Karibevu Chitranna / Curry Leaves Rice

Karibevu Chitranna or Curry Leaves Rice is a healthy and flavorful one pot meal made with Curry leaves blended with spices. Nutritious, flavorful and delicious. Enjoy!!


Ingredients


Grinding
Grated coconut: 2-3 tbsp 
Jeera: 1-2 tsp
Red chili: 4-5 (according to taste)
Pepper:2-3
Salt:for taste
Curry leaves-handful

Seasoning-
peanuts: few
Cashews-few
Hing-Pinch
oil for frying 3-4 tsp
Mustard -1/2 tsp
Urad dal-1/2 tsp
Chana dal-1/2 tsp



Method-  Pressure cook rice and spread it on plate to cool. 
In a kadai,roast curry leaves,jeera,red chilies,pepper in little oil.
Next grind curry leaves, jeera,pepper,red chillies with coconut to a nice paste with little water.Take a kadai, heat oil and add peanuts /cashews and fry well.Keep it aside.Add mustard,chana dal urad dal,hing,and sauté. Add the coconut curry paste mixture and fry for1-2 mins.
Next add the rice, salt ,fried peanuts and mix well and serve Karibevu Chitranna / Curry Leaves Rice hot.


(you can add green chilies i/o of red if req)

Paddu / Gundponglu

Paddu / Gundponglu or Appe is a yummy recipe made from Dosa Batter using the Paddu tava . A easy and delicious breakfast idea. You can send it for Kids tiffen box too. Try it out.

  • Ingredients




  • Dosa Batter-1 cup



  • Salt as per taste



  • Few Coriander leaves


  • Green chillies-1-2 chopped


  • Onion-1 finely chopped


  • Fresh coconut-few finely chopped.



  • Oil as required




  • Method:  Mix the salt, onions, coriander leaves, chilies with dosa batter. Next apply oil to the paddu tava and pour the batter in the holes of tava and keep it on low flame. Cover. Once done turn it over and cook the other side. Serve hot with chutney or enjoy just like that.

    Idli fry / Masala Idlis

    Idli Fry / Masala Idlis

    Idli fry or Masala Idlis is a crispy and tasty snack variety. Easy to prepare from leftover idlis. Enjoy hot with chutney or sauce as evening snack.

    Ingredients:

    • Idlis    :    
    • Salt     :  for taste
    • Sambar  pwd    :   1-2 tsp
    • Seasoning
    • Mustard : 1/2 tsp
    • Curry leaves :   few
    • Hing: pinch
    • Turemic: pinch
    • Oil :  2-3 tsp


    Method: Chop idlis into small pieces. In a bowl add salt and sambar pwd and mix, add the idlis to it and mix them. Next heat oil in a kadai, add the items mentioned in the seasoning. Add the coated idlis and fry well. Add more oil if required. Fry till crisp. Serve hot with sauce or chutney of your choice.

    (you can also add onion and capsicum (fried ) for additional taste)

    Seemebadnekai Kootu

    Seemebadnekai Kootu (chowchow/Chayote) is a delicious and spicy gravy that can be enjoyed with rice or chapati. Blended with special spices, it tastes yummy. Mostly made as part of  traditional Madhwa food platter.

     Kootu is a lentil-vegetables based semi-gravy which is  nutritious, protein rich and  perfect with some hot rice and ghee and nice papads. The whole experience is just heavenly!


    Seemebadnekayi Kootu
    Ingredients:
    Seemebadnekayi - 2 cups (diced and boiled)
    Tamarind paste-1/2 tsp
    Oil - 2 teaspoons


    Seasoning
    Curry Leaves -few
    Mustard Seeds - 1 teaspoon
    Hing-pinch
    Turmeric-pinch

    To grind
    Urad dal-1-2 tsp
    Dry Red Chillies -5-6
    Rice-1/2 tsp
    Pepper-10 
    Coconut - 3-4 tbsp (shredded)

    Method-In a kadai, heat oil add urad dal, rice, pepper corns and red chillies and fry well. Next add shredded coconut and fry for a 1-2 mins. Grind the mixture into a fine paste.

    Next in a pan,boil the vegetables till done. Add tamarind paste and the ground mix. Mix well and simmer on low heat. Add salt and mix well. Next prepare the seasoning with all the items mentioned. Add it to the gravy. Enjoy this sihi kootu hot with rice or chapatis.

    Green Grapes Gojju

    Green Grapes Gojju (gojju -Tangy gravy) is a yummy, tangy and tasty side dish / gravy for hot chapatis or rice.In case your grapes are sour you can try this recipe.

    Ingredients

    1. 1 cup green grapes
    2. 1/2 tsp mustard
    3. 1/2 tsp jeera
    4. 1/2 tsp chana dal
    5. 1/2 tsp urad dal
    6. Hing-pinch
    7. Turmeric-pinch
    8. Curry leaves-few
    9. 1-2 tbsp Rasam pwd (or Gojju pwd)
    10. 1-2 tsp jaggery
    11. 1-2 tsp Dry coconut
    12. Salt to taste

    Method- In a kadai, heat oil in a pan and add mustard,chana dal, urad dal, hing, turmeric pwd, curry leaves once done add grapes and let it cook for 2-3 mins. Next add Rasam (Saaru) powder or Gojju pwd ,jaggery, salt, water and mix well. Cook for 2 – 3 minutes till the gravy thickens. Add dry coconut and mix
    Serve Green Grapes Gojju hot with chapati/ rotis or parathas.

    Ingredients
    • French Beans/Hurlikayi – 1 cup(chopped)
    • Potatoes – 2-3 (chopped)
    • Bhath pwd-1-2 tsp
    • Grated Coconut-2-3 tsp

    • Seasoning
    • 1 tbsp. oil
    • 1/2 tsp. mustard 
    • 1 tsp. chana dal
    • 1 tsp. urad dal
    • 1/2 jeera
    • Hing-pinch
    • Turmeric-pinch
    • curry leaves-few
    • Salt to taste

    Method:

    Heat oil in a pan. Add mustard, allow to splutter, add chana dal,urad dal, 
    hing.Fry till light brown, then add curry leaves, beans, little water, 
    cover with a lid and cook till beans ,potatoes are soft.Add bhath pwd,salt and mix well.
    Add grated coconut and mix.Serve hot with Chapatis/Rice.

    Seemebadnekai Upit / Chow Chow Upma

    Seemebadnekai Upma or Upit is the simple upma blended with the green Chow Chow/Chayote Squash (in English).It is tasty , spicy and filling breakfast.A nice,hot breakfast for chilly winter mornings.

    Ingredients:
    Rava or sooji- 1cup
    Water - 2 cups
    Chow Chow/Seemebadnekai -1 cup chopped
    Green chillies-6-7
    Curry leaves-few
    Oil-1-2 tbsp
    Mustard-1/2tsp
    Jeera-1/2tsp
    Channa dal-1tsp
    Urad dal-1tsp
    Hing- a pinch
    Turmeric-a pinch
    Fresh coriander-few
    Salt to taste
    Freshly grated coconut-1/2 cup

    Method:  Fry the rava well until slightly brown and aromatic and keep it aside.Boil water.Heat oil in a pan add musturd,jeera when they begin to splutter
    add channa and urad dal fry about 2 minutes until light brown.Next add chopped vegetable,hing, curry leaves, green chillies and fry well.Once done add fried rava ,salt and mix well next add the boiling water slowly.Stir until all the water is gone.Close the lid and simmer for 8 to 10 minutes.Garnish with coriander leaves and coconut and serve hot.

    You can also add Dhania-Jeera Powder/Kalamiri Powder for additional spicy flavor.

    Ingredients:
    · 2 cups vermicelli
    · 1 cup simla mirch chopped
    · 1 onion chopped 
    . 1 carrot chopped
    . 1/2 cup steamed peas
    Seasoning
    · 6-7 green chillies chopped
    · few curry leaves
    · 1 tbsp oil
    · 1/2 tsp mustard seeds
    .1/2 tsp jeera
    · 1 tsp urad dal
    · 1 tsp channa dal
     .Turmeric-pinch
    . Hing-pinch
    · Salt for taste
    . few cashews fried (opt)
    · Water
    Garnishing
    · 1-2 tbsp grated coconut
    · Few coriander leaves


    Method:
    • Add little oil in a pan,roast the vermicelli well and keep it aside.Next add oil,fry the cashews and keep it aside.Next add mustard seeds, followed by urad dal, channa dal ,and jeera, hing, curry leaves, chopped chilies, turmeric and sauté well.Now, add vegetables and stir fry well .Next add the vermicelli,salt  and add boiled water.Cook till the water evaporates .Add the fried cashews and mix well.Garnish with coconut.Serve hot.
