White Pumpkin Sihi Kootu / White Pumpkin Gravy

















White Pumpkin Sihi Kootu is a South Indian gravy blended with Indian spices. It can be enjoyed with hot rice or chapati. 
Kootu is a lentil-vegetables based semi-gravy which is nutritious, 
protein rich and  perfect with some hot rice and ghee and nice papads. 
The whole experience is just heavenly!


Ingredients
  • 1 big cup white pumpkin 
  • or (Buda kumbalakayi)
  • salt to taste
  • Water
For Grinding
  • 1/2 cup coconut grated
  • 1 tbsp Jeera 
  • 2-3 green chillies
  • 1 tsp Kalamiri
  • 1/2 tsp rice
  • 1/2 tsp Urad dal
For Seasoning
  • 1 tsp mustard seeds
  • 1 tsp Urad Dal
  • 1 tsp Chana dal
  • Few curry leaves
  • Hing-Pinch 
  • Turmeric-Pinch


Method 


  • Cut the pumkin into small cubes (remove seeds/skin) In a vessel add water, add the pumpkin, salt and cook till done.
  • Meanwhile dry roast the items mentioned under for Grinding
  • Next grind the items into paste. 
  • Add the ground masala to the cooked pumpkin and stir well. 
  • Simmer and stir in between till the gravy blends well. 
  • Add salt if req. Prepare the seasoning. Add to the gravy. 
  • Serve this Buda kumbalakayi / White Pumpkin Kootu hot with rice or chapati.

Sihi Kumbalkayi Huli thovve / Sweet Pumpkin Curry

Huli Thovve is  another interesting traditional South Indian Curries that can be enjoyed with hot rice. A Karnataka speciality. This is made from Sweet Pumpkin/ ಸಿಹಿ ಕುಂಬಳಕಾಯಿ.

Spicy with freshly grounded spices and perfect !


Ingredients-
Huli Tovve
Sihi Kumbalkayi Huli thovve
  • Pumpkin -2 cups (diced sans skin)
  • Toor Dal- 1 cup
  • Turmeric Powder- pinch
  • Tamarind paste-1 tsp
  • Ghee/ Oil- 2 Tsp
  • Curry Leaves- few
  •  Mustard seeds- 1/2 Tsp
  • Hing- a Pinch
  • Jaggery- 1 Tsp
  • Salt- To taste
To Grind (after roasting)
  • Chana dal-1 tbsp
  • Urad dal-1tbsp
  •  Red chilies-3-4
  • Cinnamon-small piece
  • Jeera-1 tsp
  • Coriander seeds- 1 Tbsp
  • Fenugreek seeds- 1/4 tsp
  • coconut- 2 Tbsp
  • Curry leaves-few


Method- Wash and cook the pumpkin till soft.Cook the dal in pressure cooker.Next grind the items mentioned under to grind into a paste.In a vessel add the cooked dal, the cooked pumpkin and the ground paste.Next add tamarind paste, jaggery and salt  add water if req , simmer for 10-15 mins. Season with the mustard ,hing and curry leaves.Enjoy this Huli Thovve hot with rice and ghee.

Peas Masala Gravy II is another Peas variant that can be enjoyed with Indian Breads.


This sabzi is blended in tomato and cashews mix without onion, it is tasty and delicious.

Ingredients
  • Peas - 1 cup (steamed)
  • Tomatoes -1-2
  • Green Chilies - 1-2
  • Cashewnut - few (roasted)
  • Curd - 1 tbsp
  • Chana masala- 2tsp (MTR)
  • Garam masala- 1/2 tsp
  • Dhania jeera pwd-1/2 tsp
  • Kasoori methi -few (crushed)(Everest)
  • Coriander leaves-few
  • Salt - to taste
  • Jeera-1/2 tsp
  • Butter - 1 tbsp
  • Oil - 2 tsp


Method - 

Grind tomatoes, chilies.
Also grind cashews with curds. Keep it aside.
Heat butter in pan, add jeera, saute well, and next add the ground tomato mix add the masala pwds and fry well.
Next add the cashew paste and fry.
Add the steamed peas, add water if required , mix well, add salt, and mix and let it simmer for 2-3 mins till the gravy blends in.
Add crushed kasuri methi, coriander leaves,
a spoon of cream, mix and serve hot with Indian breads.

  • Dosa Batter-2 cups
  • Carrot/Beetroot  shredded -3/4 cup
  • Onion-finely chopped 1/4 cup (opt)

  • green chillies, finely chopped - 5-6
  • coconut, grated - 2 table spoon
  • jeera - 1 tsp
  • salt - as per taste
  • Water

Method - In a bowl take dosa batter add shredded carrot, Beetroot, coriander leaves, green chillies ,jeera, salt and grated coconutadd little water if req and mix well to form dosa batter. Make dosa. Serve hot with chutney or pickle of your choice.

Hurlikayi Batani Carrot Palya

















Green Beans with Peas and Carrot Sabzi  / Hurlikayi Batani Carrot Palya 

(french beans stir fry) is a favorite in South Indian Homes.

An awesome and healthy combination with Rice or Chapati.

Palya is a Kannada word for Sabzi/Vegetable.



Ingredients:

  • 1 cup chopped Green Beans
  • 1/2 cup steamed peas
  • 1/2 cup chopped carrot
  • 1 tbsp. oil
  • 1/2 tsp. mustard 
  • 1 tsp. chana dal
  • 1 tsp. urad dal
  • 1/2 jeera
  • 4-5 green chillies
  • Hing-pinch
  •  curry leaves-few
  •  grated, coconut-3 tbsp
  • Salt to taste
  • Sugar-1/4 tsp (opt)

Method:

Heat oil in a saucepan. Add mustard, allow to splutter, 
add chana dal,urad dal, 
green  chillies,hing.
Fry till light brown, then add curry leaves, beans, carrot
cover with a lid and cook till beans,carrots are soft.
Next add the steamed peas.
Add  grated coconut, salt, sugar  and mix well. 
Cook for 5 minutes.
Serve hot with Chapatis/Rice.

Tomato Bhaji

Tomato Bhaji  is with a touch of groundnut and red chili peppers .Tangy and spicy enjoy with hot chapatis or parathas or simple Dal-Chawal.

Ingredients:
Tomato Bhaji
  • 1 cup tomato chopped
  • Salt as per taste
  • 3  tbsp -groundnut
  • 7-8 red chilies pepper (spicy ones)
  • Coconut-1 tbsp (opt)

For Seasoning

  • 1tsp oil
  • 1 tspn mustard seeds
  • 1 tspn chana dal
  • 1 tspn urad dal
  • Hing-pinch

Method:

1.Roast coconut well and keep it aside ,next roast groundnut and red peppers in little oil,grind it into powder.
2. Heat the oil on a low flame, add mustard seeds-let it splutter, add urad dal, chana dal ,hing ,curry leaves once done add tomato and stir well.Next add the ground masala powder,salt and mix well.Serve hot with chapati or Dal Rice.

Red Pumpkin Paratha

 Red Pumpkin Paratha a good healthy kickstart for your busy life.Hot chapatis blended with spicy pumpkin masala. A perfect lunch box recipe. Kids will enjoy this .

Ingredients
  • 1 cup  wheat flour
  • 1/2 tsp  cumin seeds/carom seeds
  • 1 /2 tsp turmeric 
  • 1 -2 tsp chilli powder/garam masala
  • 1/2 tsp jeera dhania powder
  • 1 1/2 cup mashed boiled pumpkin
  • 2 tbsp oil
  • salt to taste
  • Water to bind

Method

In a bowl, add the above ingredients  in a bowl and mix ,next add enough flour ,add water as required and knead into soft dough.Cover and keep it aside.Make chapatis.
Heat a skillet (tava) gently put in the chapati add oil ,turn on both sides till done. 

Serve Pumpkin Paratha very hot with raita or pickle.

Aloo Peas Patties is easy snack for kids or elders, smart way of including vegetables in your little ones diet. 

Prep time:  15 mins

Cook time: 15 mins

Total time: 30 mins

Ingredients:

Aloo Peas Patties, tikki
Aloo Peas Patties
  • 2-Potatoes boiled and mashed
  • Salt as per taste
  • 1 tsp pepper pwd
  • Bread pieces (binding)
  • 1 cup steamed peas
  • 1/4 tsp garam masala
  • 1 tsp Red chili powder
  • 1 tsp dhania jeera pwd
  • Lemon juice
  • Oil for shallow-frying.
  • Paste for binding(maida+corn flour,salt,and water)


Method: Mash the peas and add the masala pwd and salt and mix it well add mashed potatoes, pepper pwd, bread pieces, lemon juice and mix well. Take small portion of mix, flatten it, pat it well. Dip it in the maida paste. In a kadai, add oil and place the pattice shallow fry till golden brown on low heat. Flip on the other side slowly. Once done serve hot with ketchup or chutney.

  • Coriander leaves-few chopped

Method: In a pan add little oil and stir fry capsicum and keep it aside.Cook rice and Spread it on a plate.Heat oil , add mustard seeds, after it splutters ,add chana dal,urad dal,hing,curry leaves, chiles , turmeric and fry until golden brown. Also fry Fried gram (hurikadle) Add the capsicum, bhath powder, salt and mix well.Add rice, and mix well.Garnish with coconut. and coriander leaves Serve hot with raita or papad or enjoy just like that.

    • 1 cup cleaned and chopped spinach 
    • 1/2 cup steamed corn
    • 1 tsp Sandwich masala 
    • 1/2 tsp pepper pwd

    • 8 Bread slices 
    • Butter
    • Grated cheese
    • Salt
    • Green Chutney
    • Ketchup
      Method:In a kadai, heat oil, add palak leaves and stir fry well, once done add salt pepper pwd, add steamed corn  and mix well. Take bread, apply butter and  green chutney, add the palak mix ,add some sandwich masala,add cheese, cover with another chutney-butter spread bread. Serve with  ketchup.

      Bhendi fry Ver III

      Bhindi Peanut fry or Okra peanut fry is simple and easy vegetable, crispy and tasty too. This is with bhath pwd and groundnut pwd. Kids will love it.

      Ingredients:
      •  1 cup Bhindi/ Okra 
      • (finely chopped)
      • Seasoning
      • Oil-2-3tbsp
      • Groundnuts-few
      • 1/2 tsp Mustard
      • 1/2 tsp Jeera
      • 1/2 tsp chana dal
      • 1/2 tsp urad dal
      • Hing-pinch
      • Turmeric-pinch
      • Groundnut pwd-1/2 tsp
      • Bhath pwd-1 tbsp
      • Curry leaves-few
      • Salt-taste
      Method -
      In a pan , heat oil, add groundnuts and fry well and keep it aside. Next prepare the seasoning-add the items -mustard, jeera, chana dal, urad dal, hing, curry leaves, once done, add the vegetable and fry well till crisp. Add salt, groundnut powder, bhath powder and mix well.
      Serve Bhindi Peanut Fry hot and crispy with chapati or rasam / Curd rice.

      Mint Paratha /Pudina Paratha

      Pudina is a herb commonly used in Indian cooking. It is used in a variety of dishes such as chutneys, raitas, and salads. It has a refreshing taste and aroma along with many health benefits.
      Ingredients

             Mint Paratha /Pudina Paratha



    1. 1.5 cups of wheat flour 






    2. Fresh Pudina/Mint leaves  -1/2 cup






    3. Garam masala pwd-1 tsp






    4. Dhania Jeera pwd-1 tsp


    5. Curds-1-2 tsp

    6. Turmeric-1/2 tsp

    7. Jeera-1/2 tsp


    8. Ajwain-1/2 tsp

    9. Salt to taste

    10. 1 tsp. of ghee

    11. Oil as needed

    12. Method

      Fry the Pudina leaves in little oil. Next grind it coarsely.In a bowl combine all the ingredients with the flour ,add yogurt  and knead into smooth dough, add water as req. Add oil and knead it again and keep it covered for sometime. Make chapatis. Heat a skillet (tava) , gently put in the chapati add oil ,turn on both sides till done. Serve very hot with raita.

      Veggie Dosa

      Veggie Dosa  is easy and tasty.One of the few varieties of dosas that can be enjoyed over the weekend with the available dosa batter.The crispy veggie  dosa is delicious and healthy mix to your diet.


      Ingredients:
      • Dosa batter 2 cup
      • Veggie Mix 1 cup 
      • (carrot,capsicum,Onion finely chopped)
      • Green chilly 3-4 finely chopped
      • Coriander leaves
      • Jeera-1tsp
      • Grated Coconut-2 tsp
      • Oil
      Method: 
      Mix the cut veggies, chillies, salt, jeera, coriander leaves, coconut and keep it ready. 
      Spread dosa batter on the tawa, add the chopped ingredients on the top.
      Add oil for making dosa.
      Slowly flip over and let it cook on the other side.
      Serve hot with chutney.
