Cabbage Poha

Cabbage Poha  or Cabbage Avalakki is spicy and quick breakfast recipe. Poha (Oggarane Avalakki ) is easy to cook, adding vegetables to it makes it more nutritious and tasty. This one is with humble Cabbage always found in market , easy , healthy and  loaded with nutrients.Enjoy!

Ingredients:


  • 1 cup poha ((flaked rice /avalakki)
  • 1 cup cabbage finely grated)
  • 1/2 cup onion finely chopped3-4  green chillies, finely chopped
  • Salt to taste

For Seasoning:

2 tbsp. oil
1/2 tsp. mustard
1/2 tsp.cumin seeds
1 tsp chana dal
1 tsp. Urad dal
2 tsp. peanuts
Hing- a pinch
Curry leaves-few
Turmeric pwd-pinch
Bhath pwd-1 tsp

For Garnishing
2 tbsp. grated coconut
Few coriander leaves


Method: In a pan , Stir fry Cabbage well in little oil keep it aside.
Soak the poha in water for 5-10min. Wash  and drain the water completely.
Heat the oil in the pan, fry the peanuts and keep it aside.
Next add seasonings and fry till done.
Add green chillies and onion and stir fry.
Once done add the poha and mix well.
Add salt, coconut ,peanuts ,stir fried cabbage 
and coriander leaves to the poha.
Add lemon juice ,add bhath pwd and mix well. 
Serve Cabbage Poha hot.

Coriander Dosa

Coriander Dosa  is healthy, nutritious and filling breakfast. This is a spicy version. Easy to make and enjoyed hot. A mix of dosa batter with spice and coconut to give the perfect flavoured, crispy and spicy crepes.

Ingredients:

  • Dosa batter -3-4  cups
  • Salt as per taste
  • Oil
  • Jeera-1 tsp

To Grind


  • Coconut-1/4 cup
  • Green chillies-4-5
  • Tamarind juice - 1 tbsp
  • Fresh Coriander leaves-1/4 cup



Method: To begin with grind in mixer the items mentioned in grinding with little water.  Add to the dosa batter. Add salt, jeera. Mix well. Make dosas. Serve hot with butter or ghee.
(the dosa is spicy and can be enjoyed like that only ) however you can still enjoy with Chutney powder also.

Bansi Rave Upittu / Broken Wheat Upma

Bansi Rave Upittu ಬನ್ಸಿ ರವೇ ಉಪ್ಪಿಟ್ಟು or Broken Wheat Upma is simple and easy to prepare. A perfect, filling, nutritious and healthy breakfast recipe. This is made with Wheat Rava is slightly yellowish in color unlike the normal rava/sooji . Enjoy this lapsi Upma hot during the monsoons.

Ingredients:
broken wheat upma / ಬನ್ಸಿ ರವೇ ಉಪ್ಪಿಟ್ಟು
Bansi Rave Upittu / Broken Wheat Upma

  • Bansi rava- 1cup (Broken Wheat )
  • Water - 1- 2 cups (adj)
  • 1/2 tsp Dhania jeera pwd
  • Salt for taste
  • Coconut-2-3 tbsp
  • Ghee-1/2 tsp
  • Seasoning
  • Oil-2 tbsp
  • Mustard -1/2 tsp
  • Hing- pinch
  • Jeera-1/2 tsp
  • Channa dal-1tsp
  • Urad dal-1tsp
  • Cashews-few
  • Curry leaves-few
  • Green chilies-5-6
  • Onions-1/2 cup chopped

Method: Fry the rava for 10-15 mins and keep it aside. Boil water in a separate vessel. Heat oil in a pan add mustard, jeera when they begin to splutter ,add channa dal and urad dal , red chilies fry until light brown. Next add hing, curry leaves, and fry. Add onions and fry well. Next add fried rava, salt and mix well, add hot water. Mix well. Cook till the water is gone. Simmer and close the lid for 2-3 min. Garnish with  coconut and serve Bansi Rave Uppitu hot.

(add more water in case the rava is not cooked well )

Masala Idli

Masala Idli

Masala Idli is interesting twist to the normal idlis. Soft with a blend of onions and seasonings gives it a great taste. Enjoy hot with chutney.

Idlis are fun. They are soft, fluffy and easy to prepare.A perfect breakfast for all days. Jazz it up with some spices and veggies and you have a masala idli.

Prep time: 12 hrs

Cook time: 20 mins

Total time: 12 hrs 20mins

Servings: 20 idlis

Ingredients : 

  • Idli Batter 
  • Onion : 1finely chopped
  • Green chillies : 1 or 2, chopped
  • Coriander leaves : few chopped
  • Mustard seeds : 1 tsp.
  • Curry Leaves : 5-6 nos.
  • chana dal:1/4 tsp
  • urad dal:1/4 tsp
  • Salt to taste
  • oil:1/2 tsp
  • Chutney pwd:2 tsp (opt)

Idli Batter-   Wash and soak ¾ cup urad dal for 4 hours. Drain off the water and blend well till the batter becomes fluffy. If using IDLI rava, use 2 cups. Wash the rava well 2-3 times and mix with the urad dal batter. Transfer to a large bowl cover and set aside overnight or at least for 8-10 hours.




Method-  In a pan, heat oil. Prepare seasoning with curry leaves, mustard seeds ,chana dal ,urad dal, green chillies once done pour it in the idli batter. Next add chopped coriander leaves,onions ,salt to the batter and mix well. Add chutney pwd and mix .Set for 5 mins.
Apply oil onto the idli plates and pour the batter in a spoon. Steam it in pressure cooker for 15-20 mins on medium flame. Serve hot with ghee,chutney or saagu.

Carrot Methi Paratha

Carrot Methi Paratha is easy wholesome breakfast recipe-a healthy start of your day.Made from Methi aka Fenugreek leaves with carrots , it is colourful and tasty easy lunch box recipe.

Carrot Methi Paratha

Ingredients


  • 1 cup  wheat flour
  •  2-4 tbsp yogurt/curds
  • 1/2 tsp  Jeera /cumin seeds
  • 1/2 tsp Ajwain/carom seeds
  • 1 /2 tsp turmeric 
  • 1 -2 tsp chilli powder/garam masala
  • 1/2 tsp jeera dhania powder
  • 1 cup finely chopped fenugreek/Methi leaves
  • 1 cup grated carrot
  • 2 tbsp oil
  • salt to taste
Method
In a bowl combine all the ingredients with the flour ,add yogurt  and knead into smooth dough,add little water if req.Add oil and knead it again and keep it covered for sometime.Make parathas.Heat a skillet (tava) gently, put in the paratha, add oil ,turn on both sides till done.Serve  hot with pickle or curds.

Rice Sevai Upma

Rice Sevai Upma is enjoyable healthy filling breakfast recipe.A perfect start for your busy day.


Ingredients:
· 2 cups rice vermicelli
· 1/2  cup simla mirch chopped
Rice Sevai Up
· 1 onion chopped 
. 1 carrot chopped
.1/2 cup steamed peas

Seasoning

· 4-5 green chillies chopped
. few-Groundnuts
· few curry leaves
· 1 tbsp oil
· 1/2 tsp mustard seeds
.1/2 tsp jeera
· 1 tsp urad dal
· 1 tsp channa dal
 .Turmeric-pinch
. Hing-pinch
· Salt for taste
· Water

Garnishing
· 1-2 tbsp grated coconut
· Few coriander leaves


Method:
  • Boil water in a vessel.In a bowl add the rice sevai ,add the hot water allow to rest for 5-10 mins. Next in a kadai , add oil,fry the cashews and keep it aside. Next add mustard seeds, followed by urad dal, channa dal ,and jeera, hing, curry leaves, chopped chilies, turmeric and sauté well. Now, add vegetables and stir fry well .Strain the vermicelli and add to the kadai,add salt  .Mix well.Add the fried cashews and mix well.Garnish with coconut.Serve hot.

    Corn Avalakki

    Ingredients:
    1 cup poha ((flaked rice /avalakki)
    1 cup steamed corn
    5-6 green chillies, finely chopped
    Salt to taste
    For Seasoning:
    2 tbsp. oil
    1/2 tsp. mustard
    1/2 tsp.cumin seeds
    1 tsp chana dal
    1 tsp. Urad dal
    2 tsp. peanuts (opt)
    Hing- a pinch
    Curry leaves-few
    Turmeric pwd-pinch

    For Garnishing
    2 tbsp. grated coconut
    Few coriander leaves

     .Turmeric-pinch

      Tamarind Upma

      Tamarind Upma or Tamarind Upit is simple and easy to prepare.A perfect, filling,healthy breakfast recipe. This is made with Rice Rava (traditionally known as Akkitari uppittu in Karnataka) blended with tamarind and spices. Enjoy this hot during the monsoons.

      Ingredients:
      Tamarind Poha
      Tamarind Upma

      • Rice rava- 1cup (akki tari)
      • Water - 1- 2 cups (adj)
      • 2-3 tbsp. tamarind juice
      • 1-2 tsp grated jaggery
      • 2 tsp Rasam Pwd
      • 1/2 Dhania jeera pwd
      • Salt for taste
      • Coconut-1-2 tbsp
      • Seasoning
      • Oil-2 tbsp
      • Mustard -1/2 tsp
      • Hing- pinch
      • Jeera-1/2 tsp
      • Channa dal-1tsp
      • Urad dal-1tsp
      • Curry leaves-few
      • Red chilies-1-2

      Method: Fry the rava for 10mins and keep it aside.In a  pan,add tamarind juice, jaggery, rasam powder, masala pwd, salt, turmeric and little water. Boil for 5-10 minutes.Keep it aside.Heat oil in a pan add mustard,jeera when they begin to splutter ,add channa dal and urad dal ,red chilies fry until light brown.Next add ,hing,curry leaves, and fry.Add fried rava ,salt and mix well next add the gojju and hot water. Mix well.Cook till the water is gone.Simmer and close the lid for 2-3 min.
      Garnish with  coconut and serve Tamarind Upma hot.


      (add more water in case the rava is not cooked well )

      5-6 green chillies, finely chopped
      3-4  tbsp. grated raw mango shreds
      Salt to taste

      For Seasoning:
      1 tbsp. oil
      1/2 tsp. mustard
      1/2 tsp.Jeera/cumin seeds
      1 tsp chana dal
      1 tsp. Urad dal
      2 tsp. peanuts
      Hing- a pinch
      Curry leaves-few
      Turmeric pwd-pinch

      For Garnishing

      1 tbsp grated fresh coconut
      Few coriander leaves


      Method: Soak the poha in water for 5-10min. 
      Wash  and drain the water completely.
      Heat the oil in the pan, fry the peanuts and keep it aside .
      Next add seasonings and fry till done.
      Add green chillies and capsicum and stir fry.
      Once done add the poha and mix well.
      Add salt, coconut ,raw mango shreds peanuts and coriander leaves to the poha.
      Mix well  and serve hot.

    • Ragi Dosa Batter-1 cup

    • Salt as per taste
    • Few Coriander leaves

    • Green chillies-2-3 chopped


    • Jeera -1 tsp

    • Onion-1 finely chopped


    • Fresh coconut-grated


    • Oil as required




    • Method:  Mix the salt,onions,coriander leaves,chilies with Ragi Dosa batter. Next apply oil to the paddu tava and pour the batter in the holes of tava and keep it on low flame. Cover. Once done turn it over and cook the other side.
      Serve Ragi Paddu hot with chutney or enjoy just like that.


      Please note the colour is slightly darker due to Ragi Flour.

        Paddu / Gundponglu

        Seemebadnekai Upit / Chow Chow Upma

        Seemebadnekai Upma or Upit is the simple upma blended with the green Chow Chow/Chayote Squash (in English).It is tasty , spicy and filling breakfast.A nice,hot breakfast for chilly winter mornings.

        Ingredients:
        Rava or sooji- 1cup
        Water - 2 cups
        Chow Chow/Seemebadnekai -1 cup chopped
        Green chillies-6-7
        Curry leaves-few
        Oil-1-2 tbsp
        Mustard-1/2tsp
        Jeera-1/2tsp
        Channa dal-1tsp
        Urad dal-1tsp
        Hing- a pinch
        Turmeric-a pinch
        Fresh coriander-few
        Salt to taste
        Freshly grated coconut-1/2 cup

        Method:  Fry the rava well until slightly brown and aromatic and keep it aside.Boil water.Heat oil in a pan add musturd,jeera when they begin to splutter
        add channa and urad dal fry about 2 minutes until light brown.Next add chopped vegetable,hing, curry leaves, green chillies and fry well.Once done add fried rava ,salt and mix well next add the boiling water slowly.Stir until all the water is gone.Close the lid and simmer for 8 to 10 minutes.Garnish with coriander leaves and coconut and serve hot.

        You can also add Dhania-Jeera Powder/Kalamiri Powder for additional spicy flavor.
