Mix Vegetable Dry Sabzi Recipe
A quick and healthy Indian-style dry sabzi made with assorted vegetables and spices. Perfect for lunchboxes or weekday dinners!

Ingredients
- 1/2 cup potato (chopped)
- 1/2 cup green peas
- 1/2 cup carrot (chopped)
- 1/2 cup capsicum
- 1/2 cup tomatoes (chopped)
- A pinch of hing (asafoetida)
- 1/2 tsp cumin seeds (jeera)
- 1/2 tsp mustard seeds
- A few curry leaves
- 1 tsp red chili powder
- 1 tsp coriander-cumin powder
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 2-3 green chilies (slit)
- 2 tbsp cooking oil
- Salt to taste
- 1 tbsp fresh coriander leaves (chopped)
- 1/2 tsp lemon juice
- 1/2 tsp kasuri methi (dried fenugreek leaves)
Instructions
- Heat oil in a kadai (wok) over medium flame.
- Add mustard seeds. Once they splutter, add hing, cumin seeds, green chilies, and curry leaves.
- Sauté for a few seconds until fragrant.
- Add potatoes and carrots. Stir-fry for 3–4 minutes until they begin to soften.
- Mix in green peas and capsicum. Cook for another 2–3 minutes.
- Add chopped tomatoes and cook until soft and mushy.
- Sprinkle in turmeric, red chili powder, coriander-cumin powder, garam masala, kasuri methi, and salt.
- Mix well. Cover and cook on low heat for 5–7 minutes.
- Garnish with coriander leaves and lemon juice.
Serve hot with chapati, roti, or paratha.
