Aloo Paratha

Aloo Paratha - a good healthy kickstart for your busy life. Hot parathas stuffed with spicy aloo masala. Enjoy hot and spicy.

Aloo Paratha
Ingredients


  • 1 cup  wheat flour
  • 1/2 tsp  cumin seeds/carom seeds
  • 1 /2 tsp turmeric 
  • 1 -2 tsp chilli powder/garam masala
  • 1/2 tsp jeera dhania powder
  • 1/2 red chili pwd
  • 1 1/2 cup grated boiled potato
  • 1 tsp lemon juice
  • Few-coriander leaves
  • 2 tbsp oil
  • salt to taste
Method


1.Knead the flour with water, a little salt,oil into a soft dough.Cover it for 4-5 hours.
2 In a bowl, add the mashed potatoes, salt, masala powder, coriander leaves, lemon juice  and mix well. Divide the mixture into balls. 
3.Make a small chapati with the dough,keep this ball in the middle and bring all the sides together, once done flatten them with your fingers, or use the rolling pin and make the paratha 
4.Heat a skillet (tava) gently, put in the paratha, turn on both sides till done. Now add oil or ghee all around the edges, fry both sides, carefully turning over until evenly brown. 
Serve Aloo Paratha hot with pickle or curds.

You can add mint leaves/ginger paste for extra flavor.

Methi Paratha

Methi Paratha is easy wholesome breakfast recipe - a healthy start for your day. Made from Methi aka Fenugreek leaves, is very nutritious, you can send it as a part of your child's tiffen box too.


Ingredients

  • 1 cup  wheat flour
  •  2-4 tbsp yogurt/curds
  • 1/2 tsp  cumin seeds/carom seeds
  • 1 /2 tsp turmeric 
  • 1 -2 tsp chilli powder/garam masala
  • 1/2 tsp jeera dhania powder
  • 1 cup finely chopped fenugreek/Methi leaves
  • 2 tbsp oil
  • salt to taste
Method
In a bowl combine all the ingredients with the flour ,add yogurt  and knead into smooth dough,add little water if req. Add oil and knead it again and keep it covered for sometime. Make parathas. Heat a skillet (tava) gently, put in the paratha, add oil ,turn on both sides till done. Serve very hot with pickle or curds.

Ragi Rotti

Ragi Rotti

Ragi Rotti (finger millet flour) ರಾಗಿ ರೊಟ್ಟಿ is highly nutritious breakfast for your busy day, one of the famous South Indian dishes, easy to make and is healthy and tasty too.Soft and delicious ,enjoy it hot with butter.

Ingredients

  • Ragi Flour 1 Cup (finger millet)
  • Finely cut onions 2 
  • Grated Carrot-1 small cup (opt)
  • Green Chillies 5-7
  • Oil 
  • Salt as per taste 
  • Coriander leaves chopped
  • Coconut-little
  • Jeera-1tsp
    
Method   

Mix all the above items add water and knead it well.Make a soft dough.Keep covered for 10 mins.Add little oil and knead again before making the rottis.

Take 1tsp of oil, smear around on the tava , take the dough and spread around with your fingers.Keep this on medium heat, cover and after minute or so it will be ready to be taken out.If you want more crispy leave it of little longer. Once done rotti comes out easily from tava.

Serve the Ragi Rotti  hot with chutney of your choice and a dallop of butter.

Spicy Masala Akki Rotti

Akki Rotti is a favorite South Indian breakfast item .This one is a masala version ,enjoy.


Ingredients

Masala Akki Rotti

  • 1/2 cup Rice flour
  • 4 Green Chillies finely chopped
  • 2 tsp Jeera-Coriander powder
  • 1 tsp Garam Masala (opt)
  • 1/2 tsp Cumin seeds
  • 1 tsp Red Chili powder/Rasam Pwd
  • 1/2 tsp Turmeric powder
  • 1 cup finely chopped Coriander leaves
  • 1/4 cup finely chopped Onion
  • Salt as per taste

Method:
Mix rice flour with Coriander powder, garam masala, rasam pwd, turmeric , cumin seeds,  salt ,chopped onion, chopped chilies,coriander leaves.Mix everything together very well to form a soft dough On the tava , add little oil take a small ball of dough and start to flatten it with your fingers to make it flat.Add oil to the sides,cover and cook until it is done.Flip and let it cook on the other side.Serve hot with pickle or chutney of your choice.

Methi Rava Rotti

Methi Rava Rotti is nutritious , wholesome blend of Methi (Fenugreek Leaves) in Chiroti rava (Semolina) making it a healthy breakfast delight.Enjoy!!


Methi Rava Rotti
Ingredients 

Chiroti/Semolina Rava         2 cups 
Methi Leaves         1 bunch finely chopped
Cilantro leaves          handful chopped
Green chillies            7-8 finely chopped (in case you need it spicy)
Cumin seeds            1 tsp
oil                             2Tbsp
Salt                          to taste
Water                       1 cup (as req)
Curds                       2 tsp

Method 

 Mix chiroti rava with chopped and  washed methi leaves, add salt,chilies,cumin seeds.Add water and mix well add little curds.Cover and leave overnite.(Dough should be of medium softness not too hard or too soft.) Next day ,take a tava ,smear  1tsp of oil around,take the dough and spread around it add water to flatten on the tava.

Keep this on medium heat, add oil around the roti ,cover ,check if done.If you want more crispy leave it a little longer. Once done rotti it comes out easily from pan.

To make another rotti, hold the pan upside down and run cold water all around it, pan will be cool to make another rotti by this time.Enjoy hot with butter and chutney /pickle of your choice.

(You can mix chiroti rava and rice flour and make the rotti)

Vegetable Paratha

Vegetable Paratha is very healthy and nutritious, you can choose any mix of vegetables to make the stuffed paratha.


Veg Paratha
Ingredients  


  • Wheat flour 3 cups 
  • Potato 1 small (boiled and mashed)
  • Carrot 1 small (grated)
  • Florets cauliflower a few (opt)
  • cooked and mashed peas 1/4 cup 
  • Red chilly pwd1/2 Tsp
  • Garam masala pwd1/2 Tsp 
  • Dhania jeera pwd-1/2 tsp
  • Salt to taste   
  • Ghee or oil for frying   
  • Jeera-few 
  • Onion 1 medium 
  • Ginger garlic paste(opt)
  • Green Chillies(addln spice)
    
Method

1.Knead the flour with water, a little salt,oil into a soft dough. Cover it for 4-5 hours.
2.In a Kadai heat oil, add  jeera, add onions fry .Then add the chilly and garam masala powders, and fry for a while. Add the mashed vegetables, carrot salt and mix well. Fry till dry set aside to cool. Divide the mixture into balls. 
3.Make a small chapati with the dough, keep this ball in the middle and bring all the sides together, flatten them with your fingers, or use the rolling pin to make the paratha 
4.Heat a tava, put in the paratha, turn on both sides till done. Add oil or ghee all around the edges, fry both sides, carefully turning over until evenly brown. Serve very hot with pickle or curds.

Akki Rotti

Akki Rotti

Akki Roti is made from Rice (akki in Kannada) flour-breakfast speciality of Karnataka. Enjoy these pipping hot Akki rotis with butter, chutney of your taste...a perfect heavenly and healthy morning breakfast.


Ingredients 
  • Rice flour 2 cups
  • Onions 1 finely chopped
  • Capsicum 1 finely chopped
  • Coriander leaves -few chopped
  • Coconut little
  • Green chillies 7-8(as per taste)
  • Cumin seeds 1 tsp
  • Oil 2tbsp
  • Salt to taste
  • Water 1 cup or according to required consistency
Method- 
In a bowl mix rice flour with chopped and grated veggies, chilies, Cumin /jeera ,coriander leaves, coconut, add salt. 
Add boiled water, mix well to a soft dough. Keep covered for 10 mins. 
Take 1tsp of oil, smear around a tava. Now take dough and spread around it. 
Keep this on medium heat, cover and after minute, add oil around sides also. 
If you want more crispy leave it of little longer. 
Once done, roti comes out easily from pan.(to make it more soft you can cover it with a plate on the tava/griddle)

To make another roti, hold the pan upside down and run cold water all around it, pan will be cool to make another roti by this time.
Serve this hot Akki Roti -Karnataka Breakfast with chutney of your choice and dash of butter.
Also note:
  • Adding little cucumber shreds makes the rotis soft.
  • You can also add little curds to make the rotis soft.
