Carrot Idli

Carrot Idli is interesting twist to the normal idlis. Soft with a blend of grated carrots and seasonings gives it a great taste. Enjoy hot with chutney. Idlis are fun. They are soft, fluffy, colorful and easy to prepare. A perfect breakfast for all days. An ideal recipe for kid's lunch box too!

Ingredients : 
Carrot Idli
Carrot Idli

  • Idli Batter -3 cups
  • Carrot : 1 cup grated
  • Green chillies : 1 or 2, chopped
  • Coriander leaves : few chopped
  • Mustard seeds : 1 tsp.
  • Curry Leaves : 5-6 nos.
  • chana dal:1/4 tsp
  • urad dal:1/4 tsp
  • Salt to taste
  • oil:1/2 tsp
  • Chutney pwd:2 tsp 


Method-   In a pan, heat oil. Prepare seasoning with curry leaves, mustard seeds, chana dal urad dal, green chillies once done pour it in the idli batter. Next add chopped coriander leaves, grated carrots, salt to the batter and mix well. Add chutney pwd and mix. Set for 5 mins.

Apply oil onto the idli plates and pour the batter in a spoon. Steam it in pressure cooker for 15-20 mins on medium flame. 

Serve Carrot Idli hot with ghee, chutney or saagu.

Capsicum Tomato Avalakki

Capsicum Tomato Avalakki is very simple and easy to prepare.It has the nice tangy and spicy flavor. Poha (oggarane avalakki ) or seasoned rice flakes are healthy and easy to digest too, just right for all ages.

Adding vegetables to Poha makes it more healthier.

Ingredients


  • 1 cup poha (flaked rice /avalakki) 
  • Tomatoes-2 finely chopped
  • Capsicum-1 finely chopped
  • 1 tbsp. oil
  • 1/2 tsp. mustard seeds
  • 1/2 tsp. Chana dal
  • 1/2 tsp. Urad Dal
  • 1/2 tbsp Peanut
  • 1-2 green chilies, finely chopped (opt)
  • 1 Tsp Bhath pwd
  • Few chopped coriander leaves
  • Few curry leaves
  • Hing-pinch
  • Tumeric-pinch
  • Salt to taste
  • 1 tbsp. grated fresh coconut (opt)
  • 1/s tsp Lemon juice



Method

Soak the poha in water for 5 minutes. Wash thoroughly and drain the water completely. Heat oil in a pan, fry peanuts and keep it aside then add mustard seeds, after it splutters, add chana dal/urad dal, hing,turmeric and stir fry. Add green chillies or bhath pwd,curry leaves. Add chopped tomatoes,capsicum and fry it for a while. Add soaked avalakki, salt and mix well. Add coconut, lemon juice, coriander leaves mix carefully. Serve Capsicum Tomato Avalakki hot.

Ragi Vegetable Dosa

Ragi Vegetable Dosa (Ragi flour: finger millet, ರಾಗಿ ರೊಟ್ಟಿ  ) is healthy, nutritious and filling breakfast. Easy to make and enjoyed hot. The vegetables and chilies makes it nutritious.

Ingredients:


  • 1/2 cup Rava Chiroti
  • 1 cup finger millet(ragi flour) 
  • Salt as per taste
  • Oil
  • 1 finely chopped onion
  • 1/2 finely chopped capsicum
  • 1/4 cup corn
  • 1/2 tomato
  • Few Coriander Leaves
  • Green chillies-4-5
  • Jeera-1 tsp

Method:

Mix rava and ragi flour and salt and water. The consistency of batter should be like normal dosa batter. Keep aside for 1/2 hour. Next mix in vegetables, chillies, jeera, coriander leaves and salt. Make ragi dosas. 

Serve Finger millet dosas hot with butter and chutney of your choice.

Avarekayi Aloo Palya / Vaal Potato Gravy


Avarekayi Aloo Palya or Vaal Potato Gravy is an interesting accompaniment for your chapatis or puris. This delicious gravy is a blend of Indian spices with coconut. Try it out during the avarekayi season.  Avarekalu is Hyacinth Beans or Vaal.

Ingredients
  1. 1 cup avarekalu (cooked)
  2. 1 potato boiled and chopped
  3. 1/4 tsp turmeric powder
  4. 2 tsp oil
  5. 1/4 tsp mustard seeds
  6. 1/2 tsp urad dal
  7. 1/2 tsp chana dal
  8. Hing a pinch
  9. 4 - 5 curry leaves
  10. Salt as per your taste

To grind

  1. 1/2 cup grated coconut
  2. 1/2 tsp cumin seeds 
  3. 2 tbsp putani /roasted dal
  4. 3-4 green chilies
  5. 2 tbsp coriander leaves (optional)
Method - Roast the ingredients from 2-5 mins with little oil. Next grind all ingredients along with spices.In a pan heat a tsp of oil and add mustard, chana dal, urad dal once done, add curry leaves,hing and turmeric. Next add the boiled avarekalu and potatoes. Mix. Add the grounded paste and mix well. 
Bring it to boil. Add salt. Simmer on low heat for 3-4mins. Cover and let the gravy blend well. 
Serve Avarekayi Aloo Palya / Vaal Potato Gravy hot with puris or chapatis or rasam rice.

Sabudana Chivda

Sabudana Chivda - is simple and easy snack recipe. Enjoy with hot cup of tea. This namkeen chivda / sago spicy mix is easy to make and can be taken during fasts.



Ingredients
Sabudana Chivda 
  • 1 cup Sabudana/Sago
  • Few Peanuts (kadlekayi)
  • Few White Dal(Hurikadle)
  • Few cashews/Almonds
  • 3-4 tbsp oil
  • Salt to taste
  • Red chili pwd -1/2 tsp
  • Roasted Dry coconut pieces-2 tsp
  • Salt for taste
  • Sugar -1/4 tsp (opt)
Seasoning
  • 1/2 tsp mustard
  • 1/2 tsp Jeera
  • Few curry leaves
  • Chopped Green Chilies 8-10
  • (or red chilies)
  • Hing -pinch
  • Turmeric-pinch
Oil-Frying Sabudana

Method: 
In a deep pan, heat the oil fry peanuts and cashew nuts,almonds,white dal and remove on a plate. 
In a separate pan, add enough oil and fry the nylon sabudana carefully, till they pop, remove on a absorbment paper. 
In a kadai, prepare the seasoning. Heat oil, add mustard seeds and when it starts to pop up, add hing,turmeric, red chillies/green chillies, curry leaves. 
Once done, add to the sago-poha  and mix well, add salt again mix well and then add the dry coconut, cashew nuts, peanut and mix well. Store it in a air tight container.

Paneer Capsicum Masala

Paneer Capsicum Masala is a yummy and delicious North Indian Gravy that can be enjoyed with Indian Breads and rice. It is rich and creamy and tasty. it is easy to prepare at home. Do try out! This is non onion version.

Cook Time-20 mins
Total Time-30 mins
Servings-4 

Ingredients
  • Paneer cubes-1 cup
  • Capsicum-4 roasted and pureed
  • Cashew-5-8 
  • Tomatoes roasted and pureed- 2-3
  • Ginger garlic paste-1/2 tsp
  • Chilli powder- 1 tsp
  • Dhania jeera pwd-1tsp
  • Garam Masala-1 tsp
  • Kasuri methi- 1 tsp
  • Cinnamon-small piece
  • Cardamom-1 piece
  • cloves-1 or 2
  • Fresh cream- 2-3 tbsp
  • Salt to taste
  • Butter - 2 tablespoons
Method
Heat butter in a pan. Add the dry spices and tomatoes, capsicum and cashew and fry well. Blend it in a blender. Next add butter, add the ginger-garlic paste and saute well. Next add chilli powder,garam masala and fry for a minute. Add the pureed mix and cook till oil separates.  Add water to make the gravy. Next add salt and paneer and cook for a minute. Finally add the fresh cream and simmer for 5-10 mins.Garnish with crushed kasuri methi. Serve hot with Indian Breads. You can add onion to give it extra taste.
