Onion Khara Dosa

Onion Khara Dosa (Khara: Masala in Kannada ) is healthy, nutritious and filling breakfast. This is a spicy version. Easy to make and enjoyed hot. 

A mix of regular dosa batter  with spices, onion and coconut to give the perfect crispy crepes.

Ingredients:

Dosa Flour
Salt as per taste
Oil
Jeera-1 tsp

To Grind
Coconut-1/4 cup
Red chillies-8-9
Tamarind juice - 1 tbsp
Hing: Pinch
Onion-1/2 cup



Method:

In a pan, fry the items mentioned in to grind.Blend it in mixer with less water. Next in a bowl , take the dosa flour, add the ground paste. Add salt. Mix well. Make dosas. Serve hot with butter and chutney of your choice.

Poori with Aamras / Mango Seekarane- is a combination of Hot Poori with cold Aamras, one delectable recipe that can be enjoyed during weekends in Mango season.

Ingredients:

  • 1 big cup Mangoes (medium sized)
  • 1/2 cup Milk
  • 1/2 tsp Powdered Cardamom/Elaichi
  • Sugar, as per taste
  • Saffron strands-few

Method : 

Peel the skin off the mangoes and cut into very tiny pieces else add them in mixer and grind one round or just squeeze the pulp with your hands, any way you like it. 

It will taste yummy.

Next add sugar, elaichi powder mix well and keep aside.

Just before serving, add the cold milk and mix well.

Add into small bowls and serve with hot pooris/chapatis or enjoy just like that.

Potato Saagu

Potato Saagu 


Potato Saagu is yummy side dish for chapati/idli. It is  a wonderful combination of potato and spices blended with besan. It is known as Bombay Saagu in restaurants in Karnataka.

I learnt this recipe form my aunt.


Ingredients
  • Potatoes- 2 (boiled and mashed)
  • Onion- 1 Chopped
  • Tomato- 1 chopped.
  • Green chillies- 2 nos. 
  • Turmeric powder- pinch
  • Salt- as per taste
  • Chickpea flour (Besan)- 2 tsp
  • Coriander leaves- few
  • Lemon juice-1/2 tsp (opt)
  • grated Coconut-1-2 tsp

    Seasoning 

  • oil- 2 tsp
  • Mustard seeds- 1 tsp
  • Chana dal-1/2 tsp
  • Urad dal-1/2 tsp
  • Jeera-1/2 tsp
  • Hing-pinch
  • Curry leaves-few
  • Ginger-Few shreds
    Method-  Potato Saagu/ Bombay Saagu Recipe

    Mix the chickpea flour with  water and make the paste with no lumps.
    In a pan, add oil prepare seasonings,next add onion and saute ,next add tomatoes ,add mashed potatoes add water and let it simmer for some time.
    Next add salt , besan flour paste.Let it cook for some more time,keep stirring in between. Add lemon juice.
    Garnish with chopped coriander leaves and coconut .
    Serve Potato Saagu hot with chapati or idli/dosa.

Ginger Pickle


Ginger Pickle is simple and easy accompaniment for Chapati or parathas. Try this version too.

  • Ingredients:
  • 1 cup ginger (cleaned and shredded,sans skin)
  • 1-2 tbsp thick tamarind paste
  • 2 tsp grated jaggery or sugar
  • 8-10 red chillis
  • Salt for taste
  • oil
  • 1 tsp methi/fenugreek seeds
  • Seasoning
  • 1 tsp mustard seeds
  • 10 fresh curry leaves
  • 2-3 tsps oil
  • Hing-pinch
Method - In a pan,add oil ,fry the shredded ginger for 5-7 mins. Let it cool. Meanwhile fry methi,red chillies for 2-3 mins.Grind it into fine powder. Next grind ginger,tamraind paste,jaggery sans water.
Add the spice powder and grind it.
Prepare seasoning, add this to the ginger pickle and mix well. 
Store the pickle in an airtight container in the refrigerator.

Yellow Moong Dal Paratha

Moong Dal Paratha - a good healthy kickstart for your busy life.Hot parathas stuffed with spicy moong dal masala. Enjoy hot and spicy.

              Moong Dal Paratha

Ingredients
  • 1 cup whole wheat flour 
  • 2 tbsp oil
  • 1/2 tsp carom seeds
  • salt to taste
  • water as required
For The Filling
  • 1/2 cup yellow moong dal 
  • 1/2 tsp cumin seeds
  • a pinch haldi
  • a pinch hing
  • 1/2 tsp bhath powder
  • 1 tsp Garam Masala
  • Shredded carrot-1/2 cup
  • 2 tsp oil
  • salt to taste
  • Oil as required
Method

1.Knead the flour with water, a little salt,oil into a soft dough.Cover it for 4-5 hours.
2.In a Kadai heat oil, add  jeera. Then add the cooked moong,salt, masala powders, and fry for a while and mix well. Fry till dry set aside to cool. Divide the mixture into balls. 
3.Make a small chapati with the dough,keep this ball in the middle and bring all the sides together, flatten them with your fingers, next  make the paratha .
4.Heat a tava, put in the paratha, turn on both sides till done. Add oil or ghee all around the edges, fry both sides, carefully turning over until evenly brown. Serve very hot with pickle or curds.

Pan fried  Spicy Moong Dal Tikki/Patties

  • Ingredients
  • Yellow moong dal (boiled)-1 cup
  • Potatoes boiled/shredded-1 cup
  • Carrot-Shredded-1/2 cup
  • Onion-chopped-1/2 cup
  • Salt to taste 
  • Turmeric -1/4 tsp
  • Hing-pinch
  • Green chillies 1-2 (finely chopped)
  • Lemon juice 1 tsp
  • Jeera-1/2 tsp
  • Fresh coriander leaves 
  • Chaat Masala-1/2 tsp
  • Red chilli powder 1/4 teaspoon 
  • Garam Masala-1 tsp
  • Oil to shallow fry 

MethodIn a bowl, add the boiled moong dal and smash well,add all the above ingredients except oil and mix well. Divide the mixture into equal portions and shape them as patties. Take small portion of mix ,flatten it ,pat it well. On a tava, add oil and place the patties shallow fry till golden brown on low heat. Flip on the other side slowly. Once done serve hot with ketchup or chutney.

Aloo Gobi Sabzi

Aloo Gobi Sabzi aka Flower Batata Bhaji is a  side dish for chapatis very easy to prepare .This version is made by adding South Indian Bhath pudi/powder.A perfect lunch box recipe.

Aloo Gobi Sabzi 
Ingredients:
  • cauliflower, medium – 1 
  • (cut and cleaned well)
  • Potatoes –3- 4 
  • (boiled and cut into pieces)
  • Cumin seeds – 1 tsp
  • Onion-1 finely chopped
  • Tomato,chopped – 2
  • Red chilly pwd – 1 tbsp
  • Turmeric pwd – 1/2 tsp
  • Bhaat Powder – 2 tsp
  • Oil – 2 tsp
  • Salt as per taste

Method:Heat oil in a kadai.Add cumin seeds,and saute for a while .Next add onion,turmeric pwd,bhath masala pwd ,add cauliflower and fry well.Add the tomatoes and let it cook for 5-7 mins.Add the potatoes ,salt and mix well ,simmer till the vegetables get coated in the masalas properly.Garnish with little lemon juice.Serve hot with Indian breads.

Bread Manchurian

Bread Manchurian is an interesting snack recipe similar to Gobi/Veg Manchurian. This one is easy made from the simple bread. Enjoy this crunchy and tangy snack with kids during vacation.

Ingredients

  • 6-7 bread slices 
  • (cut into small squares)
  • 1/2 tbsp. maida
  • 2 tbsp. corn flour
  • salt and pepper to taste
  • 1 cup onion, chopped
  • 1 cup capsicum, chopped
  • 1/2 tsp ginger garlic paste
  • 2 green chilies, chopped
  • 1 tsp. soya sauce
  • 1 tsp chili sauce
  • 1 tsp schezwan sauce
  • 1 tbsp tomato sauce
  • 1/2 tsp. red chili powder
  • 1/2 tsp. sugar
  • salt to taste
  • oil 

Method-

In a bowl, mix corn flour, Maida, pepper, salt with water and keep it aside. 

Next dip the bread pieces and fry them in oil till golden brown. 

Next in a kadai , heat oil, add the onion, capsicum, green chilies, add ginger  garlic paste and sauté. 

Add the red chili powder, soya sauce, chili sauce, schezwan sauce, tomato sauce, salt and sugar and mix it well. 

Add the fried bread slices and mix well so that the bread pieces are nicely coated. Serve Bread Manchurian immediately.

Bread Besan Fritters is a interesting recipe made from spicy besan batter with onion.  A yummy and crunchy snack is ready in no time.

Ingredients:
Besan/gram flour-1 cup
Bread slices-4-5
1/2 cup onions (chopped finely)
Green chillies-1-2 
Coriander leaves- few finely chopped
turmeric pwd-pinch
Hing-pinch
Red chilli pwd-1/4 tsp
Garam masala-1/4 tsp
Jeera-1/2 tsp
Carom seeds-1/2 tsp
salt as required
water (mixing the batter)

oil- for frying 


    Method- In a bowl, add mix all ingredients except bread.Add little water and mix well, ensure no lumps are present. It shud be thick not very watery. Cut the bread into halves. Take the bread slices, spread the besan batter on the bread slices, using a knife and spread all over. (or dip the bread in the besan batter ) Next heat oil in a kadai, carefully drop the bread with the batterside. Once it is slightly brown, fry the other side. Serve hot with chutney or ketchup.

    Hurlikayi Batani Bhath / Green Beans Peas Rice

    Hurlikayi Batani Bhath / Green Beans Peas Rice is spicy rice variety. 

    An easy one pot meal made with green beans and soft peas blended with masala powder.


    I
    ngredients: 

    Hurlikayi Batani Bhath
    Hurlikayi Batani Bhath 

    • 1 cup Cooked Rice 
    • 1 cup chopped green beans(hurlikayi)
    • 1/2 cup steamed peas
    • salt as per taste
    • Grated coconut-2 tsp


    Seasoning


    • 2 tbsp Oil
    • 1 tsp Mustard(sasive)
    • 1/2 tsp chana dal
    • 1/2 tsp urad dal
    • 2-3 tbsp Bhath Masala pwd
    • 5-6 Curry leaves
    • Roasted cashews-Few
    • Turmeric pwd-pinch
    • Hing-pinch



    Method: 

    Allow the rice to cool,spread it on a plate.Heat oil in a kadai. 
    Add mustard seeds,turmeric, curry leaves, hing,chana dal,urad dal.
    Once done add chopped green beans to the above seasoning. 
    Saute frequently till.Next add salt, cashews, masala powder. Mix well.
    Add the cooked rice. Mix well.
    Cover and cook on low heat.
    Granish with grated coconut.Serve hot.

    • 1/2 tsp chana dal
    • 1/2 tsp urad dal
    • 1-2 tsp Bhath Masala pwd
    • 1-2 tbsp fresh Coconut
    • Hing-pinch
    • Curry leaves-few
    • salt to taste

    Method- Cook the rice and spread it on a plate.Cook the chana well.Next in a pan,heat oil,fry peanuts and keep it aside .Next add mustard ,once done,add jeera,chana dal,uraddal,curry leaves ,turmeric ,hing and  fry .Add the bhath pwd ,salt ,peanut and mix .Next add the cooked rice,cooked chana and mix well.Simmer on low heat for 10 mins till all the rice,chana  is blended well with the spices.Serve hot with raita of your choice.

    Ragi Carrot Dosa

    Ragi Carrot Dosa ( Finger MIllet Carrot Dosa) is healthy, nutritious and filling breakfast.

    Easy to make and enjoyed hot.

    The carrot with chilies makes it more healthier and colorful.

    Ingredients:

    1 cup Dosa batter

    1 cup finger millet(ragi flour)

    Salt as per taste

    Oil

    1/2 cup finely chopped onion 
    and grated carrot

    Few Coriander Leaves

    Green chillies-3-4 finely chopped

    Jeera-1 tsp

    Method:

    To make the dosa batter add ragi flour, water and salt  and mix well.
    The consistency of batter should be like normal dosa batter..
    Keep it aside for 1/2 hr. Next mix in vegetables, chillies, jeera, coriander leaves. 
    Make dosas. 

    Serve Finger MIllet Carrot Dosa hot with butter and chutney of your choice.

    White Pumpkin Sihi Kootu is a South Indian gravy blended with Indian spices. It can be enjoyed with hot rice or chapati. 
    Kootu is a lentil-vegetables based semi-gravy which is nutritious, 
    protein rich and  perfect with some hot rice and ghee and nice papads. 
    The whole experience is just heavenly!


    Ingredients
    • 1 big cup white pumpkin 
    • or (Buda kumbalakayi)
    • salt to taste
    • Water
    For Grinding
    • 1/2 cup coconut grated
    • 1 tbsp Jeera 
    • 2-3 green chillies
    • 1 tsp Kalamiri
    • 1/2 tsp rice
    • 1/2 tsp Urad dal
    For Seasoning
    • 1 tsp mustard seeds
    • 1 tsp Urad Dal
    • 1 tsp Chana dal
    • Few curry leaves
    • Hing-Pinch 
    • Turmeric-Pinch


    Method 


    • Cut the pumkin into small cubes (remove seeds/skin) In a vessel add water, add the pumpkin, salt and cook till done.
    • Meanwhile dry roast the items mentioned under for Grinding
    • Next grind the items into paste. 
    • Add the ground masala to the cooked pumpkin and stir well. 
    • Simmer and stir in between till the gravy blends well. 
    • Add salt if req. Prepare the seasoning. Add to the gravy. 
    • Serve this Buda kumbalakayi / White Pumpkin Kootu hot with rice or chapati.
