Sweet Lime Cake

Ingredients 

  • Maida / plain flour – 1.5 cups
  • Baking powder – 1.5 tsp
  • Baking soda – 1/2 tsp
  • Sugar – 3/4 cup
  • Thick yogurt – 3/4 cup
  • Vegetable oil – 1/2 cup
  • Fresh mosambi (sweet lime) juice – 1/2 cup
  • Sweet lime zest – 1 tsp
  • Salt-pinch
  • Vanilla essence-1/2 tsp

How to Make Sweet Lime Cake

  1. Preheat the oven to 180°C. Prepare a baking tray by lining it with parchment paper.
  2. Sieve the maida, baking powder, and baking soda, salt together and keep aside.
  3. In a bowl, add the sugar and thick yogurt. Mix well until combined.
  4. Add the fresh mosambi juice, sweet lime zest, vanilla essence and vegetable oil. Mix until smooth.
  5. Gradually add the sifted flour mixture to the wet ingredients. Fold gently until just combined. Do not overmix the batter.
  6. Pour the batter into the prepared baking tray and spread it evenly.
  7. Bake at 180°C for approximately 30–40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Remove the cake from the oven and allow it to cool completely before slicing.
