Mango Loaf Cake

Mango Loaf Cake - Do try it out, easy and delicious, especially when it is the Mango season It's fresh and has a nice taste. Kids will love it too. So for a perfect tea time or for your kids lunch box, check this moist healthy and flavorful Mango Loaf Cake.

Ingredients
  • All purpose flour - 1.5 cup 
  • Baking Powder - 1 tsp
  • Baking Soda - 1/2 tsp
  • Sugar - 3/4cup
  • Thick Yogurt - 2 tbsp
  • Milk-1/2 cup
  • Vegetable Oil - 1/4 cup 
  • Mango Pulp blended-1/2 cup
  • Vanilla essence-1/2 tsp

Method -  Preheat the oven to 180ºc. Prepare the baking tray by lining with parchment paper. Next sieve the flour, baking powder, and baking soda well. In a bowl, mix sugar, milk, blended mango pulp and curds and blend well.  Once it is mixed well, add the flour mix slowly and fold in carefully. Do not over mix. Add the batter to the baking tray. Bake it for 30 mins. You can insert a toothpick, to check if the cake is done well.

Once done, let it cool, slice and serve. Enjoy yummy and delicious Mango Cake.

Carrot Poha / Carrot Avalakki

Carrot Poha / Carrot Avalakki

Carrot Poha  or Carrot Avalakki is spicy and quick breakfast recipe. Poha (Oggarane Avalakki ) is easy to cook, adding vegetables to it makes it more nutritious and tasty. This one is with carrots has a unique taste which makes the avalakki delicious and colorful.



Ingredients:

  • 1 cup poha ((flaked rice /avalakki)
  • 1 cup carrot finely chopped)
  • 1/2 cup onion finely chopped
  • 3-4  green chillies, finely chopped
  • Salt to taste

For Seasoning:
  • 2 tbsp. oil
  • 1/2 tsp. mustard
  • 1/2 tsp.cumin seeds
  • 1 tsp chana dal
  • 1 tsp. Urad dal
  • 2 tsp. peanuts
  • Hing- a pinch
  • Curry leaves-few
  • Turmeric pwd-pinch

For Garnishing
2 tbsp. grated coconut
Few coriander leaves


Method: In a pan , Stir fry carrots well in little oil keep it aside.
Soak the poha in water for 5-10min. Wash  and drain the water completely.
Heat the oil in the pan, fry the peanuts and keep it aside .
Next add seasonings and fry till done.
Add green chillies and onion and stir fry.
Once done add the poha and mix well.
Add salt, coconut ,stir fried carrots.
and coriander leaves to the poha.
Add lemon juice and mix well . Serve hot.

Chocolate Brownie

Chocolate Brownie is an easy and interesting recipe that can be prepared in less time. Kids will love it. It's tasty and delicious small squares rich in chocolate and nuts.

Ingredients
Chocolate Brownie

  • 1 cup maida
  • 1/2 cup Hershey’s cocoa powder
  • 1/2 cup sugar 
  • ½ tsp baking soda
  • 1 tsp baking powder
  • Salt- pinch
  • 1/3 cup oil
  • 1 cup of milk
  • 2 tsp thick curds
  • 1/2 tsp of vanilla extract
  • A fistful of walnuts, chopped
Method -  Preheat the oven to 180C. In a bowl, sieve together the flour, soda, baking powder, cocoa powder, and salt. Next in a bowl add milk, curds, oil, vanilla essence, sugar and blend for 5 mins. Next mix the wet ingredients and dry ingredients slowly and gently fold. Add it to the pre greased baking dish, add chopped walnuts and bake for 25-30 mins or until done. Allow it to cool and then cut it into small squares. You can eat it chilled or warm.

Vegetable Paddu

Vegetable Paddu 

Vegetable Paddu / Veggie Gundponglu or Veggie Appe or Paniyaram is a yummy recipe made from left over Dosa-Idli Batter using the Paddu tava. An easy and delicious breakfast idea. You can send it for Kids tiffen box too. Try it out.


Course BreakfastCuisine gluten-free, Indian, South indian, vegan

Prep Time 10 min

Cook Time 15 min

Total Time 25 min

Servings 4




  • Ingredients




  • Dosa Batter-2.5 cup




  • Salt as per taste




  • Few Coriander leaves




  • Green chillies-2-4 chopped




  • Onion-1 finely chopped
  • Capsicum-1 finely chopped
  • Carrot shreds-1/2 cup
  • Cumin seeds-1/2 tsp




  • Fresh coconut-few finely chopped.




  • Oil as required for making paddu





  • Method:  Add all the above ingredients in the dosa batter and mix well. Next apply oil to the paddu tava and pour the batter in the holes of tava and keep it on low flame. Cover. Once done turn it over and cook the other side. Serve Vegetable Paddu hot with chutney or sauce or enjoy just like that.

    Bhindi Masala

    Bhindi Masala is a delicious combination for Indian breads. It can be made in variety of ways. This is the marinated version. Bhindi is Lady's finger in English.

    Ingredients
    • 1 cup bhindi 
    • 1 onion finely chopped
    • 2 tomato chopped
    • 1/2 tsp cumin seed 
    • 1/2 tsp ginger garlic paste
    • 1/2 tsp red chili powder 
    • 1 tsp turmeric powder 
    • 1/2 tsp dhania jeera powder 
    • 1/2 Garam Masala 
    • few coriander leaves (finely chopped) 
    • 2-3 tbsp Oil
    • Salt 
    • Thick Curds-2 tbsp
    To Marinate

    Besan-1/2 cup
    Red Chili pwd- 1tsp
    Salt- for taste

    • Method- First marinate bendi using besan,  red chilly powder and salt and mix well so its coated well. Let it rest for 15-20 mins. Next in a kadai add oil and and saute marinated bendi. In another kadai, add oil add cumin,  ginger garlic paste,  chopped onions,  saute well. Next add the masala powders, add tomato and mix well. Cook on low flame. Lastly add the fried bendi and let the mixture blend well. Add salt and mix, garnish with coriander leaves and serve hot with Indian Breads or Rice.

    Masala Cookies or Khara Biscuits is an easy and interesting recipe. Bangalore's all time favourite, these masala cookies are available in Iyengar bakeries. Have tried baking it at home. Do try it out. Spicy and a perfect companion for your coffee or tea. These are mildly sweet with perfectly spiced, crispy and tasty. Enjoy baking !



    Ingredients

    • 2 cups All purpose flour
    • 1/3 cup Butter melted
    • 2 - 3 tbsps curd
    • 2 tsp sugar
    • 1 tsp Salt
    • 5 - 6 Green Chillies
    • Fresh Coriander leaves -few
    • few Curry Leaves
    • Cumin/ Jeera-few
    • Hing-pinch
    Method - Grind chilies, coriander leaves, curry leaves and jeera without water. Next sieve the flour, salt. Hand blend sugar, butter, curds well for 5-10 mins. Add the flour slowly and mix into soft dough. Cover and rest for 15-20 mins.
    Preheat oven in convection mode for 10 minutes in 180c. Line the tray with baking sheet on a oven tray leaving gaps in between. Bake the cookies for 12-15 mins. Switch off, once cool remove from the tray.

    Filter Coffee

    Filter Coffee or Kaapi is quintessential drink in South India. Filter Coffee is a traditional South Indian style coffee which is made by using the filter.

    Ingredients
    • Coffee Powder : 2 tbsp
    • Hot Water : 2 cups
    • Milk- 1/2 cup
    • Sugar as per taste
    • Coffee Filter

    Method - 

    Step 1 

    • Filter-

    You need a coffee filter to brew coffee. 

    Boil water.  Meanwhile, add 2 tablsepoon full of coffee powder into the filter.
    Pour hot water over the powder into the filter.  Close the lid and wait for 10 mins.
    Tap the filter gently with a spoon for the water to trickle down. The Coffee decoction is ready.

    Step 2

    • Making Coffee


    In a bowl, boil milk , add sugar and mix. Next add decoction and stir. Take two cups and add the above coffee. Mix it well with another cup to form the froth. Serve immediately. 

    The milk and sugar needs to be added as per taste since the first decocation will be very strong.

    Vegetable Kolhapuri

    Vegetable Kolhapuri is a traditional authentic gravy that can be enjoyed with Indian Breads. It is a melange of vegetables in a spicy, flavorful, coconut based gravy.


    Vegetable Kolhapuri
    Ingredients:


    • 1/2 cup potatoes
    • 1/2 cup peas
    • 1/2 cup carrots
    • 1/2 cup cauliflower
    • 1/2 cup beans
    • 1 /2  cup tomato puree
    • 1/2 tsp ginger garlic paste
    • 1/2 tsp jeera
    • 1-2 bay leaf
    • 1 tsp red chili pwd
    • 1 tsp dhania jeera pwd
    • ½ tsp turmeric powder

    • 2-3 tsp Veg Kolhapuri masala
    • 2-3 green chilies chopped
    • 3 tbsp  oil
    • Salt to taste
    • Fresh coriander leaves
    • 1 tsp lemon juice

    Method: Heat oil in a kadai, Add  bay leaf, cumin seeds,turmeric, chillies. Stir-fry the vegetables. Keep it aside. Next add oil, sauté ginger garlic paste, add the masala pwd, tomato puree and fry well. Add the vegetables add water if required, cook on low flame till the gravy blends well. Serve hot with any Indian breads.

    Banana Chocolate Cake

    Banana Chocolate Cake is a delicious blend of healthy and fresh banana fruit with Vanilla and Chocolate flavors. Try baking this cake, you will surely love it.

    Banana Chocolate Cake
    • Ingredients
    • All Purpose Flour - 1.5 cup
    • Baking Powder - 1 tsp
    • Baking Soda - ½ tsp
    • Salt - ½ tsp
    • Cocoa powder Hersheys - 4 tbsp
    • Wet ingredients
    • Butter - ½ cup melted
    • Curds - 4 tbsp 
    • Milk - 1/2 cup
    • Banana -2 chopped
    • Vanilla syrup- 1 tsp
    • Sugar - 1 cup
    Method

    Preheat the oven at 180deg for 15 minutes ⏲. Sieve the dry ingredients twice. Take the wet ingredients 2 bananas🍌, 1 cup milk🥛,4 tbsp thick curds , 1/2 cup melted butter, 1tsp vanilla essence, add the sugar and blend with the blender till smooth.  Add the dry ingredients and mix slowly and well. 🥣 

    Line the baking tray with parchment paper and pour the mix. Tap the tray so it settles well and no bubbles are there. Leave for 5 mins 

    Then place the tray and Bake at 180deg for 20-25 mins ⏲ or until done ( you can check by piercing a toothpick) If it comes out of easily, then the cake is done. Let it cool and then cut it into slices. Enjoy.

    • Baking Soda - 1/2 tsp

In a bowl, mix sugar, milk, blended apple puree and curds and blend well.  Once it is mixed well, add the flour mix slowly and fold in carefully. Do not over mix. Add the batter to the baking tray. Garnish with almond flakes. Bake it for 30 mins. You can insert a toothpick, to check if the cake is done well.

    Once done, let it cool, slice and serve. Enjoy yummy and delicious Apple Cinnamon Cake.

    Sweet Corn Rice

    Sweet Corn Rice is rice blended with healthy sweet corn and spices. Enjoy hot with Sabzi, gravy or raita. Kids will love it.

    Sweet Corn Rice

    Ingredients
    • 1 cup basmati rice
    • 2 tsp jeera
    • 1 inch cinnamon
    • 1 bay leaf
    • 1-2 cloves
    • 2-4 pepper
    • 1-2 green chillies
    • 1/2 cup steamed sweet corn
    • Water as req
    • 2 tbsp oil or ghee
    • Cashews-few (roasted)
    • salt as required

    Method-

    Soak the basmati rice in water for 30-40 minutes.(or follow instructions on the packet) 
    Heat oil in pan, next add the spices and fry, add the soaked rice and sauté for 1-2 mins.
    Add salt and required water. Cover and cook till the rice is done, once done add the steamed sweet corn mix the rice carefully and serve hot with sabzi and raita for your choice.

    Aloo Sevai / Potato Vermicelli

    Potato Sevai or Alugadde Shavige / Aloo Vermicelli is the simple sevai blended with the boiled potatoes. It is tasty, spicy and filling breakfast. A nice, quick hot breakfast with goodness of potatoes for chilly winter mornings.

    Ingredients:
    Aloo Sevai / Potato Vermicelli
    1. Vermicilli / sevai- 1 cup
    2. Water - 2 cups
    3. Potatoes-1 cup (boiled and chopped)
    4. Green chillies-6-7
    5. Curry leaves-few
    6. Oil-1-2 tbsp
    7. Mustard-1/2tsp
    8. Jeera-1/2tsp
    9. Channa dal-1tsp
    10. Urad dal-1tsp
    11. Hing- a pinch
    12. Turmeric-a pinch
    13. Fresh coriander-few
    14. Lemon juice-1tbsp
    15. Salt to taste
    16. Freshly grated coconut-1/2 cup (opt)

    Method:  Boil water. Heat oil in a pan add mustard, jeera when they begin to splutter add channa and urad dal fry about 2 minutes until light brown. Next add chopped  green chillies, potatoes, hing, curry leaves, and fry well. Once done add sevai ,salt and mix well next add the boiling water slowly. Stir until all the water is gone.  Add the lemon juice. Close the lid and simmer for 8 to 10 minutes. Garnish with coriander leaves and coconut and serve potato sevai hot.
