Capsicum Rice Sevai

Capsicum Rice Sevai  is an enjoyable healthy filling breakfast recipe.A perfect start for your busy day.

Capsicum Rice Sevai

· 2 cups rice vermicelli 
· 1 cup simla mirch thinly sliced


· 4-5 green chillies chopped
· few curry leaves
· 1 tbsp oil
· 1/2 tsp mustard seeds
.1/2 tsp jeera
· 1 tsp urad dal
· 1 tsp channa dal
. Hing-pinch
· Salt for taste
· Water

· 1-2 tbsp grated coconut
· Few coriander leaves

  • Boil water in a vessel.In a bowl add the rice sevai ,add the hot water allow to rest for 5-10 mins.Next in a kadai , add oil,fry the cashews and keep it aside.Next add mustard seeds, followed by urad dal, channa dal ,and jeera, hing, curry leaves, chopped chilies, turmeric and sauté well.Now, add sliced capsicum and stir fry well .Strain the vermicelli and add to the kadai,add salt  .Mix well.Add the fried cashews and mix well.Garnish with coconut.Serve hot.

    Kabul Chana Cabbage Chitranna

    Kabul Kadle Cabbage Chitranna  is a  healthy one pot meal made from the Kabul chana/chickpea  (Chole Chana) blended in spices, simply healthy , perfect and nutritious. Enjoy!

    • 1 cup rice
    • 1/2 cup Kabul Kadle
    •  (pressure cooked with salt)
    • 1/2 cup shredded cabbage
    • Turmeric pwd-pinch
    • 1 tbsp oil
    • 1/2 tsp groundnut
    • 1/2 tsp jeera
    • 1/2 tsp mustard
    • 1/2 tsp chana dal
    • 1/2 tsp urad dal
    • 1-2 tsp Bhath Masala pwd
    • 1-2 tbsp fresh Coconut
    • Hing-pinch
    • Curry leaves-few
    • salt to taste

    Method- Cook the rice and spread it on a plate.Cook the chana well.Next in a pan,heat oil,fry shredded cabbage and keep it aside .Next add mustard ,once done,add jeera,chana dal,uraddal,curry leaves ,turmeric ,hing and  fry .Add the bhath pwd ,salt ,cabbage and mix .Next add the cooked rice,cooked chana and mix well.Simmer on low heat for 10 mins till all the rice,chana  is blended well with the spices.Serve hot with raita of your choice.

    Stuffed Aloo Bhindi

    Stuffed Aloo Bhindi  is delicious side dish for Indian breads.The spices blended with potato is stuffed in the Lady's finger or Okra and fried is yummy ,tangy and tasty. Enjoy!!  

    Stuffed Aloo Bhindi 

    • Lady'sfinger /Bhindi-10-15
    • 2-3 tbsp oil

    Stuffing masala

    • 1 cup shredded boiled potato
    • 1 tsp amchur pwd
    • 1 tbsp dhania-jeera pwd
    • 1 tsp Chili pwd
    • 1-2  tbsp Veg Bhath pwd
    • Turmeric-pinch
    • salt 
    • Tamarind paste-1-tsp

    Method- Mix all the masala mentioned under stuffing ingredients and keep it aside.Next carefully trim the sides and slit the bhindi vertically.Fill in the aloo masala in the bhindi.Heat oil in a kadai.Place the stuffed bhindi and fry on low heat till done.Serve hot with Indian Breads.

    Capsicum Tomato Sandwich

    Capsicum Tomato Sandwich is simple and easy to make.Enjoy as a quick snack or mini dinner.

    Capsicum Tomato Sandwich 
      • 1 cup sliced capsicum
      • 1 cup tomato chopped
      • 3-4  green chilies–chopped finely
      • ½ tsp jeera
      • ¼ tsp mustard
      • ¼ tsp turmeric powder
      • 1/2 
      • 1-2 tsp italian seasoning
      • a few chopped coriander leaves
      • Sandwich masala 
      • 8 Bread slices 
      • Butter
      • Salt
      • Green Chutney
      • Ketchup
        Method:In a kadai,heat oil,add mustard seeds,cumin seeds,green chilies,curry leaves,hing, tumeric ,add tomatoes, capsicum and stir fry well ,once done add salt,coriander leaves and mix well.Take bread,apply butter and  green chutney, add the capsicum tomato mix ,add some sandwich masala,cover with another chutney-butter spread bread.Grill in toaster.Serve hot with chutney or ketchup.You can also add cheese to make it more tastier.

        How to set curds

        Homemade Curds/ Yogurt is very easy to prepare and it tastes delicious.Yogurt is healthy and is high in protein and calcium. It can be consumed by adults and kids alike.

        • 2 cups boiled and cooled milk
        • 2 tablespoons of yogurt (readymade)

        Boil the milk and let it cool .Once done ,transfer into another vessel.Add 2 tbsp of ready yogurt. Stir well , cover and  keep it aside either overnite or for 4-6 hours.Do not touch in between.

        Once it is set   you can either enjoy it just like that or refrigerate and serve it chilled.

        We can use this yogurt for setting curds the next time.
