Masala Bun

Masala Bun or Khara Bun is an interesting spicy baked goodie that can be easily made at home and enjoyed with your hot tea or coffee.  

This is a speciality at the Iyengar Bakeries in Bangalore.
 
Masala Bun

Ingredients

  •  Maida - 3 cups
  • Yeast Mix
  • Warm Milk - ½ cup
  • Warm Water -1/2 cup
  • Dry Yeast - 1.5 tsp
  • Sugar - 2 tsp (opt)
  • Salt to taste
  • Seasoning Mix
  • Oil - 3 tbsp
  • Cumin Seeds - 1 tsp
  • Onion - 1 thinly sliced
  • Green Chillies - 1-2 chopped finely
  • Curry leaves -few
  • Coriander leaves-few
  • Salt to taste
  • Hing-pinch
Coating Ingredients

  • Milk - 2 tblsp
  • Oil - 3 tblsp
  • Chilli flakes - ½ tsp
  • Italian seasoning- ½ tsp
Method - In a pan, add oil, add jeera, onion, chilies, curry leaves, hing. Fry well. 
In a bowl take warm milk, add sugar, salt, water and yeast. Mix well so that the yeast is dissolved fully. Let it rest it the yeast gets activated. Sieve the flour. Take a bowl, add the flour, salt, the onion chilies seasoning. Mix well. Next add the yeast mix and knead it into a soft dough. Rest this for 2 hours. The dough will get doubled.

Later, grease the baking tray and line it with parchement paper. Knead the dough again well, make small round balls and arrange it on the tray, leaving spaces in between. Let this rest for 30-40 mins. Prepare the mix for coating by adding the ingredients mentioned under "For coating".

Meanwhile, preheat the over @200 deg. Coat or Brush the balls well with the oil-milk-spices mix and bake it for 15-20mins. The buns will turn brown. Serve hot. You can apply butter on top to make it more delicious.

Methi Aloo Rice / Menthya Soppu Aloo Bhath

Methi Aloo Rice / Menthya Soppu Aloo Bhath is an easy and perfect one pot meal. Stir fried Methi leaves or Fenugreek leaves with potatoes blended with bhath powder in rice tastes delicious. Enjoy this healthy greens with raita or papad. Fenugreek leaves are flavorful and loaded with vitamins and nutrients.

Methi Aloo Rice / Menthya Soppu Aloo Bhath

Ingredients
  • 1 cup rice
  •  1/2 cup of potatoes (sliced)
  • 1 cup of methi leaves (cleaned/chopped)
  • 1/2 tsp. mustard
  • 1/2 tsp.chana dal
  • 1/2 tsp. urad dal
  • Hing-Pinch
  • Curry leaves-few
  • Turmeric pwd-pinch
  • 2 tbsp. oil
  • Salt to taste
  • 2 tbsp. Bhath Powder
  • Dry grated coconut-1 tbsp
Method:  


Cook rice and Spread it on a plate. Heat oil add mustard seeds, after it splutters, add chana dal, urad dal, hing, curry leaves, turmeric and fry until golden brown
Add the thinly sliced potatoes and stir fry well , next add Methi Leaves and fry well. 
Next add the bhath powder, salt and mix well. Add rice, and mix well. 
Garnish with coconut. Serve hot with raita or papad or enjoy just like that.

Legumes N Grains

Indian Pulses or the Legumes and Lentils are the protein boosters and provide a number of health benefits. They are important sources of fiber, proteins, vitamins, and minerals and an important requirement of balanced diet.

Urad dal 

Urad dal is the dal that is used to make Idlis and Dosas in South India. It is rich in protein and the iron and frequently used in vegan diets.


Toor dal is the most important lentil used in almost all Indian homes. It is part of daily diet as it is used to make Dal or Rasam or Sambar and served with rice or chapati. It is yellow in color and is highly nutritious, with high in protein, and vitamins.

Rajma


Kidney beans are healthy and contains high amount of fiber. This is normally eaten by North Indians. 


Green Moong/ Moong Daal /Mung


Moong dal is healthy and rich in nutrients and used in a variety of traditional vegetable dishes. Moong is easy to cook and  relatively easy to digest and suitable for all ages, kids and adults alike. It can be eaten in full or split. There are a variety of dishes that can be done by this legume.  Chawli / Black eyed Beans


Lohbia are black-eyed beans and also called black-eyed peas. These are rich in fiber and as a high-potassium and can be cooked in variety of ways.

Kabuli Chana / Chole /


Kabul Kadale or Chickpeas beans are a good source of nutrients. It is loaded with proteins and can be combined with healthy greens to prepare a curry. The all time favourite Chole is made from this legume.


Chana Dal


Also known as Bengal Gram. This is the most popular legume in India. Chana dal is used daily for seasoning in South Indian cooking and to make deserts like Holige and Hyagreeva.


Peas


These are available in white and green color. They are pressure cooked and normally used to make Ragda Patties.


These above lentils and pulses can be stored for long in glass or steel containers with air tight lids , closed to protect it from insects, moisture and heat.

Instant thakkali dosa, dosai, tomato rave dosa
Tomato Rava Dosa
Ingredients:
  • 1/2 cup Chiroti rava (fine rava)
  • 1/4 cup rice flour
  • 1/4 cup maida
  • 1-2 tsp jeera
  • salt to taste
  • Corainder leaves-few chopped
  • Green chillies-4-5 finely chopped
  • water
  • Tomatoes-2 finely chopped
  • 1 tsp Red chilly pwd
Method- In a bowl, add all the flours,salt , add water and mix well to make the dosa batter. Next add all the other ingredients-jeera,chillies,tomatoes, coriander leaves. Mix well. Keep it aside for 1/2 hour.Heat the tava/skillet and make the dosas, add oil to make it crisp and golden brown. Serve hot with chutney or enjoy it just like that!

Mango Kulfi

Mango Kulfi  is a rich, delicious and creamy dessert and a must have recipe during the mango season. It is flavourful and tasty way to enjoy the sweet ripe mango. Kulfi is made from cooking the milk and reducing the quantity to thick consistency. A perfect way to enjoy the Summers with the goodness of mango.
Ingredients

  • 1 Cup Mango Puree
  • 1/2 cup cut mangoes
  • Few Saffron Strands Soaked in milk
  • 1.5  Cup Milk
  • 1/2 cup sugar
  • 1/2 Tsp Cardamom Powder
  • Dryfruits for garnish







Method-

Wash and peel mangoes and cut them into cubes. 
Blend it into a  smooth puree. In a vessel boil milk. Keep stirring continuously, reduce the flame and cook for 30-40 minutes stirring from time to time till the mixture becomes thick and creamy. Add sugar and mix. Add soaked saffron, dry fruits and cardamom powder. Remove from fire and let it cool. In a bowl or kulfi moulds, add the puree, pour this creamy milk mixture and top it up with few cut mango pieces. Freeze it for 3-4 hours or till it sets well. Remove from the mould and Enjoy chilled.

Paneer Jalfrezi

Paneer Jalfrezi
Paneer Jalfrezi is a delicious and flavorful side dish that goes perfectly well with Indian Breads or rice. A combination of vegetables and cottage cheese or paneer in spicy tomato gravy, its yummy and tasty and easy to prepare. 


  • Ingredients
  • 1 tsp jeera
  • 1/2 cup tomato puree
  • 1/2 cup chopped tomatoes
  • 1⁄2 teaspoons ginger garlic paste 
  • 1 tsp dhania-jeera pwd
  • 1 tsp red chilli powder 
  • 1 tsp garam masala
  • 1 cup sliced vegetables 
  • (beans,carrot,capsicum)
  • coriander leaves, to garnish 
  • Oil-3 tbsp
  • 1 tbsp cream
  • 1/2 cup cut paneer

Method- In a kadai, add oil and stir fry vegetables and keep it aside. Next add oil in a pan, add the cumin seeds, add ginger garlic paste. Next add the chilly powder, garam masala, ground paste and the tomato puree and keep stirring. Next add chopped tomatoes, stir fried vegetables. Add salt, sugar and mix well. Add Paneer and top it up with cream. Mix lightly and cook till the gravy thickens. 
Serve hot Paneer Jalfrezi with Indian Bread of your choice.
