Aloo Samosa

Aloo Samosa is an interesting spicy, fried snack. Samosas are very popular and tasty and enjoyed by all. There are variety of fillings that is added to make Samosa. This is a simple version with potatoes.

    Aloo Samosa

Ingredients

  samosa filling
  • Potatoes -3 (boiled,grated)
  • Garam masala - 1 tsp
  • Dhania jeera pwd-1 tsp
  • Broken Dhania seeds-1tsp
  • Saunf-1 tsp
  • Jeera  - 1/2 tsp
  • Salt 
  • Lemon juice
  • Corainder leaves
  • Dough
  • Maida flour - 2 cup
  • Ghee/Oil - 4 tbsp
  • Ajwain
  • Salt 
  • Water
  • Oil for frying
  • Method- In a pan, heat oil,add jeera,saunf, broken dhania seeds and fry. Next add the boiled and mashed potatoes and stir. Next add the masala pwd and mix well. Add salt, lemon juice and coriander leaves.
  • Mix the flour with ingredients mentioned under the Dough. Knead it well into semi-soft dough (Just like chapati). Make small balls and keep aside. Make small rolls of dough and roll it into a small circle. Form a cone, add the filing and cover the cone, use little water to close it.
  • Heat oil in kadai, slowly slide the samosas , fry till  golden brown on low heat.
  • Serve Aloo Samosa hot with chutney or ketchup.

Chocolate Cookies

Chocolate Cookies is an easy recipe which doesn't require too many ingredients. These cookies are just wonderful and melt in the mouth.

Ingredients
  1. 1 cup maida or wheat flour
    Chocolate Cookies
  2. 1/4 cup Hersheys choco powder
  3. 1/2 cup powdered sugar
  4. 1/4 cup melted butter
  5. Cinnamon pwd-1/2 tsp
  6. Dry fruit powder-1 tsp
  7. Salt-pinch
  8. Baking powder-pinch (opt)
  9. baking soda-pinch
  10. Milk-3 tbsp


Method- In a bowl, take the flour, powdered sugar, dryfruit powder, cinnamon powder, salt sieve well and mix. In another bowl, 
add butter, sugar and milk in it. Whip it well for 2-3 mins, till it becomes creamy and light. Leave the batter for 10-15 mins


Next prepare small sized ball, press it and make it little flat. Preheat oven in convection mode for 15 minutes in 180c. Line the tray with baking sheet, keep the cookies 
on a oven tray leaving gaps in between. 

Bake the cookies for 12-15 mins. Switch off , once cool remove from the tray.

Paneer Manchurian

Paneer Manchurian is an interesting snack recipe similar to Gobi or Veg Manchurian. This one is easy made from the simple paneer. 

Enjoy this crunchy and tangy snack with kids during vacation.

         Paneer Manchurian

Ingredients


  • Paneer cubes
  • (cut into small squares)
  • 1/2 tbsp. maida
  • 2 tbsp. cornflour
  • salt and pepper to taste
  • 1 cup onion, chopped
  • 1 cup capsicum, chopped
  • 1/2 tsp ginger garlic paste
  • 2 green chillies, chopped
  • 1 tsp. soya sauce
  • 1 tsp chilli sauce
  • 1 tsp schezwan sauce
  • 1 tbsp tomato sauce
  • 1/2 tsp. red chilli powder
  • 1/2 tsp. sugar
  • salt to taste
  • oil 

Method-

In a bowl, mix cornflour, maida, pepper, salt with water and keep it aside. 

Next dip the paneer pieces and fry them in oil till golden brown. 

Next in a kadai, heat oil, add the onion, capsicum, green chillies, add ginger  garlic paste and saute. 

Add the red chilli powder, soya sauce, chilli sauce, schezwan sauce, tomato sauce, salt and sugar and mix it well. 

Add the fried paneer slices and mix well so that the pieces are nicely coated. 

Serve immediately.

Iyengar Bread Toast

Iyengar Bread Toast is made from awesome combination of tomato, onion and carrot is spicy, tangy and tasty. Enjoy it hot. This is an open sandwich and is very tasty. You can enjoy this masala toast sandwich as snack or send it to school in your kids lunch box.

Ingredients: 

Iyengar Bread Toast
  • Masala Bread slices
  • 1 carrot, grated
  • 1 onion, finely chopped 
  • 1 small capsicum, finely chopped 
  • 1  tomato, finely chopped 
  • chopped coriander leaves
  • 2 -3 green chilies, finely chopped 
  • 1 tsp red chili powder
  • 1/2 tsp chat masala 
  • 1/4 tsp Dhania-jeera pwd
  • Salt as per taste
  • 2 tsp tomato ketchup
  • Oil
  • Butter



Method: Heat oil in a pan add jeera, then add finely chopped onions and green chilies and fry. Next add tomatoes and capsicum and fry well till soft. Add grated carrots, red chili powder, chat masala, a pinch of sugar, salt and mix well and cook for a minute. Add chopped coriander and tomato ketchup and mix well. Heat tava and toast bread on one side then apply this mixture liberally on that toasted side. Serve this toast hot.

Cauliflower fry is a nice spicy blend of vegetables with crispy and crunchy to taste. 
Enjoy.


Ingredients

  • Onion - 1/4 cup thin slices
  • Capsicum-1/4 cup thin slices
  • Cauliflower-1 cup (blanced florets)
  • Cumin seeds - 1 tsp
  • Amchoor powder - 1 tsp 
  • Chilly Powder - 1 tsp (or as needed)
  • Turmeric Powder - 1/4 tsp
  • Garam Masala - a pinch
  • or Bath Powder- a pinch
  • Gram flour- 4 tblsp
  • Salt - to taste
  • Oil - 3 tblsp
  • Mustard seeds - 1/4 tsp
  • Curry Leaves - 1 strand

 Method- Chop cauliflower in small florets. Boil in water and drain. In a kadai, add oil, next add mustard seeds, jeera, curry leaves, once done add onions, capsicum and fry.  Add the drained cauliflower florets, next add masala powder, salt fry till the veggies become crisp. Serve this with rice and dal or with chapati or enjoy just like that with a dash of ketchup.

Heerekayi Chutney

Heerekayi Chutney is Chutney is an interesting spicy accompaniment that is made across India. Each region has its own version and taste. It is made from

Heerekayi Chutney
Ingredients
  • Heerekayi/Ridge gourd -chopped in pieces
  • Green chillies 4-5
  • Ginger-small piece
  • Kobbari /coconut- 1/4 cup
  • Hunse hannu / tamarind paste - 1 tsp
  • Salt for taste


Seasoning
  • 1/2 tsp Mustard
  • 1 tsp Chana dal
  • 1 tsp Urad dal
  • Few Curry leaves
  • Hing-pinch
  • 1 tbsp Oil

Method- In a pan, fry the chopped ridge gourd well, next add the red chilies,coconut, tamarind and fry well. Once cool grind it well with little water.  Season it with mustard and curry leaves.

Enjoy this Chutney with hot rice, idli , dosa or chapati.
