Potato Stuffed Pooris

Potato Stuffed Pooris are simple and easy to prepare. Kids will love it.

Ingredients 

  • Potato (boiled) 1-2 (mashed)
  • chapati flour 2 cups 
  • salt for taste
  • turmeric powder  1/2 tsp
  • Dhania jeera  powder  1 tsp 
  • Garam masala 1/2 tsp
  • melted ghee   3 tbsp
  • Oil for deep frying


Method: In a bowl, add mashed potato, salt, turmeric powder, masala pwds, ghee, flour, water and form a smooth dough.

Cover it for some time.
Make small pooris and deep fry.
Serve hot.

Potato Fry/ Stir Fried Potatoes

Potato fry or Stir fried potatoes is tasty and delicious .Potatoes are blended with spices and stir fried.It is very simple and easy to make.Enjoy!!

Potato fry

Ingredients: 
2 potatoes,sliced
1 tsp red chilli pwd
1 tsp dhania jeera pwd
1/2 chaat masala
Salt to taste
2 tsp Chiroti rava
Oil 3-4 tsp


Method: Wash the  potato slices in water and drain it out.Add red chilli pwd,chaat masala,dhania jeera pwd,salt and mix the potatoes well. It should be fully coated.Sprinkle rava on the top.Heat oil in pan/tava ,now spread the potatoes on the tava.Keep adding oil around the tava.Toss and turn it so it gets crispy.Serve hot with chapati ,rasam rice or enjoy just like that.

(you can also give jeera/mustard seasoning if req)

Potato Raita


Aloo Raita / Potato raita is simple and easy.A delicious combination for masala rice,or simple dal/sambar rice.


Ingredients
oPotato Yogurt Salad
Potato Raita

  • 1 cup plain curds/yogurt
  • 1 potato (boiled, shredded)
  • 1-2 green chili (finely chopped) 
  • 1/4 tsp jeera pwd
  • 1/4 tsp red chili powder
  • 1/4 tsp chaat pwd
  • Few curry leaves
  • Coriander leaves
Seasoning
  • 1/2 tsp mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 1/2 tsp jeera
  • oil (seasoning)
  • Hing a pinch
    Method -Take a bowl, add curds,salt, red chili powder and cumin powder.Add shredded potatoes and stir.Heat oil in a small pan. Add the mustard and cumin seeds. Next add the green chillies ,chana dal,urad dal ,curry leaves and hing.Fry for some time.Pour the seasoning over the yogurt.Mix well.Serve the raita /potato yogurt salad with Sambar rice or Pulao.

Aloo Simla Mirch Sabzi

Aloo Simla Mirch is a delicious combination for Indian breads.It can be made in variety of ways.This is just one of them.


Ingredients
Aloo Capsicum Sabzi ,aloo capsicum masala,aloo capsicum curry
Aloo Simla Mirch
1 potatoes (boiled and diced)
2 capsicums 
1 onion finely chopped
1/2 cup peas steamed
1/2 tsp cumin seed 
1/2 tsp mustard
1/2 tsp chana dal
1/2 tsp urad dal
Hing pinch
1/2 tsp red chili powder 
1 tsp turmeric powder 
1/2 tsp dhania jeera powder 
1 tsp Bhath powder
few coriander leaves (finely chopped) 
1-2 tbsp Oil
Salt 
  • Method-Heat oil in a pan. Add cumin and mustard,chana dal,urad dal ,hing, and fry till done ,add onions and fry well add capsicum and sauté for some time.Next add diced potatoes ,steamed peas,the masala pwd ,salt and mix well.Garnish  with coriander leaves and serve hot with naan or roti.

Potato Avalakki/ Batata Poha

Batata Poha or Potato Avalakki is spicy , favorite breakfast recipe in our homes.Poha is easy to cook,adding vegetables to it makes it more nutritious and tasty.

Batata Poha ,avalakki Oggarane,Potato Avalakki,seasoned rice flakes,avalakki uppittu
Batata Poha
Ingredients:
1 cup poha ((flaked rice /avalakki)
1 onion, chopped
1 potato boiled and chopped.
5-6 green chillies, finely chopped
Salt to taste
For Seasoning:
2 tbsp. oil
1/2 tsp. mustard seeds
1/2 tsp.cumin seeds
1 tsp chana dal
1 tsp. Urad dal
2 tsp. peanuts
Hing- apinch
Curry leaves-few
Turmeric pwd-pinch

For Garnishing
2 tbsp. grated coconut
2 tsp. lemon juice
Few coriander leaves



Method: Soak the poha in water for 5-10min. Wash  and drain the water completely.
Heat the oil in the pan, fry the peanuts and keep it aside .
Next add seasonings and fry till done.
Add green chillies and onions,chopped potato and stir fry,
Add the poha and mix well.
Add salt, lemon juice, coconut,peanuts and coriander leaves to the poha.
Mix well  and serve hot.

Ingredients
Potato Sandwich
  • 2 cups boiled grated potatoes
  • ½ onion – chopped finely
  • 3-4  green chilies–chopped finely
  • ½ tsp jeera
  • ¼ tsp mustard
  • ¼ tsp turmeric powder
  • Pinch Hing
  • Lemon juice
  • a few chopped coriander leaves
  • Sandwich masala or Chaat masala
  • 8 Bread slices 
  • Butter
  • Salt
  • Green Chutney
  • Ketchup
  • Tomato,onion,capsicum slices
Method:In a kadai,heat oil,add mustard seeds,cumin seeds,green chilies,curry leaves,hing, tumeric ,add mashed potatoes,salt,masala powders,lemon juice and coriander leaves mix well.Take bread,apply butter and  green chutney,smear the potato stuffing,top it up with the slices of vegetables,add some chaat masala,cover with another chutney-butter spread bread.Grill in toaster.Serve hot with chutney or ketchup.

Aloo Sabzi

Aloo Sabzi (Aloo Palya/ Aloo Gadde Palya) is most simplest and easiest of recipes but definitely enjoyed by all. You can made various version with potatoes, this is the quick one. Palya is Kannada word for Sabzi or Bhaji.

Ingredients

  • 3 big Potatoes, boiled
  • 1 tsp Mustard
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • Hing-pinch
  • ½ tsp Turmeric
  • 5-6 Green Chillies, chopped
  • Few Corianderleaves
  • Few Curry leaves
  • Lemon juice
  • 2 tbsp Oil
  • Salt to taste

Method:  Mash the boiled potatoes. Heat Oil in pan add mustard, chanadal, uraddal,hing, tumeric, curry leaves, chilies and fry for some time. Add potatoes and mix. Add salt and mix well, fry for some time. Garnish with corainder leaves and lemon juice. Add coconut if req. Serve hot with chapati/puris .

Aloo Patties


Aloo Patties is easy snack for kids or elders , you can relish it crispy hot or add some sev and enjoy too.

Ingredients:

Potatoes boiled and mashed

Salt as per taste
1 tsp pepper pwd
Bread pieces (binding)
1 cup steamed peas
1/4 tsp garam masala
1 tsp Red chili powder
1 tsp dhania jeera pwd
Coriander leaves
Lemon juice
Oil for shallow-frying.


Method: Mash the peas and add the masala pwd and salt and mix it well add mashed potatoes,pepper pwd,bread pieces ,coriander leaves,lemon juice and mix well.Take small portion of mix ,flatten it ,pat it well.On a tava,add oil and place the pattice shallow fry till golden brown on low heat.Flip on the other side slowly.
Once done serve hot with ketchup or chutney.

(you can cut the patties,add bit of onion,chili pwd,sev and enjoy,
reduce the spices for kids)

Aloo Paratha

Aloo Paratha - a good healthy kickstart for your busy life. Hot parathas stuffed with spicy aloo masala. Enjoy hot and spicy.

Ingredients


  • 1 cup  wheat flour
  • 1/2 tsp  cumin seeds/carom seeds
  • 1 /2 tsp turmeric 
  • 1 -2 tsp chilli powder/garam masala
  • 1/2 tsp jeera dhania powder
  • 1/2 red chili pwd
  • 1 1/2 cup grated boiled potato
  • 1 tsp lemon juice
  • Few-coriander leaves
  • 2 tbsp oil
  • salt to taste
Method


1.Knead the flour with water, a little salt,oil into a soft dough.Cover it for 4-5 hours.
2 In a bowl, add the mashed potatoes, salt, masala powder, coriander leaves, lemon juice  and mix well. Divide the mixture into balls. 
3.Make a small chapati with the dough,keep this ball in the middle and bring all the sides together, once done flatten them with your fingers, or use the rolling pin and make the paratha 
4.Heat a skillet (tava) gently, put in the paratha, turn on both sides till done. Now add oil or ghee all around the edges, fry both sides, carefully turning over until evenly brown. 
Serve Aloo Paratha hot with pickle or curds.

You can add mint leaves/ginger paste for extra flavor.

Aloo Matar

Aloo Matar is on the favorite accompaniment for Indian Breads.

Aloo Matar

Ingredients  

  • 2-3 Potatoes chopped,
  • green peas 1 cup, boiled in salt
  • Grated fresh coconut 1/2 Cup
  • Green chilies-1-2
  • Cashew nuts few
  • Oil 1 1/2 Tbs
  • Cumin /Jeera seeds 3/4 Tsp
  • Onions chopped 2 
  • Ginger Garlic paste 3/4 Tsp
  • Tomato puree 3 Tbs
  • Coriander powder 1 1/4 Tsp
  • Red chilli powder 3/4 Tsp
  • Turmeric powder 1/2 Tsp
  • Salt to taste  
  • Tomatoes chopped 2 
  • Curry leaves few
  • Fresh coriander leaves chopped 
  • Garam masala powder 1/2 tbs
   
Method

Grind coconut,chilies and cashew nuts with  water to a fine paste.Heat oil in a kadai. Add cumin seeds saute over medium heat.Add onions and saute till light brown. Next add ginger- garlic paste and cook for another two minutes. Add chopped aloos and fry till it turns golden brown.
Add coriander powder, red chilli powder, turmeric powder, salt and tomatoes and cook till the oil separates .Simmer,next add coconut-cashew nut paste and curry leaves and saute for one minute. Add two cups of water and bring to a boil, stirring continuously.Stir in the green peas and serve hot, garnished with  corrinder leaves.
