Seasoned Idli

Seasoned Idli is interesting twist to the normal idlis. Soft with a blend of onions, coriander leaves and seasonings gives it a great taste. Enjoy hot with chutney.

Idlis are fun. They are soft, fluffy and easy to prepare.

Prep time: 12 hrs

Cook time: 20 mins

Total time: 12 hrs 20mins

Servings: 20 idlis

Ingredients : 

  • Idli Batter 
  • Onion : 1finely chopped
  • Green chillies : 1 or 2, chopped
  • Coriander leaves : few chopped
  • Mustard seeds : 1 tsp.
  • Curry Leaves : 5-6 nos.
  • chana dal:1/4 tsp
  • urad dal:1/4 tsp
  • Salt to taste
  • oil:1/2 tsp
  • Chutney pwd:2 tsp
  • Hing-pinch

  • Idli Batter-   Wash and soak ¾ cup urad dal for 4 hours. Drain off the water and blend well till the batter becomes fluffy. If using IDLI rava, use 2 cups. Wash the rava well 2-3 times and mix with the urad dal batter. Transfer to a large bowl cover and set aside overnight or at least for 8-10 hours.


Method-  In a pan, heat oil. Prepare seasoning with curry leaves, mustard seeds ,chana dal ,urad dal, green chillies once done pour it in the idli batter. Next add chopped coriander leaves,onions ,salt to the batter and mix well. Add chutney pwd and mix .Set for 5 mins.
Apply oil onto the idli plates and pour the batter in a spoon. Steam it in pressure cooker for 15-20 mins on medium flame. 
Serve seasoned idli hot with ghee,chutney or saagu.

Idlis are nutritous, easy to digest, gluten-free, and rich in probiotics, making it a great option for breakfast or a light meal.

Ingredients:
  • Bread
  • Butter 
  • capsicum-finely chopped
  • Pepper pwd for sprinkling
  • salt
  • italian seasoning






Green Chutney:
  • 4-5 green chillies, chopped 
  • Coriander leaves,Mint
  • Fresh grated coconut -1/2 cup
  • Roasted gram dal-hurikadle
  • 1 tsp. tamarind paste
  • Salt to taste

Method: Grind all the chutney ingredients to a smooth paste with little water. Keep aside.

Remove the edges of the bread slices, apply butter, apply green chutney, mix capsicum with salt, italian seasoning and add onto the bread. Add some pepper powder. Apply butter, chutney and on 
another bread slice,  place this on top layer. 

Toast it and Cut it in any shape and serve.

Capsicum Tomato Sandwich 
Ingredients
    • 1 cup sliced capsicum
    • 1 cup tomato chopped
    • 3-4  green chilies–chopped finely
    • ½ tsp jeera
    • ¼ tsp mustard
    • ¼ tsp turmeric powder
    • 1/2 
    • 1-2 tsp italian seasoning
    • a few chopped coriander leaves
    • Sandwich masala 
    • 8 Bread slices 
    • Butter
    • Salt
    • Green Chutney
    • Ketchup
      Method:In a kadai,heat oil,add mustard seeds,cumin seeds,green chilies,curry leaves,hing, tumeric ,add tomatoes, capsicum and stir fry well ,once done add salt,coriander leaves and mix well.Take bread,apply butter and  green chutney, add the capsicum tomato mix ,add some sandwich masala,cover with another chutney-butter spread bread.Grill in toaster.Serve hot with chutney or ketchup.You can also add cheese to make it more tastier.

      Tomato Chutney Ver III


    1. Tomato chutney is tangy and spicy. Easy to prepare. Taste yummy with bread or dosa alike. Tomatoes are low in calories and rich in vitamins. Tomato is an important source of vitamin C, beta-carotene, folate, and potassium for body. Do include in your diet.
    2. TOMATO CHUTNEY
      Tomato Chutney

      Ingredients:-

      • 5-6 – Tomatoes (chopped)
      • 1/2 tsp -Ginger paste
      • 1-2 – Green Chillies
      • 1-2 tsp Sarin Pudi
      • Pinch of Asafoetida
      • 1/2 tsp pepper pwd
      • 1/2 tsp Cumin Seeds
      • 1/2 tsp – Mustard Seeds
      • Few-Curry Leaves
      • 1/2 tsp- Turmeric
      • Salt As Required
      • 1 tsp – Sugar
      • few- Coriander Leaves(finely chopped)
      • 1-2 tbsp Oil

    3. Method- In a pan, heat oil, add mustard seeds, cumin seeds, ginger paste, asafoetida,curry leaves,turmeric. Once done add tomatoes and green chillies and stir well for 10 mins. Add water. Next add the masala pwd, sugar, salt and mix well. Add coriander leaves. Let till boil, slowly the mix will thicken. Enjoy with chapati or bread or dosa.

      Dahi Pakodi

      Dahi Pakodi is a yummy combination of spicy Moong Dal Pakodi in chilled curds(Dahi-yogurt) blended with chutnies.

      Simply Delicious. Enjoy!


      Ingredients:
        Dahi Pakodi
        Dahi Pakodi
      • 1 cup split moong dal
      • 1/2 cup chopped onion
      • 5-6 green chillies finely chopped
      • few Coriander leaves chopped
      • Few curry leaves chopped
      • 1tsp cumin/jeera
      • 1 tsp coriander seeds
      • 1 tsp chilli pwd
      •  1-2 tbsp grated coconut
      • salt to taste
      • 2 cups yogurt/curds
      • 1-2 tsp Chaat masala 
      • 1-2 tsp red chilli pwd
      • Green chutney
      • Tamarind chutney
      • Few chopped onions
      • Grated carrots (Garnish)
      • Coriander leaves (garnish)
      • Bowl of water
      • Method: Soak moong dal for 3-4 hours or overnight. Grind with little water. Add the other ingredients and mix well. Heat little oil and add to the batter and mix. In a kadai, heat oil, make pakoras and  fry until it becomes golden brown on both sides. Drain on absorbent paper. Once cool soak them in water. These should be completely dipped in water. Keep for 1-2 hours in water till pakori become soft. Take out pakori from water and squeeze out excess of water from them.
      • Blend the curds, add salt, chaat masala, add the pakodi in it. 
      • Add some green chutney, tamarind chutney, garnish with grated carrots and onions. Enjoy.

        • Tomato, onion, capsicum slices
          Method: Prepare the potato stuffing, add salt, sandwich masala, chilies, mix well.

          Take bread, apply butter and  green chutney, smear the potato stuffing, top it up with the slices of vegetables, add some chaat masala, cover with another chutney-butter spread bread. 

          Grill in toaster. 

          Serve this sandwich hot with chutney or ketchup.

          • Idli Batter

          • Green chillies : 1 or 2, chopped

          Onion Chutney

          Onion Chutney is spicy and makes a good combination with DOSA,IDLI OR CHAPATI.This one with ground red chillies.


          Ingredients:
          2  onions, chopped
          Onion Chutney
          6-7 dry red chillies 
          Tamarind paste -2 tsp
          Menthya -1/2 tsp
          Salt as per taste


          Seasoning
          Mustard seeds 1 tsp
          Chana dal-1tsp
          Urad Dal-1 tsp
          Curry leaves few
          Oil-2 tsp


          Method: Heat the oil,add onions ,red chillies,hing,menthya seeds and sauté for 5-10mins.. Add tamarind and grind it into chutney with very less water if req.Season with the items given.Serve it with hot dosa or idli.

          Spinach Sandwich

          Spinach Sandwich is simple and easy to make. Enjoy as a quick snack or send it as school lunch. An easy way of adding greens to your diet. Spinach or Palak provides healthy nutrients and is rich in iron, vitamins and minerals.                   Coconut Chutney


                  Coconut chutney with Hurikadle(dahlia) is all time favorite of South Indian homes, a great combination for Idlis and Dosas. It is an easy and simple chutney recipe.

                  Ingredients 
                  • 1cup fresh/frozen coconut
                  • 6 -7 green chillies (chopped)
                  • White dal-2 tbsp (puttani/hurigadle)
                  • Tamarind paste 1/4 tsp
                  • Salt

                  Method:

                  Grind all above items with minimum amount of water.

                  Season with mustard seeds, chanadal , urad dal, hing, menthya seeds, curry leaves.

                  Serve with chapatis, dosa, idli or parathas. Just spread or toasted bread too!

                  Kadlekayi /Peanut Chutney

                  Kadlekayi chutney(peanut chutney) a superb combination with IDLI,dosa or chapati.Enjoy this gluten free vegan groundnut chutney ,the recipe is simple and easy.

                  Ingredients:
                  Peanuts - 3/4 cup
                  Grated coconut - little (optional)
                  Red chillies - 6-8
                  Tamarind - little
                  Salt as required

                  Seasoning
                  Mustard seeds-1 tsp
                  Chana dal-1/2 tsp
                  Urad Dal-1/2 tsp
                  Curry leaves-few
                  Hing-a pinch



                  Method:
                  Roast the peanuts ,red chillies in little oil.Grind peanuts, red chillies, tamarind and salt with little water first.Then add more water and grind it to a slightly smooth paste.

                  Season with mustard seeds,chanadal ,urad dal,hing,curry leaves.Enjoy
