Cabbage Kootu

Cabbage Kootu is a South Indian gravy blended with Indian spices.It  can be enjoyed with hot rice or chapati. Green Cabbage is one vegetable that is always available and surplus at everyone's home and we can make variety of dishes with cabbage.

Ingredients
  • Cabbage-1 cup (shredded)
  • Moong dal- 1 cup cooked
  • For grinding
  • Urad dal – 1 tbsp
  • Jeera/cumin seeds – 1 tbsp
  • Pepper-10
  • Rice-1 tsp
  • Red chillies-3-4
  • Shredded coconut – 1/2 cup
  • Hing- 1 pinch
  • Seasoning
  • Oil-1-2tsp
  • Mustard-1/2 tsp
  • Jeera-1/2 tsp
  • Chana dal-1/2 tsp
  • Turmeric-pinch
  • Hing-pinch
  • Curry leaves-few
Method- In a pan, add little oil fry well the urad dal, pepper,  jeera, curry leaves,hing ,red chilies later add the  coconut fry for 1-2 mins. Grind this roasted mixture by adding little water. Meanwhile , stir fry the cabbage.Once done, add the cooked moong dal,  the ground paste and allow to simmer for 5-10 mins. Add salt. Add the seasoning. Heat oil in kadai,add mustard,once done add jeera, chana dal, turmeric, hing, curry leaves. Add this to the kootu. Serve Cabbage Kootu hot with chapati or enjoy with rice.

PadavalaKayi Kootu

Padavalakayi Kootu (-parval/snakegourd/ ಪಡವಲಕಾಯಿ ) is a traditional South Indian gravy that  can be enjoyed with hot rice or chapati. A spicy, healthy gravy.

Ingredients

  • Padavalkayi-1 finely chopped (snakegourd)
  • Moong dal- 1 cup cooked
  • For grinding
  • Urad dal – 1 tbsp
  • Jeera – 1 tbsp
  • Pepper-10
  • Rice-1 tsp
  • Red chilies-5-6
  • Shredded coconut – 1/2 cup
  • Hing- 1 pinch
  • Seasoning
  • Oil-1-2tsp
  • Mustard-1/2 tsp
  • Jeera-1/2 tsp
  • Chana dal-1/2 tsp
  • Turmeric-pinch
  • Hing-pinch
  • Curry leaves-few

Spinach Dal / Dal Palak

Spinach dal or Dal Palak is a healthy combination of Moong Dal with Spinach or palak tempered with hing ,jeera and chilies.Nutritious and tasty.Enjoy with rice or chapati.

Ingredients

  • 1 cup moong dal 
  • 1 cup chopped spinach
  • 1/2 tsp turmeric
  • Salt-taste
  • Water
  • Lemon Juice-1/2 tsp
  • Coconut-1-2 tsp(opt)
Seasoning:
  • 1 tsp oil/ghee
  • 1 tsp mustard seeds 
  • 1/2 tsp jeera
  • 1/2 tsp channa dal
  • 1/2 tsp urad dal
  • hing -pinch
  • curry leaves-few
  • Green chillies 3-4 chopped
  • Method : Pressure cook dal with turmeric and oil.Blend the dal .Cook spinach in water till done.Add spinach ,dal add water if req.Add salt and mix well.Cook on low heat for 5-10 mins.Heat oil in a pan,add the seasoning items ,once done add to the dal.Add lemon juice.Serve hot with white rice or chapati.

    Menasu Jeerige Saaru/Cumin Pepper Rasam

     Menasu Jeerige Saaru/Cumin Pepper Rasam is spicy and tangy to taste.Enjoy hot on a cold or raining day.

    Ingredients


    • Tamarind Paste(thick) 3-4 tsp
    • Water-2-3 cups
    • Jaggery  1 tsp
    • Pepper ground  1 tsp 
    • Dhania Jeera pwd 1 tsp
    • Ghee 1 tbsp
    • Dry red Chillies 1-2
    • Mustard  1/2 tsp
    • Hing pinch
    • Coriander leaves few
    • Curry leaves few
    • Salt

    Method: Add enough water to tamarind paste ,add jaggery ,masala pwd and boil on low heat.Meanwhile heat ghee in kadai,add the items for seasoning -mustard, hing,pepper,jeera,red chillies,curry leaves.Once done add it to the tamarind water.Add salt ,coriander leaves and boil till the spices blend well.Serve hot with rice.

    Thove/Yellow Dal

    Thove or simple yellow dal is the simplest dals made in most Indian homes.This one is made from Tur Dal and is the South Indian variety.


    Ingredients:
    1 cup Toor Dal 
    1/2 tsp tumeric
    Water - 2-3 cups
    salt to taste
    Grated ginger(opt)
    Few coriander leaves

    Seasoning:
    1 tsp oil/ghee
    1 tsp mustard seeds 
    1/2 tsp jeera
    hing -pinch
    curry leaves
    Green chillies 3-4 chopped
    Lemon juice

    Method : Pressure cook dal with turmeric and oil.Blend the dal .Heat oil in a pan,add the seasoning items ,once done add to the dal,add water if req.Add salt and mix well.Cook on low heat for 5-10 mins.Garnish with coriander leaves and lemon juice.Serve hot with white rice.

    Bele Saaru

    Bele Saaru is one of the varieties of Saaru/Rasam that is enjoyed with hot rice in South Indian homes. A spicy tangy blend of lentils and spices.


    Ingredients:
    1/2 cup tur dal
    1/2 tsp. turmeric powder
    1/2 tsp. oil
    1-2 tomatoes, 
    1-2 tsp. tamarind juice
    1 tsp. jaggery
    2-3. Saarina Pudi/Rasam pwd
    Few curry leaves
    few chopped coriander leaves
    Salt

    For Seasoning:
    2 tsp. ghee
    1/2 tsp. mustard seeds
    1 red chillies
    Hing-pinch




    Method: Pressure Cook tur dal in a cooker with water, turmeric ,tomatoes and little oil.
    Add water and mash the tomatoes and dal well,add rasam powder,jaggery ,tamarind juice ,salt and boil it for 10-15mins. 
    Remove from the heat.Heat the ghee in a pan, 
    add mustard and hing ,curry leaves ,once done add it to the saaru.Add coriander leaves stir and cover.Serve hot with white rice.
