Aloo Samosa

Aloo Samosa is an interesting spicy, fried snack. Samosas are very popular and tasty and enjoyed by all. There are variety of fillings that is added to make Samosa. This is a simple version with potatoes.

    Aloo Samosa

Ingredients

  samosa filling
  • Potatoes -3 (boiled,grated)
  • Garam masala - 1 tsp
  • Dhania jeera pwd-1 tsp
  • Broken Dhania seeds-1tsp
  • Saunf-1 tsp
  • Jeera  - 1/2 tsp
  • Salt 
  • Lemon juice
  • Corainder leaves
  • Dough
  • Maida flour - 2 cup
  • Ghee/Oil - 4 tbsp
  • Ajwain
  • Salt 
  • Water
  • Oil for frying
  • Method- In a pan, heat oil,add jeera,saunf, broken dhania seeds and fry. Next add the boiled and mashed potatoes and stir. Next add the masala pwd and mix well. Add salt, lemon juice and coriander leaves.
  • Mix the flour with ingredients mentioned under the Dough. Knead it well into semi-soft dough (Just like chapati). Make small balls and keep aside. Make small rolls of dough and roll it into a small circle. Form a cone, add the filing and cover the cone, use little water to close it.
  • Heat oil in kadai, slowly slide the samosas , fry till  golden brown on low heat.
  • Serve Aloo Samosa hot with chutney or ketchup.

Paneer Manchurian

Paneer Manchurian is an interesting snack recipe similar to Gobi or Veg Manchurian. This one is easy made from the simple paneer. 

Enjoy this crunchy and tangy snack with kids during vacation.

Ingredients


  • Paneer cubes
  • (cut into small squares)
  • 1/2 tbsp. maida
  • 2 tbsp. cornflour
  • salt and pepper to taste
  • 1 cup onion, chopped
  • 1 cup capsicum, chopped
  • 1/2 tsp ginger garlic paste
  • 2 green chillies, chopped
  • 1 tsp. soya sauce
  • 1 tsp chilli sauce
  • 1 tsp schezwan sauce
  • 1 tbsp tomato sauce
  • 1/2 tsp. red chilli powder
  • 1/2 tsp. sugar
  • salt to taste
  • oil 

Method-

In a bowl, mix cornflour, maida, pepper, salt with water and keep it aside. 

Next dip the paneer pieces and fry them in oil till golden brown. 

Next in a kadai, heat oil, add the onion, capsicum, green chillies, add ginger  garlic paste and saute. 

Add the red chilli powder, soya sauce, chilli sauce, schezwan sauce, tomato sauce, salt and sugar and mix it well. 

Add the fried paneer slices and mix well so that the pieces are nicely coated. 

Serve immediately.

Spicy Corn

Spicy Corn

               Spicy Corn

Spicy Corn blended with butter and chaat masala and midly spiced is very simple and easy to prepare, kids will enjoy it. Perfect and easy evening snack recipe.


Ingredients


  • Sweet Corn - 1 cup
  • Butter - 1 tsp
  • Chat Masala Powder - 1 tsp
  • Salt - to taste
  • Garam masala-1/2 tsp
  • Chili pwd-1/2 tsp
  • 1/2 cup tomato& onion finely chopped
  • Coriander leaves-few chopped
  • Lemon juice-1/2 tsp


Method-


Boil water, add sweet corn, salt and let it cook for 10 mins.

Add butter, spices, toss and mix well. Garnish with lemon juice and coriander leaves and  serve hot.





(Alternative-In case you have frozen corn, microwave
as per instructions and add butter and chaat masala)

Nippattu

Nippattu is a deep fried, spicy rice flour snack delight of Bangalore. It is "chai time" crispy cracker, also prepared during festivals like Gokul Ashtami. Easy to prepare and can be enjoyed by all.

Ingredients:
  • 1 cup rice flour
  • 1/4 cup maida
  • 1 tbsp. red chilli powder
  • 1 tbsp. coriander finely chopped
  • few curry leaves, chopped
  • 1/2 tsp. sesame seeds /white til
  • pinch-hing
  • 1/2 tsp ajwain
  • 1 tbsp.hurikadle/puttani 
  • 10-12 peanuts coarsely powdered
  • 2 tbsp.butter
  • Salt to taste
  • Oil to deep fry
  • water to knead the dough

Method:

In a pan heat 2 tsp oil. In a separate pan, roast the rice flour, maida flour for 5 mins on medium flame. In a bowl, add all the ingredients and add little water, and mix. Next add the hot oil into this dough and mix to form a stiff dough. Keep it aside for 10 mins.
Next take small lime sized dough ball and flatten into thin round shape. You can use plastic or foil to flatten the dough.
Heat oil in a big kadai.
Carefully take the discs/ nippattu and deep fry it in the hot oil till golden and crisp on both the sides. Remove it on tissue paper. Once cool you can store in air tight container.

Enjoy these Nippattu with hot cup of tea or coffee.


You can prepare an extended chaat from this Nippattu by topping these with sweet and spicy chaat chutneys, onion, carrots, sev and peanuts.

Benne Biscuit / Nankhatai biscuit


Benne Biscuit or Nankhatai or Butter cookies is an easy recipe which doesn't require too many ingredients. Benne is butter in Kannada. These cookies are normally available in Iyengar Bakeries. 

This is a perfect homemade biscuits for your kids as evening snack or as "just bites". Enjoy baking this delicious cookies aka ಬೆಣ್ಣೆ ಬಿಸ್ಕತ್ತು with your little ones. Do try it out. 


You can use homemade ghee or butter.

Ingredients
  1. 1 cup maida or wheat flour
  2. 3/4 cup powdered sugar
  3. Home made Ghee - 4 tbsp
  4. Elachi/Cardamom pwd-1/2 tsp
  5. Dry fruit powder-1 tsp
  6. Salt-pinch
  7. Baking powder-pinch (opt)










Method- In a bowl, take the flour, powdered sugar, dryfruit powder, elachi powder, salt and mix. Next add 4 tbsp of gheerepare small sized ball, press it and make it little flat. Preheat oven in convection mode for 10 minutes in 180cLine the tray with baking sheet. 

on a oven tray leaving gaps in between. 
Bake the cookies for 12-15 mins. Switch off , once cool remove from the tray.

French Fries


French Fries is every one's favourite. A perfect recipe for rainy days where you want to eat something chatpata but cannot go out or are just bored to order. So why not make it with your kids at home. 


Healthy, Hygenic, tasty. Enjoy it hot while watching a nice movie.

French Fries

Ingredients

  • Potato -2 large
  • Spices and Salt-as per taste
  • Oil -for frying



Method- Take a fresh potato, clean well and peel the skin. Next cut the corners and cut finger sized fries shaped pieces. It should be like cubes. Soak the cut pieces in cold water for 2-4 hours to remove starch and make the fries crisp. Drain the water out very well. Arrange in tray to dry it off. Heat oil in a pan and deep fry the pieces on low heat. Remove once it starts softening. Once the batch is completed, increase the flame and fry the potatoes again till it turns brown and crispy or once done. Take it out on plate on a tissue, so excess oil gets absorbed.


Add salt and pepper and give it a mix and serve hot with ketchup.

Balekayi Bajji / Raw Banana Bajji


 Balekayi Bajji / Raw Banana Bajji 
 is an interesting crisps variety made from Raw banana.  
 Blended with spices, it tastes delicious. 
 Do try on the rainy day with a hot cup of coffee.

 Ingredients
  • 1 cup besan / gram flour
  • Raw banana-thinly sliced-1 cup
  •  turmeric-pinch
  • Hing-pinch
  • 1 tsp Sarin pudi/ Chili pwd
  • 1/2 dhania jeera pwd
  • Salt- to taste
  • Water for mixing
  • oil for frying

Method - Take a bowl 
combine all the ingredients 
and mix well. 
Add little water, 
add cut raw banana slices 
and mix well, 
the flour and slices 
should blend and 
be well coated. 
Heat a little oil and 
add it to this batter 
and mix it well.
Keep it for sometime. 
In a kadai heat sufficient oil for frying. 
Slowly add the besan 
mix in batches 
in the hot oil. 
Fry till golden brown 
on both sides. Drain on absorbent paper. 

Serve hot crisp bhajias with ketchup or chutney of your choice.

Onion Rings

Onion Rings is yummy and tasty crisps made from thinly sliced ( ring shaped) onions in seasoned lentil flour batter. Enjoy sizzling hot cripsy onion rings with tea just anytime...

Ingredients
2 onions
(peeled and thinly sliced)

For Batter
1 cup Besan (chick pea flour)
1 tsp Rice flour
½ tsp red chili pwd
1 tsp bhath pwd
1 tsp ajwain
turmeric-pinch
Salt for taste
hot oil-1/2 tsp
Chili flakes-pinch
Mixed herbs-pinch


For Frying
Oil

Method: -Take a bowl combine all the ingredients and mix well. Add little water, and make the mix. Heat 1/2 tsp oil and add it to the batter. Add the sliced onions to the batterand mix well, the flour and onions should be well coated .

In a kadai heat sufficient oil for frying. Slowly add the sliced onion flour mix in the hot oil. Fry till golden brown on both sides. Drain on absorbent paper. Serve hot crisp fried onion rings with ketchup or chutney of your choice.

Potato Peas Cutlet

  • Potato Peas Cutlet is  an interesting all time favourite snack. Made from  potatoes and other veggies it is crispy from outside and soft and delicious from inside. Healthy and tasty , an easy way to get your kids eat vegetables.

Potato Peas Cutlet
Ingredients

  • 2 potato - boiled
  • 1/2 cup peas-boiled
  • 1 capiscum-finely chopped
  • 2 Green Chillies - finely chopped
  • 1 tsp garam masala pwd
  • 1/2 tsp Dhania Jeera Pwd
  • 1/2 tsp bhath Pwd
  • 1/2 tsp chaat masala
  • 3-5 tbsp chiroti rava/bread crumbs for coating
  • 1-2 slices of bread 
  • salt
  • Few Coriander leaves
  • Method -  Cook Potatoes and peas in pressure cooker. Peel and mash the potatoes well. Mash the peas too.In a bowl, add finely chopped capsicum, mashed vegetables, salt, masala pwds, coriander leaves, salt and mix well. Divide the dough into small balls and shape it into any shape -round or heart shaped. Roll it over the chiroti rava/bread crumbs so it is coated well. Keep cutlets to set it well for 5-10 mins. Next heat a pan or tawa add 1 tbsp oil, place 4-5 pieces of cutlet and cook in slow to medium heat until it becomes crusty and brown, turn to other side and cook again until done if needed drizzle some oil, repeat same for rest of pieces.

Masala Chivda

Masala Chivda is a great substitute for original chivda. This is a quick and easy recipe to make, mildly spiced makes an enjoyable crunchy snack.

Ingredients:

  • 4 cups Rice flakes/ Poha (thin variety)
  • 1 tablespoon raisins
  • 1/2 cup roasted peanuts
  • 1/2 cup roasted chana dal (hurikadale)
  • 3-4 tablespoons oil
  • fried crushed sandiges-handful
  • 1/2 teaspoon mustard seeds 
  • Pinch of asafetida (hing)
  • 1-2 green chili chopped 
  • Few curry leaves
  • 1/2 teaspoon fennel seeds/saunf
  • 1/4 teaspoon turmeric 
  • 1/4 spoon red chili powder
  • salt for taste
  • 1/4 teaspoon amchur pwd
Method
  1. Heat the oil in a kadai. Add mustard seeds, add asafetida, green chili, and curry leaves. Next add raisins, peanuts and chana dal, stir-fry for one minute. Next add fennel seeds, chili powder, turmeric, and salt mix it well. Now add poha and stir the mixture gently, add fried sandige( crisps) mix it well and turn off the heat. Chivda is ready. Let the Chivda cool, then store in airtight container.
  2. Enjoy with hot cup of tea / coffee.

Boiled Peanuts / Boiled Groundnuts / Mungfali

Boiled peanuts is a snack loved by all. Simple and fun snack recipe and very easy to make it too.  Boiled Peanuts are also called as  Groundnuts or Mungfali. Of course you need to shell it before you enjoy this hot, salty snack.

Boiled Groundnuts / Mungfali 

INGREDIENTS

  • Fresh raw peanuts 
  • Table / Rock salt (adjust as per your taste)
  • Water for cooking

METHOD - 

First  rinse the raw unshelled peanuts in water thoroughly several times. 

Once clean, put the water, bit of oil, the peanuts in a pressure cooker. Put water, salt, seasoning, peanuts in a pressure cooker. Cook for 25-30 mins.
If you want it more softer, cook for 10 more mins. 
Drain the water away. 
Enjoy just like that while you read a book, watch the rains or play with your family.
