White Pumpkin Sihi Kootu / White Pumpkin Gravy |
White Pumpkin Sihi Kootu is a South Indian gravy blended with Indian spices. It can be enjoyed with hot rice or chapati.
Kootu is a lentil-vegetables based semi-gravy which is nutritious,
protein rich and perfect with some hot rice and ghee and nice papads.
The whole experience is just heavenly!
- 1 big cup white pumpkin
- or (Buda kumbalakayi)
- salt to taste
- Water
- 1/2 cup coconut grated
- 1 tbsp Jeera
- 2-3 green chillies
- 1 tsp Kalamiri
- 1/2 tsp rice
- 1/2 tsp Urad dal
- 1 tsp mustard seeds
- 1 tsp Urad Dal
- 1 tsp Chana dal
- Few curry leaves
- Hing-Pinch
- Turmeric-Pinch
Method -
- Cut the pumkin into small cubes (remove seeds/skin) In a vessel add water, add the pumpkin, salt and cook till done.
- Meanwhile dry roast the items mentioned under for Grinding.
- Next grind the items into paste.
- Add the ground masala to the cooked pumpkin and stir well.
- Simmer and stir in between till the gravy blends well.
- Add salt if req. Prepare the seasoning. Add to the gravy.
- Serve this Buda kumbalakayi / White Pumpkin Kootu hot with rice or chapati.
