Ragi Methi Dosa

Ragi Methi Dosa (Finger Millet Methi dosa)  is another dosa variety that can be made with Finger Millet flour -  easy , quick dosa variety. Made from fenugreek leaves (methi) is healthy , nutritious and tasty too.

Ragi Methi Dosa

Ingredients

  • Chiroti rava 1 cup
  • Ragi flour - 1 cup
  • Curds-3 tbsp
  • Methi leaves, washed and finally chopped - 1 cup
  • Coriander leaves-few
  • green chillies, finely chopped - 5-6
  • coconut, grated - 2 table spoon
  • jeera - 1 tsp
  • salt - as per taste
  • Coconut-3 tsp(opt)
  • Water

Method-

In a bowl, add rava, ragi flour, and curds, next add chopped methi leaves, coriander leaves,green chillies, jeera, salt and grated coconut, add water and mix well to form dosa batter.

Keep it aside for 1-2 hrs. Make dosa.

Serve Finger Millet Methi Dosa hot with chutney of your choice.

Ragi Wheat Chapati

Ragi Wheat Chapati is a healthy and nutritious recipe providing the daily dose of required benefits for our body. Ragi or Finger Millet is a wonder food that helps in overall growth in kids.

Ingredients


  • Wheat flour--2 cups
  • Ragi flour---1 cup
    Ragi Wheat Chapati
  • Water--for kneading
  • Oil
  • Salt to taste


Method

In a bowl, add all the ingredients and knead into soft dough.
Cover and keep it for 30 mins.
Next make chapatis.
Fry on tava , add oil and flip and once done on both side , 
serve hot with sabzi of your choice.

Mango Dal

mango dal

Mango Dal is an interesting combination made using raw mango and Tur dal. This healthy recipe can be enjoyed  with chapati or hot rice. It is an interesting variation during the mango season. Enjoy.


Ingredients:
  • 1 cup tur dal
  • 1/2 cup grated raw mango 
  •  pinch turmeric pwd
  • 1-2 green chillis, 
  • salt to taste
  • 1 1/2 -2 cups water
Seasoning
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • few fresh curry leaves
  • 2-3 tsps oil

  • Pinch Hing
Method-Cook dal in pressure cooker along with turmeric pwd. Prepare seasoning, add this to the cooked dal.Add grated raw mango and salt. Mix well and let it simmer on low heat. Enjoy hot with chapati or rice.

Beetroot Cutlet

  • Beetroot Cutlet is  a colorful and healthy snack. Made from beetroot and potatoes and other veggies it is crispy from outside and soft and delicious from inside.  Healthy and tasty, an easy way to get your kids eat vegetables.

Ingredients

Beetroot Cutlet
Beetroot Cutlet 
  • 2 beetroot -boiled 
  • 2 potato - boiled
  • 1 onion - finely chopped
  • 1 capiscum-finely chopped
  • 2 Green Chillies - finely chopped
  • 1 tsp garam masala pwd
  • 1/2 tsp Dhania Jeera Pwd
  • 1/2 tsp bhath Pwd
  • 1/2 tsp chaat masala
  • 3-5 tbsp chiroti rava for coating
  • 1-2 slices of bread 
  • salt
  • Few Coriander leaves

  1. Method-

    Cook Potato and beetroot in pressure cooker. Peel and mash it well.
    In a bowl, add finely chopped onion, capsicum, mashed vegetables, salt, masala pwds, coriander leaves, salt and mix well. Divide the dough into small balls and shape it into any shape -round or heart shaped. Roll it over the chiroti rava so it is coated well. Keep cutlets to set it well for 5-10 mins. Next heat a pan or tawa add 1 tbsp oil, place 4-5 pieces of cutlet and cook in slow to medium heat until it becomes light brown, turn to other side and cook again until light brown,  if needed drizzle some oil, repeat same for rest of pieces.

    Serve Beetroot Cutlet hot with chutney or sauce.

Aloo Onion Paratha

Aloo Onion Paratha 

Aloo Onion Paratha is very healthy and nutritious , roasted onion with mashed potato and spices makes it tasty and delicious.


Ingredients  



  • Wheat flour 3 cups 
  • Potato 1  (boiled and mashed)
  • Onion 1 (finely chopped)
  • Red chilly pwd1/2 Tsp
  • Garam masala pwd1/2 Tsp 
  • Dhania jeera pwd-1/2 tsp
  • Salt to taste   
  • Ghee or oil for frying   
  • Jeera-few 

    
Method

1.Knead the flour with water, a little salt,oil into a soft dough.Cover it for 4-5 hours.
2.In a Kadai heat oil, add  jeera,add onions fry .Then add the chopped onion  and fry well next add garam masala powders, and fry for a while. Add the mashed potatoes, salt and mix well.Fry till dry set aside to cool. Divide the mixture into balls. 
3.Make a small chapati with the dough,keep this ball in the middle and bring all the sides together, flatten them with your fingers, or use the rolling pin to make the paratha 
4.Heat a tava, put in the paratha, turn on both sides till done.Add oil or ghee all around the edges, fry both sides, carefully turning over until evenly brown. Serve very hot with pickle or curds.
5.We enjoyed with Avarekayi Masala. It tasted well !


Avarekayi Masala -

Avarekai /Surti Papdi or Flat Lilva beans is all time favourite .Enjoy this spicy Avarekalu Masala a different version ! 

Ingredients:

Avarekalu(Lilva beans)- 2 cups
Onions- 1 Cup Chopped 
Amchur pwd- 1 Tsp
Mustard,Jeera-1/2 tsp
Curry leaves-few
Oil- 2-3 tsp
Water
Dhania Jeera pwd-1 tsp
Garam masala-1 tsp



For Masala paste 
Roasted Onion - 2
Red Chillies 6-8
Grated Coconut- 1/2 cup
Coriander Seeds-1/2Tsp
Khus Khus - 1Tsp


Method :

1.Soak avarekayi in water for around 7-8 Hours and remove the outer skin and keep it aside.

2.Grinding-Heat Oil a in a pan and add Red Chillies ,Coriander seeds and fry well ,add little grated coconut and fry for some time.Separately roast onions with skin on the tava.Now grind all the above into thin paste.Also grind coconut and khus khus with water into fine paste since khus khus takes time to grind , do it separately.

3.Cooking-Heat Oil/Ghee in a pan add mustard seeds ,Cumin ,Curry leaves and chopped Onions  and fry.Add the beans and fry for a minute and add the ground paste.,add water .Once beans is cooked well,add the masala pwd , salt  .Mix well.Allow it to simmer keep stirring and check the consistency.

4.Serve hot with rice/chapati.

Sri Rama Navami Festival Recipes

Sri Rama Navami is celebrated on the ninth day of Chaitra Masa . It is celebrated as the birthday of Lord Rama.



Below are the dishes that is done as part of Neivedyam during the pooja.

1.Panaka


Panaka
Ingredients
  • 2-3 cups of water
  • ½ tsp grated fresh ginger
  • 2-3 tbsp grated jaggery 
  • ½ tsp crushed peppercorns
  • 1 tsp cardamom powder
  • Lemon Juice (opt)

Method-In a vessel add the grated jaggery and add water , Keep stirring till it gets dissolved.Next  add fresh chopped ginger . Boil the mixture and filter it. Add crushed cardamom and pepper to it. Mix well .
Enjoy it cold !

Chakota Kadlekayi Huli / Mountain Spinach Sambhar

Ingredients



  • 2 cups chakota greens
  • (cleaned and chopped )
  • 1 cup yellow lentils/ Toor dal
  • 1/2 cup peanut
  • 2 tsp  sambhar pwd
  • 1 tsp tamarind paste
  • 2 tsp  jaggery powder
  • 4 cups water
  • salt to taste
  • 2-3 tbsp Coconut
Seasoning
  • 2 tsp oil
  • 1/2 tsp mustard seeds
  • few curry leaves
  • Hing-pinch


Method- Pressure cook Toor dal and groundnut well.Cook greens in water for 10-15 mins.

Grind coconut and sambar powder and keep it aside. Next in a vessel, mix the dal, peanut and soppu, add tamarind paste, salt and the ground paste ,and mix well. Let it boil well for 10 mins,simmer, prepare the seasoning. Add it to the sambar,mix.Serve hot with rice or chapati with spoon of ghee.  Make sandige if you are having it with rice.

Chole Bhel

Chole Bhel  is an interesting combination of Chole with Puffed rice making it a healthy Bhel. Quick and easy to make , do try it out.

Ingredients:

  • 1-1/2 cups puffed rice
  • 1/2 cup Left Over Chole
  • 1 cup Sev
  • 1/2 cup papdi
  • 2 tbsp roasted peanuts
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • finely chopped raw mango(season)
  • few Coriander leaves, chopped
  • 1-2 Green chilies finely chopped
  • Chaat masala-pinch
  • Red chili pwd -pinch
  • Salt to taste
  • Lemon juice-taste
  • Chutney-Green and tamarind.(as per taste)

Chole Bhel
  Method:  Add the above mentioned ingredients in a large mixing bowl.Mix well. Sprinkle some sev and coriander to garnish.Serve immediately.

Raw Mango Bisi Uppinakayi

Raw Mango Bisi Uppinakayi is an instant pickle easy to prepare.Enjoy this tangy pickle with chapati or rice.

Ingredients
  1. 2-3  raw mangoes cut in to small pieces
  2. 2 tbsp red chilli powder
  3. 1/2 Tbsp Sasive /Mustard seed powder
  4. 1/4 Tbsp Menthya / fenugreek seed powder
  5. 1/4 tbsp hing
  6. A pinch of turmeric powder
  7. Salt as per taste
  8. Jaggery as required
  9. 1-2 Tbsp oil
  10. 1/2 tsp Mustard seeds 
Method: You can grind mustard and Fenugreek seeds in a mixer and use it fresh.Roast the mustard and menthya , dont burn it.Once cool , grind it.Next in a pan, add oil , mustard seeds and allow it to crackle. Add turmeric powder and hing. Next add cut pieces of raw mangoes and fry it Add the ground masala pwd ,salt , red chilli powder, jaggery and cook it till the mangoes are soft and the masalas are blended well.Enjoy !
