Padavalakayi Bajji/ Snake Gourd Fritters

Padavalakayi Bajji (-parval/snakegourd/ ಪಡವಲಕಾಯಿ ) is an interesting deep fried fritters. Simple and easy to prepare, the snake gourd pieces are thinly sliced dipped in a besan batter fried till golden brown. 

Ingredients:
  • Snake Gourd – 1 cup (thinly sliced
  • deseeded)
  • Besan Flour – 1 cup
  • Rice Flour – 1/4 cup
  • Red Chilli Powder – 3 tsp 
  • Dhania-Jeera Pwd-1 tsp
  • Salt – to taste
  • Ajwain/Carrom Seeds -2 tsp
  • Oil – for frying



















MethodCut the snake gourd to thin round slices,remove the seeds and keep it aside in water. Next in a bowl , add the flours, spices,salt and ajwain and mix. Add water to make a smooth paste. Meanwhile keep oil for frying. Take 1tsp hot oil and add to the besan mix. Next dip the sliced snake gourd pieces in the batter till it is coated well and carefully slide in the oil. Deep fry till they become golden brown on both sides.
Enjoy delicious snake gourd fritters with chutney or sauce.

Pista Sheera

Pista Sheera is yummy flavored sweet that can be made in very less time Semolina blended with powdered Pistachio and other flavors make it very delicious. Enjoy this healthy dessert .























Ingredients
cup Chiroti rava (semolina or sooji)
 cup Milk
1/2 
cup Ghee
Few Raisins
cup  Sugar 
Few Cashew nuts/Badam 
2-3 tbsp  Pista Pwd (homemade
sliced Pista pieces

Method -

Roast rava in the ghee till aromatic.
Add sugar and warm  milk and lower the flame. 
Simmer and cover with lid till it blends in. 
Add raisins and cardamom powder ,pista powder mix well.
Add fried cashew nut and kesar Enjoy with little ghee on the top.

Malabar Paratha

Malabar Paratha aka Kerala Parotta is an interesting South Indian layered  flat bread type. Made from all purpose flour it is tasty, worth a try for weekends. Enjoy it buttered and hot. A definite hit with the kids.

Malabar Paratha 
Ingredients 
  • 3 cups Flour (maida)
  • 1 cup Water
  • 2 tbsp Oil
  • 1 tsp Salt
  • 1 tsp Sugar
  • 1 tsp Baking powder
  • Oil 
  • Butter






Method - In a bowl, mix flour, baking powder, sugar and salt. Add oil and blend well. Next add water  knead well for 5-10 mins to make a soft dough. Cover with a damp cloth and let it rest for 30 mins. Again knead for 5 more mins. 
Next make small balls. Take one ball and roll it very thin chapati. Now make pleats from top to bottom. Roll the pleats to form a small spiral. Next make paratha  out of this spiral.

Repeat for the other balls. Heat  tawa, place this rolled out paratha and let it cook well on both sides,add butter or oil. Serve hot with any interesting gravy.

Corn Chitranna

Sweet Corn Chitranna is a easy seasoned rice variety with yummy corn added to it . Kids will definitely love it. Chitranna is a favorite South Indian Rice variety, you can make variety of chitranna aka one pot meal. This is a very simple one.


Ingredients:
Corn Rice
Corn Chitranna 
  • 1 cup rice (cooked)
  • 1/4 cup fresh coconut(grated)
  • salt to taste
  • Sweet corn boiled 1 cup
  • 1/2 cup onion finely chopped

Seasoning
  • 1/2 tsp mustard seeds
  • 1/2  tsp cumin seeds
  • 1 tsp channa dal
  • 1 tsp urad dal
  • few cashew nuts
  • 1 tbsp peanuts
  • Hing pinch
  • Green chilies-2-3
  • few Curry leaves
  • Few coriander leaves
  • Oil-2 tbsp


Method:  Allow the rice to cool, spread it on a plate. 
Next heat oil in kadai,roast cashews and peanuts and keep it aside, next add the other items in seasoning, roast well, add onion and fry, add the rice to this seasoning. Add the sweet corn, grated coconut, cashews and peanuts and mix well. Saute for 1-2 min. Garnish the rice with coriander leaves. Serve hot .

Thokku Dosa

Thokku Dosa is an interesting dosa recipe.Just add ready made or home made mango thokku and you have a tangy spicy dosa ready in no time ! Try it out .

Ingredients:


  • Dosa Flour 2 cups
  • Salt as per taste
  • Oil
  • Jeera-1 tsp
  • Onion-1  finely chopped
  • Mango thokku-3-4 tbsp

Method:

In a bowl , take the dosa flour ,add the above items and mix really well.
Make dosas. Serve hot with butter and chutney of your choice.
