Pudi Chitranna

Pudi Chitranna is a easy seasoned rice variety with goodness of ground lentils added to it making it healthy and tasty. Kids will definitely love it. Chitranna is a favorite South Indian Rice variety, you can make variety of chitranna aka one pot meal. 


Masala Chitranna, Pudi
Pudi Chitranna

Ingredients:
  • 1 cup rice (cooked)
  • 1/4 cup fresh coconut(grated)
  • salt to taste
To grind :
  • Chana dal- 2 tsp
  • Urad dal- 2 tsp
  • Dhania/ Coriander seeds- 1 tsp
  • Methi/ Fenugreek seeds- 1/4 tsp
  • Jeera/ Cumin seeds- 1/2 tsp
  • Red chillies- 5 to 6 

Seasoning
  • 1/2 tsp mustard seeds
  • 1/2  tsp cumin seeds
  • 1 tsp channa dal
  • 1 tsp urad dal
  • 2 tbsp peanuts
  • Hing pinch
  • Ground pudi-1-2 tbsp
  • Red chilly-1 (opt)
  • few Curry leaves
  • Few coriander leaves
  • Oil-2 tbsp


Method:  Dry roast all the items mentioned in to grind. Once cool, ground into coarse powder. Next allow the rice to cool ,spread it on a plate. Next heat oil in kadai, roast peanuts and keep it aside, next add the other items in seasoning, roast well, add the ground pudi  and fry add the rice to this seasoning. Add the grated coconut, salt and peanuts and mix well. Saute for 1-2 mins. Garnish the rice with coriander leaves. Serve hot .

Shahi Tukda

Shahi Tukda or Shahi Tukra is an all time favorite at my home. And am sure once you try it you will definitely enjoy it too. It is made by roasting the sweet bread slices in ghee then topped with a thick rabdi and garnished with dry fruits. You can also use Milk bread to make Shahi Tukda. A truly rich bread pudding! Forget the diet for a day and enjoy this delicious dessert!


Ingredients


Shahi Tukda
  • 6 slices White sweet bread slices
  • Ghee for roasting
  • 1/4 cup Sugar
  • Few Cardamom crushed
  • 1 litre Full cream milk
  • 15-20 strands Saffron
  • Few almonds and pistachios to garnish


Method- First in a thick bottom vessel boil milk. Let it boil it starts thickening. Next add sugar and stir. Keep stirring the cream into the milk so it thickens well. Once done switch off the gas. Add saffron and cardamom powder. 
Next cut the corners of sweet bread slices and cut the slices in any desired shape. Next on a tava roast the bread golden brown on both sides. Use ghee while roasting the bread. Now in a serving plate, place the bread. Pour the thickened and sweetened milk over the bread slices. Garnish with almonds and pistachios slivers. You can either serve this royal dessert immediately or set it in fridge and enjoyed chilled.
