Carrot Avarekayi Bhath

Ingredients:

1 cup rice
1 cup boiled avarekayi
2 carrots chopped
1-2 tbsp bhath Pwd
1/2 tsp. mustard
1/2 tsp. chana dal
1/2 tsp. urad dal
Hing - Pinch
Curry leaves - few
Turmeric pwd - pinch
2 tbsp. oil
Salt to taste
Grated coconut - 2 tbsp
Amla shreds - few

Method:

Cook rice and spread it on a plate. Grind amla, chilies, coconut in a mixer. Do not add water.

Next, heat oil and add mustard seeds. After they splutter, add chana dal, urad dal, hing, curry leaves and turmeric. Add carrots and cook until done.

Add the boiled avarekayi, ground paste, salt and bhath pwd and mix well. Add rice and mix well.

Serve Carrot Avarekayi Bhath hot with raita or papad, or enjoy it just like that.
