White Pumpkin Raita / Ash Gourd Raita |
White Pumpkin Raita / Ash Gourd Raita is made from yogurt/curds or dahi. It is normally served as dip/side dish. It provides cooling effect and has a nice taste.
This raita is with a touch of ground mix of raw mustard (hasi sasive ) coconut and chilies. (Kannada name: ಬೂದಿ ಕುಂಬಳಕಾಯಿ)
Yogurt is one of the immunity booster food that contains vitamins and minerals and more.
Ingredients
- Grated white pumpkin - 1 cup
- Thick curd - 1 cup
- Green chilli - 2-3
- Grated coconut - 1/3 cup
- Fresh coriander leaves - handful
- Mustard-1/2 tsp
Seasoning
- Mustard - 3/4 tsp
- Hing/asafoetida - pinch
- Curry leaves - few
- Oil
Method -
Deseed and peel the skin of pumpkin. Grate and keep it aside. Add salt and mix for leave for 10 mins. Meanwhile grind chilli, mustard, coconut and coriander leaves to a fine paste. Prepare seasoning adding the items mentioned above. Remove the excess water from pumpkin. Add the curds, add ground paste and mix.
