Menthya Soppu Carrot Akki Rotti

Menthya Soppu Carrot Akki Rotti is nutritious , wholesome blend of Methi (Fenugreek Leaves) with fresh carrot in rice flour makes it a healthy breakfast delight.Enjoy this hot flavoured Rotti with chutney.

Menthya Soppu Carrot Akki Rotti

Ingredients 

Akki Hittu (Rice Flour)       2 cups 
Methi Leaves          1 bunch finely chopped
Carrot Shredded  -1/2 cup 
Coriander  leaves          handful chopped
Green chillies            4-5 finely chopped 
(in case you need it spicy)
Cumin seeds             1 tsp
oil                             2Tbsp
Salt                          to taste
Water                       as req
Curds                       2 tsp

Method 

 Mix rice flour with chopped and  washed methi leaves, carrot,add salt,chilies,cumin seeds.Add water and mix well add little curds.Cover and leave for some time .(Dough should be of medium softness not too hard or too soft.) Next day ,take a tava ,smear  1tsp of oil around,take the dough and spread around it add water to flatten on the tava.

Keep this on medium heat, add oil around the roti ,cover ,check if done.If you want more crispy leave it a little longer. Once done rotti it comes out easily from pan.

To make another rotti, hold the pan upside down and run cold water all around it, pan will be cool to make another rotti by this time.Enjoy hot with butter and chutney /pickle of your choice.

Pizza

Pizza with ready made base is one easy and tasty recipe , which you and kids and together have fun in making it. This gets done in minutes with the ready made base in convection oven.

Ingredients: 

  • Ready-made pizza base -2-4
  • Some mozzarella cheese
  • Some chilly flakes
  • Some dry parsley for ganishing (optional)
  • 1 big onion chopped
  • 1 capsicum chopped
  • 1-2 red tomatoes chopped
  • 1/4 cup sweet corn
  • Pizza sauce
  • Tomato ketcup


To Assemble the Pizza: 

Preheat your oven to 350F. 

Method-In a plate ,place the ready made pizza base  apply the pizza sauce on it. Spread evenly. Top it with cheese as per your taste and likes Next add onion,capsicum,tomato,sweet corn placing them all evenly. Sprinkle some parsley,spices,Italian seaonings  on top. Place tray on the pre-heated oven bake for 10-15 mins or until done.


Serve hot. Enjoy






Sheera Poli / Sajjige Holige

Sajjige Holige or Sheera Poli is an interesting dessert that can be made during festivals or during the vacation time.

Delicious and tasty and equally filling.The kids will definately love it.Do try it out


Ingredients:

    Sheera Poli / Sajjige Holige
For Holige 
    • Maida Flour 1 cup
    • Chiroti Rava 1/4 cup
    • Ghee
    • Water for mixing


Method-In a bowl ,mix the flour with water, a little salt and ghee and make a soft dough.Knead well and cover for few hours.Make small balls with sajjige.

Make small chapati with the dough,keep the sajjige ball in the middle and bring all the sides together, flatten them with your fingers, next  make the holige.Heat the tava and carefully place the holige on the tava and cook the obbattu on a medium heat, add ghee on both sides turning gently. Serve either hot with ghee.

Ragi Huri Hittu Ladoo

Ragi Ladoo is one of the healthiest  and tasty food.Loaded with lots of nutrients ,Finger millet ladoos are a perfect snack or in between bites when your kids are hungry.

Ingredients

  • Ragi Huri Hittu (Finger Millet flour) : 1 cup
  • Ghee : ½ cup
  • Powdered Jaggery : ½ cup

Method -In a pan ,add little ghee fry the finger millet flour on low heat for 5-10 mins, keep on stirring.Do not burnTake off the heat and let it cool.Add powdered jaggery and mix well.Apply ghee onto your palm; take 3-4 tbsp of the mix and make it into ball shape like ladoo .Keep adding ghee so it becomes smooth.(you can add 1-2 tsp milk )
