Alasande Kaalu Vada / Chawli Fritters

Alasande Kaalu Vada / ಅಲಸಂದೆಕಾಳು ವಡೆ  is made from black eyed peas or Chawli with spices and is a delicious, healthy and nutritious evening snack recipe. Kids will love it too. Black eyed peas are rich in fiber and protein.

Ingredients:
  • 1 cup alasande kaalu/black eyed peas 
  • (soaked in water)
  • Green chilies- 4-5 finely chopped
  • Carom seeds/ Ajwain-1/2 tsp 
  • Ginger paste-1/2 tsp
  • Pepper powder-1 tsp
  • Curry leaves- few
  • Coriander leaves-few
  • Salt -for taste
  • grated Coconut-1/4 cup
  • Oil-for frying
  • Rice flour-1 tbsp


Method:

Soak the alasande kaalu well overnight. Once soft, grind without much water. In a bowl, add  the remaining items mentioned under ingredients except oil, add the ground paste and  mix well. Divide the mixture into equal portions and shape them as patties.  Heat oil in a pan and fry till until it turns brown and crisp. Serve Chawli Fritters hot with chutney or sauce/ketchup.

Sabudana Chivda

Sabudana Chivda - is simple and easy snack recipe. Enjoy with hot cup of tea. This namkeen chivda / sago spicy mix is easy to make and can be taken during fasts.



Ingredients
Sabudana Chivda 
  • 1 cup Sabudana/Sago
  • Few Peanuts (kadlekayi)
  • Few White Dal(Hurikadle)
  • Few cashews/Almonds
  • 3-4 tbsp oil
  • Salt to taste
  • Red chili pwd -1/2 tsp
  • Roasted Dry coconut pieces-2 tsp
  • Salt for taste
  • Sugar -1/4 tsp (opt)
Seasoning
  • 1/2 tsp mustard
  • 1/2 tsp Jeera
  • Few curry leaves
  • Chopped Green Chilies 8-10
  • (or red chilies)
  • Hing -pinch
  • Turmeric-pinch
Oil-Frying Sabudana

Method: 
In a deep pan, heat the oil fry peanuts and cashew nuts,almonds,white dal and remove on a plate. 
In a separate pan, add enough oil and fry the nylon sabudana carefully, till they pop, remove on a absorbment paper. 
In a kadai, prepare the seasoning. Heat oil, add mustard seeds and when it starts to pop up, add hing,turmeric, red chillies/green chillies, curry leaves. 
Once done, add to the sago-poha  and mix well, add salt again mix well and then add the dry coconut, cashew nuts, peanut and mix well. Store it in a air tight container.

Cabbage Onion Fritters or Pakoda or Bhajiya is simple and easy to prepare. It's crispy, spicy and tasty. One more snack variety that can be made from the leafy green Cabbage for a nice rainy evening. Enjoy it with chutney or sauce. Do try it out.

Ingredients
  • 1 cup Finely chopped/shredded cabbage
  • 1 cup sliced onion
  • 1 cup besan/Gram flour
  • 2 tbsp rice flour
  • 1 tsp red chili pwd
  • 1/2 tsp dhania jeera pwd
  • 1/2 tsp garam masala
  • 2-3 green chili, finely chopped
  • 1 tsp ajwain
  • 1/2 tsp cumin seeds
  • Hing-pinch
  • Tumeric-pinch
  • Few coriander leaves
  • Few curry leaves
  • Water
  • salt for taste
  • oil for frying

Method- Take a bowl combine all the ingredients and mix well.  Next add cut cabbage and onion, the flour and mix well. Add water only if required since the vegetables will leave some water. Heat a little oil and add it to this batter and mix it well.
Keep it for sometime. In a kadai heat sufficient oil for frying. Slowly add the cabbage onion mix in batches in the hot oil. Fry till golden brown on both sides.  Drain on absorbent paper. 
Serve hot crisp bhajias with ketchup or chutney of your choice.

    Moong Dal Kachori

    Moong Dal Kachori is a delicious fried snack. It can be stuffed with any filling of your choice like peas, onion, potatoes.  This version is the traditional one with moong dal. You can serve it with chutnies like sweet tamarind chutney, mint, coriander chutney or ketchup. You can also break the crust of Khasta Kachori and fill with chutnies, onions and sev. Enjoy !

    Ingredients

    Flour 2 cups
    1/2 cup oil or ghee
    Ajwain- 1 tsp
    Salt 1 tsp
    water for kneading
    Oil or frying

    Filling

    Moong dal-1/2 cup (soaked)
    Ginger shreds-1/2 tsp
    Green chilies-1-2 finely chopped
    Jeera-1 tsp
    Fennel-1 tsp
    Hing- pinch
    Turmeric- pinch
    Oil-1 tsp
    Red chili pwd- 1tsp
    Garam masala -1tsp
    Amachur pwd/ Tamarind paste-1/2 tsp
    Salt for taste


    Method- Sieve the flour. Next add the oil and mix the flour till crumbly. Next add salt and water and mix to make a stiff dough. Cover and rest for 30-45 mins. 

    Heat oil in kadai. Next Grind the moong dal wthout water. In a pan, take oil add jeera, green chilies, turmeric, hing, fennel seeds, all the masala powders and fry. Next add the ground mix of moong dal and mix well. Add salt and fry till the mixture becomes dry. Take small portion of dough and make a cup, add the moong filling. Close the cup. Flatten it and roll it into small thick puri. 

    Slowly slide the kachoris in the oil and fry on medium heat till golden brown on both sides.  Serve hot with ketchup or  chutney of your choice.

    Poha Aloo Vada is simple recipe made from rice flakes with boiled potatoes. Perfect and quick evening snack.


    Recipe Type: Starter, Snacks
    Prep Time: 10mins
    Cooking Tim: 20 mins
    Total time: 30 mins

    Ingredients

    • 1 cup - soaked Poha / Rice Flakes. 
    • 2 potatoes, boiled and mashed 
    • 2 to 3 - green chillies, finely chopped. 
    • 1 tsp - red chilli powder. 
    • 1 tbsp - Coriander leaves, finely chopped. 
    • 1 to 2 tbsp - Chickpea flour. 
    • 1/2 tsp Jeera
    • Salt to taste. 

    Method- Drain the water from the soaked poha. Heat oil in a kadai. Next add the mashed potatoes, and other items mentioned in the ingredients and mix well. Make small balls and flatten them. Slowly slide them in the hot oil and fry till golden brown on both sides. Serve hot with chutney or tomato ketchup.

    Masala Cookies / Khara Biscuits

    Masala Cookies / Khara Biscuits 


    Masala Cookies or Khara Biscuits is an easy and interesting recipe. Bangalore's all time favourite, these masala cookies are available in Iyengar bakeries. Have tried baking it at home. Do try it out. Spicy and a perfect companion for your coffee or tea. These are mildly sweet with perfectly spiced, crispy and tasty. Enjoy baking !



    Ingredients

    • 2 cups All purpose flour
    • 1/3 cup Butter melted
    • 2 - 3 tbsps curd
    • 2 tsp sugar
    • 1 tsp Salt
    • 5 - 6 Green Chillies
    • Fresh Coriander leaves -few
    • few Curry Leaves
    • Cumin/ Jeera-few
    • Hing-pinch
    Method - Grind chilies, coriander leaves, curry leaves and jeera without water. Next sieve the flour, salt. Hand blend sugar, butter, curds well for 5-10 mins. Add the flour slowly and mix into soft dough. Cover and rest for 15-20 mins.
    Preheat oven in convection mode for 10 minutes in 180c. Line the tray with baking sheet on a oven tray leaving gaps in between. Bake the cookies for 12-15 mins. Switch off, once cool remove from the tray.

    Poha Cutlet

    Poha Cutlet is an interesting all time favourite snack. 

    Made from leftover Avalakki or Poha and mixed with potatoes makes it crispy from outside and soft and delicious from inside. 

    Healthy and tasty, an easy way to get your kids eat vegetables.

    Preparation Time: 15m 
    Cooking Time: 30m 
    Yield: Serves 8
    Recipe Type: Appetiser

    Ingredients

    • 2 potato - boiled
    • 1/2 cup Left over Poha
    • 1 capiscum-finely chopped
    • 2 Green Chillies - finely chopped
    • 1 tsp garam masala pwd
    • 1/2 tsp Dhania Jeera Pwd
    • 1/2 tsp bhath Pwd
    • 1/2 tsp chaat masala
    • 3-5 tbsp chiroti rava/bread crumbs for coating
    • 1-2 slices of bread 
    • salt for taste
    • Few Coriander leaves
    • Oil for making the cutlet
    • Method -  Cook Potatoes in pressure cooker. Peel and mash the potatoes well.In a bowl, add finely chopped capsicum, mashed vegetables, salt, leftover Poha, masala pwds, coriander leaves, salt and mix well. Divide the dough into small balls and shape it into any shape -round or heart shaped. Roll it over the chiroti rava/bread crumbs so it is coated well. Keep cutlets to set it well for 5-10 mins. Next heat a pan or tawa add 1 tbsp oil, place 4-5 pieces of cutlet and cook in slow to medium heat until it becomes crusty and brown, turn to other side and cook again until done if needed drizzle some oil, repeat same for rest of pieces.
    • Serve Poha cutlet hot with sauce or chutney of your choice.

    Monaco Bites

    Monaco Bites is an easy and quick fix for evenings. Use the biscuit as the base and add a mix of veggies to create an interesting and fun loving recipe. A dash spices and you can't stop eating at one! 


    Monaco Bites
    Ingredients

    Monaco Biscuits- 1 packet
    Tomato- 1/2 cup finely chopped
    Onion-1/2 cup finely chopped
    Corn-1/4 cup
    Salt-as per taste
    Chaat masala-1 tsp
    Chili flakes-sprinkle
    Cheese for garnish
    Coriander leaves for garnish


    Method- In a bowl, take the chopped tomatoes, onion. Add corn, salt, chaat masala, chili flakes
    and mix well. Line the biscuits on a plate. Add the veggies over the top of the biscuit, next add the cheese and garnish with coriander leaves. Serve these Monaco bites immediately.

    Cheese Corn Balls

    Potato Cheese Corn Balls is yummy rich crispy snack which kids will surely enjoy.
    The corn and melted cheese is very tasty.

    Ingredients

    • 3-4 boiled and grated potatoes
    • 1 cup steamed sweet corn
    • 1/2 cup of grated cheese
    • 1/2 tsp Pepper pwd
    • 1/2 tsp Dhania jeera pwd
    • 1/2 tsp chaat masala
    • 1 tsp All purpose flour
    • bread crumbs
    • salt to taste 
    • Oil for deep frying

    Method- Mix mashed potatoes, corn, grated cheese, masala pwd, salt.
    Dip bread in little water, squeeze,add it to the mix, shape into small balls or any shape you like  pat it accordingly.
    Dip it on bread crumbs or chiroti rava. Set it for some time. Heat oil in a vessel, slowly slide in, deep fry the crisps on medium flame till they are golden brown in color. 
    Remove on tissue/absorbent paper to remove any  excess oil. 


    Serve Cheese corn balls hot with ketchup .

    Veggie Nachos


    Veggie Nachos
    Veggie Nachos - Party size nacho grande - loaded with veggies, beans and topped with low fat shredded cheese. A perfect evening snack!! A simple side dish that is so easy to put together and taste wonderful!!

    Ingredients



    • Spicy Nachos- 2 pkts
    • Sweet Corn-few
    • Cumin seeds-few
    • Cheese-1/2 cup shredded
    • Capsicum-1/2 cup
    • Onion-1/2 cup
    • Tomatoes-1/2 cup
    • Italian seasoning-1/2 tsp




    Method - In a pan or oven safe dish arrange nachos at the base. Generously sprinkle some cheese. Add corn. Sprinkle salt and roasted cumin seeds. Next add chopped bell peppers, chopped onions, chopped onions. Layer it with more cheese. Repeat the process with a second layer of nachos..Spread corn, bell peppers and..onion. Cover the pan with shredded cheese and add few herbs. Bake for 10 - 15 minutes or until cheese is all bubbly and melted. Remove from the oven.

    Serve hot with ketchup up on top.

    Bonda Soup

    Bonda Soup is a perfect evening time snack cum appetizer, which is very soothing and super tasty especially in cool weather. It is crispy bonda in hot soup made from lentils that is blended with mild spices. It is no onion no garlic recipe, easy to prepare. Hot favourite of people in Bangalore and Mysore. 

    A must-have in any South Indian Joints.

    Bonda Soup

    Ingredients:


    Soup



    • 1 cup Toor Dal 
    • 1/2 tsp tumeric
    • Water - 2-3 cups
    • salt to taste
    • Grated ginger(opt)
    • Pepper pwd-1 tsp
    • Few coriander leaves
    Seasoning:
    • 1 tsp oil/ghee
    • 1 tsp mustard seeds 
    • 1/2 tsp jeera
    • hing -pinch
    • curry leaves
    • Green chillies 3-4 chopped
    • Lemon juice

    Bonda Batter for making bondas

    (it is same recipe - Medu vada batter)

    Method :  

    Heat the oil in a kadai. Once it is hot enough, make bondas and put it carefully in the oil. Deep fry the bondas well. Strain and take it out. 

    Pressure cook dal with turmeric and oil. Heat oil in a pan,add the seasoning items once done add to the dal, add water to give soup consistency, add salt and mix well. Cook on low heat for 5-10 mins. Add lemon juice. 


    Serving- Take 2 to 3 bonda in a bowl. Pour 2 to 3 spoons of soup, garnish with chopped coriander leaves / cilantro.
