Heat oil in kadai,add mustard,jeera once done add the chillies.
Add the tomatoes and let it cook. Next add all the vegetables and stir fry for 8-10 mins.
Add potatoes and mix well. Next add all the masala pwds, sauces, salt and mix it well.
Let the mix cool. Take one chapati, apply tomato sauce, next add the filling lengthwise. Add cheese on the top. Roll the chapati carefully. Fix it with a clove so the filling doesn't come out.
Reheat the chapati on medium heat till crispy. Serve hot.

    Sweet Corn Fritters

    Sweet Corn Fritters is simple snack recipe made from corn.Tasty and yummy spicy fritters.Enjoy!

    Ingredients
    • 1/2 cup sweet corn
    • 1 onion (finely chopped)
    • 1/2 tsp dhania jeera pwd
    • 1/2 tsp red chili pwd
    • 1-2 green chillies
    • 1/2 tsp green chilli sauce
    • 1/2 tsp red chilli sauce
    • 1/2 cup chiroti rava
    • 1 tbsp rice flour
    • 3-4 tbsp grated cheese
    • Oil to fry
    • Salt to taste

    Method-In a bowl, mix rava, riceflour with water and keep it aside. Next add the balance  ingredients  
    add 1/2 tsp hot oil  and mix well to get batter for fritters.Next make small balls. Heat oil in a vessel , slowly slide in, deep fry on medium flame till they are golden brown in color. 
    Remove on tissue/absorbent paper to remove any  excess oil. 
    Serve hot with ketchup .

    • Maida 1 cup
    • Chiroti Rava-4 tsp
    • Salt 1/2 tsp
    • Butter 1 tsp
    • water
    • Stuffing
    • Potato-1 (boiled and grated)
    • Carrot 1 grated

    • Onion-1 finely chopped
    • Ginger-Garlic Paste-1/4 tsp
    • Red Chili Powder -1/2 tsp
    • Garam Masala - 1/2 tsp
    • Dhania Jeera pwd-1/2 tsp
    • Green chilies-2-3 finely chopped
    • Salt to taste
    • jeera-1/2 tsp
    • Oil
    Method-  Mix the flour, salt, melted butter , add water as required and make a soft dough. Keep it aside. 
    Heat a oil in kadai,add jeera,ginger garlic paste,c hilies and saute. Next add the onions and saute.Next add the remaining vegetables, add salt, masala pwd and mix well. Keep it aside. 

    For the rolls-take dough, make small thin chapatis. Place the veggie mix  in the centre.  Fold it in rectangular shape. Seal the edge with flour mix(maida+water). Heat oil in kadai. Slowly slide in the rolls, fry till golden brown.

    Serve hot with chutney or sauce.

    Cucumber Akki Rotti

    Cucumber Akki Rotti  ಸೌತೇಕಾಯಿ ಅಕ್ಕಿ ರೊಟ್ಟಿ ..or Southekayi akki rotti is an unique blend of cucumber with spices in rice flour. Akki Rotti ( Kannada) rice  flour-breakfast speciality of Karnataka.It can be made from different kinds of vegetables added to it.Enjoy this version too !

    Ingredients:
    • 1.5 cups Rice Flour
    • 1  Cucumber /Southekayi (grated)
    • 5-6 green chillies (finely chopped)
    • 1/4 cup coconut
    • Coriander leaves-few
    • 1 tsp jeera
    • salt to taste
    • Oil
    • Water


    Method-Grind coriander leaves,coconut,green chilies Next in a bowl add rice flour with  grated cucumber,ground mix,Cumin /jeera ,add salt.Add little water, mix well to a soft  dough. Keep covered for 10 mins.Take 1tsp of oil, smear around a tava, take dough and spread around it.
    Keep this on medium heat, cover and after minute ,add oil around sides or so it will be ready to be taken out. If you want more crispy leave it of little longer.(to make it more soft you can cover it with a plate on the tava/griddle).Serve hot with chutney of your choice.

    Cucumber Avalakki / Cucumber Poha

    Cucumber Poha or Southekayi Avalakki is spicy and quick breakfast recipe.Poha (Oggarane Avalakki ) is easy to cook, adding vegetables to it makes it more nutritious and tasty.This one is with cucumber.

    1 cup poha ((flaked rice /avalakki)
    1 cucumber(finely chopped)
    5-6 green chillies, finely chopped
    Salt to taste
    For Seasoning:
    2 tbsp. oil
    1/2 tsp. mustard
    1/2 tsp.cumin seeds
    1 tsp chana dal
    1 tsp. Urad dal
    2 tsp. peanuts
    Hing- a pinch
    Curry leaves-few
    Turmeric pwd-pinch

    For Garnishing
    2 tbsp. grated coconut
    Few coriander leaves


    Method: Soak the poha in water for 5-10min. Wash  and drain the water completely.
    Heat the oil in the pan, fry the peanuts and keep it aside .
    Next add seasonings and fry till done.
    Add green chillies and cucumber and stir fry.
    Once done add the poha and mix well.
    Add salt, coconut ,peanuts and coriander leaves to the poha.
    Mix well  and serve hot.

    Avalakki Fritters / Avalakki Vadas  is spicy fritters made from simple poha.It is tasty ,crispy and delicious.(Avalakki-kannada-poha)


    Ingredients
    Avalakki /Poha - 1 cup
    Rice flour - 1 tbsp
    Red chili powder - 1/2 tsp
    Onion-1 finely chopped
    Green chillies - 3 chopped
    Curry leaves - 5 or 6
    Cilantro - 2 tbsp (finely chopped)
    Potato boiled-1 cup
    Salt - as required
    Oil - for deep fry


    Method-Soak the Poha  in  water for about 10-15mins.Once soft,drain the water.Next in a bowl,add the poha,grated potatoes,chilies,red chili pwd,coriander leaves,salt,jeera, rice flour and mix well to form the dough.Make small balls and flatten it. Set it on a plate.In a kadai,heat  oil , slowly slide in the vadas,deep fry till golden brown on both sides.Drain on absorbent paper.Serve hot with chutney or sauce.

    Potato Masala Rice

    Potato Masala Rice is a simple one pot meal made from potatoes blended with spices.

    Easy to prepare.
    Aloo Rice
    Potato Rice

    Ingredients
    1 cup-Rice
    2 big Potatoes (boiled and chopped)
    1/2 tsp Mustard
    1/2 tsp chana dal
    1/2 tsp urad dal
    1/2 tsp jeera
    Hing-pinch
    Turmeric-pinch
    2-3 tsp Bhath pwd
    Few Corianderleaves
    Few Curry leaves
    2 tbsp Oil
    Salt to taste
    Roasted cashews
    Grated coconut-1-2 tsp
    Lemon juice-1/2 tsp

    Method: 

    Cook rice and spread it on a plate. 
    Meanwhile heat Oil in pan, add mustard, chanadal ,uraddal, jeera , hing ,tumeric, curry leaves, and fry for some time.
    Add the masala pwd in the oil , next add the potatoes and fry well.
    Add salt and mix well. 
    Add rice, l emon juice and mix well.
    Garnish with coconut and coriander leaves.

    Serve Potato Masala Rice hot with raita of your choice.

    Capsicum Gojju (Kannada-word for Tamarind based curry) is delicious ,spicy gravy of Simla Mirch (Bell Pepper) cooked with tangy tamarind.Enjoy with chapati.It's traditional dish in South Indian homes.

    Ingredients
    1. Capsicum-1 cup (finely chopped)
    2. Oil-2 tspn
    3. Mustard – 1/2 tspn
    4. Jeera-1/2 tspn
    5. Chana dal-1 tsp
    6. Urad Dal-1 tsp
    7. Hing-pinch
    8. Turmeric pwd-1/2 tsp
    9. Tamrind juice-1-2 tsp
    10. Curry leaves few
    11. Rasam pwd-1-2 tbsp
    12. Jaggery-1 tsp
    13. Dry coconut-1-2 tsp
    14. Salt to taste
    Method-In a kadai, add oil and fry capsicum well.Keep it aside.Next heat oil in a pan and add mustard,chana dal,urad dal,hing,turmeric pwd,curry leaves once done add Rasam (Saaru) powder,tamarind juice,jaggery,salt,water and mix well .Add capsicum and mix well.Cook for 2 – 3 minutes till the gravy thickens.Add dry coconut and mix.Serve hot with chapati.

    Tomato Upma is very simple and easy to prepare. It has a nice tangy and spicy flavor.

    Ingredients:


    • Upma Rava/Semolina - 1 Cup
    • Tomato                     - 1 cup 
    • (finely chopped)
    • Oil                             - 2 tbsp
    • Mustard                    - 1/2 tspn
    • Chana Dal              -1/2 tsp
    • Urad Dal                -1/2 tsp
    • Jeera                      -1/2 tsp
    • Hing                            pinch
    • Turmeric Powder     pinch
    • Curry Leaves            few
    • Coriander Leaves   few
    • Green Chilies            1-2 
    • (finely chopped)
    • Salt         for taste
    • Dhania Jeera pwd    -1/4 tsp
    • Pepper Pwd            -1/4 tsp
    • Rasam Pwd              - 1 tsp


    Method: 
    Fry the rava until slightly brown and aromatic and set it aside. Boil water. Heat oil in a pan add musturd,cumin seeds when they begin to splutter add channa and urad dal fry  until light brown. Next add hing, curry leaves, green chillies, chopped tomatoes, masala pwds and stir fry well. Add fried rava, salt and mix well, add boiling water. Stir until all the water is gone. Reduce the flame and close the lid for 8 to 10 minutes. Garnish with coriander and serve hot.

    • coconut, grated - 2 table spoon
    • jeera - 1 tsp
    • salt - as per taste
    • Water

    Method-Fry the grated cabbage in little oil for 5 mins.Next in a bowl, add rava, rice flour, maida and curds,next add grated cabbage, coriander leaves,green chillies ,jeera,salt and grated coconut, add water and mix well to form dosa batter.Keep it aside for 1-2 hrs.Make dosa.Serve hot with chutney or pickle of your choice.

    Aloo Cheese Stuffed Paratha is yummy delicious recipe especially for kids. The melted cheese and combination with spices is tasty.

    • Ingredients
    • Wheat flour - 1 cup
    • Salt to taste
    • Water to knead

    • Stuffing
    • Aloo / Potato - 1
    • (boiled and grated)
    • Cheese, grated - 2 tbsp
    • Red chili pwd -1/2 tsp
    • Salt to taste
    • Dhania Jeera pwd-1/2 tsp
    • Garam masala-1/2 tsp
    • Tumeric -pinch



    Method-Knead the flour with water, a little salt,oil into a soft dough. Cover it for 4-5 hours.
     Mix the grated potato,cheese,masala pwd, salt and make it into small balls.
    Make a small chapati with the dough,keep this ball in the middle and bring all the sides together, use the rolling pin to make the paratha. Heat a tava, put in the paratha, add oil or ghee all around the edges, fry both sides, carefully turning over until  brown. Serve very hot with ketchup.
