Vegetable Adai Dosa

Vegetable Adai Dosa is made with a mix of healthy lentils, red chilies, peppercorns and flavored with dash of curry leaves and coconut. Adding the vegetables takes it to the next level of nutrition. You get an all-in-one healthy and heavy breakfast for a long hectic day. You can enjoy this delectable Vegetable Adai dose with chutney, chutney powder or sauce or you can enjoy it just like that

Adai batter also contains ginger, hing and methi seeds which helps in digestion. As the vegetable Adai is made slightly thicker, adding a bit more oil will make the dish only more tasty. Don't worry!

Ingredients


Moong dal+Tur dal+Urad dal-
Chana dal 1/2 cup

Rice -1 1/2 cups

Pepper-1/2 tsp

Jeera-1 tsp

Salt-as per taste

Red chillies-5-6

Hing-a pinch

Soaked Methi seeds-few


Ginger-small piece


Vegetables- onion, capsicum , carrot

(thinly shredded)

curry leave/coriander -for garnishing

Coconut-optional (adds taste)



 Method-  Soak rice/dals separately for 5-6 hrs. Next grind with pepper, jeera, salt, red chilies, hing, ginger, soaked methi seeds and mix well. Leave overnight. Next add the curry leaves/coriander leaves, coconut, onion, capsicum, carrot season with mustard seeds and then make dosa.

Serve Vegetable Adai Dosa hot with butter and  chutney / chutney pudi/ sauce of your choice.

Nippat Masala

Nippattu Masala, a spicy chaat item is a famous signature street food in Bangalore. It is easy to prepare and enjoyed by all.  Crunchy and full of flavour.

Ingredients

  • 5-8 Nippattu
  • 1 cup sev
  • 1 tomato finely chopped
  • 1 onion finely chopped
  • 1 cucumber finely chopped
    Nippat Masala
  •  few chopped coriander leaves
  • 1 carrot shredded.
  • few peanuts
  • Green chutney
  • Sweet  chutney
  • 1-2 tsp red chili pwd
  • 1-2 tsp cumin pwd
  • 1-2 tsp chaat masala
  • Lime juice

  • Method: 

  • Align the Nippattu on a plate. In a bowl mix chopped onion, tomatoes, carrot. Add chutney, salt masala powders and mix well. Stack the nippat with this mix. Add chutney a wee bit. Sprinkle sev and peanuts, pomogrante on the top. 
  • Squeeze lemon juice, a bit of masalas if req and garnish with coriander leaves.

  • Enjoy Nippat Masala immediately.

Ingredients
    • 2 cups boiled grated potatoes
    • 1 cup- onions finely chopped
    • 1.5 tsp- garam masala
    • 1 tsp-kitchen king masala
    • Sandwich masala or Chaat masala
    • 8 Bread slices 
    • Butter
    • 1 green chilly finely chopped
    • Salt
    • Green Chutney
    • Ketchup
      Method: Prepare the potato onion stuffing, add salt, masala powders, sandwich masala, chilies, mix well.

      Take bread, apply butter and  green chutney, smear the potato stuffing, top it up with the slices of vegetables, add some chaat masala, cover with another chutney-butter spread bread. 

      Grill in toaster. 

      Serve hot with chutney or ketchup.

      Aloo Methi Sandwich is simple and easy to make.  You can use your left over aloo methi sabzi and make this sandwich.. Else make it fresh.. Methi is loaded with nutrients and is healthy.

          Moong Dal Kachori

          Moong Dal Kachori is a delicious fried snack. It can be stuffed with any filling of your choice like peas, onion, potatoes.  This version is the traditional one with moong dal. You can serve it with chutnies like sweet tamarind chutney, mint, coriander chutney or ketchup. You can also break the crust of Khasta Kachori and fill with chutnies, onions and sev. Enjoy !

          COOK TIME: 20 MIN.  
          TOTAL TIME: 45 MIN

          Khasta Kachori, Moong Dal Kachori

          Ingredients

          Flour 2 cups
          1/2 cup oil or ghee
          Ajwain- 1 tsp
          Salt 1 tsp
          water for kneading
          Oil or frying

          Filling

          Moong dal-1/2 cup (soaked)
          Ginger shreds-1/2 tsp
          Green chilies-1-2 finely chopped
          Jeera-1 tsp
          Fennel-1 tsp
          Hing- pinch
          Turmeric- pinch
          Oil-1 tsp
          Red chili pwd- 1tsp
          Garam masala -1tsp
          Amachur pwd/ Tamarind paste-1/2 tsp
          Salt for taste


          Method- Sieve the flour. Next add the oil and mix the flour till crumbly. Next add salt and water and mix to make a stiff dough. Cover and rest for 30-45 mins. 

          Heat oil in kadai. Next Grind the moong dal wthout water. In a pan, take oil add jeera, green chilies, turmeric, hing, fennel seeds, all the masala powders and fry. Next add the ground mix of moong dal and mix well. Add salt and fry till the mixture becomes dry. Take small portion of dough and make a cup, add the moong filling. Close the cup. Flatten it and roll it into small thick puri. 

          Slowly slide the kachoris in the oil and fry on medium heat till golden brown on both sides.  Serve hot with ketchup or  chutney of your choice.

          Green Chutney

          Green chutney is spicy chutney recipe for all kind of snacks and sandwiches.
          Ingredients:
          • 1 Coriander bunch (green coriander)
          • 3 -6 green chilies chopped
          • 3 tbs lemon juice
          • 1/2 inch ginger
          • Salt for taste
          • 1 tsp cumin seeds
          • 1 tsp sugar
          Method:
          1. Blend all ingredients,in blender with water as required.
          2. Store it in Refrigerator.

          • Apply butter and green chutney on the bread, spread the vegetable mix on the bread, 
          • keep another slice over it.
          • Grill the sandwich. 
          • Serve Aloo Peas Sandwich with ketchup and chutney.

          Coconut Dosa

          Coconut Dosa is simple and easy dosa. Blended with fresh coconut and rice, its delicious. Enjoy hot with chutney powder.


          Ingredients:

          • Coconut – 1 cup grated
          • Rice-2 cups (soaked well)
          • Poha-handful (soaked)
          • Oil – for making dosa
          • Salt as per taste
          Method: Grind soaked rice and poha into smooth batter. Next add salt and coconut and mix well. Let it aside for 1-2 hrs. Spread dosa batter on the tawa, add oil for making dosa. Slowly flip over and let it cook on the other side.

          Serve hot with chutney or chutney powder.

          Butter Dosa

          Butter Dosa

          Dosa is the most favorite South Indian Breakfast recipe which is enjoyed by all of us.There are various versions.This one is the simple version.

          Ingredients

          • 1 cup urad dal
          • 2 cups rice
          • 1 /4 cup poha(avalakki)
          • 1/2 tea spn methi(fenugreek) seeds
          • Butter
          • Salt

          Method

          Soak urad dal, methi seeds and rice overnight. 

          Grind all together to a soft batter along with poha.

          Keep it aside overnight. Add salt to batter.Heat tava and spread a thin dosa. Serve with a dollop of butter and chutney of your choice or Potato Sabzi.    

          Potato Palya,Masala dosa,chutney

          Potato Onion Palya/Sabzi (Masala Dosa)



          Ingredients



          2 potatoes

          1/2 cup onion

          5-6 green chillies chopped

          1 tsp mustard
          1/2 tsp chana dal
          1/2 tsp urad dal
          Hing-pinch

          3-4 curry leaves

          A pinch turmeric

          Oil
          Salt

          Method:

          Cook the potatoes in pressure cooker, peel and mash them.
          Heat oil and add mustard seeds,chana dal,urad dal, When they start popping, add curry leaves, hing,green chillies, onion. Fry for few minutes.Add turmeric, salt and potatoes. Mix well.

              Navil Kosu Akki Rotti

              Navil Kosu Akki Rotti is a colourful and tasty blend of Navilkosu and carrots  with spices in rice flour. Navil Kosu or Naval kol is known as Kohlrabi in English. This vegetable is a rich source of Vitamin C and potassium along with providing other health benefits.

              Akki Rotti ( Kannada) made from rice  flour is a breakfast / lunch speciality of Karnataka.

              It can be made from different kinds of vegetables added to it and served with either chutney, kosambris or saagu or gravies. You can just enjoy it with just butter too!

              Navil Kosu Akki Rotti
              Ingredients 
              
              Rice flour          2 cups 
              NavilKosu          1 cup grated
              Carrot                1/2 cup  grated
              Cilantro leaves   handful chopped
              Coconut            little(opt)
              Green chillies        5-6 (as per taste)
              Jeera/ Cumin seeds      1 tsp
              Oil                     2tbsp
              Salt                   to taste
              Water              ( as required)
              Method
              In a bowl mix rice flour with chopped and grated veggies,chilies, Cumin /jeera, coriander leaves, coconut ,add salt. Add warm water, mix well to a soft  dough. Keep covered for 10 mins.

              Take 1tsp of oil, smear around a tava, take dough and spread around it.
              Keep this on medium heat, cover and after minute ,add oil around sides or so it will be ready to be taken out. If you want more crispy leave it of little longer.
              
              To make another rotti, hold the pan upside down and run cold water all around it, pan will be cool to make another rotti by this time (be careful while running water onto hot vessel, water will start sizzling as soon as it hits the pan).
              Serve this soft rotti hot with chutney of your choice and dash of butter.
              You can enjoy this kosambri like the pic above.  This is one healthy soft n crispy rice flour item which takes very less time and  is perfect for your busy day.

              Healthy Burger

              Healthy Burger is a simple and easy recipe and am sure you all will love to make and enjoy it with your kids. Get their help to assemble the burger and it will a happy family time ! Healthy Burger has a mix of vegetables and aloo patties with cheese a perfect heavy meal. Cheese is for kids though, elders can skip it or enjoy and go for a run! 
              Ingredients:
              Aloo tikki burger, healthy burger
              Healthy Burger
              • Aloo peas tikki
              • Mayonnaise 
              •  Tomato sauce
              • Green chutney (ignore for kids)
              •  Burger buns-4
              •  Cucumber slices (1 for each burger)
              • Capsicum slices  (1 for each burger)
              • Tomato slices (1 for each burger)
              • Onion slices  (1 for each burger)
              • Cheese slice ( (1 for each burger)
              Method- Prepare the patties and keep it aside. Cut the burger bun in half and  lightly roast the burger bun with little butter. Apply the sauce on both sides. If you like it spicy apply green chutney. Next start assembling the burger-keep the patties, place tomato, cucumber and onion slices, cheese slice over this, cover it with bun and press lightly. Enjoy Healthy Burger with ketchup.

              Sweet Corn Bhel



              Sweet Corn Bhel is quick and easy chaat recipe. Healthy, colorful and delicious too.

              • 1 cup sweet corn(steamed)
              • 1 onion chopped
              • 1 tomato chopped
              • 1-2 tsp green chutney
              • 1/2 tsp chaat masala
              • 1/2 tsp red chilli pwd
              • 1/2 tsp tamrind chutney
              • 1 cup sev
              • few salted peanuts
              • Salt-for taste




              Method

              In a bowl, add the above ingredients-corn, tomato, onions, masala pwds chutneys and mix well.
              Top it up with sev and salted peanuts and serve .
