Avalakki Payasa/ Poha Kheer , Indian style Puffed Rice Pudding

Avalakki Payasa/ Poha Kheer

Avalakki Payasa/ Poha Kheer is simple and easy dessert recipe.Delicious and tasty made during festivals as well.Enjoy this flattened rice pudding warm or cold.


Ingredients

  • Poha/Avalakki-Thick-1 cup
  • Milk, 3 cups
  • Sugar-1 cup
  • Elachi pwd-2 tsp
  • Badam pwd-2-3 tsp
  • Ghee, 2 tbsp
  • Cashews/ Raisins-few


Method-In a kadai,add ghee and fry cashew and raisins.Also fry the avalakki slightly.Meanwhile boil milk on low flame ,add the avalakki and let it cook well.Add sugar and let it cook for 5-10 mins,keep mixing in between.Add the dryfruits,elachi pwd,badam pwd and mix well.Enjoy it warm or chilled.

Sweet Poha/Sihi Avalakki

Sweet Poha/Sihi Avalakki - simple and easy to prepare. Made during Gokulashtmi /Krishna Janmashtmi festival in South India. Kids will enjoy anytime!!

Ingredients:

  • Thin Poha /Avalakki-2 cups
  • Jaggery  1 cup grated
  • Fresh grated coconut 5-6 tsp
  • Ghee 2 tsp
  • Elachi / Cardamom powder -1/2 tsp
  • Cashews-few
  • Raisins-few
  • Milk-1-2 tbsp

Method: Wash Poha well. In a bowl add the poha ,add grated coconut, jaggery elachi pwd , fried cashews, raisins and little milk, mix everything well. Serve hot.

Avalakki Besibele Bhath

Avalakki Besibele Bhath

  • Avalakki Bisibele Bhath is a favorite weekend breakfast recipe. Easy to prepare, filling and healthy to eat. A mix of poha and lentils (moong dal) with vegetables and spices makes it tasty and delicious.
This is a traditional authentic Madhwa recipe mostly done in Karnataka.  

  • Ingredients
  • 1 cup Avalakki/Poha (thick version )
  • 1/2 cup moong dal/hesaru bele
  • 2 cups chopped vegetables(beans, carrot, peas)
  • 1 capsicum 
  • 3-4 tbsp bisi bele bath masala pwd
  • 4-5 tsp tamarind juice
  • 1-2 tsp jaggery
  • salt to taste
  •  2-3 tsp oil
  • 1/2 tsp turmeric pwd
  • Seasoning
  • 1 tsp mustard 
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 1-2 red chilies
  • Few curry leaves
  • Pinch - Hing
  • 1 tsp ghee
  • 2 tsp peanut (roasted)
  • 2 tsp cashews(roasted)
  • 1 tsp Grated dry coconut (opt)

  • Method: Wash poha ,drain. Keep it aside. Meanwhile cook moongdal with turmeric and vegetables in pressure pan. Next in a pan, mix cooked moong dal, vegetables, add bhath pwd, add tamarind juice, salt and jaggery to it and mix well. Let it simmer for 5-10 mins till all the items blend well. Add soaked avalakki /poha  and mix well. 
  • Cook for 3 mins or more. Next ,heat oil in pan add all the items mentioned in the seasoning, once done add it to the avalakki.
  • Add roasted cashews and peanuts, coconut. Mix well. 
  • Add a spoon of ghee and serve Avalakki Besibele Bhath hot.

Gojju Avalakki / Tamarind Poha

Gojju Avalakki / Huli Avalakki or Tamarind Poha  is spicy and tangy easy breakfast recipe. (Gojju is tamarind extract blended with spices) A favorite in Madhwa families. Another Avalakki that can be prepared during Krishna Janmashtmi recipe.


Ingredients:
Gojju Avalakki / Tamarind Poha

  • 1 cup poha ((flaked rice /avalakki)
  • 1/2 tsp. turmeric powder 
  • 2 tbsp. dry shredded coconut
  • 2-3 tbsp. tamarind juice
  • 1-2 tsp grated jaggery
  • 2 tsp Rasam Pwd
  • Salt for taste

 Seasoning:

  • 2-3 tbsp. oil
  • 1/2 tsp mustard 
  • 1 tsp. chana dal
  • 1 tsp. urad dal
  • 2 -3 tbsp. groundnut
  • 1-2 dry red chillies
  • Hing-pinch
  • Curry leaves

Roast and Grind

  • 1 tbsp. cumin seeds
  • 1 tsp. fenugreek seeds
  • 2 tsp. sesame seeds

Garnishing:

  • Dry Coconut

Method: Grind poha in mixer. Soak the poha in water for 5 minutes. Wash thoroughly and drain the water completely. Keep aside. In a  pan, add tamarind juice, jaggery, rasam powder, salt, turmeric and little water. Boil for 5-10 minutes. Next add roasted powder, mix well. Add poha, dry coconut and mix well. Remove from the heat and keep aside.
Heat oil in a pan, fry groundnuts and keep aside, next add the items under seasonings with hing and curry leaves, once done add it to poha mixture and mix well. Enjoy Gojju Avalakki hot with chips.

Potato Avalakki/ Batata Poha

Batata Poha or Potato Avalakki is spicy , favorite breakfast recipe in our homes.Poha is easy to cook,adding vegetables to it makes it more nutritious and tasty.

Batata Poha ,avalakki Oggarane,Potato Avalakki,seasoned rice flakes,avalakki uppittu
Batata Poha
Ingredients:
1 cup poha ((flaked rice /avalakki)
1 onion, chopped
1 potato boiled and chopped.
5-6 green chillies, finely chopped
Salt to taste
For Seasoning:
2 tbsp. oil
1/2 tsp. mustard seeds
1/2 tsp.cumin seeds
1 tsp chana dal
1 tsp. Urad dal
2 tsp. peanuts
Hing- apinch
Curry leaves-few
Turmeric pwd-pinch

For Garnishing
2 tbsp. grated coconut
2 tsp. lemon juice
Few coriander leaves



Method: Soak the poha in water for 5-10min. Wash  and drain the water completely.
Heat the oil in the pan, fry the peanuts and keep it aside .
Next add seasonings and fry till done.
Add green chillies and onions,chopped potato and stir fry,
Add the poha and mix well.
Add salt, lemon juice, coconut,peanuts and coriander leaves to the poha.
Mix well  and serve hot.

Mosaru Avalakki / Curd Poha / Dahi Poha

Mosaru Avalakki ( Dahi Poha ) is made by mixing Poha (flaked rice) with spicy and seasoned yoghurt and is very delicious. Mosaru means curds in Kannada This dish is normally made during Krishna Janamashtmi festival in South India.



Ingredients:

  • 1 cup poha (flaked rice /avalakki) 
  • 1 cup curds
  • 1 tbsp. grated fresh coconut
  • 1 tbsp. oil
  • 1/2 tsp. mustard seeds
  • 1/2 tsp. chana dal
  • 1/2 tsp. urad dal
  •  Hing-pinch
  • 3-4 green chilies, chopped
  • Few-peanuts
  • 1 tbsp. chopped coriander leaves
  • Few- curry leaves
  • Salt to taste


Method:
Soak the poha in water for 5 minutes. Wash thoroughly and drain the water completely.
Add curds, and salt to the poha. Keep aside. Heat oil in a pan, add mustard seeds, after it splutters, add chana dal,urad dal,hing and stir fry.Add fried peanuts(opt).
Add green chillies, curry leaves fry it for a while. 
Add this seasoning to poha mixture and mix well.
Add coconut, coriander leaves.Mix and Serve.

Tomato Avalakki /Tomato Poha

Tomato Avalakki is very simple and easy to prepare.It has the nice tangy and spicy flavor .Poha (oggarane avalakki ) or seasoned rice flakes are healthy and easy to digest too, just right for all ages.

Ingredients
1 cup poha (flaked rice /avalakki) 
Tomatoes-2 finely chopped
1 tbsp. oil
1/2 tsp. mustard seeds
1/2 tsp. Chana dal
1/2 tsp. Urad Dal
1/2 tbsp Peanut
1-2 green chilies, finely chopped (opt)
2-3 Tsp Bhath pwd
Few chopped coriander leaves
Few curry leaves
Hing-pinch
Tumeric-pinch
Salt to taste
1 tbsp. grated fresh coconut (opt)



Method
Soak the poha in water for 5 minutes. Wash thoroughly and drain the water completely.Heat oil in a pan, fry peanuts and keep it aside then add mustard seeds, after it splutters, add chana dal/urad dal ,hing,turmeric and stir fry.Add green chillies or bhath pwd,curry leaves.Add chopped tomatoes fry it for a while. Add soaked avalakki,salt and mix well.Add coconut ,coriander leaves mix carefully.Serve hot.

Chivda / Poha

Chivda is  a quick and spicy delicious snack enjoyed  just like that.

Ingredients:
Chivda / Poha,Khara Avalakki,Diwali Farhaal
Chivda


  • Thin Pooha /Avalakki 3 cups
  • Dry coconut 1/2 cup
  • Red chillies  8-10 or
  • Green Chillies 8-10 chopped (it gives diff taste)
  • Peanuts , Cashews
  • Hurikadle/Puttani/White dal
  • Salt to taste
  • Sugar 1/4 tsp
  • Oil   1.5 Tbsp
  • Mustard seeds
  • Turmeric 1/2 Tsp
  • Hing
  • Few Curry leaves


Method:

  In a deep pan heat the oil fry peanuts and cashew nuts,white dal and remove on a plate.Fry poha slightly to make crispy ,remove from the pan.Heat oil add mustard seeds and when it starts to pop up, add hing,turmeric, red chillies/green chillies curry leaves.Once done, add the poha  and mix well,add salt and sugar, again mix well and then add the dry coconut,cashew nuts,peanut and mix well.Store it in a air tight container.

You can add fried crisps as well.
