Sweet Corn

Sweet Corn

 

Sweet Corn blended with butter and chaat masala is very simple and easy recipe, kids will enjoy it.


Ingredients

  • Sweet Corn - 1 cup
  • Butter - 1 tsp
  • Chat Masala Powder - 1 tsp
  • Salt - to taste


Method-


Boil water, add sweet corn, salt and let it cook for 10 mins.

Add butter, mix well and serve hot.





(Alternative-In case you have frozen corn, microwave
as per instructions and add butter and chaat masala)

Potato Avalakki/ Batata Poha

Batata Poha or Potato Avalakki is spicy , favorite breakfast recipe in our homes.Poha is easy to cook,adding vegetables to it makes it more nutritious and tasty.

Batata Poha
Ingredients:
1 cup poha ((flaked rice /avalakki)
1 onion, chopped
1 potato boiled and chopped.
5-6 green chillies, finely chopped
Salt to taste
For Seasoning:
2 tbsp. oil
1/2 tsp. mustard seeds
1/2 tsp.cumin seeds
1 tsp chana dal
1 tsp. Urad dal
2 tsp. peanuts
Hing- apinch
Curry leaves-few
Turmeric pwd-pinch

For Garnishing
2 tbsp. grated coconut
2 tsp. lemon juice
Few coriander leaves



Method: Soak the poha in water for 5-10min. Wash  and drain the water completely.
Heat the oil in the pan, fry the peanuts and keep it aside .
Next add seasonings and fry till done.
Add green chillies and onions,chopped potato and stir fry,
Add the poha and mix well.
Add salt, lemon juice, coconut,peanuts and coriander leaves to the poha.
Mix well  and serve hot.

Medu Vada

Medu Vada (Uddina Vade)is another favorite South Indian breakfast but enjoyed just by all.

Ingredients
Medu Vada
  • 2 cups urad dal
  • 1-2 tbsp chiroti rava 
  • 1 tsp jeera
  • 1 tsp Kalamiri crushed
  • 1 onion, finely chopped (optional)
  • 1 or 2 green chili, chopped
  • Few curry leaves chopped
  • Salt
  • oil for deep frying
  • Water
Method: Soak the urad dal overnight.Grind the dal into smooth batter with little water.Add rava,and remaining items and mix well.Heat oil in Kadai.Make the vadas and slowly slide in the oil.Fry on both sides till brown and crispy on medium heat.Drain on absorbent paper.Serve hot with chutney or sambar.

Rava Ladoo/ Rave Unde


Rava Ladoo or rave Unde is yummy delicious sweet that can be made very easily.Kids will love it too.

Ingredients:

  • 1cup Chiroti rava 
  • 1/2 cup ghee
  • 2 tbsp. boiled milk
  • 2 cups pwd sugar
  • 1 tsp elachi pwd
  • Few cashew nuts,
  • Few almonds 
  • Few raisins





Method:In a pan fry rava with the ghee until light golden color.
Remove from the heat.Also ,heat little ghee in a pan, fry the cashews, almonds and raisins till light brown add to the rava mix. Add milk,sugar and mix well slowly shape into small balls or ladoos.

Cabbage Pakoda/Cabbage Fritters

Cabbage Pakoda or fritters is simple and easy. It's crispy, spicy and tasty. 

One more variety that can be made from the leafy green Cabbage. Try it out.



Ingredients
  • 1 cup Finely chopped/shredded cabbage
    Cabbage Pakoda,pakora,snacks,fritters

  • 1 cup besan/Gram flour
  • 2 tbsp rice flour
  • 1 tsp red chili pwd
  • 1/2 tsp dhania jeera pwd
  • 1/2 tsp garam masala
  • 2-3 green chili, finely chopped
  • 1 tsp ajwain
  • 1/2 tsp cumin seeds
  • Hing-pinch
  • Tumeric-pinch
  • Few coriander leaves
  • Few curry leaves
  • Water
  • salt for taste
  • oil for frying

Method-


Take a bowl combine all the ingredients and mix well. 
Add little water,add cut cabbage and mix well ,the flour and cabbage should blend and be well coated and be dry.
Heat a little oil and add it to this batter and mix it well.
Keep it for sometime.In a kadai heat sufficient oil for frying. 
Slowly add the cabbage mix in batches in the hot oil. 
Fry till golden brown on both sides. Drain on absorbent paper. 

Serve hot crisp bhajias with ketchup or chutney of your choice.
(you can also add onion in the mix)

Bread Pakora

Bread Pakora is simple bread slices blended in besan(gram) flour and spices .Enjoy this fried tasty snack with hot cup of tea.

  • 4 slices of bread
  • 1 cup gram flour(besan)
  • 1 tbsp rice flour
  • 1/4 tsp turmeric powder
  • 1/2 finely chopped onion
  • 2-3 green chilies finely chopped
  • Coriander leaves chopped
  • 1/2 tsp ajwain.
  • 1/2 tsp Red chilli pwd
  • 1/4 tsp garam masala pwd
  • Water for batter.
  • Oil for frying.
  • Salt
Method-In a bowl, add gram flour, rice flour,salt, chili powder, garam masala, ajwain,turmeric, onion,chopped green chilies,coriander leaves and mix well.Add water make a smooth batter (not too thick or too thin) enough to use it for dipping for bread.
Cut the bread slices into square.Heat oil in a kadai. Dip bread pieces in the batter ,slowly slide in the hot oil and fry till crisp on medium flame,remove it on absorbent paper. Serve hot with green chutney and tomato sauce or enjoy just like that.

Maddur Vade

Maddur Vade

Maddur Vade / ಮದ್ದೂರು ವಡೆ  is crispy, yummy fried snack of South India. Enjoy with hot cup of tea or coffee. It is a fave delicacy of Karnataka.


Ingredients:

  • Rice flour-1 cup
  • Maida-4 tbsp
  • Chiroti rava-1/2 cup
  • Finely chopped coriander leaves
  • Curry leaves few
  • Finely chopped green chilies-5-7
  • Finely chopped onion 1/2 cup
  • Jeera -1 tsp
  • Oil for frying
  • Butter(melted)-2 tsp
  • Salt to taste


Method: In a bowl,add rice flour,maida  and rava, melted butter,onions,salt,chilies, coriander and jeera ,add water and mix to form the dough. Apply oil to aluminum foil and take a small amount of dough and pat it into small vadas. Heat oil in kadai, slowly pick it up and slide into the oil. Fry well till golden brown on both sides. Drain them on absorbent paper. Enjoy hot with chutney or just like that with a cup of tea/Coffee. 


(you can pat into thin vadas or keep it thick, it will taste well)

Kai Sasive Chitranna

Kayi Sasive Chitranna (Coconut Mustard Rice blended with red chilies ) is an authentic South Indian Rice speciality-a real spicy delight.Enjoy with raita or papad. Perfect for cold winters.


Ingredients

Cooked rice: 1 cup


Kayi Sasive Chitranna,Coconut Mustard Rice blended with red chilies
Kai Sasive Chitranna
Grinding

  • Grated coconut: 1/2 cup
  • Sasive/Mustard seeds: 2 tsp
  • Red chilli: 5-7 (according to taste)
  • Salt:for taste
  • Jaggery-1/2 tsp
  • Tamarind paste-1 tsp

Seasoning-

  • peanuts: 15-20 
  • Hing-Pinch
  • oil for frying 3-4 tsp
  • Mustard -1/2 tsp
  • Urad dal-1/2 tsp
  • Chana dal-1/2 tsp
  • Curry leaves



Method-  Pressure cook rice and spread it on plate to cool.Grind coconut,hing, mustard and red chillies to a nice paste. (If required, add a little water  while grinding) Take a kadai, heat oil and add peanuts and fry well. Keep aside.Add mustard,chana dal urad dal,curry leaves and sauté.  Add the coconut paste mixture and fry till it becomes light brown in color.  Add the rice, salt ,fried peanuts and mix well and serve hot and spicy Kayi Sasive Chitranna with raita or papad/sandige.

Ingredients
Potato Sandwich
  • 2 cups boiled grated potatoes
  • ½ onion – chopped finely
  • 3-4  green chilies–chopped finely
  • ½ tsp jeera
  • ¼ tsp mustard
  • ¼ tsp turmeric powder
  • Pinch Hing
  • Lemon juice
  • a few chopped coriander leaves
  • Sandwich masala or Chaat masala
  • 8 Bread slices 
  • Butter
  • Salt
  • Green Chutney
  • Ketchup
  • Tomato,onion,capsicum slices
Method:In a kadai,heat oil,add mustard seeds,cumin seeds,green chilies,curry leaves,hing, tumeric ,add mashed potatoes,salt,masala powders,lemon juice and coriander leaves mix well.Take bread,apply butter and  green chutney,smear the potato stuffing,top it up with the slices of vegetables,add some chaat masala,cover with another chutney-butter spread bread.Grill in toaster.Serve hot with chutney or ketchup.

Onion Bhajia/Fritters

Onion Bhajia (Fritters) is a favorite spicy starter/snack and is just enjoyed by all of us. The humble "Kanda bhaji"  or pakoda anyway you call it, it is definitely tempting!!!!

Ingredients

  • 1  Large Onion cut finely
  • 1 tsp red chilli pwd
  • 1/2 tsp tumeric pwd
  • 1 tsp Dhania Jeera Pwd
  • 1 tsp of dry mango powder 
  • (Everest Amchur)(opt)
  • 1/4 tsp  garam masala 
  • 1/4 tsp ajwain
  • 3 tbsp gram flour (besan)
  • 2 tbsp rice flour (opt)
  • finely chopped coriander leaves
  • 3-4 green chillies finely chopped salt 
  • Oil for frying


Method- Take a bowl combine all the ingredients and mix well. Add very little water, add cut onion
and mix well, the flour and onion should blend and be well coated and be dry. Heat a little oil and add it to this batter and mix it well.

Keep it for sometime. In a kadai heat sufficient oil for frying. Slowly add the onion besan mix in batches in the hot oil. Fry till golden brown on both sides. Drain on absorbent paper. 

Serve hot crisp bhajias with ketchup or chutney of your choice.

Aloo Sabzi

Aloo Sabzi (Aloo Palya/ Aloo Gadde Palya) is most simplest and easiest of recipes but definitely enjoyed by all. You can made various version with potatoes, this is the quick one. Palya is Kannada word for Sabzi or Bhaji.

Ingredients

  • 3 big Potatoes, boiled
  • 1 tsp Mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • Hing-pinch
  • ½ tsp Turmeric
  • 5-6 Green Chillies, chopped
  • Few Corianderleaves
  • Few Curry leaves
  • Lemon juice
  • 2 tbsp Oil
  • Salt to taste

Method:  Mash the boiled potatoes. Heat Oil in pan add mustard, chanadal, uraddal,hing, tumeric, curry leaves, chilies and fry for some time. Add potatoes and mix. Add salt and mix well, fry for some time. Garnish with corainder leaves and lemon juice. Add coconut if req. Serve hot with chapati/puris .

Sev Puri


Sev Puri is loved by all of us.Especially any Mumbaikar would always relate to the Chowpatty and the Bhels.Always tempting !

Ingredients

  • Flat crisp puris.
  • 1 cup sev
  • 1 potato, boiled and grated
  • 1 onion finely chopped
  •  chopped coriander leaves
  • 1 green chili chopped (optional)
  • Green chutney
  • Sweet  chutney
  • 1-2 tsp red chili pwd
  • 1-2 tsp cumin pwd
  • 1-2 tsp chaat masala
  • Lime juice

  • Method: Align the puris on a plate.Stack it up with grated potatoes,onions .Add the masala powders,next add the chutneys .Sprinkle sev on top.Squeeze lemon juice,a bit of masalas if req and garnish with coriander leaves,raw mango shreds.Enjoy immediately.

Onion Coconut Raita

Onion coconut raita is simple and easy to prepare.Its a South Indian Raita type a combination of coconut and onion with spices.

Ingredients
Onion Coconut Raita
  • 1/2 coconut, freshly grated
  • 1 cup plain yogurt (dahi)
  • Salt to taste
  • Finely chopped onion
  • 1-3 green chilies, finely chopped
  • Few curry leaves
  • 1/2 tsp mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/2 tsp jeera
  • oil (seasoning)
  • Hing a pinch
Method -Take a bowl, mix the coconut, yogurt, raw onion and salt.Heat oil in a small pan. Add the mustard and cumin seeds. Next add the green chillies ,chana dal,urad dal ,curry leaves and hing.Fry for some time.Pour the seasoning over the yogurt.Serve the raita with Sambar rice or pulao.

Potato Cheese Corn Roll

Potato Corn Cheese Crisps is yummy rich snack which kids will  enjoy. The corn and melted cheese is very tasty.

Ingredients
Potato Cheese Corn Crisps
3-4 boiled and grated potatoes
1 cup steamed sweet corn
1/2 cup of grated cheese
1/2 tsp Pepper pwd
1/2 tsp Dhania jeera pwd
1/2 tsp chaat masala
2 tbsp coriander finely chopped
2 green chilies finely chopped
3-4 bread slices
bread crumbs
salt to taste 
Oil for deep frying

Method-Mix mashed potatoes,corn,grated cheese,masala pwd,salt.Dip bread in little water,squeeze ,add it to the mix,shape into small balls or any shape you like , pat it accordingly.
Dip it on bread crumbs or chiroti rava.Set it for some time.Heat oil in a vessel , slowly slide in,deep fry the crisps on medium flame till they are golden brown in color. Remove on tissue/absorbent paper to remove any  excess oil. Serve hot with ketchup .

Mix Vegetable Gravy is a combination of small portion of vegetables in fresh onion tomato base , very nutritious and healthy. A great spicy side dish for any Indian Breads.


Ingredients
Mix Vegetable Gravy
1/2 cup cauliflower florets
(cleaned and chopped)
1/2 cup boiled potatoes
1/2 steamed peas
  1/2 tomato chopped
  1/2 capsicum chopped
  1/2 cup carrots
  Beans chopped
  1 bay leaf
1-2 green chilies
1/2 tsp cumin seeds
1/4 cup chopped onion
1/2 tsp red chili pwd
1/2 tsp turmeric pwd
  1/2 tsp garam masala
1 tsp dhania jeera pwd
  1 tsp ginger garlic paste
1 tsp kasuri methi (everest)
2 tbsp oil
few coriander leaves for garnishing
salt as required
Cashews few

Grinding:
1/2 cup chopped onion
3 medium size tomatoes, chopped


Method 

Grind the masala. Heat oil in Kadai, add cumin, bay leaves, chopped onion, fry till golden brown.
Add the ground onion-tomato paste, green chilies, mix.
add all masala powders, Fry well. Add the vegetables, potatoes and peas, Add water. Cover and cook for some time till the vegetables are cooked. Add salt. Add kasuri methi, garnish with fried cashews, coriander leaves. Serve hot with chapatis or rice.

Ingredients:

Masala Toast Sandwich

  • Bread slices
  • 1 carrot,grated
  • 1 onion,finely chopped 
  • 1 small capsicum,finely chopped 
  • 1  tomato,finely chopped 
  • chopped coriander leaves
  • 2 -3 green chillies,finely chopped 
  • 1 tsp red chilli powder
  • 1/2 tsp chat masala(optional) 
  • 1/4 tsp jeera 
  • Salt as per taste
  • 2 tsp tomato ketchup
  • Oil
  • Butter


Method: Heat oil in a pan add jeera,then add finely chopped onions and green chillies and fry. Next add tomatoes and capsicum and fry well till soft. Add grated carrots,red chili powder,chat masala,a pinch of sugar,salt and mix well and cook for a minute. Add chopped coriander and tomato ketchup and mix well. Heat tava and toast bread on one side then apply this mixture liberally on that toasted side, next apply butter to the tawa and toast the other side until crisp. Cut and Serve it hot.

Tomato Chaat (tomato Slice ) is a favorite Masala Chaat you can enjoy in Bangalore.Nice tangy ,spicy and tasty.Of course, very easy to prepare too.


Ingredients:
Tomato Masala
2  tomatoes
1 cup puffed rice (Puri)
1/2 sev
1 onion, finely chopped
1/2 cup grated, carrot
Few coriander leaves, chopped
1/4 cup salted peanuts
1 tbsp. green chutney
OR red chili powder
1 tsp chaat masala
1 tbsp. lemon juice
Salt to taste

Method: Slice the tomatoes.(thick slices)Apply salt and green chili paste,Spruce up with finely chopped onions, grated carrots, chaat masala,red chili pwd,coriander leaves and peanuts.Sprinkle a dash of lemon juice over that. Top up with puffed rice and sev .Serve immediately.

Kodubale

Kodubale is traditional snack recipe we all know and have enjoyed  preparing it during festivals.Try it out during kids vacation time.-Crispy and spicy enjoy with hot cup of tea.

Kodubale
Ingredients:

  • 1 cup rice flour
  • 2 tbsp chiroti rava
  • 2 tbsp. dry coconut 
  • 2 tsp. Dhalia (hurgadle / puttani) 
  • 1-2 tbsp. red chilli powder or 7-8 red chilies
  • 2 tbsp. oil/Butter
  • 1 tsp. sesame seeds
  • Hing pinch
  • Salt to taste
  • Oil for frying

Method: Roast puttani,red chillies,coconut,hing and grind it.
Mix rice flour, with ground mix,sesame seeds and salt and mix well. 
Heat oil and add to the mixture. Add water and Knead the dough well.
Take small portion and make kodubale out of it.
Heat oil in Kadai ,deep fry kodubale till golden brown or until fully done.
Drain on paper towel. Store in an airtight container when cool 
or enjoy with tea.

You can also add curry leaves and jeera .

Tomato Onion Raita

Tomato Onion Raita is simple and easy, combination of tomato, onions with curds and spices. Enjoy it with spicy Pulao or Biryani.


Ingredients:
Tomato Onion Raita

  • 1 cup plain curd / dahi 
  •  1 cup tomatoes and onions
  •  (finely chopped)  
  • Salt to taste 
  • 2 tsp oil 
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/4 tsp cumin seed, mustard seed 
  • 2-3 chili (finely chopped) 
  • 2-3 curry leaves 
  • Finely chopped coriander leaves


Method: Add salt to curds and mix well. Add chopped tomatoes, onion. Heat oil in frying pan, add mustard, jeera, chana dal, urad dal, chopped green chilies once done, pour the above seasoning over tomato and onion mixture. Serve it with chapati or pulao,mixed rice.

Sabudana Roti

Sabudana Roti/rotti is yummy mix of potato, chilies with sago made into soft roti.It's spicy and tasty - a filling breakfast recipe. An easy gluten free vegan delight!

Sabudana Roti
  • Ingredients
  • 1 cup sago/
  •  / sabudana
  • 1 medium potato boiled/grated
  • 1 finely chopped onion 
  • 2 tbsps rice flour (binding)
  • Roasted peanuts crushed to small pieces
  • 5-6 finely chopped Green chillies
  • Jeera,
  • Coriander leaves
  • Oil 
  • Salt to taste
Method:
Soak the Sabudana in enough water for about 3-4 hours.
Once soft, drain the water.
Add grated potatoes, chilies, coriander leaves, crushed peanuts, onions, salt, jeera, rice flour and mix well to form the dough.
Take 1tsp of oil, smear around a tava, take dough and spread around it.
Keep this on medium heat, cover and after minute, add oil around sides. 
If you want more crispy leave it of little longer.(to make it more soft you can cover it with a plate on the tava/griddle).
Serve Sabudana Roti hot with chutney, ketchup or enjoy JLT.(just like that)
(You can make this recipe without onions also)
